Abstract

Background: The rapid technological development has led to the emergence of gene-based nutrition services, which hold promise in reducing the prevalence of Non-Communicable Diseases (NCDs). However, a considerable portion of the population remains unaware of these innovative nutrition services. Objectives: This study aims to identify the correlation between the extent of public knowledge and their interest in gene-based nutrition services in Indonesia. Methods: This study used a cross-sectional design. This study was conducted online via the Qualtrics Survey platform during May-June 2023. The determination of the sample used a cluster sampling technique across five provinces in Indonesia. The research instrument used a questionnaire on socio-demographic characteristics and a validated structured questionnaire assessing knowledge and interest levels in gene-based nutrition services. Statistical data analysis employed the Chi-Square test. Results: This study involved a total of 439 respondents from five provinces in Indonesia. The majority of the respondents exhibited low levels of knowledge (51.7%) and interest (55.4%) in gene-based nutrition services. A statistically significant association was observed between knowledge and interest in gene-based nutrition services (p-value=0.029, PR=1.5, 95% CI=1.04-2.22). Conclusions: The findings of this study underline a relationship between the extent of knowledge and the level of interest in gene-based nutrition services in Indonesia. To increase public interest, it is necessary to increase knowledge regarding gene-based nutrition services through online media, nutritionists or print media that discuss nutrigenetics and nutrigenomics.

Abstract

Background: Rice cooking is the process of rice making with several cooking stages and types such as using rice cookers and steamers. This analog rice innovation aims to increase the nutritional value, food diversification, and functional foods. Objectives: To determine the effect of rice cooking techniques on sensory tests (color, texture, aroma, and overall appearance) and fluffiness levels between analog rice and C4 rice. Methods: This experimental research used a Completely Randomized Design (CRD) on analog rice resulting from the best treatment (P2) with an additional composition of 2 gram of Moringa flour. The cooking techniques used rice cookers and steamers for cooking both analog rice and C4 rice. A total of 25 semi-trained panelists were selected to identify sensory evaluation and the fluffiness levels of the product. The statistical analysis used the Mann-Whitney test with the help of SPSS version 23.0. Results: Cooking techniques using a rice cooker and a steamer influenced the sensory evaluation tests (color (p=0.004), texture (p=0.002), and overall appearance (p=0.006)) and fluffiness levels (p=0.004) for analog rice. However, cooking techniques did not influence the sensory evaluation test for taste (p=0.396) and aroma (p=0.058). The sensory tests such as color (p=0.607), texture (p=0.578), overall appearance (p=0.701), taste (p=0.482) and aroma (p=0.216) and the level of fluffiness in C4 rice (p=0.891) did not show differences. Conclusions: The steaming cooking technique influences the preference and fluffiness levels of analog rice. Cooking analog rice with the steaming technique is highly recommended in order to increase consumer preference.

Abstract

Background: Analog rice is an alternative food diversification that has rice-like characteristics. Various food ingredients can be utilized to produce analog rice as functional and healthy foods. Objectives: This study aims to identify the effect of cooking techniques on the phytic acid and tannin content of analogous rice (made from sorghum, mocaf, glucomannan, and moringa flour) and C4 rice. Methods: This experimental research used RAL for two treatments, namely cooking rice with a steamer and a rice cooker. This research was conducted in October-November 2022 at the Chem-mix Pratama Laboratory. The sample used analog rice and C4 rice for phytic acid and tannin content analysis using the Infrared Spectrophotometry and UV-S Spectrophotometry methods. Results: The highest phytic acid content of analog rice cooked using a rice cooker and a steamer was 6.64 mg and 4.75 mg respectively. The highest average tannin content of analog rice cooked using a rice cooker and a steamer was 18.35 mg and 19.55 mg respectively. The highest phytic acid content of C4 rice cooked using a rice cooker and a steamer was 7.43 mg and 9.01 mg respectively. The tannin content of C4 rice cooked using e rice cooker and a steamer was 4.45 mg and 9.11 mg respectively. Conclusions: The phytic acid content of analog rice is lower than in C4 rice. The tannin content of analog rice is higher than C4 rice. Tannin content reduction in analog rice needs to be studied further.

