Abstract

During their storage, the traditional ready-to-eat food, such as sticky rice cake, is easily contaminated by spoilage pathogens. Hence, this study aims to evaluate the effect of Citrus hystrix extract in reducing spoilage pathogens in sticky rice cake during storage. The experimental sticky rice cake was prepared and formulated with Citrus hystrix extract at varied concentrations of 0.65%, 1.26%, and 1.82% (w/w). Treated samples were stored at room temperature for 28 days and evaluated periodically for their microbial activity (total plate count), thiobarbituric acid reactive substances (TBARS), and sensory analysis. For its antifungal activity, the Citrus hystrix extract was also compared against Penicillium sp. and Aspergillus nidulans prior to formulation. Results exhibited a significant advantage of the added extracts to the sticky rice cake. All extract levels effectively eliminated the spoilage microorganisms and significantly lowered the TBARS values. The physico-chemical properties of sticky rice cake including pH, water activity, and moisture content were equal among all the formulated samples and slightly different at 1.82% (w/w) extract level. Moreover, the addition of Citrus hystrix extract up to 1.82% did not affect the acceptability sensory attributes of the sticky rice cake as compared to the control which had no Citrus hystrix extract (p > 0.05).

Abstract

Abstrak: Peningkatan jumlah lanjut usia (lansia) dapat memicu beragam masalah kesehatan yang membutuhkan perhatian khusus dari masyarakat. Salah satu upaya yang dapat dilakukan adalah pemberdayaan masyarakat, khususnya perempuan desa, dalam perawatan lansia. Kegiatan ini bertujuan untuk membentuk Bunda Lansia serta meningkatkan pengetahuan dan keterampilan perempuan desa dalam merawat lansia. Metode kegiatan mencakup pembentukan Bunda Lansia, penyuluhan, dan pelatihan perawatan lansia, bekerja sama dengan Dinas Kesehatan, Pengendalian Penduduk, dan Keluarga Berencana Kabupaten Lumajang. Kegiatan ini melibatkan 75 perempuan dari Desa Kraton, Desa Yosowilangun Lor, dan Desa Yosowilangun Kidul. Evaluasi dilakukan melalui pre-test dan post-test, observasi praktik, skala penilaian keterampilan, umpan balik peserta, serta tindak lanjut untuk menilai penerapan keterampilan dalam kehidupan sehari-hari. Hasil kegiatan menunjukkan bahwa 75 Bunda Lansia telah dilantik, dengan peningkatan pengetahuan dari rata-rata 77,5 menjadi 92 (18,7%), serta peningkatan keterampilan dalam perawatan lansia dari rata-rata 72,5 menjadi 85 (17,2%). Kesimpulannya, kegiatan ini efektif dalam meningkatkan pengetahuan dan keterampilan perempuan desa dalam perawatan lansia.Abstract: The increasing number of elderly individuals can lead to various health issues that require special attention from the community. One possible approach to address this is through community empowerment, particularly of rural women, in elderly giver. This initiative aims to establish “Bunda Lansia” (Elderly Care Mothers) and to enhance the knowledge and skills of rural women in elderly care. The methods include the formation of Bunda Lansia, education sessions, and elderly care training, in collaboration with the Department of Health, Population Control, and Family Planning of Lumajang Regency. This activity involved 75 women from Kraton Village, Yosowilangun Lor Village, and Yosowilangun Kidul Village. The evaluation was conducted through pre-tests and post-tests, practice observations, skill rating scales, participant feedback, and follow-up assessments to evaluate the application of skills in daily life. The results indicate that 75 Bunda Lansia were inaugurated, with an increase in knowledge from an average of 77.5 to 92 (18.7%) and an improvement in elderly care skills from an average of 72.5 to 85 (17.2%). In conclusion, this initiative effectively enhances the knowledge and skills of rural women in elderly care.

Abstract

Pembelajaran Bahasa Indonesia di Madrasah Aliyah tidak hanya menuntut penguasaan teks, tetapi juga pengembangan kemampuan berpikir kritis dan kreativitas siswa. Namun, praktik pembelajaran di kelas masih cenderung berorientasi pada hafalan dan pemahaman teoritis sehingga keterampilan berpikir tingkat tinggi belum berkembang optimal. Penelitian ini bertujuan mendeskripsikan implementasi Project Based Learning (PBL) dalam pembelajaran Bahasa Indonesia serta menganalisis dampaknya terhadap kemampuan berpikir kritis dan kreativitas siswa. Penelitian menggunakan pendekatan kualitatif deskriptif dengan teknik observasi, wawancara, dan analisis dokumen pembelajaran. Hasil penelitian menunjukkan bahwa penerapan PBL meningkatkan keterlibatan siswa dalam proses belajar, kemampuan menganalisis dan mengevaluasi informasi, serta menghasilkan produk teks yang kreatif dan komunikatif. Selain itu, pembelajaran berbasis proyek memperkuat kolaborasi, komunikasi, dan tanggung jawab belajar siswa. Temuan ini menunjukkan bahwa Project Based Learning efektif sebagai strategi pembelajaran inovatif untuk mengembangkan kompetensi abad ke-21 dalam pembelajaran Bahasa Indonesia.
