Abstract

Crackers is crispy snack food which is favored by the folk to consume. The purpose of this research was to getthe best formulation of sago starch and coconut pulp flour on the quality of sago crackers which meet SNI 01-2713-1999. This research used a Completely Randomized Design (CRD) with five treatments and threereplications. Data were statistically analyzed by Analysis of Variance (ANOVA) and followed by Duncan’sNew Multiple Range Test (DNMRT) at level 5%. The treatments of this research were TSA1 (sago starch 95 :coconut pulp flour 5), TSA2 (sago starch 90 : coconut pulp flour 10), TSA3 (sago starch 85 : coconut pulpflour 15), TSA4 (sago starch 80 : coconut pulp flour 20), and TSA5 (sago starch 75 : coconut pulp flour 25).The parameters observed were moisture, ash, protein, crude fiber, swelling power, colour, taste, aroma,crispiness, and overall acceptance hedonic. The best treatment of crackers was TSA3 which had moisturecontent 2.41%, ash content 2.10%, protein content 2.51%, crude fiber content 10.81%, swelling power35.89%, whitish brown (2.90), slightly scented coconut (2.87), somewhat coconut taste (2.93), texturecrispiness (2.10), and overall acceptance hedonic test of crackers was preferred by the panelist.

Abstract

Penelitian ini bertujuan untuk menganalisis saluran pemasaran yang paling efisien pada agroindustri gula merah aren di Nagari Talang Maur. Metode yang digunakan dalam penelitian ini adalah observasi dengan pendekatan deskriptif kualitatif dan deskriptif kuantitatif.  Deskriptif kualitatif digunakan untuk menganalisis saluran pemasaran. Deskriptif kuantitatif digunakan dalam menghitung margin pemasaran, bagian petani, dan efisiensi pemasaran.  Saluran pemasaran agroindustri gula merah aren di Nagari Talang Maur terdapat dua saluran pemasaran, saluran I meliputi petani (produsen) – pedagang pengecer – konsumen dan saluran II petani (produsen) – pedagang pengumpul – pedagang pengecer – konsumen.  Saluran I memiliki nilai margin pemasaran sebesar Rp 4.000/kg dengan persentase margin 15,6%, nilai farmer’s share sebesar 84,3% dan efisiensi pemasaran sebesar 5,27% sedangkan saluran pemasaran II memiliki nilai margin pemasaran sebesar Rp  8000/kg dengan persentase margin 30,5%, farmer‘s share 71,4% dan efisiensi pemasaran 10,01%.  Maka dapat dikatakan bahwa saluran pemasaran I adalah saluran yang paling efisien karena memiliki margin pemasaran yang rendah, farmer’s share yang tertinggi dan efisiensi pemasaran yang rendah. Kata Kunci: gula merah aren, saluran pemasaran.

Abstract

Sago stem bark and coconut shell contain lignin and cellulose compounds which are quite high and have not been utilized optimally. Therefore this study aimed to obtain the best formulation of the sago stem bark and coconut shell as the main ingredients in making good quality briquette. The research was carried out experimentally using the Completely Randomized Design (CDR) method with 5 treatments and 3 replications. The treatments in this study were P1 (ratio of sago bark charcoal and coconut shell charcoal 90:10), P2 (ratio of sago bark charcoal and coconut shell charcoal 80:20), P3 (ratio of sago bark charcoal and coconut shell charcoal 70:30), P4 (ratio of sago bark charcoal and coconut shell charcoal 60:40), P5 (ratio of sago bark charcoal and coconut shell charcoal 50:50). Data obtained were statically analyzed by analysis of variance (ANOVA) and continued with Duncan’s New Multiple Range Test (DMRT) at level 5%. The results show that the ratio of sago stem bark and coconut shells did not significantly affect moisture, ash and bound carbon contents as well as density, heating value, volatile matter levels and fuel power. The best treatment was P5 (rasio of sago bark charcoal and coconut shell charcoal 50:50) with moisture content 3.67%, ash power 4.54%, volatile matter 1.13%, density power 0.67 g/cm3, bound carbon 90,68%, calorific value 7748.62 cal/g and fuel power 0,0029 g/second.

Abstract

Village Talang Maur is known as an agroindustry producing palm sugar. The agroindustry is experiencing problems in marketing palm sugar which will affect the agroindustry income and has not been able to determine efficient marketing channels. The objective of this study was to examine which marketing channels are the most effective in the palm brown sugar agroindustry. Marketing of palm brown sugar agroindustry consists of two marketing channels, namely channel I includes farmers (producers) – retailers – consumers, channel II includes farmers (producers) – collectors – retailers – consumers. Marketing channel I is an efficient channel consisting of a marketing margin of IDR 4000, 15,6% percentage margin, 84,3% farmer’s share, and 5,27% marketing efficiency while marketing channel II is is an efficient channel consisting of a marketing margin of IDR 8000, 30,5% percentage margin, 71,4% farmer’s share, and 10,01% marketing efficiency Channel I is considered the most efficient due to its low marketing efficiency, high farmer’s share, and lowmarketing margins.
