Abstract

This study aims to determine the effect of rebon shrimp protein hydrolysate fortification (Acetes erythareus) on the quality of farfalle pasta which includes organoleptic aspects (appearance, texture, aroma, and taste) and chemical content (water content, ash, protein, fat, and carbohydrates). The method used was a non-factorial Completely Randomized Design (CRD) with four fortification concentration treatments, namely 0% (P0), 5% (P5), 10% (P10), and 15% (P15) of the weight of wheat flour. The results showed that the addition of rebon shrimp protein hydrolysate had a significant effect on all quality parameters tested. Treatment P10 was the best treatment based on a combination of organoleptic test results and nutritional content, with characteristics of bright yellow color, typical pasta aroma with a slight shrimp odor, dense and brittle texture, and delicious taste with a touch of shrimp flavor. Proximate values in P10 treatment included water content of 8.79%, ash 1.32%, protein 14.65%, fat 1.39%, and carbohydrate 73.85%. Fortification of rebon shrimp protein hydrolysate was proven to significantly improve the quality and nutritional value of farfalle pasta.

Abstract

The demand for nutritious and practical instant food products continues to increase; however, many rice flour–based instant porridges still have low protein content, indicating the need for fortification innovations to enhance their nutritional value. Rebon shrimp (Acetes erythareus) is an abundant protein source with potential use as a fortification ingredient, yet its application in the form of protein hydrolysate and the optimal concentration required to improve product quality have not been extensively studied. This study aimed to determine the effect of rebon shrimp protein hydrolysate fortification on the quality of rice flour–based instant porridge and to identify the best concentration that produces an optimally formulated product. The research employed a Completely Randomized Design (CRD) with four treatments: B0 (0%), B5 (5%), B10 (10%), and B15 (15%) addition of protein hydrolysate based on the weight of rice flour. The parameters tested included organoleptic attributes (appearance, aroma, taste, and texture) and chemical analysis (moisture, ash, protein, fat, and carbohydrate contents). The results demonstrated that fortification with rebon shrimp protein hydrolysate significantly affected all quality parameters tested. The B10 treatment produced the best quality, with scores for appearance (8.28), aroma (7.48), texture (8.39), taste (7.08), and nutritional composition including moisture (4.82%), ash (1.99%), protein (9.20%), fat (3.35%), and carbohydrates (89.15%), all of which meet the quality standards for instant porridge based on SNI 01-7111.4-2005. It can be concluded that fortification with 10% rebon shrimp protein hydrolysate is the optimal concentration for improving the quality and nutritional value of rice flour–based instant porridge.

Abstract

The mangrove ecosystem along the coast of Bulaksetra, Pangandaran, West Java, plays a crucial role in mitigating potential tsunami disasters. However, over the last five years, the Bulaksetra mangrove ecosystem area has seen intensive operation of local shrimp ponds, which has negatively impacted the growth and health of the surrounding mangrove stands. This study aims to monitor the changes in mangrove cover from 2020 to 2024 within the Bulaksetra mangrove ecosystem using Sentinel-2 satellite imagery. The methodology employed to determine the extent and condition of mangrove cover involves the analysis of the Normalized Difference Vegetation Index (NDVI) processed using the Google Earth Engine (GEE) platform. The results indicate significant habitat degradation within the Bulaksetra mangrove ecosystem, evidenced by a 96.94% loss of the Dense canopy class by 2024. This shift in density class is characterized by a transition from the Dense class to the Sparse (54.37%) and Moderate (42.58%) classes, accompanied by a 5.18% decrease in the total mangrove area. Conversely, the area occupied by shrimp ponds has continuously expanded, with a growth rate reaching 1.31 hectares per year. The expansion of shrimp ponds demonstrates a negative correlation with mangrove cover in the Bulaksetra mangrove area during the 2020 – 2024 period.

