Abstract

Indonesia is a country with rich biodiversity, including javanese turmeric (Curcuma xanthorrhiza Roxb.), which can be used as a food additive, such as in snack bars. The research aims to determine the optimal addition of javanese turmeric powder and baking duration for snack bars with the best antioxidant properties. The study employs a completely randomized design (CRD) with two factors: variations in javanese turmeric powder addition (1.5, 3, and 4.5 g) and baking duration (20, 25, and 30 minutes). The best treatment identified from the research is the addition of 3 g of javanese turmeric powder and a baking duration of 20 minutes, showing significant differences in texture, color, and overall preference. The color preference scores at 3.40, aroma at 3.20, taste at 3.16, texture at 3.48, and overall rating at 3.32. Chemical analysis of the selected snack bars resulted in a water content of 5.66%, protein content of 8.16%, and antioxidant activities measured by DPPH (1,1-Diphenyl-2-Pickrylhydrazyl) and FRAP (Ferric Reducing Antioxidant Power) at 60.92% and 10.48 mg E ferro/g, respectively. Additionally, the phenolic content was found to be 50.49 mg GAE/g. These findings indicate that snack bars with added javanese turmeric exhibit health-promoting antioxidant properties.

Abstract

Temulawak, also known as Curcuma xanthorrhiza Roxb., is a long-used medicinal plant that is frequently utilized as an ingredient in traditional medicine. At harvest, the ginger rhizome has 80–90% water content. When ginger is harvested with a high water content, its quality declines and its selling price drops. The purpose of this study is to ascertain how variations in the concentrations of sugar and water affect the color and chemical characteristics of temulawak powder.  Water content, flavonoid and tannin levels, and antioxidant activity were all tested as part of the analysis. The data was statistically calculated using the Complete Randomized Block Design, and analysis of variance (ANOVA) was carried out at a 95% confidence level. whether the actual differences in each therapy were shown by the Duncan Multiple Range Test (DMRT). The findings demonstrated that the water content, flavonoid levels, tannin levels, and antioxidant activity are all significantly impacted by the amount of water and the addition of sugar. When 100 ml of water and 100 g of sugar are mixed together, the temulawak powder's water content is 3.01%, its flavonoid content is 1.73 mg GAE/g bk, its tannin content is 10.99 mg/100g, and its antioxidant activity is 83.30% RSA.

Abstract

Javanese turmeric (JT) or Curcuma xanthorrhiza Roxb. is rhizome possessing bioactive components such as curcuminoids and xanthorrizhol that are soluble in various solvents. Therefore, this study aimed to evaluate the antioxidation properties of JT extract with various solvents for extraction. The method used was a Completely Randomized Design (CRD), with variations of pressure blanching time (0, 2.5, 5; 7.5, and 10 minutes) and solvents (80% methanol, 80% ethanol, and 80% acetone). Antioxidation properties were determined comprising antioxidant activity (DPPH (2,2-diphenyl-1-picrylhydrazyl) and FRAP (Ferric Reducing Antioxidant Power), phenol, flavonoid, β-carotene, curcumin, and tannin. The results showed that at a pressurized blanching time of 5 minutes, JT extract had the highest antioxidant activity. By using DPPH and FRAP methods with 57.31% RSA and 7.91 mg Ferro E/g, the highest antioxidant activity was also obtained in 80% ethanol solvent. Furthermore, phenol, flavonoid, β-carotene, tannin, and curcumin contents were 48.70 mg GAE/g, 7.28 mg QE/g, 243.83 μg/g, 2.44 ppm and 1.81%, respectively. This study showed that JT subjected to pressurized blanching had higher antioxidant activity than the fresh sample.

Abstract

Turmeric is a spice that contains curcuminoid compounds with various benefits for body health. Meatballs are a food that is loved by the community and is generally made from beef. Beef has high levels of cholesterol and saturated fatty acids.  The use of catfish has the advantage of being cheaper and lower in cholesterol and the addition of turmeric is expected to produce meatballs that have antioxidant activity. The purpose of that study was to determine the effect of the addition of turmeric powder and catfish meat variations on antioxidant activity and fish balls preference. A 2-factorial Complete Random Design (RAL) was used with the addition of turmeric powder (1; 1.5; and 2 g) and a variety of catfish meat (50; 75; and 100 g). Fish meatballs were evaluated physically (color and texture), level of preference (color, texture, taste, aroma, and overall), as well as chemical analysis on the selected meatballs (moisture content, ash content, protein content, fat content, antioxidant activity of the DPPH method, total phenols, and flavonoids). The results showed that the combination of 2 g turmeric powder and 100 g catfish meat resulted in selected fish balls based on preference tests. The results of the analysis of selected meatballs showed a moisture content of 66.09% b/b, ash 5.9% b/b, protein 38.62% b/b, fat 8.77% b/b, antioxidant activity of 28.20% RSA, total phenol 4.96 mg EAG/g db, and flavonoid content of 0.58 mg EK/g db . Fish balls with varying proportions of catfish meat and the addition of turmeric powder significantly affected the physical properties (color and texture) and had a notable impact on the acceptability and chemical properties of the catfish fish balls. Abstract

