Abstract

Tujuan Penelitian adalah menentukan jenis dan konsentrasi alkali untuk menghasilkan chitosan dengan nilai derajat deasetilasi  dan pengaruhnya terhadap kualitas edible film berbahan campuran kappa, iota caragenan dan chitosan. Diduga Chitosan yang diberi perlakuan variasi jenis alkali (KOH dan NaOH) dengan konsentrasi berbeda (55%, 60%, 65%)  memberikan pengaruh berbeda nyata terhadap DD Chitosan yang berbeda. Sedangkan Chitosan dengan DD berbeda yang digunakan sebagai bahan campuran pada pembuatan edible film  diduga memberikan pengaruh berbeda nyata terhadap kualitasnya.Hasil penelitian menunjukkan bahwa Jenis dan konsentrasi alkali berpengaruh signifikan terhadap nilai derajat deasetilasi chitosan dengan nilai derajat deasetilasi chitosan tertinggi didapatkan dengan perlakuan NaOH 65% sebesar 84,36%. Nilai derajad deasetilasi chitosan berpengaruh sangat nyata terhadap kadar air, elongasi, kuat tarik, ketebalan dan transmisi uap air edible film. Kualitas edible film yang dipengaruhi DD chitosan tertinggi  sebagai bahan campuran edible film adalah Kadar air 10,83% - 17,67%;, elongasi 6,95% - 8,58%;;, kuat tarik 41,07 N/cm2 - 72,76 N/cm2, ketebalan 39,86 µm - 58,67 µm dan transmisi uap air edible film 05 0,26 g/m2jam - 0,26 g/m2jam.

Abstract

Putu mayang merupakan salah satu pangan tradisional khas Jakarta. Salah satu usaha untuk meningkatkan gizi putu mayang adalah dengan fortifikasi bubur rumput laut Eucheuma cottonii. Tujuan penelitian ini adalah untuk menetapkan kadar serat pangan putu mayang fortifikasi bubur rumput laut Eucheuma cottonii sebagai sumber serat pangan. Hasil penelitian menunjukkan bahwa perbedaan level konsentrasi fortifikasi bubur rumput laut Eucheuma cottonii memberikan pengaruh terhadap kadar serat pangan putu mayang. Seiring dengan bertambahnya bubur rumput laut Eucheuma cottonii kadar serat pangan bubur rumput laut Eucheuma cottonii, kadar serat pangan putu mayang semakin meningkat dan setiap level konsentrasi menunjukkan berbeda nyata. Hasil total serat pangan pada putu mayang fortifikasi bubur rumput laut Eucheuma cottonii konsentrasi 0%,10%,20%,30%,40% secara berturut-turut adalah 3,50%; 4,37%; 5,47%; 6,06%; 7,66%.

Abstract

Perairan Selat Bali secara tidak langsung dipengaruhi oleh peristiwa yang terjadi di Samudera Hindia Selatan Jawa. Variabilitas musim dan antar-tahunan dari konsentrasi klorofil-a permukaan (SSC) di Selat Bali, berhubungan erat dengan periode Indian ocean dipole (IOD) dan upwelling kuat yang terjadi di sepanjang Pantai Selatan Jawa. Penelitian ini bertujuan untuk menganalisis variabilitas musiman dan antar-tahunan secara spasial dan temporal dari klorofil-a periode IOD di Selat Bali. Data oseanografi diperoleh dari Satelit Aqua/Terra MODIS (Moderate Resolution Imaging Spectroradiometer) level 2 harian, selama periode Maret 2000-Mei 2020, dan analisis data menggunakan Empirical Orthogonal Function (EOF). Analisis EOF dilakukan pada data harian yang dikomposit menjadi bulanan dan dinormalisasi untuk mengisi data kosong. Hasil analisis EOF variasi temporal yang koheren dalam pemompaan klorofil-a di Selat Bali. Deret waktu dari mode pertama yang terbentuk mengungkapkan variasi musiman yang kuat dan variasi antar-tahunan yang relatif lemah. Mode kedua menunjukkan variasi antar-tahunan yang berbeda dengan klorofil-a yang tinggi di sepanjang pantai Selat Bali. Klorofil-a tinggi bersama dengan suhu permukaan laut yang rendah terjadi pada saat musim tenggara. Pola musiman berdasarkan analisis EOF menunjukkan mode pertama selama puncak IOD September hingga November (SON) menunjukkan klorofil-a tinggi di pantai Selat Bali. Deret waktu dari mode EOF menunjukkan korelasi yang signifikan dengan IOD. Kondisi ini terlihat selama fase puncak periode IOD bersamaan dengan monsun tenggara konsentrasi klorofil-a meningkat di sepanjang pantai Selat Bali dibandingkan pada musim sebelumnya.

