Abstract

Science and technology for the community have been applied at the Milk House Cafe located on Kiayi Kamarulloh Street, Bukik Surungan, Padang Panjang city. Along with the development of the business, this dairy café has experienced problems in formulating strategies in business development and increasing sales.One solution is the Management Information System (SIM) approach. The SIM application is conducted so that the partner's business data is complete and accurate and is available at all times. The solution to improving marketing is to make the design of the service drive simple but attractive. Orders are ordered and services are provided through a special window, while consumers remain in their vehicles. The method of implementing this program is the demonstration method. The results of program implementation are SIM applications with complete and accurate partner business data and are available at all times. SIM can provide information to support the decision-making process that the manager will take, allowing decisions to be taken faster and precisely. Processing transactions in SIM allows managers to easily supervise company assets, monitor business developments and provide reports to stakeholders. The solution to improving marketing is to make the design of the service drive simple but attractive. Orders are ordered and services are provided through a special window, while consumers remain in their vehicles. The purpose of the drive thru is to facilitate consumers who want to get products quickly but are reluctant to get off their vehicles (cars / motorbikes). This drive thru service can save consumers time to enjoy fast food. Through this service consumers stop by, can then leave within 3 minutes.

Abstract

Program Kuliah Kerja Nyata Pembelajaran dan Pemberdayaan Masyarakat (KKN- PPM) merupakan bentuk nyata kontribusi Perguruan Tinggi terhadap masyarakat dengan konsep bekerja bersama masyarakat, melalui Hibah dari Kemenristek Dikti, mahasiswa dibawah bimbingan Dosen Pembimbing Lapangan (DPL), berupaya membantu memberikan solusi dari permasalahan yang dihadapi oleh mitra KKN-PPM dan masyarakat sekitar. Adapun Mitra KKN-PPM adalah dua kelompok tani ternak (Keltan) sapi perah yaitu Tunas Baru dan Permata Ibu. Permasalahan pada mitra KKN-PPM adalah dalam hal pengolahan dan pemasaran. Keterbatasan  pengetahuan peternak dalam hal pengolahan susu selama ini, susu hanya dijual dalam bentuk segar dan pasteurisasi. Hal ini tentu saja membatasi peternak sapi perah dan UMKM pengolahan susu sapi untuk meningkatkan penjualan dan  pendapatan mereka, dimana harga jual susu segar relatif murah  dan daya tahannya sebentar, dan pada waktu hari libur sekolah atau saat musim hujan,  susu sering tidak laku bahkan terbuang begitu saja,  sehingga ini menjadi penyebab terbatasnya pemasaran. Permasalahan dalam hal pemasaran, pengemasan susu kurang menarik dan informatif. Program KKN PPM ini dinilai sangat tepat untuk dapat membantu permasalahan mitra pengabdian yang mempunyai target menciptakan pemberdayaan masyarakat melalui peningkatan pengetahuan dan keterampilan peternak supaya dapat meningkatkan pendapatan mereka. Pengabdian ini dilakukan dengan metode penyuluhan/sosialisasi, diskusi, pelatihan, percontohan/demonstrasi, pendampingan yang dilakukan oleh mahasiswa dengan bimbingan DPL KKN. Hasil kegiatan pengabdian ini dilakukan transfer iptek pengolahan susu menjadi ice cream dan milk shake, pembuatan label kemasan yang informatif, penyerahan mesin pengolah ice cream dan outlet pemasaran, perluasan pemasaran dengan media online dan website.

Abstract

Peternak sapi potong hanya mendapatkan penghasilan tahunan ketika penjualan sapi, amun tidak memiliki pendapatan pekanan atau bulanan dari beternak tersebut. Salah satu cara untuk menigkatkan pendapatan peternak di Sipujuk Farm adalah dengan mengelola kotoran sapi yang tidak bernilai dan malah menjadi sumber polusi dan merusak lingkungan menjadi pupuk organik yang bernilai ekonomis yang dapat memberikan pendapatan rutin bagi peternak dan lingkungan juga dapat terpelihara. Peternakan sapi potong di Si Pujuk Farm menghasilkan limbah yang meliputi kotoran berupa limbah padat, cair, gas, ataupun sisa pakan. Kotoran ternak yang dihasilkan di Si Pujuk Farm belum dimanfaatkan secara optimal, diantaranya terbuang begitu saja, sehingga sering mencemari lingkungan dengan bau yang tidak sedap sehingga mengganggu kenyamanan lingkungan. Tujuan dari pengabdian ini adalah meningkatkan ekonomi dari peternak dengan cara meningkatkan nilai ekonomis kotoran sapi menjadi pupuk organik memanfaatkan mikroorganisme lokal (MOL) kuli buah. Metode yang digunakan adalah observasi, sosialisasi, pelatihan, pembinaan dan evaluasi. Berdasarkan pengabdian yang telah dilaksanakan, Sipujuk Farm sudah mendapat merealisasikan pembuatan MOL yang ekonomis dan berkualitas dari limbah kulit buah terutama kulit nenas dan memproduksi pupuk organik yang berkualitas dan dapat dijual secara komersil