Abstract

Background: Female obesity prevalence was higher than male in 2018 at 44.4% and 26.6%, respectively, according to Badan Pusat Statistik (BPS). There is conflicting evidence on the effect of hormonal contraception on weight gain. While in Indonesia, hormonal contraception has been the most popular method. Objectives: Examining the association between hormonal contraception usage, macronutrient consumption, and nutritional status. Methods: This cross-sectional study involves 106 non-pregnant women aged 20-45 recruited using consecutive sampling methods. Respondents were grouped into hormonal and non-hormonal contraceptive users. Data analysis utilized chi-square, Fischer exact and multiple linear regression. Results: More than half (59.5%) used hormonal contraception, while 40.5% used non-hormonal contraceptives. We found no significant correlation between hormonal contraception and Body Mass Index (BMI) (p-value=0.081), waist circumference (p-value=0.789), and macronutrient intake (p-value of energy=0.0675; protein=0.758; fat=0.156; carbohydrate=0.23). There was no significant relationship between the duration of contraceptive usage and BMI (p-value=0.163 and 0.248) or waist circumference (p-value=0.282 and 0.066) for either users or nonusers. Linear regression models showed that only fat and carbohydrate intake significantly contribute to waist circumference (The adjusted R2 of the model was 0.244, F 12.3, Sig.<0.001) and BMI (The adjusted R2 of the model was 0.206, F 7.8, Sig.<0.001). Conclusions: There was a relationship between BMI, body fat percentage, junk food consumption pattern (type, frequency, amount of intake and fat), energy intake, fat intake, emotional overeating, diet attitude, and oral control of the abdominal circle. There was no significant relationship between fiber intake and abdominal circumference.

Abstract

Background: Poor nutritional status during the growth and development of toddlers is irreversible. It can affect the inadequate functioning of various body systems, including the nervous and muscular systems that play a role in motor development. The trend of food intake in agricultural areas is vegetable consumption, while low animal protein intake will affect the nutritional status and development of toddlers. Objectives: This study aimed to analyze the correlation between nutritional status and motor development in toddlers aged 24-59 months in agricultural areas. Methods: This was a cross-sectional study with a sample size of 65 subjects aged 24-59 months in Sumowono, Semarang Regency, Central Java. The variables studied were nutritional status weight-for-age z-scores (WAZ), weight-for-height z-scores (WHZ), and height-for-age z-scores (HAZ) measured using digital and microtome scales, as well as gross motor and fine motor development measurements with observations and interviews based on the Standard of Child Development Achievement (STPPA) questionnaire. Univariate and bivariate data were then analyzed statistically using the Spearman rank correlation test. Results: Based on anthropometric measurements, 10.8% of toddlers were underweight; 1.5% were overweight; 4.6% were wasting; 9.2% had a possible risk of being overweight; and 40% were stunted. A total of 15.4% of toddlers had severe gross motor delays, and 13.8% had fine motor delays. WAZ (p-value=0.003; r=0.366) and HAZ (p-value<0.001; r=0.633) had relationships with gross motor skills. Both WAZ (p-value=0.019; r=0.291) and HAZ (p-value<0.001; r=0.719) also had relationships with fine motor skills. However, there was no relationship between WHZ with gross motor (p-value=0.935) and fine motor (p-value=0.168). Conclusions: Toddlers with good nutritional status (WAZ and HAZ) will have good gross and fine motor development.

Abstract

Background: The prevalence of Autism Spectrum Disorder (ASD) in Indonesia was predicted to increase by 500 people annualy form 2010, and there are still many nutrition problems found in this group. Nutritional status in ASD is affected by several factors, including mother's education level, parenting style, knowledge of balanced nutrition and parental income. Objectives: To analyze the relationship between mother's education level, parenting style, knowledge of balanced diet and parental income on the nutritional status of persons with ASD in Special Schools in the JABODETABEK (Jakarta, Bogor, Depok, Tangerang, Bekasi) area. Methods: This study was an observational study with a cross-sectional design. The population in this study were people with ASD in Special Schools in the JABODETABEK area. Sampling was conducted using the Quota Sampling method, conducted in March-May 2023 with a total sample of 114 respondents. The data analysis used was the Spearman rank test. Results: Results showed that children and adolescent with ASD in our study had a good nutritional status (average Z-Score=0.81). The bivariate test shows that there was a fairly strong relationship between parenting style (p-value=0.007; r=0.250) and the nutritional status of children and adolescent with ASD. However, there was no relationship between the mother's education level (p-value=0.949), knowledge of balanced diet (p-value=0.728), and parental income (p-value=0.976) with the nutritional status of people with ASD. Conclusions: Parenting style shows a significant positive correlation with the nutritional status of people with ASD in Special Schools in the JABODETABEK area.

Abstract

Background: School-age children are vulnerable to nutritional and health problems. Several factors that can directly influence a child's nutritional status are nutritional intake, which includes energy and macronutrient intake, level of physical activity, and incidence of illness. Objectives: This research analyzes the relationship between energy intake and macronutrients with the nutritional status of Muhammadiyah elementary school children in Gresik Regency. Methods: This research was an observational analytical study with a cross-sectional study design. Using purposive sampling, 231 children from five Muhammadiyah elementary schools in Gresik Regency were taken as research samples. The research was carried out from May to June 2023. Research variables include energy intake, intake of macronutrients, and nutritional status. Data collection used the interview method with 2x24-hour food recall, FFQ (Food Frequency Questionnaire), and measuring body weight and height to assess nutritional status based on BMI-for-age (Body Mass Index-for-age). All research data were analyzed using the Spearman test. Results: The result showed there is a relationship between energy intake (p-value=0.000) and protein (p-value=0.000) with nutritional status, but there is no relationship between the intake of fat (p-value=0.253) and carbohydrates (p-value=0.821) with nutritional status of Muhammadiyah elementary school children in Gresik Regency. Conclusions: Intake of energy and macronutrients, especially protein, is related to the nutritional status of school children in Gresik Regency. Healthy food and snacks need to be provided in school canteens to support the nutritional status of school-age children.

