Abstract

The livestock sector plays a strategic role in the economy of Riau Province through the contribution of food supply, supply of industrial raw materials, feed, bio-energy, employment, and achievement of GRDP (Gross Regional Domestic Product). One of the commodities in the livestock sector that has the potential to be developed is beef. This study aims to analyze the supply chain flow and determine the beef supply chain strategy in Riau Province. The research method used is descriptive qualitative analysis. Qualitative descriptive analysis using SWOT analysis on the beef supply chain. There are 4 streams of the beef supply chain in Riau Province. First, producers/breeders and consumers; second, breeders, traders, and consumers; third, breeders, traders, slaughterhouses, and consumers; fourth, namely breeders, blantik, butchers, wholesalers, and small traders then bought by consumers. The internal factor evaluation matrix has a total score of 2.6807, while the external factor evaluation matrix has a total score of 2.7432. The strength factor of the beef supply chain is the quality of beef cattle is good, the weakness factor is the continuity of beef cattle supply is still lacking, the opportunity factor is the wide open market share, and the threat factor is he instability of beef supply.

Abstract

This research aimed to a) identify the flow of the jackfruit supply chain; b) obtain the added value of the jackfruit chips agroindustry; c) analyze the level of efficiency of the jackfruit chips agroindustry; d) formulate strategies and determine strategic priorities for increasing the supply chain and added value of jackfruit. The methods used in this research are both qualitative and quantitative. The research stage starts by analyzing the jackfruit supply chain using a framework of the food supply chain network (FSCN), calculating the added value of chips in the jackfruit chips agroindustry using the Hayami method and analyzing the level of efficiency of the jackfruit chips agroindustry. The researchers then formulate a strategy using SWOT and select priority strategies using the method of analytical hierarchy process (AHP). The research results showed that the supply chain structure consists of two structures, namely structure 1 (supplier-jackfruit chips agroindustry-consumer) and structure 2 (supplier-jackfruit chips agroindustry-retail-consumer). The flow of goods occurs from suppliers to consumers, the flow of money from consumers to suppliers, and the flow of information from suppliers to consumers and vice versa. The calculation of added value obtained from micro, small, and medium enterprises (SMEs) in Sinar Hidayah was IDR 8,198.71/kg, Usaha Baru Ibu was IDR 13,960.58/kg, and Restu was IDR 4,718.75/kg. The R/C ratio in SME Sinar Hidayah is 1.72, Usaha Baru Ibu is 2.42, and Restu is 1.26. Based on the results of the strategy formulation, the priority strategy was obtained, namely expanding the raw material and marketing network for jackfruit chips with a weight of 0.331, and the selected criteria was logistics with a weight of 0.322.

Abstract

Abstract

Jackfruit chips are a promising product choice because, in addition to their relatively easy production process and low raw material costs, they can also be sold at affordable prices. However, the biggest challenge for MSMEs is maintaining consistent product quality to meet consumer expectations and maintaining competitiveness in an increasingly competitive market. This research will be conducted in Tambang District, Kampar Regency, Riau Province. Samples will be taken from three jackfruit chip MSMEs in Tambang Subdistrict, Kampar Regency, namely Usaha Baru Ibu, Sinar Hidayah, and Restu. Sample testing will be carried out at the Riau University Agricultural Product Analysis Laboratory, the Andalas University Instrumentation Laboratory, and the Pekanbaru Goods Quality Testing and Certification Technical Implementation Unit. The observation of jackfruit chip quality based on SNI 01-4269-1996 was conducted at Sinar Hidayah SME, Usaha Baru Ibu SME, and Restu SME. The parameters observed were moisture content, ash content, fat content, texture of jackfruit chips, and descriptive test. The results of identifying the processing and quality characteristics of better jackfruit chips were obtained by Restu MSME with a frying process at a temperature of 97˚C, vacuum pressure of 75 cmHg for 3 hours, resulting in a moisture content of 5.32%, ash content of 2.13%, fat content of 11.14%, hardness test of 114.70 N/cm2, and a descriptive test of 4.65.

Abstract

There is still a lack of clear understanding regarding the structure of the supply chain for palm oil post-harvest tools in Teratak Village, including the flow of goods, money, and information as well as the roles of each actor in that supply chain, even though the demand for these tools is quite high and important to support the productivity of oil palm plantations. This study aims to analyze and define the supply chain structure of post-harvest tools for oil palm from upstream to downstream. This study was carried out in Teratak village, Kampar Regency. Methods used are qualitative descriptive and BPMN (business process modeling notation) methods. Based on the study's results, it is known that the post-harvest tooling supply chain structure for oil palm starts with iron purchasing suppliers, independent blacksmith industries, blacksmith cooperatives, distributors, and consumers. From these factors comes the flow of goods, the flow of information, and the flow of money. All these factors are interrelated. The strategy that can be applied in this case is to optimize all relevant factors, namely iron collectors, blacksmith industry, blacksmith cooperatives, and distributors, to increase productivity in each element.