Abstract

This community service (PKM) activity aimed to increase the knowledge and skills of breeders in processing and preserving agricultural waste as a solution for feed security. The specific objective to be achieved was to increase livestock production through the provision of feed according to livestock needs, both in terms of quality and quantity. This PKM activity was carried out at the Harapan Sejahtera Farmer Group located in Aia Pacah Village, Koto Tangah District, Padang City. Counseling and practice provided to breeders were in the form of processing Sweet Corn Straw Silage (Zea mays saccharata Sturt) and Rice Straw (Oryza sativa) into Ammoniation. The method used in empowering the target group was learning techniques in the form of providing theory, counseling and practice to members of the target group. The result of this activity showed that the Harapan Sejahtera Farmers Group can provide motivation to farmers to process agricultural waste into quality feed. After counseling, farmers become aware and motivated in processing agricultural waste into quality feed for feed security, especially in the dry season. In addition, managing agricultural waste, and turned it into beneficial products with economic value.

Abstract

Tujuan kegiatan Pengabdian kepada Masyarakat adalah meningkatkan pengetahuan dan keterampilan petani peternak dalam mengolah danmengawetkan limbah pertanian sebagai solusi ketahanan pakan. Target khusus yang ingin dicapai antara lain peningkatan produksi ternak melalui penyediaan pakan sesuai kebutuhan ternak baik dari aspek kualitas maupun kuantitas. Kegiatan PKM dilaksanakan di Kelompok Tani Harapan Sejahtera yang berlokasi di Kelurahan Aia Pacah, Kecamatan Koto Tangah Kota Padang. Penyeluhan dan praktek yang diberikan kepada peternak adalah pengolahan silase jerami jagung manis (Zea mays saccharata Sturt) dan Jerami padi (Oryza sativa) menjadi amoniasi. Metode yang digunakan dalam melakukan pemberdayaan kelompok sasaran adalah teknik pembelajaran dalam bentuk pemberian teori, penyuluhan dan praktek kepada anggota kelompok sasaran. Luaran dari pengabdian ini adalah Kelompok Tani Harapan Sejahtera dapat memberikan motivasi kepada peternak untuk mengolah limbah pertanian menjadi pakan berkualitas. Setelah dilakukan penyuluhan peternak menjadi paham dan termotivasi dalam mengolah limbah pertanian menjadi pakan berkualitas untuk ketahanan pakan khususnya di musim kemarau. Luaran lain dari pengabdian ini adalah mengelola limbah pertanian menjadi produk yang bermafaat dan bernilai ekonomi. Abstract

Kelopak Bunga telang (Clitoria ternatea) mempunyai pigmen antosianin yang dapat digunakan sebagai alternatif pewarna alami untuk memberikan warna ungu-biru. Tujuan penelitian adalah untuk mengetahui pengaruh pemberian bunga telang terhadap sifat fisikokimia keju Mozzarella. Metode penelitian yang digunakan adalah Rancangan Acak Kelompok (RAK) dengan 5 perlakuan dan 4 ulangan. Perlakuan terdiri dari A=0%, B=0,25%, C=0,50%, D=0,75% dan E=1,00%. Variabel yang dilihat meliputi sifat kimia (antosianin dan pH), sifat fisik (nilai b*), kualitas mutu hedonik dan kualitas hedonik. Pemberian bubuk bunga telang memiliki pengaruh pada kandungan antosianin, nilai b*, nilai pH, warna, tekstur dan rasa. Namun, pemberian bubuk bunga telang tidak memiliki pengaruh pada mutu hedonik aroma. Persentase bubuk bunga telang yang memiliki pengaruh terbesar pada pengujian warna terdapat pada perlakuan E (1,00%) dengan rata-rata kadar antosianin (27,18) mg/g, nilai b* (-18,66), nilai pH (5,58) dan uji skor tinggi subjek pada tingkat tekstur hedonis (4,93) dan rasa hedonis (4,63). Pemberian bubuk bunga telang sebanyak 1,00% pada keju Mozzarella menjadikan kandungan antosianin tertinggi, warna terbiru, serta tekstur yang sangat disenangi panelis.