Abstract

Penggunaan probiotik merupakan salah satu alternatif yang dapat digunakan oleh pembudidaya ikan patin untuk meminimalisir permasalahan yang dialami pada setiap proses budidaya. Permasalahan tersebut erat kaitannya dengan mutu dan kualitas daging ikan, sehingga para pelaku usaha budidaya membutuhkan solusi terbaik untuk tetap menjaga mutu dan kualitas hasil produksi agar tetap dapat memenuhi kebutuhan ataupun permintaan pasar. Penelitian ini fokus pada upaya menurunkan bau tanah atau off-flavours melalui penggunaan probiotik Mina Pro (Bacillus spp.) yang didominasi oleh B. Licheniformis dan B. Subtilis. Pengaplikasian probiotik melalui pakan ikan dengan dosis 10 ml/Kg pakan dan 20 ml/Kg pakan. Hasil penelitian yang diperoleh kedua perlakuan lebih baik jika dibandingkan kontrol ditinjau dari beberapa parameter meliputi: Proksimat terutama pada kenaikan protein diperlakuan 10 ml/Kg pakan (17,1%); 20 ml/Kg pakan (16,7%); jika dibandingkan kontrol yang lebih rendah (14%). Komposisi bakteri organ lambung dan usus pada perlakuan 10 ml/Kg dan 20 ml/Kg pakan lebih banyak jika dibandingkan dengan kontrol. Hasil histopatologi organ perlakun 10 ml/Kg dan 20 ml/Kg pakan lebih baik. Karena banyak terbentuk villi yang mempermudah penyerapan nutrisi pakan. Organoleptik dari daging ikan patin (punngung, ekor dan perut yang diduga muddy) pada perlakuan 20 ml/Kg pakan lebih renah. 10 ml/Kg dan 20 ml/Kg pakan memiliki nilai lebih rendah (0,2 atau masih dalam kategori sedikit muddy/kurang muddy. jika dibandingkan dengan kontrol (0,3 atau dalam kategori muddy sedang).

Abstract

The use of catfish for premium fish patties products has a weakness in the low of gel strength. The substitution of catfish with chicken is expected to solve this problem. Three substitution formulations of catfish using chicken were carried out experimentally to determine the proximate variables and physics of premium fish patties. The results showed that the substitution of catfish using chicken in premium fish patties greatly affected the physical characteristic, especially texture. This is in contrast to the results that the substitution treatment does not affect the proximate and color characteristics.

Abstract

Peta lokasi Penangkapan Ikan (Pelikan) Lemuru merupakan produk peta yang berisikan informasi spasil prediksi daerah penangkapan ikan pelagis kecil di perairan Selat Bali, khususnya ikan lemuru. Peta ini pada dasarnya memprediksi kelimpahan zooplankton, makanan utama jenis ikan pelagis kecil, termasuk ikan lemuru. Penelitian ini bertujuan untuk melakukan analisis spasial temporal prediksi kelimpahan zooplankton pada Pelikan Lemuru serta hubungannya dengan produksi perikanan di Selat Bali.   Hasil analisis deret waktu menunjukkan kelimpahan zooplankton tertinggi terjadi pada akhir musim timur, yaitu antara bulan Agustus – September dan terendah pada akhir periode musim barat (Februari - April). Variabilitas kelimpahan zooplankton pun tak dapat dilepaskan dari variabilitas kondisi laut. Anomali kondisi oseanografi pada tahun 2016 berdampak sangat signifikan terhadap kelimpahan zooplankton di Selat Bali. Kelimpahan zooplankton yang tinggi (>5.000 ind/m3) akan diikuti dengan volume produksi ikan yang cenderung tinggi pula. Namun sangat disayangkan, keberadaan Pelikan Lemuru belum dimanfaatkan secara optimal oleh pengguna. Aktivitas unduh Pelikan Lemuru rata-rata 4,33 kali unduh setiap bulan. Penyediaan data oseanografi bebas awan (free cloud) dan basis data penangkapan ikan yang valid dan akurat diperlukan untuk pengembangan Pelikan Lemuru maupun jenis ikan lainnya.Lemuru Fishing Zone Map (Pelikan Lemuru) is a map that informs spatial predictions of small pelagic fishing areas in the Bali Strait, especially lemuru. Basically, Pelikan Lemuru predicts the abundance of zooplankton, the main diet of small pelagic fish, including lemuru. The aim of this study is to conduct a spatio-temporal analysis of prediction of zooplankton abundance from the Pelikan Lemuru model and its relationship with fish production in the Bali Strait. Here, the highest zooplankton abundance occurs at the end of the southeast monsoon, which is between August - September and the lowest is at the end of the northwest monsoon period (February - April). The variability of zooplankton abundance has a strong relationship with the oceanographic variability. Anomaly conditions occurred in 2016 had a significant impact on the abundance of zooplankton in the Bali Strait. The high abundance of zooplankton (> 5,000 ind/m3) will be followed by the high volume of fish production. However, the existence of Pelikan Lemuru has not been used optimally by fishers with an average value of 4.33 downloads per month, respectively. The provision of free cloud oceanographic data and also a valid and accurate fishing database is needed for the development of Pelikan Lemuru and other fish species.

