Abstract

Latar Belakang. Pengaturan diet bagi pasien prediabetes merupakan salah satu pencegahan kejadian penyakit diabetes melitus secara dini. Labu siam dan ikan tuna merupakan bahan pangan lokal yang mengandung banyak senyawa di mana mampu menanggulangi masalah diabetes sehingga dapat dimanfaatkan sebagai makanan tabur fungsional. Pengembangan makanan berbasis tuna dan labu siam perlu diperhatikan karena dapat merubah kandungan zat gizi makro maupun mikro dan sifat organoleptiknya. Penelitian ini bertujuan untuk menganalisis zat gizi mikro, makro, dan organoleptik makanan tabur berbasis Tuna dan labu siam untuk terapi diet prediabetes. Metode. Penelitian eksperimental dengan rancangan acak lengkap (RAL) menggunakan 3 formula makanan tabur Chaguro yaitu, F1 (ikan tuna 60% dan labu siam 40%), F2 (ikan tuna 50% dan labu siam 50%), dan F3 (ikan tuna 40% dan labu siam 60%). Penelitian ini juga menganalisis kandungan kadar air dan uji mikroba. Analisis statistik dilakukan dengan uji Kruskall Wallis dan uji Post-Hoc Mann Whitney untuk melihat perbedaan tingkat kesukaan dari tiap formula makanan tabur. Hasil. Hasil uji kadar air pada ikan tuna didapatkan pengeringan ikan tuna selama 10 jam dengan suhu 55°C dan 65°C menghasilkan kadar air yang memenuhi syarat <7 persen yaitu 5,85±0,15% dan 5,96±0,00%, berturut-turut. Pada uji kandungan gizi, kadar abu, kadar protein, kadar lemak, kadar serat kasar, dan Zn dalam 100 g formula Chaguro F1 masih dalam batas aman untuk dikonsumsi. Berdasarkan uji organoleptik, parameter kenampakan, aroma, tekstur, dan rasa ikan paling kuat adalah Formula F1. Hasil angka lempeng total (ALT) untuk makanan tabur Chaguro yaitu sebesar 5,5 x 103 CFU/gr. Uji mikroba Salmonella sp. dan Escherichia coli pada makanan tabur Chaguro dinyatakan negatif. Kesimpulan. Formula F1 (ikan tuna 60% dan labu siam 40%) merupakan formula yang paling kuat dan memilki sifat dominan ikan dibandingkan dengan formula lain dan sudah memenuhi syarat SNI Abon 01-3707-1995 dari segi kandungan gizi, kecuali kadar air dan ALT.

Abstract

Latar Belakang. Uji sensoris dan uji umur simpan pada pengembangan produk pangan diperlukan agar produk yang dihasilkan dapat diterima dan aman bagi konsumen. Individu yang mengalami prediabetes memiliki kesempatan untuk mencegah atau menunda perkembangan terjadinya diabetes melitus (DM) jika dapat memperbaiki pola hidupnya. Makanan selingan adalah bagian penting dalam manajemen pola makan penyandang prediabetes sehingga jumlah dan jenis bahan makanannya perlu dipertimbangkan. Tujuan. Penelitian ini bertujuan untuk menganalisis dan merumuskan sifat organoleptik dan umur simpan suatu produk makanan selingan untuk penyandang prediabetes. Metode. Penelitian ini menggunakan desain eksperimental dengan rancangan acak lengkap untuk menguji karakteristik sensoris empat formula rasa pada produk makanan selingan prediabetes. Uji pendugaan umur simpan dengan Accelerated Shelf-Life Testing (ASLT) Arrhenius melalui pendekatan nilai angka thiobarbituric acid (TBA) dilakukan pada produk yang belum diberi rasa. Produk disimpan pada suhu 4°C, 27°C, dan 45°C. Analisis statistik dilakukan dengan uji Kruskall Wallis dilanjutkan uji Post-Hoc Mann Whitney. Hasil. Tidak terdapat perbedaan yang signifikan antar formula pada parameter warna dan aroma sampel, tetapi terdapat perbedaan yang signifikan pada parameter rasa, tekstur, dan nilai keseluruhan (p<0,05). Hasil analisis uji pendugaan umur simpan menunjukkan bahwa persamaan regresi pada orde 1 dapat digunakan sebagai pendekatan untuk memprediksi umur simpan makanan selingan untuk prediabetes. Kesimpulan. Makanan selingan prediabetes yang paling disukai untuk parameter warna, aroma, rasa, dan penilaian keseluruhan adalah formula F3 (bumbu bubuk bawang dan garam), sedangkan formula F2 (bumbu bubuk bawang) adalah yang paling disukai untuk parameter tekstur. Prediksi umur simpan makanan selingan untuk prediabetes pada suhu ruang/normal 30°C adalah 80,97 hari atau sama dengan 2,69 bulan.

