Abstract

Nutrition potential and availability of pumpkin and cork in Indonesia are abundant, so diversification of pumpkin and cork fish in biscuit making is expected to be a more nutritious food alternative. This study was an experimental study using a complete randomized design consisting of three treatments, one control and two replications. This study was conducted in January - June 2016. Observations were made on organoleptic characteristics and protein content of biscuits. The subjective observation result using organoleptic test showed that the level of panelists preference for color and texture was on treatment A (control) without the addition of pumpkin and cork fish. As for the aroma and taste with the best result is on the treatment of C with the ratio of pumpkin and cork fish (20 g: 20 g). The highest protein content was found in D treatment with the addition of pumpkin and cork fish (30 g: 30 g). Based on the results of research conducted, the addition of yellow squash and cork fish affect the color of biscuits and protein content of biscuits.

Abstract

Leaf avocado (Persea americana, mill) and Banana Mas (Moses sp) is a plant that has high potassium content and low levels of sodium. The purpose of this research is to analyze the effect of addition of avocado leaf extract to organoleptic quality and potassium banana pudding level. Type of research is true experimental with completely randomized design method. The data used was obtained directly from 25 semi trained panelists. Data analyzed by using ANOVA, if different real continued with Test Duncan. Addition of Leaf avocado and Banana Mas affect the levels of acceptance in terms of color, aroma and flavor but does not affect the texture. Addition of eggs also affects the level of potassium. Best assessment results obtained on treated banana with the addition of avocado leaf extract as much 250 ml ©. Potassium content of pudding with adding leaf avocado 0, 200ml dan 250ml respectively 0,0365 %, 0,0577 %, 0,0790 %

Abstract

Mothers’ knowledge, attitude, breasfeeding behaviour and complementary feeding practices  are important to minimize the effects of morbidity and mortality associated with diarrhea diseases. This study aims to determine the factors associated with the incidence of diarrhea inchildren aged 0-24 months.  The research is quantitative analytic survey through cross sectional approach.The total number of respondents were 60 respondents through purposive sampling technique.Analysis of data in this study using chi-square statistic.  This research result indicates that mother’s knowledge (p-value = 0,15) and attitude (pvalue = 0,49) are not relationship with the occurrence of diarrhea. However, breastfeeding behavior (p-value = 0,004) and Complementary feeding practices  (P-value = 0,00) are associationsignificantly with diarrea in children aged 0-24 months who hospitalized at Islamic hospital "Ibnu Sina" Yarsi in Payakumbuh.  It is expected that mothers with children under five to pay attention to the give the best and healthy behavior of  breastfeeding and Complementary feeding practices  so that children not suffer some disease especially diarrhea.  Keyword: mother’s knowledge, mother’s attitude, breastfeeding behavior, complementary feeding practices, diarrhea

Abstract

Diarrhea is the second leading cause of death in children under five years. Diarrhea disease in children is the most cases of disease that exists in the Islamic Hospital "Ibnu Sina" YARSI in Payakumbuh, West Sumatra. Diarrhea cases recorded as much as 32.25% are children under the age of two years.               This study aims to determine the factors associated with the incidence of diarrhea in children aged 0-24 months. This study was conducted on 16 March - 16 May 2017 using a quantitative approach to the cross-sectional design. The population is the mother who has children aged 0 - 24 months who hospitalized at Islamic hospital "Ibnu Sina" Yarsi in Payakumbuh, West Sumatra. Samples taken as many as 60 peoples with accidental sampling technique. Univariate analysis performed to present the frequency distribution table. Bivariate analysis using  chi-square statistical test.               The result of the univariate analysis showed that 41.7% of children who were treated 0-24 months old had diarrhea, 55.0% of respondents had good knowledge of diarrhea, 53.5% of respondents had positive attitude related to diarrhea, 50.0% Both about breastfeeding and 55.0% have a bad attitude related to the provision of MP-ASI. The result of Bivariate is no relationship of knowledge with the occurrence of diarrhea (p-value = 0,148), there is no relationship of attitude with diarrhea (p-value = 0,484) and there is a relationship of breastfeeding behavior (p-value = 0,004) and the behavior of  MP-ASI with diarrhea occurrence (P-value = 0,000).               It is expected that mothers with children under five to pay attention to the behavior in breastfeeding and giving of breast milk is also about children's health in general so that children avoid disease.