Abstract

The Mamuju River Estuary is an estuary whose role is to protect coastal ecosystems (mangroves, seagrasses, coral reefs) from the negative effects of intensification of land clearing upstream and coastal. Land clearing for various human needs encourages erosion resulting in high TSS (Total Suspended Solid) concentrations in river water bodies. This study aimed to determine the assimilation capacity of the Mamuju River estuary on TSS pollutants. The results showed that TSS concentrations still met the quality standard for marine biota (mangroves: <80 mg / l) with a lower distribution pattern when getting further away from the river mouth. The flushing time at the study site is 5.6 days so the river and seawater exchange is ± 65 times per year. The pollutant load was 586.11 tons/month. The value of the assimilation capacity reaches 255.57 tons/month. Based on these results it can be concluded that the Mamuju River estuary has experienced an overload of sediment.

Abstract

Albacore (Thunnus alalunga) is sub-tropical tuna that live in the high seas of the Pacific, Atlantic and Indian Ocean. The average catches of albacore from 2013-2017 was 36,235 ton per year. The stock status of the Indian Ocean albacore estimated near  overfished. The aims of this study  is to provide the CPUE standardization of Indonesian tuna longline operated in the Eastern Indian Ocean. This information is important to give the development indication of albacore fisheries in the Indian Ocean. Data were analyzed from onboard observer program during 2006-2018 consist of 2,811 setting. Data then will be analysis using GLM (Generalized Linear Models) include explanatory variables as supporting variables. The result showed that the explanatory variable give a significant contribution to CPUE standardization except the catch season variable This research suggests that the prepared data must include narrower area data (5 x 5 grids of longitude and latitude) and the addition of explanatory variables such as sea surface temperature, sub-surface temperature, dissolved oxygen and abundance of nutrients.

Abstract

Feed is an important factor in the success of cultivation, feed is also the component that costs the most that is about 70% of the total production cost. Therefore, it is necessary to do techniques that can increase production, one of which is by improving feed nutrition using EM4 probiotics. In addition, it can also be by applying bioflok technology that utilizes bacteria that can process aquaculture waste which is a problem in water quality into a continuously available source of fish feed.  This study aims to find out if the application of bioflok and feed technology with EM4 can increase cultivation production. There are 3 treatments that will be used, namely, P1 (bioflok application), P2 (EM4 application), P3 (without bioflok and EM4). The fish used is pearl catfish seed (Clarias gariepinus) with a size of 6.5±0.5 cm with a dense spread of 150 heads / m3. Maintenance is carried out for 30 days (1 month) with the frequency of feeding

Abstract

Women have an important role in the coastal community's family. The nutritional status of adult women is one of the determinants of the birth of a qualified national generation. Nutritional status can be analyzed by the BMI value, which is influenced by internal and external factors. This study aimeed to analyze the nutritional status of adult women on the coast of Rebo Village, Bangka Regency and to analyze the factors affecting the nutritional status of adult women on the coast of Rebo Village, Bangka Regency related to socio-economic conditions (income level, education level, daily activities).  This field research was conducted in May-August 2020. The research sample was determined by purposive sampling, 120 female respondents who came from different hamlets in Rebo village. Collecting data on nutritional status and socio-economic conditions using a closed questionnaire. The BMI value showed that 72 adult women have ideal body weight, while 48 people were not ideal. The results of the chi-square analysis showed that the level of education and the level of activity have an influence on the BMI value of adult women, while the income level does not affect the BMI value. Further research can be carried out by examining the dietary consumption patterns and health status of adult women. The results obtained can be used as a basis for making policies or programs to improve the welfare of coastal families in Rebo village, which have an impact on the ability to access the variety and quality of daily food.