Abstract

Background: Lifestyle has a role in determining a person's nutritional status, such as eating habits, smoking habits, physical activity, and alcohol consumption. Mechanics tend not to pay special attention to health, especially in their lifestyle. In addition, the majority of mechanics have high blood pressure. Therefore, the authors were concerned about their nutritional status and its relationship with the affecting factors. Objectives: To analyze the correlation of age, lifestyle, and blood pressure with the nutritional status of repair shop mechanics. Methods: This study used a cross-sectional design on 70 mechanics at 12 motorcycle repair shops in 6 districts of Medan City. Age and lifestyle data were obtained from questionnaires, blood pressure data from direct measurements using a sphygmomanometer twice with a five-minute interval, and nutritional status data from anthropometric measurements. All collected data were analyzed using Spearman's Correlation with the Kolmogorov Smirnov's normality test. Results: The bivariate test showed a significant relationship between smoking (p=0.004, r=-0.342), physical activity (p=0.000, r=-0.484), sodium intake (p=0.000, r=0.570), and blood pressure (p=0.001, r=0.382) with the nutritional status of mechanics. Meanwhile, no significant relationship exists between age (p=0.255) and alcohol consumption habits (p=0.774) with mechanical nutritional status. Conclusions: Mechanical nutritional status negatively correlated with smoking and physical activity but positively correlated with sodium intake and blood pressure.

Abstract

Background: Stunting is an unresolved health problem in the world. There were 21.6% of stunted toddlers in Indonesia in 2022, with a higher proportion in rural areas than in urban areas. The mother's role mainly caused stunting. On the other hand, the role of fathers had not been reviewed much in previous research. Objectives: This study aims to analyze the role of fathers towards stunting among toddlers in rural areas. Methods: The study had a case-control design conducted from April to October 2019. This research involved two populations, namely the control population and the cases. The control population was all non-stunted toddlers aged 24-59 months who lived in Jombang Regency, while the case population was all stunted toddlers aged 24-59 months who lived in Jombang Regency. The authors applied a multistage random sampling. The sample consisted of 79 controls and 79 cases calculated based on the two-population proportion formula. Data were analyzed using the chi-square test, fisher exact test, and logistic regression with α = 5%. Results: Fathers with low education increased the risk of toddlers becoming stunted 2.407 times higher than fathers with high education (p = 0.010; OR = 2.407; 95% CI = 1.231-4.705). Fathers from large families were 1.971 times more likely to have stunted toddlers than fathers from small families (p = 0.042; OR = 1.971; 95% CI = 1.026-3.785). Conclusions: Stunting in toddlers was significantly influenced by father's education. The size of the family also affected a toddler's risk of stunting. Increasing school age should be a priority program for preventing stunting in rural areas. In addition, health campaigns regarding pregnancy planning and birth control need to be carried out on an ongoing basis to reduce the incidence of stunting.

Abstract

Background: One of the efforts to overcome the problem of stunting in toddlers, especially in Central Lombok Regency, is to improve the nutritional status of mothers during pregnancy, especially mothers with chronic energy deficiency (KEK). The PMT program for pregnant women has been regulated in Regulation of the Ministry of Health Number 51 of 2016, where pregnant women with KEK conditions are given a nutrition improvement program that has been set by the government, namely by providing additional food (PMT) in the form of biscuits. Objectives: Developing additional food products for pregnant women in the form of biscuits using local food ingredients sourced from the koro sword bean. Methods: The research design used a randomized block design (RBD) with 3 treatments (K=3), 1 experimental unit and 3 repetitions, so the total number of trials was 3×1×3=9. Koro bean flour was also added to Canavalia Biscuit products with different doses, and then the results were analyzed, including tests of acceptability and nutrient content including energy, protein, fat, carbohydrates and calcium. Results: The results showed that adding 50 g of jack bean flour increased the acceptability of respondents in terms of color, aroma, texture, and taste. The addition of 50 g koro bean flour to Canavalia biscuit products increases the nutritional content, including energy, protein, fat, carbohydrates as well as calcium. The best nutritional content of "Canavalia Biscuits" in the group with the addition of 50% mustard greens includes energy 479 kcal, protein 26 g, fat 21.82 g, carbohydrates 76.66 g, calcium 159.70 mg. Conclusions: The proportion of the addition of jack beans flour affects the acceptability and increases the nutritional content of "Canavalia Biscuits" including color, aroma, texture and taste.
