Abstract

False information regarding menstruation has the potential to cause a variety of emotions, including worry, dread, and confusion. Worrying about getting their period or experiencing menstrual discomfort, particularly if they consider these events to be common rites of passage. By informing young girls about the typical causes of discomfort during their period, it may be possible to enhance their mental health. This research intends to demonstrate how a dysmenorrhea exercise plan may help reduce symptoms by quantifying pain on a visual analog scale. In this research, a single-group pretest-posttest format was employed using a pre-experimental design. The Wilcoxon test had 35 female students in total, and the significance level was fairly low. The findings suggest that the knowledge of the respondents may be biased. Before seeing the video, 11 respondents (31.4%) scored 67 points, while the same set of respondents (34.34%) scored 87 points on the post-test. The dysmenorrhea exercise video is effective since there is a correlation between responder knowledge and pain levels (p=0.000 on the pain scale). According to updated sources, when modified in light of recommendations for further research, dysmenorrhea exercise is expected to prove to be an effective method for lowering discomfort and encouraging movement.

Abstract

A functional disorder known as diabetes mellitus results in a lack of insulin hormone, either because the pancreas is unable to produce it or because body cells are unable to properly utilize the insulin the pancreas has produced. Because of this disorder, blood sugar levels will rise uncontrollably. Continuously high glucose levels will poison the body, including its organs. The 2018 Riskesdas statistics show that 2% of Indonesians over the age of 15 have been diagnosed with diabetes mellitus. Compared to the 1.5% prevalence of DM in the 2015 Riskesdas data, this figure indicates a rise. Nonetheless, blood sugar levels rose from 6.9% to 8.5% in 2018 based on data from tests conducted in 2013. According to this statistic, about 25% of DM patients are aware that they have the disease. Finding the diabetes mellitus risk variables at the Trauma Center Health Center in Samarinda City is the aim of this study. The study uses a cross-sectional analytical survey that is directed at all 189 patients at the Trauma Center Health Center in Samarinda City who have diabetes mellitus. The study uses unintentional sampling and a questionnaire to gather data. To examine the data for persons with diabetes, we employ the chi square test at a 5% confidence level.

Abstract

Introduction: Dysmenorrhoea is pain that occurs during menstruation. This causes the body to feel bad and reduces the routine activities of people with dysmenorrhoea. One factor that can reduce dysmenorrhoea is yoga exercises. Yoga is a physical activity, learning mental and breathing techniques to relieve stress, relieve anxiety, reduce menstrual pain, and control weight to be more ideal. This study aims to determine the effect of yoga on body mass index and dysmenorrhoea in female students of the Department of Nutrition at the Ministry of Health East Kalimantan Polytechnic. Method: This research is a type of Experimental Quasy research with a type design of group pretest-posttest design. This research was carried out at the nutrition building of the Ministry of Health East Kalimantan Polytechnic in March-April. The samples used were 14 female students majoring in nutrition using a simple random sampling technique. This research has met the ethical requirements and is approved to be carried out, taking into account the National Health Research and Development Ethical Guidelines and Standards (PSEPPKN) with certificate number DP.04.03/7.1/7844/2023. Bivariate analysis is carried out to determine whether there is an influence between each variable using the Wilcoxon test. Results: The results of this study showed the influence of yoga on body mass index and dysmenorrhoea in female students majoring in nutrition at the Ministry of Health East Kalimantan Polytechnic marked by p-value Body mass index 0.019 < 0.05 and P-Value dysmenorrhoea 0.000 < 0.05. Conclusion: Yoga significantly influences body mass index and dysmenorrhoea in female students majoring in nutrition at the Ministry of Health East Kalimantan Polytechnic. Suggestion: This can be used as an essential reference for similar research on the effect of yoga on body mass index and dysmenorrhoea and covers a wide range of respondents.

Abstract

This study aims to investigate the effect of biscuits made from haruan fish flour and yellow pumpkin on the nutritional status of toddlers in the working area of Puskesmas Mangkupalas. A quasi-experimental pre-post test with control group design was employed, with a single-blind approach. The study was conducted from September to November 2021. A total of 22 toddlers were selected using purposive sampling. Respondents were divided into two groups: the intervention group, which received biscuits made from haruan fish and yellow pumpkin flour, and the control group, which received government-provided biscuits. Data on energy and protein intake were collected using a Food Recall, and nutritional status was assessed based on Weight-for-Age index using anthropometric measurements. In the control group, the average Z-score before the intervention was -1.4345 (normal nutritional status), which increased to -1.3536 post-intervention (still normal). The intervention group had an average Z-score of -2.0009 before the intervention, which decreased to -2.1691 (indicating moderate malnutrition). The control group's average energy intake was 956.864 kcal before the intervention and 792.564 kcal during the intervention. In the intervention group, energy intake was 1010.891 kcal before and 793.109 kcal during the intervention. Protein intake in the control group was 34.436 g before the intervention and decreased to 31.691 g during the intervention. The intervention group saw an increase from 38.164 g to 58.75 g. The intervention with biscuits made from haruan fish flour and yellow pumpkin flour did not significantly affect the nutritional status or energy and protein intake of the toddlers.