Abstract

Kondisi pandemi Covid-19 saat ini akan semakin memperburuk kondisi anak stunting jika ibu atau pengasuh anak tidak memperhatikan pengasuhan anak yang layak. Tujuan dari penelitian ini yaitu menganalisis perbedaan pengetahuan dan sikap ibu tentang ASI Ekslusif dan MP ASI setelah diberikan.edukasi gizi berbasis media sosial. Penelitian ini merupakan eksperimen semu dengan desain adalah quasy experimental pre-post test with control group design. Sampel sebanyak 30 ibu dibagi menjadi dua kelompok yaitu kelompok intervensi dan kelompok kontrol. Penelitian dilakukan pada bulan Juli-September 2020. Analisis data dilakukan dengan uji paired sample T-test karena data terdistribusi nornal. Hasil penelitian menunjukkan bahwa ada perbedaan yang signifikan antara pengetahuan ibu tentang ASI eksklusif sebelum dan sesudah intervensi (p = 0,036) dengan sikap dalam pemberian MP ASI (p = 0,013). Namun, tidak ada perbedaan yang signifikan pada pengetahuan MPASI sebelum dan sesudah pendidikan masing-masing (p = 0,78) dan Sikap ibu tentang ASI ekslusif  (p = 0,86). Edukasi gizi melalui WhatsApp group efektif untuk meningkatkan pengetahuan ibu dalam memberikan ASI eksklusif dan sikap ibu dalam memberikan MP ASI.

Abstract

Consumption of food with balanced nutrition and consumption of food that is safe for school children is important to be concerned about because it greatly impacts the health of children. SDN 39 Pasar Ambacang is one of the primary schools in Kuranji District, Padang City. Based on the results of direct observation about schools, PJAS is quite widely available. Such as PJAS published by school children such as colorful syrup ice, fried sausages / grilled and fried / grilled meatballs. Observation of the nutritional status of school children in SDN 39 Pasar Ambacang there are some obese children and some are very thin and small. The purpose of this community service is to increase school children's knowledge about healthy snacks and balanced nutrition. The method is conducting nutrition education and evaluating increasing students' knowledge using a questionnaire. This event starts with introduction and starts with a pre test. The next activity is nutrition education consisting of materials and simulations in preparing a balanced nutritional menu and choosing healthy snacks with a model of food media, post-test, and question and answer prizes with community service participants. Participants were enthusiastic in participating in the activity. From the pre-test and post-test results it was concluded that there were significant differences between the level of knowledge before and after nutrition education.

Abstract

Consumption of healthy snacks in children is very important to note, this is because it will have an impact on the health and nutritional status of the child. The nutritional status of children will affect the quality of human resources from school to productive age. The purpose of this activity is to increase the knowledge of junior high school students about healthy snack menus based on local food. The method of this activity is to conduct nutrition education and evaluate the increase in student's knowledge by using a questionnaire. This activity begins with an introduction and continues with a pre-test. Furthermore, nutrition education in the form of providing interesting materials and videos in choosing healthy snacks based on local food, post-test, discussion, and question and answer. To increase the enthusiasm of the participants, prizes were given. The results of the activities obtained by nutrition education at SMPN 2 Bayang can increase the knowledge of junior high school children about how to choose healthy snacks based on local food. This can be seen from the difference in the level of students' knowledge before (pre-test) and after (post-test) regarding the nutrition education provided. Besides, when students are served some snacks, students can choose and explain healthy and unhealthy foods. Some of the various local snacks and processed forms such as sweet potatoes, corn, taro can also be described in detail by students. From the activities that have been carried out, it can be concluded that nutrition education increases student’s knowledge about how to choose healthy snacks based on local food.

