Abstract

Tujuan penelitian ini adalah untuk mengetahui pengaruh Kualitas Pelayanan harga dan lokasi terhadap kepuasan konsumen di Wilayah Tanjung Selor, pengaruh pelayanan terhadap Kepuasan konsumen pada Rumah Makan Cendana Fried Chiken dan pengaruh harga terhadap kepuasan Konsumen pada Rumah Makan Cendana Fried Chiken di Wilayah Tanjung Selor. Metode yang digunakan penelitian ini adalah metode kuantitatif. Populasi dalam penelitian ini adalah pelanggan Cendana Fried Chiken di Tanjung Selor yang merupakan para pengguna aktif atau pernah belanja di Cendana Fried Chiken. Jumlah responden yang diteliti adalah sebanyak 50 responden. Pengumpulan data berupa kuisioner, teknik analisis data yang digunakan pada penelitian ini adalah SPSS versi 23. Hasil penelitian ini adalah, pertama, bahwa Kualitas Pelayanan berpengaruh secara signifikan terhadap kepuasan konsumen pada Cendana Fried Chiken, dimana diperoleh nilai Sig 0,000 yang lebih kecil dari 0,05 (0,000 < 0,05) dan thitung sebesar 0,832 yang lebih besar dari t-tabel (2,850 > 1,838). Kedua, Harga berpengaruh positif dan signifikan terhadap keputusan pembelian pada rumah makan cendana fried chiken dimana diperoleh nilai Sig 0,050 = 0,05 dan thitung sebesar 1,986 yang lebih besar dari ttabel (1,986 ≥ 1,98498). Ketiga, harga berpengaruh secara signifikan terhadap kepuasan konsumen pada cendana fried chiken, dimana diperoleh nilai Sig 0,000 yang lebih kecil dari 0,05 (0,000 < 0,05) dan thitung sebesar 5,858 yang lebih besar dari t-tabel (5,585 >1,98498)

Abstract

Fish is one of the nine major food allergens. Avoiding consumption of fish is a common preventive measure to mitigate fish allergies. On the other hand, food processing may potentially alter the allergenicity of fish, and thus, it is important to identify the most effective fish processing methods that can reduce its allergenicity. This research aimed to characterize the nutritional value, intensity of allergens, and allergenicity from the processing of tenggiri fish processing to produce surimi as intermediate food and ready to eat (RTE) otak-otak. The processing steps consisted of washing and adding cryoprotectant during surimi processing, and using deep and air frying methods in RTE otak-otak processing. Changes in the nutritional value and intensity of allergens of fish meat and its processed products were measured using proximate analysis and SDS-PAGE electrophoresis, respectively. The alterations in the allergenicity were investigated using immunoblotting and ELISA. The results revealed changes in the nutritional value due to the processing. Surimi production successfully removed a protein band of 10-–13 kDa, which is suspected to be an allergen. Additionally, both deep and air frying methods effectively removed allergenic proteins with molecular weights above 100 kDa. Immunoblotting assay showed the allergen only appeared in fish meat absent in all of the processed products. The allergenicity rates of surimi and otak-otak was reduced by 90.78 and 98.68%, respectively, as compared to the fish meat. In conclusion, the nutritional value of air-fried otak-otak is superior while the allergenicity is lower than the deep-fried ones. Therefore, air frying processing method for tenggiri fish can be potently used to produce hypoallergenic fish products.

Abstract

Coffee contains abundant bioactive compounds related to health, among which are phenolic acids and diterpenes. This study aimed to investigate phenolic acids and diterpenes content in Arabica Gayo coffee, and its in-vitro antioxidant activities due to different brewing methods. The manual brewing methods used were tubruk (steeping), V60 drip, and hanging drip bag. The analysis conducted was determination of phenolic acid content as chlorogenic acid isomers (as 3-caffeoylquinic acid (3-CQA), 4-caffeoylquinic acid (4-CQA), and 5-caffeoylquinic acid (5-CQA)), diterpenes content (as cafestol and kahweol), and antioxidant activity using DPPH and FRAP method. The result showed that tubruk brew had 3-CQA, 4-CQA, and 5-CQA content of 0.38, 0.45, and 1.11 mg/mL, respectively, while V60 brew contained 0.39, 0.45, and 1.18 mg/mL, respectively. They were significantly higher than those in the drip bag, 0.25, 0.33, and 0.85 mg/mL, respectively. Cafestol and kahweol content in tubruk were significantly higher, reaching 3.03 and 7.86 mg/L consecutively, as in V60 were 0.40 and 1.02 mg/L and in drip bag were 0.46 and 0.85 mg/L. DPPH result displayed no significant difference per sample volume (918.45-921.17 mg ascorbic acid equivalent/L). FRAP result showed tubruk brew has the highest activity with 635.12 mg gallic acid equivalent/L, compared to V60 and drip bag brew at 560.91 and 551.10 mg gallic acid equivalent/L, consecutively. The results revealed that brewing methods affect the bioactive content of the final brew, in this research were phenolic acids and diterpenes. Various methods may differ in the variety and amount of other extracted bioactive compounds, so which affects the antioxidant activities of coffee brew.