Abstract

Salted fish is one of the popular fish processing products in Indonesia. Even popular, currently, many salted fish containing formalin are found on the market. Consumption of salted fish with formalin poses serious health risks to humans. This study aimed to analyze the quality of salted fish and identify the presence of formalin in salted fish sold at the Pemalang Morning Market, Central Java. A total of 12 types of salted fish were identified at the Pemalang Morning Market, comprising 21 individual samples. These samples were tested for quality parameters including moisture content, salt content, ash content, total bacterial contamination, and Escherichia coli contamination. In addition, qualitative tests were conducted to detect the presence of formalin. If formalin was detected, quantitative analysis was subsequently performed. The test results showed that the moisture content of the samples ranged from 22.92% to 38.19% (SNI maximum limit: 40%), the salt content ranged from 12.59% to 13.94% (SNI standard: 12–20%), and the ash content ranged from 0.22% to 0.29% (SNI maximum limit: 0.3%). Total bacterial contamination and E. coli levels also complied with the SNI standards, with limits of 5×10⁵ colonies/gram and <3 MPN/gram, respectively. Formalin identification results revealed that one out of the 21 salted fish samples contained formalin, with a measured concentration of 15.35 ppm. Based on these findings, it can be concluded that the quality of salted fish sold at the Pemalang Morning Market, Central Java, generally complies with the SNI standards. However, one sample was confirmed to contain formalin.

Abstract

Silicate fertilizer is a micronutrient that is widely used by phytoplankton in its growth and development process. One type of microalgae that utilizes this nutrient is Skeletonema costatum. The growth of Skeletonema costatum is strongly influenced by the availability of nutrients, especially silicate, which functions in the formation of diatom cell walls. This research aims to determine the density level of Skeletonema costatum when applying silicate fertilizer at different doses on a laboratory scale. This research used an experimental method with four doses of silicate fertilizer, namely 3 ppm, 5ppm, 10ppm, 15ppm and 20ppm. The S. costatum culture was observed for 10 days under controlled laboratory conditions. The parameters observed were cell growth and density which were calculated every day using a hemocytometer. This research shows that applying silicate fertilizer at optimum doses can increase the growth of S. Costatum phytoplankton which is useful as natural food in aquaculture. The results of this study show that administration of silicate at a dose of 20 ppm was able to produce a cell density of 1.946.250 cells/ml. The growth of S. Costatum showed a significant increase in number, marked by the addition of 7-12 filaments. The most appropriate harvest time is in the exponential growth phase. Meanwhile, the results of measuring water quality parameters show values that are still within the optimal range for the growth of S. Costatum.

Abstract

The availability of high-quality live feeds, such as Thalassiosira sp. and Chaetoceros sp., is a critical factor for the success of shrimp aquaculture; however, it is often constrained by fluctuations in growth performance and cell density at different production scales. This study aimed to identify the growth of Thalassiosira sp. and Chaetoceros sp. at laboratory, intermediate, and mass scales. The research was conducted using an experimental method with a Completely Randomized Design (CRD) with two treatments and three replications. The treatments were different microalgae species cultured at different production scales and compared. Cell density data and growth phases were analyzed statistically using SPSS. The results showed that Chaetoceros sp. had higher growth compared to Thalassiosira sp. The cell density range of Chaetoceros sp. was 1.1×10⁷ - 5.0×10⁷ cells/mL, while Thalassiosira sp. was 1.7×10⁶ - 5.2×10⁶ cells/mL. The growth rate of Chaetoceros sp. also reached the peak of the exponential phase faster at Day of Culture (DOC) 4 compared to Thalassiosira sp., which peaked at DOC 5. Water quality during the study across all production scales showed an optimal range for the growth of both microalgae species.

Abstract

Real-time monitoring of vibration, temperature, and noise in refrigeration machines using microcontrollers is still rarely discussed, although it plays a crucial role in maintaining machine performance and supporting decision-making for predictive maintenance. This research aims to design and implement a microcontroller-based monitoring system capable of measuring and recording machine operational parameters in real-time with adequate accuracy. The system uses an accelerometer sensor for vibration detection, an infrared thermometer for temperature measurement, and an electret microphone for noise monitoring. The data is processed by a microcontroller equipped with an SD card module for storage and a WiFi connection for remote access via the web. The test results show that this device can detect changes in vibration with an Mean Absolute Error value of 0.34 m/s², temperature with a Mean Absolute Percentage Error value of 1.35%, and provides real-time data that can be accessed wirelessly through other devices connected to the WiFi network. The contribution of this research lies in providing a monitoring solution that improves operational efficiency, minimizes the risk of downtime, and supports the optimal management and maintenance of refrigeration machines.