Abstract

Parents play a vital role in shaping children's dietary habits, which are influenced by family behaviors, parental health literacy, and socio-economic status. Poor parental health literacy and low socio-economic status often lead to unhealthy child nutrition and lower physical activity. This study investigates the impact of nutritional education on parental knowledge at Yayasan An-Nusyur Aeng Panas, aiming to improve childhood nutrition in resource-limited settings. The research employed a pre-experimental design (one group pre-test post-test) to assess changes in parental knowledge after a 3-hour nutrition education session, delivered by a team of nutritionists from Indonesia and Malaysia. Data were collected from 27 parents of kindergarten students in Sumenep Madura in February 2024 through questionnaires. The results were analyzed using SPSS version 26 and the Wilcoxon Matched-Pairs Test. The findings revealed an increase in participants' knowledge, with a pre-test average score of 84.444 and a post-test average score of 86.667. However, the Wilcoxon test showed no statistically significant difference (p=0.439) between pre- and post-test scores. Despite the knowledge improvement after the education session, the difference was not significant. This suggests that while educational interventions can enhance awareness, further efforts may be required to achieve a measurable impact.

Abstract

The increase in the elderly brings consequences, including a higher risk of disease. Inappropriate nutritional intake is also known as one of the risk factors related to the elderly's non-communicable diseases, and nutritional intervention is essential to improve the elderly nutritional status and quality of life. It was an interventional study with a before-after one-group approach. The study was conducted for three months (October-December 2021) in three social retirement homes. The intervention given was supplementation with additional protein sources and snacks each day. The biochemistry profiles were taken 2 times: before and after three months of intervention, comprised of HbA1c, lipid, transferrin, creatinine, and blood pressure level. The data will be analyzed for its normality before being processed with paired t-test or Wilcoxon signed rank based on the normality results. The analysis results show that there are significantly lower transferrin levels (p=0.040), an increase in cholesterol level (p=0.000), and low-density lipoprotein (LDL) level increased from 114.05±32.03 to 125.94±31.41 (p=0.000). There is also a remarkable decrease in hemoglobin (p=0.005) and high-density lipoprotein (HDL) levels. Conversely, there are an increase in HbA1C (p=0.007) and triglyceride level (p=0.005). There is no significant difference in creatinine level. We conclude that nutrition interventions have a significant effect on elderly blood profiles. However, to achieve an improvement, the study should consider physical activity and other variables that might be altering the results.

Abstract

Background: Food insecurity in the home and well-informed moms' nutritional understanding can shield children from circumstances that result in low height and body mass index (BMI) for their age. Objectives: The purpose of this study is to ascertain the relationship between food insecurity in the home and mothers' nutritional awareness of the nutritional condition of children under five on Gili Iyang Island. Methods: This study used a cross-sectional method. The nutritional status of the children was assessed using anthropometric measurements. Additionally, data on demographic characteristics, maternal nutrition knowledge, and food insecurity were collected using questionnaires. The study involved 39 mothers/caregivers of children as respondents. Results: Mothers had a low degree of dietary awareness (84.62%). Stunting and wasting rates were 17.95% and 12.82%, respectively. The incidence of stunting decreased with increased nutritional knowledge of mothers (p-value=0.032, r=0.343), and there was a strong positive association between mothers' knowledge of nutrition and children's height-for-age. Nutritional status (HAZ) and household food security were significantly correlated (p-value<0.001). Conclusions: The conclusion was that there was an association between the nutritional knowledge of mothers and the status of children’s nutrition. There was a relationship between household food security and a child’s nutritional status.

Abstract

This community service program aimed to enhance environmental awareness and practical skills in plastic waste management among junior high school students in Banraas and Bancamara villages on Gili Iyang Island, Madura. Ecobricks are defined as plastic bottles densely packed with cleaned plastic waste to form durable, reusable building blocks. The training combined lecture-based sessions using fan media to explain the hazards of plastic pollution and introduce the concept and benefits of ecobricks followed by ecobricks practice for students. Pre-posttest revealed that the proportion of students score in the low category decreased from 10 percent to 0 percent, while those achieving high scores increased by 77 percent. Practical engagement was further demonstrated by enthusiastic participation in ecobrick assembly and quiz activities, and production of a simple table from ecobricks. This integrated approach successfully fostered students’ environmental responsibility, creative reuse practices, and community-wide promotion of sustainable waste management.