Abstract

Coffee is rich in phenolic compounds, which can be evaluated by the total phenolic or specific individual phenolics. The composition and concentration of phenolics in coffee are affected by various factors, including postharvest and roasting. This study aimed to compare the ratio of phenolic acid (measured as chlorogenic acid) to total phenolic in Bogor arabica coffee, considering different postharvest treatments and roasting levels. The coffee samples were treated with different postharvest (dry, wet, and honey) and roasting processes (light and dark). Green coffee bean was used as a control. The roasting process involved heating the coffee at temperatures ranging from 147.9 to 178.8°C for light roasting, and 190.2 to 200°C for dark roasting (10 minutes each). The color of the coffee beans, concentration of phenolic acid in the coffee extract, and total phenolic in the coffee extract were analyzed using a colorimeter, HPLC, and spectro-photometer respectively. The results showed that roasting significantly intensified the dark color of Bogor arabica coffee. Among the phenolic acids, the 5-CQA isomer emerged as the most dominant and was also the most susceptible to degradation during roasting. As the roasting level increased, the concentration of phenolic acid consistently decreased. Interestingly, the total phenolic initially increased in light roasted coffee but decreased in dark roasted coffee. Green coffee beans exhibited the highest proportion of phenolic acid (83%), whereas dark roasted coffee had the lowest proportion (19%). Although light roasted coffee had the highest total phenolic, its phenolic acid concentration decreased significantly compared to green coffee beans.

Abstract

Chicken opor, a seasoned dish made with chicken, spices, and coconut milk, has the potential to be developed into a practical and shelf-stable food product using proper preservation technology. Besides utilizing retort pouch packaging, a key factor in processing sterile chicken opor is ensuring an effective sterilization process. This study aimed to evaluate the thermal adequacy of the sterilization process for chicken opor produced by PT XYZ and to assess consumer acceptance of its sensory attributes. The product was packaged in 300 g retort pouches, with 44 units filling the sterilization basket. Heat distribution was tested using 30 temperature sensors, and heat penetration was assessed with 15 sensors placed at various locations in a 50 L pressure cooker. Sensory evaluation was conducted with 75 panelists using a hedonic rating scale. The results showed that heat distribution within the pressure cooker was uniform. The thermal adequacy, necessary to meet the commercial sterility standard, was achieved with a 70 minutes sterilization process after reaching the maximum temperature of 110 °C, yielding a minimum F0 value of 4.8 minutes. The hedonic rating test indicated moderate to high acceptance of PT XYZ's sterilized chicken opor among the panelists.

Abstract

Postharvest processing affects the chemical components and sensory attributes of coffee beans. This  study aimed to evaluate the effect of postharvest processing on caffeoylquinic acids and alkaloids (bioactive compounds) and sensory attributes (aroma and taste) of brewed coffee. Coffee beans of Kalosi-Enrekang were processed using three postharvest processing methods (honey, natural, and full-washed), roasted at a medium degree, and brewed with tubruk brewing techniques. Bioactive compounds were analyzed using UPLC-PDA and sensory attributes were analyzed using the Quantitative Descriptive Analysis method. The data were analyzed using single-factor ANOVA and Principal Component Analysis. The research showed that postharvest processing did not affect the bioactive compound of brewed coffee. Postharvest processing affected the aroma and taste attributes of brewed coffee. Natural processing had dominant attributes of fruity, spicy, sweet, and caramelized. Honey processing had dominant attributes of nutty and roasted, while full-washed processing did not have dominant attributes. The result also showed that caffeoylquinic acids and alkaloids did not affect coffee brewed's aroma and taste attributes.

Abstract

Background :Hospitalization is a critical condition in children, when the child is sick and is being treated in the hospital. Hospitalization can be considered as a threatening experience and becomes a stressor so that it can cause a crisis for children and families. In an effort to reduce the impact of children from hospitalization experienced by children during child care, we need a medium that can express anxiety, one of which is coloring picture therapy. Data from the Children's Room at Adjidarmo Rangkasbitung hospital found that children who were hospitalized from January to June 2022 had 979 cases of hospitalized children or an average of 163 cases per month. Writing purpose :the effect of giving play therapy coloring pictures on reducing stress due to the impact of hospitalization in pre-school-aged children at Adjidarmo Rangkasbitung Public Hospital, Banten Research methods :This study used a pre-experimental denham design with one group pretest-posttest design. One-group pre-post test design to obtain stress level data before and after the intervention. The number of samples in this study were 32 pre-school children who fit the inclusion criteria. The instrument used for data collection used a questionnaire and then the data were analyzed using the paired t test. Research result :the average stress on children due to hospitalization before the intervention was given was 21.09 pont or included in the moderate category and after the intervention became 13.13 or included in the moderate. There is an effect of giving play therapy coloring pictures to reduce stress due to hospitalization in pre-school-aged children at Adjidarmo Rangkasbitung Hospital, Banten with a p value of 0.000. Conclusions and recommendations:Image coloring play therapy can be effective in reducing stress in children due to hospitalization, therefore health workers can apply image coloring play interventions to children who are hospitalized