Abstract

This research aimed to overview the buffalo farming business profile in Matur District and analyze its development problems. Data were obtained using the snowball sampling method by interviewing 148 buffalo farmers and observing their farming. The parameters measured were: 1) farmer demographics, 2) profile of buffalo farming business, and 3) buffalo farming practice. The results showed that the buffalo farming business in Matur District was 58.78% managed by farmers aged 25-54 years, and most of their education was elementary school (54.05%). The farmers were quite experienced in raising buffaloes (18.46 years), but the average ownership was low (1.80 heads or 0.81 Livestock Units). Most of the buffaloes' business system is a profit-sharing system (57.43%). The feed given to buffaloes was mostly natural grass (78.38%), the rearing system was carried out semi-intensively (69.59%) and intensively (30.41%), and only 54.73% of farmers provided buffalo houses. The main constraint in the buffalo farming business development in Matur District was poor farming practices, shown by the low level of technical aspects implementation (38.60%). Most buffalo mating system was natural system (96.39%). Stud limitation availability was the main constraint in buffalo reproductive management, which affected high mating costs (reached IDR 20,000-300,000/conception) and inbreeding cases (15%). Farmers' knowledge about diseases could have been higher, and the buffaloes never got vaccinated. In conclusion, the buffalo management system in Matur District was low, and thus improvement is necessary.

Abstract

Telur itik asin merupakan produk telur tradisional yang populer diantara beberapa produk telur yang terbatas ditemukan di banyak negara Asia. Penambahan kuning telur asin dalam formulasi saus untuk mengembangkan saus berbahan dasar telur asin telah dilakukan. Rancangan Acak Kelompok digunakan sebagai desain penelitian. Penelitian ini dibagi menjadi lima perlakuan (20, 40, 60, 80, and 100% kuning telur asin terhadap susu yang digunakan). Parameter yang diamati adalah kelembaban, pH, warna (L*, a*, b*), dan intensitas sensori (warna dan tekstur). Hasil penelitian menunjukkan bahwa penambahan kuning telur itik asin berpengaruh terhadap kadar air, pH, warna instrumental (L*, a*, b*), dan intensitas warna dan tekstur (P kecil dari 0,05). Kadar air dan lightness sampel menurun dengan persentase penggunaan kuning telur asin yang lebih tinggi (P kecil dari 0,05). Sebaliknya, pH, redness, yellowness, intensitas warna, dan intensitas tekstur meningkat (P kecil dari 0,05). Penambahan kuning telur asin dalam saus dapat diterapkan untuk memberikan pilihan jenis saus yang bervariasi bagi konsumen.

Abstract

The livestock market in Payobasuang is an important animal market in the middle area of West Sumatra, mostly for cattle and buffalo trading. Research about the characteristics of this livestock market was conducted using a survey method. Data on trader demographics and livestock trading were collected from 30 traders. In demographics, all traders are men with an average age of 46.10 years old and 26.13 years of experience; 73.33% of them select this business as their primary occupation, and most of them have a vehicle to bring the animal (86.67%). Most traders' last education was elementary school (33.33%) and junior high school (33.33%). In livestock trading, most animals were obtained from livestock farmers (86.67%), and cash payments were mainly used (76.67%). For qurban and cattle racing, the female animal was preferred (65.93% and 100%, respectively), while the male was favored for the fattening animal (66.67%). In summary, the livestock market and traders are important in supplying livestock from smallholders to consumers.

Abstract

Community service in Nagari Saniangbaka, X Koto Singkarak, Kabupaten Solok was conducted. This project was divided into three activities, i.e., extension of healthy and nutritious foods; extension of safe, healthy, authentic, and halal foods; and training of salted egg manufacturing. Students of SD Negeri 20 Saniangbaka, MTs Muhammadiyah Saniangbaka, and women of the Sumpadang clan were chosen to participate in these three activities, respectively. For the first and the second activities, the students were involved in a short talk, discussion, quiz, and distribution of UHT milk. For the third activity, the women were trained to make salted eggs by applying two processing methods, i.e., coating paste and immersion in brine solution. In general, those activities were run well with positive participant responses. The two former activities could improve the knowledge and awareness of the students in choosing and consuming the food. At the same time, the latter activity furnishes women with the ability to make various egg products for family consumption. Also, it prepares the essential knowledge that could be developed into an entrepreneurship option.