Abstract

Keamanan pangan merupakan suatu hal yang harus diperhatikan karena dapat berdampak pada kesehatan, baik bagi anak-anak maupun orang dewasa. Menurut data dari Badan Pengawas Obat dan Makanan (BPOM), sepanjang tahun 2012, insiden keracunan akibat mengonsumsi makanan menduduki posisi paling tinggi, yaitu 66,7%. Kelurahan Koto Baru merupakan salah satu kelurahan yang berada di Kecamatan Lubuk Begalung, Kota Padang. Berdasarkan hasil pengamatan langsung di lapangan cukup tinggi minat masyarakat dalam membeli tahu, akan tetapi masyarakat dalam membeli tidak memperhatikan kondisi tahu tersebut. Untuk itu tim pengabdian tertarik dalam melakukan pengabdian kepada masyarakat tentang edukasi gizi cegah COVID-19 dan pemanfaatan tusuk ajaib dalam upaya pemilihan makanan bebas dari formalin. Pengabmas ini bertujuan untuk melakukan peningkatan pengetahuan masyarakat tentang gizi untuk cegah COVID-19 dan pemanfaatan tusuk ajaib dalam upaya pemilihan makanan bebas dari formalin. Metode pengabdian yaitu melakukan edukasi gizi dengan penyuluhan dan melihat vidio cara memilih makanan bebas dari formalin. Pengabdian diawali dengan perkenalan oleh tim pengabmas. Kegiatan selanjutnya adalah edukasi gizi kepada masyarakat tentang kriteria makanan yang sehat dan aman untuk kesehatan serta menonton vidio cara membuat tusuk ajaib untuk mendeteksi makanan bebas formalin. Selanjutnya membagikan leaflet tentang bahaya formalin dan tanya jawab dengan peserta pengabdian masyarakat. Peserta antusias dalam mengikuti kegiatan

Abstract

Permasalahan yang dihadapi “Els Cake” yaitu belum memiliki SIUP (Surat Izin Usaha Perusahaan) karena masih dikelola perorangan dan juga belum ada label halal. Dari aspek produksi yaitu karena belum adanya SIUP “Els Cake” mengalami kesulitan dalam mendapatkan modal usaha karena SIUP merupakan salah satu syarat untuk pinjaman modal usaha. Dari segi manajemen usaha, “Els Cake” belum memiliki struktur manajemen karena masih perorangan. Dari segi pemasaran masih bersifat tradisional, dan belum memanfaatkan pemasaran online untuk promosi dan penjualan. Walaupun ada akun Instagram belum optimal penggunaannya. Tujuan kegiatan ini yaitu untuk membantu mitra “Els Cake” untuk berkembang 3-5 tahun kedepan. Kegiatan direncanakan dilakukan dengan tatap muka ke lokasi dan dibarengi dengan pertemuan virtual secara daring karena masih dalam kondisi pandemik Covid 19. Tahap kegiatan pertama yaitu analisis kelemahan dan permasalahan usaha mitra, pertemuan tim dalam penyusunan rencana kegiatan akan dilakukan secara virtual menggunakan Zoom Meeting. Pembahasan rencana pengembangan dan penyepakatan pengembangan rencana kegiatan 3-5 tahun bersama mitra “Els Cake” direncanakan tatap muka dan pertemuan virtual dengan mendatangkan narasumber di bidang produksi, manajemen dan pemasaran. Hasil dan luaran yang diperoleh yaitu rencana program pengembangan mitra 3 tahun ke depan, rencana program pengembangan yang disepakati bersama mitra “Els cake” yaitu dari segi produksi, pemasaran dan manajemen usaha perlu untuk dibina dan didampingi. Luaran yaitu publikasi media massa dan video kegiatan terpublikasi di YouTube.