Abstract

A hospital is a health service institution that provides complete individual health services for inpatient, outpatient, and emergency care. Hospitals as health service providers are required to maintain medical records. The administration of medical records for each hospital refers to the Regulation of the Minister of Health of the Republic of Indonesia. A medical record audit is needed to determine the completeness of data in medical records both in quantity and quality. The purpose of this study was to determine the medical record audit at RSUD Sleman. The type of research used is analytic observational with a cross-sectional study design. This research was conducted at RSUD Sleman, Special Region of Yogyakarta. The research was done from April to October 2022, during a period of 7 months. Simple random sampling was used to collect data from 94 medical records. The audit of 94 samples of medical records resulted in the following findings: completeness, patient identity 100%, professional identity in providing care 99.01%, date and time 70.21%, initial assessment 90.42%, subjective examination 98.84%, objective examination 66.01%, management plan 91.49%, clinical pathology examination 58.51%, radiological examination 75.53%, primary diagnosis 100%, secondary diagnosis 100%, and general agreement 100%. The lowest percentage of 58.51% was obtained for incomplete data.

Abstract

Tenaga kesehatan perempuan yang bekerja di rumah sakit memiliki risiko terpapar berbagai bahaya di lingkungan kerja yang dapat menyebabkan gangguan kesehatan reproduksi. Pekerja perempuan memiliki kemampuan dan fisiologi yang lebih sensitif terhadap paparan bahaya, sehingga mereka membutuhkan perlindungan selama menstruasi, kehamilan dan menyusui. Penelitian ini bertujuan untuk mengidentifikasi bahaya reproduksi kerja petugas kesehatan perempuan di rumah sakit. Jenis penelitian ini bersifat kuantitatif dengan metode pendekatan path analysis. Penelitian dilakukan di Rumah Sakit Akademik Universitas Gadjah Mada pada April hingga November 2022. Hasil penelitian menunjukkan bahwa kontribusi gangguan menstruasi dan shift kerja terhadap bahaya reproduksi kerja adalah 10,8%. Nilai pengaruh langsung gangguan menstruasi sebesar 0,153 dan shift kerja sebesar 0,341 terhadap gangguan kesehatan ibu dan anak (pvalue>0,05). Pengaruh tidak langsung variabel gangguan menstruasi (pvalue=0,002) dan shift kerja (pvalue=0,028) melalui variabel bahaya reproduksi kerja berpengaruh signifikan (pvalue<0,05) terhadap masalah kesehatan ibu dan anak. Kesimpulannya adalah perlunya perhatian dan kebijakan khusus bagi pekerja perempuan selama periode menstruasi dan pengaturan shift kerja sebagai faktor bahaya reproduksi kerja untuk mencegah masalah kesehatan ibu dan anak.Female health workers who work in hospitals have a risk of being exposed to various hazards in the work environment which can cause reproductive health problems. Female workers have abilities and physiology that are more sensitive to exposure to hazards, so they need protection during menstruation, pregnancy and breastfeeding. This study aims to identify occupational reproductive hazard of female healthcare workers at the hospital. This type of research is quantitative with the path analysis approach method. The research was conducted at the Gadjah Mada University Academic Hospital from April to November 2022. The results showed that the contribution of menstrual disorders and shift work to occupational reproductive hazard was 10.8%. The value of the direct influence of menstrual disorders is 0.153 and the work shift is 0.341 on maternal and child health disorders (pvalue>0.05). The indirect effect the variables of menstrual disorders (pvalue=0.002) and work shifts (pvalue=0.028) through the occupational reproductive hazard variable have a significant (pvalue<0.05) influence on maternal and child health problem. The conclusion is the need for special attention and policies for female workers during the menstrual period and work shift arrangements as an occupational reproductive hazard factor to prevent maternal and child health problems.

Abstract

ABSTRAK Background : Hospitals are required to organize occupational health and safety (K3RS) in all parts of the installation in the hospital, one of which is the medical record installation. The medical record installation has a storage room, namely a filing room which is an important part of storing medical records and has the potential to have various potential hazards. The management of Nganjuk Hospital for this period has not carried out a risk assessment on the medical record installation section. Subject dan Methods: This research is a qualitative descriptive study with a case study design. The sampling technique used was purposive sampling technique. The subjects used in this study were 2 medical record officers, the Head of the Medical Record Installation, and the Head of the K3 Section of Nganjuk Hospital. Results: Based on the HIRADC matrix, the Nganjuk Hospital medical record installation in the Filing section identified a potential hazard in the Moderate-High risk category, including; dusty filing shelves and medical records, poor environmental conditions (temperature, lighting, humidity), distance and height between shelves is not ergonomic, there are sharp objects (remaining staples) in the medical records, carrying and delivering too many medical records to each poly aim. Conclusion : The potential for danger in the filing room is found to be quite a risk to interfere with the work of the filing officer. This requires risk control, including; carry out elimination, substitution, technical control, administrative control and use of PPE