Kunir putih pada pempek dapat berfungsi sebagai pangan fungsional karena memiliki aktivitas antioksidan, anti bakteri, anti inflamasi dan anti kanker. Tujuan penelitian ini yaitu untuk mengetahui pengaruh penambahan bubuk kunir putih dan lama perebusan terhadap sifat fisik, kimia dan tingkat kesukaan pempek yang dihasilkan. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) 2 faktor, yaitu perlakuan penambahan bubuk kunir putih (2,5; 5; dan 7,5 g) dan lama perebusan (10; 15; dan 20 menit). Pempek yang dihasilkan dilakukan uji fisik, uji kimia (sampel terpilih), dan uji tingkat kesukaan. Data diolah menggunakan statistik ANOVA pada tingkat kepercayaan 95%. Hasil penelitian menunjukkan penambahan bubuk kunir putih dan lama perebusan berpengaruh nyata terhadap sifat fisik dan tingkat kesukaan pempek. Produk pempek terpilih yaitu dengan penambahan bubuk kunir putih 7,5 g dan lama perebusan 10 menit yang memiliki kadar air 62,67%, kadar abu 2,61%, kadar protein 19,96%, lemak 0,01% aktivitas antioksidan DPPH 3,03% RSA, fenol total 1,59 mg EAG/g bk, dan flavonoid total 0,59 mg EK/g.

Abstract

Nugget ikan adalah sajian kuliner dengan bahan baku ikan yang dihaluskan, dicampur tepung dan dibentuk menarik untuk menggugah selera. Penambahan bubuk kunir putih pada nugget lele dumbo dapat berfungsi sebagai pangan fungsional karena memiliki aktivitas antioksidan. Tujuan penelitian menghasilkan nugget lele dumbo dengan penambahan bubuk kunir putih dan lama pengukusan yang tepat dan disukai panelis serta memiliki aktivitas antioksidan. Rancangan Acak Lengkap (RAL) 2 faktorial yang digunakan, dengan faktor penambahan kunir putih sebesar 2; 4; 6% dan lama pengukusan 15; 30; 45 menit. Nugget lele dumbo selanjutnya diuji fisik, kimia dan uji tingkat kesukaan. Data yang diperoleh diuji statistik dengan Univariate Analysis of Variance dan Oneway Anova jika ada beda nyata dilanjut uji DMRT dengan tingkat kepercayaan 95%. Penambahan kunir putih dan lama pengukusan berpengaruh nyata terhadap sifat fisik dan tingkat kesukaan nugget lele dumbo. Nugget yang mempunyai konsentrasi penambahan bubuk kunir putih dan variasi lama pengukusan yang disukai dilakukan uji proksimat dan aktivitas antioksidan. Hasil penelitian menunjukkan bahwa panelis menyukai nugget lele dumbo dengan penambahan bubuk kunir putih 4% dan lama pengukusan 15 menit memiliki kadar air 56,09% bb, abu 2,88%, protein 12,52%, lemak 7,57%, aktivitas antioksidan 9,04% RSA, fenol 2,44 mg EAG/g bk dan flavonoid 0,51 mg EK/g bk.