Abstract

The study of the feasibility of vannamei shrimp (Litopenaeus vannamei)  aquaculture business is very important to be conducted  as an effort  to support  the establishment of productivee cultivation businesses and provide optimal economic benefits for the local community. The objectives of this study was to assess business income, financial feasibility based on the B/C Ratio, Break Even Point, and Payback Period, as well as sensitivity analysis. The average business income within three years was Rp 422,563,849.The financial viability of the Vannamei shrimp (Litopenaeus vannamei) aquaculture business for three years was calculated, obtaining a B/C Ratio of 0.52, a BEP volume of 13,423 kg,a BEP price of Rp 40,373.11, and a payback period of 6 years and three months.Sensitivity analysis on the increase in the price of production input costs by 10%, obtained a B/C Ratio value of 0.44, a BEP volume  14,165 kg, a BEP price of Rp 42,602 and Payback period of 7 years 1 month.The fluctuating selling price of shrimp, combined with the high death rate of shrimp in the second and third years, rendered this shrimp farming enterprise unprofitable.

Abstract

Cold chain systems are essential in maintaining the quality and safety of frozen fishery products, particularly yellowfin tuna, which has high economic value. This study evaluates the implementation of the cold chain system in the production of frozen yellowfin tuna saku at a processing company. The research was conducted using a descriptive method through direct observation and temperature monitoring across all stages of the cold chain, including receiving of raw material, processing, and cold storing. Temperature measurements were conducted on tuna, water, and processing rooms, using three tuna samples per observation, with triplicate measurements for each sample. The results demonstrated that tuna temperatures remained below the Indonesian regulatory limit of 4.4°C throughout processing, with raw material temperatures averaging 2.4 ± 0.76°C. Water temperatures during temporary storage averaged 3.5°C, while washing water ranged from 25–27°C. Room temperatures across processing areas were maintained between 22–23°C, complying with the company’s standard maximum of 25°C. The Air Blast Freezer (ABF) operated at –35 to –38.9°C, with an average of –37.76 ± 1.12°C across ten weeks, surpassing both company and national standards (≤ –18°C). Cold storage temperatures ranged from –20°C to –30°C, maintaining the product core temperature at –18°C. Although overall temperature control complied with required standards, the findings indicate the need for more stringent temperature monitoring to minimize fluctuations at several critical stages. The study concludes that the cold chain system is effectively implemented, but improvements in consistent temperature stability are necessary to further prevent quality degradation.

Abstract

Mabe pearl oyster (Pteria penguin) cultivation has great potential as an alternative source of income for coastal communities through the production of high-value pearls and value-added by-products. This study aims to analyze the technical and financial feasibility of this cultivation in the waters of Palabusa, Baubau City, Southeast Sulawesi. The research employed a case study method using primary data collected through observation and interviews, and secondary data obtained from literature studies. Data were analyzed both technically and financially. The technical analysis showed that the geographic condition of Palabusa, which is surrounded by small islands, provides natural protection from large waves. Water quality parameters, including temperature (29–31°C), salinity (31–32 ppt), transparency (6–9 m), current velocity (0.22 m/s), depth (6–10 m), and seagrass–sandy substrate, were within the optimal range for pearl oyster cultivation. The applied longline culture system (6×6 m) achieved a high survival rate of 85%. Financial analysis revealed that an initial investment of IDR 166,500,000 for floating cages, boats, and equipment was highly feasible. The Net Present Value (NPV) was IDR 232,700,884 (at a 10% discount rate), Internal Rate of Return (IRR) 60% per year, and Payback Period (PP) 1.58 years (~19 months). The Break-Even Point (BEP) was reached at 5,068 units or a selling price of IDR 9,645 per unit, generating a net profit of IDR 105,308,188 per cycle. The study concludes that mabe pearl oyster farming in Palabusa Waters is technically and financially feasible, offering high profitability and rapid investment returns, making it a promising and sustainable enterprise.