Abstract

Nutritional problems in adolescents will affect the quality of human resources which can result in reduced generations and have an impact on the nation's economic situation in the future. Vulnerable aged 13-15 years experiencing nutritional needs much faster. Protein intake, nutritional status and socioeconomic status in several studies showed different results. The purpose of this study was to determine the relationship between protein intake, nutritional status, and socioeconomic status with the learning achievement of children aged 13-15 years at SMP Nabil Husein Samarinda. Quantitative research design, correlational descriptive type, cross sectional approach. The sample used was 49 students of class VIII using a purposive sampling technique. Protein intake was obtained through a 24-hour food recall interview, nutritional status measurements based on BMI/Age, and socioeconomic status were obtained by filling out a questionnaire form. The results obtained from this study were the relationship between protein intake and learning achievement with a p-value of 0.670, nutritional status with learning achievement with a p-value of 0.358, parents' education with learning achievement with a p-value of 0.429, parental income with learning achievement with a p-value -value 0.441, parents' work with learning achievement with a p-value of 0.437. The conclusion of this study is that there is no relationship between protein intake, nutritional status and socioeconomic status of parents with learning achievement of class VIII students of Junior High School Nabil Husein Samarinda.

Abstract

Masalah gizi pada balita dengan prevalensi yang tergolong tinggi adalah gizi kurang (underweight). Kondisi ini memerlukan penanganan yang tepat dan berkelanjutan. Salah satu strategi yang dapat dilakukan untuk menanggulangi permasalahan tersebut adalah melalui inovasi pengembangan produk pangan yang sesuai dengan kebutuhan gizi balita. Salah satu inovasi makanan yang banyak digemari adalah mochi. Tujuan penelitian ini adalah untuk menganalisis nilai gizi dan nilai daya terima pada formulasi mochi tepung daun kelor dan tepung mocaf. Penelitian dilakukan pada bulan November 2024. Panelis pada penelitian berjumlah 25 orang panelis tidak terlatih. Jenis penelitian ini bersifat Eksperimen Murni dengan design Rancangan Acak Lengkap (RAL). Terdapat 4 perlakuan dan 3 kali pengulangan. Analisis Kuantitatif menggunakan Uji Kruskal Wallis dilanjutkan Uji Mann Whitney dan nilai gizi diperoleh melalui perhitungan Yield Factor dan Retention Factor. Pada semua perlakuan, perlakuan F3 memiliki nilai gizi tertinggi, yaitu energi 364,4 kkal, protein 6,5 gram, lemak 8,8 gram, dan karbohidrat 60,6 gram. Uji hedonik warna dan tekstur tertinggi pada perlakuan F3 3,55 dan 3,79. Uji hedonik aroma dan rasa tertinggi pada perlakuan F0 3,44 dan 3,47. Uji mutu hedonik warna dan tekstur tertinggi pada perlakuan F3 3,55 dan 3,87. Uji mutu hedonik aroma dan rasa tertinggi pada perlakuan F0 3,44 dan 3,47. Formulasi mochi tepung mocaf dan tepung daun kelor dapat dijadikan alternatif snack bernilai gizi tinggi untuk balita underweight dinilai dari nilai gizi empiris dan organoleptik.

Abstract

Sosis merupakan produk olahan daging yang praktis dan digemari, namun kandungan zat besinya masih terbatas. Penambahan kacang merah sebagai sumber zat besi nabati dapat meningkatkan nilai gizi sosis. Penelitian ini bertujuan untuk menganalisis mutu gizi protein dan zat besi, deskriptif, dan mutu organoleptik pada sosis. Penelitian ini adalah penelitian eksperimental dengan rancangan acak lengkap pada 3 perlakuan, 1 kontrol, dan 3 pengulangan. Perhitungan nilai gizi menggunakan Calculated Value dari Tabel Komposisi Pangan Indonesia, dan uji organoleptik menggunakan responden 25 panelis tidak terlatih. Analisis kuantitatif menggunakan software uji Kruskall Wallis dilanjutkan dengan uji Mann Whitney. Hasil perhitungan nilai gizi protein dalam 30 gram adalah 10,25g - 12,02g, dan zat besi 1,17g - 1,70g. Hasil uji organoleptik formulasi 1 merupakan yang paling dapat diterima setelah kontrol karena memiliki kesukaan tertinggi pada rasa dan tekstur dibandingkan formulasi lainnya, sedangkan formulasi 2 unggul dalam mutu rasa dan tekstur. Penambahan kacang merah meningkatkan kandungan zat besi dalam sosis, sementara proporsi daging ayam berpengaruh terhadap kadar protein. Formulasi seimbang menghasilkan karakteristik sensoris yang lebih disukai, dengan warna, rasa, dan tekstur yang dipengaruhi oleh komposisi bahan baku.