Abstract

Kunir putih (Curcuma mangga Val.) merupakan rempah yang mengandung senyawa bioaktif dan bermanfaat bagi kesehatan yang memiliki aktivitas antiinflamasi, antioksidan, serta antimikroba sehingga dapat ditambahkan dalam bakso ikan kakap yang merupakan produk olahan dengan kandungan protein tinggi dan rendah lemak. Penelitian ini bertujuan untuk meningkatkan kualitas fungsional bakso ikan melalui penambahan bubuk kunir putih sebagai sumber antioksidan dan bioaktif seperti fenol dan flavonoid. Variasi konsentrasi bubuk kunir putih (2; 4; 6 g) dan ikan kakap (50; 150; 250 g) diuji menggunakan Rancangan Acak Lengkap (RAL) dua faktorial. Uji fisik meliputi tekstur dan warna, sementara uji kimia pada sampel terpilih (250:6 g) mencakup kadar air, abu, lemak, protein, aktivitas antioksidan, fenol total, dan flavonoid. Uji kesukaan dilakukan dengan metode hedonic test untuk menilai atribut warna, aroma, rasa, tekstur, dan keseluruhan.Data dianalisis menggunakan ANOVA, dilanjutkan dengan uji DMRT pada tingkat kepercayaan 95%. Berdasarkan uji kimia, hasil penelitian menunjukkan bahwa penambahan bubuk kunir putih secara signifikan memengaruhi warna, tekstur, dan tingkat kesukaan bakso ikan dengan formulasi terbaik diperoleh pada 250 g ikan kakap dan 6 g bubuk kunir putih, dengan kadar air 35,64%, kadar abu 1,71%, kadar protein 28,26%, kadar lemak 2,09%, aktivitas antioksidan 10,91% RSA, fenol total 2,65 mg EAG/g, dan flavonoid 0,52 mg EK/g.

Abstract

The scientific name of Curcuma mangga Val. (CM), that is commonly known as temu mangga, contains polyphenols, categorized as antioxidant compounds. These antioxidant compounds can neutralize free radicals. The study aims to determine the influence of rhizome parts and soil types on the antioxidant properties of CM. The research stages include sorting, peeling, washing, blanching, drying, and compositional analysis (antioxidant activity, total phenolic, flavonoid, and tannin). The study utilized a Completely Randomized Design (CRD) with rhizome parts (main, 1st tiller, and 2nd tiller) and soil types (clay, lime, and sand) as variables. Both rhizome part and soil type have significant effects on the antioxidant activity and antioxidant compounds of CM. The chosen CM, specifically the main rhizome with clay soil type, exhibits an antioxidant activity of 82.50% RSA, total phenolic of 647.50 mg GAE/100 g db, flavonoids of 620.2 mg QE/100 g db (dry basis), and tannins of 167.07 mg CE/100 g db.

Abstract

This article aims to describe the role of the Village Empowerment Team (Tim Pemberdayaan Desa Binaan = PDB) in efforts to empower Banyuraden Village, Sleman Regency, DIY through strengthening product’ brand image. Until now, the village has not had a product that can be a village characteristic. In fact, there has been a product produced since the seventies, namely lapis legit. Efforts to brand the product are carried out by increasing understanding of brand image, implementing controlled production, redesigning packaging, marketing strategies, and managing sustainable businesses. The results of this activity show an increase in business actors' awareness of the importance of brand image in attracting consumers and expanding the market. Strengthening brand image is expected to not only increase sales, but also create a distinctive identity for village products that can be an attraction in a wider market. Through this activity, strengthening product’ brand image has proven to be one of the effective steps in empowering village communities, increasing economic independence, and developing local potential more optimally.

Abstract

Tempeh is one of the foods made from soybean seeds or other ingredients that are processed through fermentation. Tempeh currently circulating in the community does not contain probiotic yeast, the addition of probiotic yeast is intended to provide probiotic properties to tempeh. From previous studies, yeast isolates from radishes and tomatoes have been identified as potential probiotic yeasts. This study aimed to determine the effect of adding the type of probiotic yeast isolate and fermentation time on the number of fungi, the number of yeasts, pH, antioxidant activity, and the level of preference by panelists for the resulting probiotic tempeh. This study used a completely randomized design with a factorial pattern. The first factor was the type of probiotic inoculum (Saccharomyces boulardii, yeast isolate LBK K, yeast isolate TMT 2), and the second factor was incubation time (0 hours, 24 hours, and 48 hours). The analysis included the number of fungus and yeast (plate count agar), antioxidant activity (radical scavenging activity (%), and preference level for probiotic tempeh. The data obtained were analyzed for variance (ANOVA) at a 95% confidence level. If there was a significant difference between each treatment was continued with Duncan's multiple range test (DMRT). The results showed that adding probiotic yeast type and a long incubation time affected the microbiological properties, antioxidant activity, and panelist preference. The most preferred tempeh was tempeh with the addition of LBK K isolate with an incubation time of 48 hours with a pH of 5.46, the total number of fungi was 6.62 log CFU/g, the total amount of yeast was 8,63 log CFU/g, the antioxidant activity was 18.58% RSA. Tempeh, with the addition of LBK K yeast isolate, has the potential as a probiotic food.