Abstract

Remaja putri rentan mengalami anemia yang dapat menurunkan sistem kekebalan tubuh. Berdasarkan riset data Dinas Kesehatan Kota Samarinda pada kejadian anemia remaja putri di kota samarinda tahun 2022 terdapat 1.434 kasus. Inovasi pangan sehat adalah suatu upaya untuk mengembangkan produk pangan yang lebih sehat dan bergizi dengan memanfaatkan bahan-bahan alami. Penelitian ini bertujuan menganalisis uji hedonik serta nilai gizi pada formulasi gyoza hati ayam dan bayam. Jenis penelitian ini eksperimen dengan desain RAL membuat 4 perlakuan dengan 3 pengulangan. Proses pengumpulan data uji hedonik pada panelis tidak terlatih yang dilanjut analisis nilai gizi menggunakan Calculated value. Analisis kuantitatif menggunakan uji Kruskal Wallis dilanjutkan Mann Whitney. Hasil uji hedonik gyoza diperoleh perbedaan nyata pada warna, aroma, rasa serta tidak terdapat perbedaan nyata pada tekstur. Pada F0 memiliki nilai daya terima yang lebih tinggi dibandingan formula lain, sedangkan F3 memiliki nilai gizi yang terbaik dibandingkan formula lain yaitu %asupan energi 9,43%, protein 26,30%, lemak 14,73%, karbohidrat 13,03% dan zat besi 9,52%. Formulasi gyoza menghasilkan daya terima gyoza hati ayam dan bayam pada F0, sedangkan kadar nilai gizi terbaik ada pada F3. Penambahan hati ayam dan bayam meningkatkan kandungan zat besi pada gyoza, sehingga F3 gyoza yang dapat dijadikan sebagai alternatif mencegah anemia remaja putri.

Abstract

Salah satu inovasi snack digemari adalah kue cubit. Tujuan penelitian ini adalah untuk menganalisis nilai gizi dan nilai daya terima pada formulasi kue cubit tepung kacang merah dan tepung kacang hijau. Penelitian dilakukan pada bulan Mei 2024. Panelis pada penelitian berjumlah 25 orang panelis tidak terlatih. Jenis penelitian ini bersifat Eksperimental Murni dengan design Rancangan Acak Lengkap (RAL). Terdapat 4 perlakuan dan 3 kali pengulangan. Analisis Kuantitatif menggunakan Uji Kruskal Wallis dilanjutkan Uji Mann Whitney dan nilai gizi diperoleh melalui perhitungan Yield Factor dan Retention Factor. Pada semua perlakuan, perlakuan F0 memiliki nilai gizi tertinggi, yaitu energi 334,6 kkal, protein 5,04 gram, lemak, 19,26 gram, dan karbohidrat 35,3 gram. Uji hedonik warna dan aroma tertinggi pada perlakuan F0 3,64 dan 4,12. Uji hedonik rasa tertinggi pada perlakuan F0 4,04 dan nilai hedonik tekstur tertinggi pada perlakuan F2 4,04. Uji mutu hedonik warna, aroma dan rasa tertinggi pada perlakuan F1 3,72 dan 3,20 serta 3,76. Uji mutu hedonik tekstur tertinggi pada perlakuan F3 4,28. Formulasi kue cubit tepung kacang merah dan tepung kacang hijau dapat dijadikan alternative snack bernilai gizi tinggi untuk balita wasting dinilai dari nilai gizi empiris dan organoleptik.

Abstract

Stunting adalah masalah gizi kronis yang menghambat pertumbuhan anak. Salah satu solusinya adalah pemberian makanan tambahan (PMT) berbasis pangan lokal bergizi tinggi. Penelitian ini mengembangkan fish finger dari ikan nila dengan penambahan daun kelor sebagai alternatif PMT untuk anak di bawah dua tahun (BADUTA) yang mengalami stunting. Penelitian ini adalah percobaan faktor tunggal (penambahan Puree Daun Kelor (PDK): 0, 10, 20, 30%) dalam rancangan acak lengkap dengan ulangan sebanyak tiga kali. Parameter yang diamati adalah mutu gizi (energi, protein, lemak, karbohidrat, dan seng) dan karakteristik organoleptik (warna, aroma, rasa, dan tekstur). Hasil penelitian menunjukkan bahwa formula penambahan 10% PDK menghasilkan fish finger dengan penerimaan respons organoleptik terbaik dengan karakteristik mengandung 17,4 g protein, 6,8 g lemak, 21,4 g karbohidrat, 0,9 mg seng, dan mempunyai 219,5 kkal energi per 150 g produk. Fish finger berbasis ikan nila dengan penambahan 10% PDK berpotensi menjadi alternatif PMT bergizi tinggi dengan tingkat penerimaan baik untuk pencegahan stunting pada BADUTA.
