Abstract

The study objectives were to analyze the food and beverages contribution to the total fluid intake, and the sign of mild dehydration of school age children. The cross-sectional study was applied to 78 boys and 78 girls of elementary school students in Bogor City. Two days food recall was applied to estimate fluid intake. The fluid intake was a summation of various food and beverages. The result showed beside of plain water, most of the school children used to consumed milk and tea (>70%) at home. The total fluid intake was 2283 mL for boys and 2024 mL for girls, and its contribution was 21 percent from food (430-490 mL) and 78 percent from beverages (1600-1800 mL). There are 67.4 percent boys and 62.8 percent girls suffered mild dehydration with minimum three physical signs of dehydration. There are still 18.6 percent boys and 3.5 percent girls that their fluid intake below 100% of the requirement.

Abstract

The purpose of this study was to determine nutritional knowledge, clean and healthy lifestyle behavior, and balanced diet on maternal behavior, as well as its relationship with nutritional and health status and children under 5 years health. The cros sectional study was conducted during March-April 2011. The population in this study consist of all the children under five living in Campurejo village, Bojonegoro districts East Java Province. The respondents were mothers of toddlers who were selected as samples. Total samples in this study were 55 toddlers. Abstract

The aims of study were to analyze the ecological factors such as food availability, land capacity, population density, poverty, GDP, education; and their association to the consumption of carbohydrate food sources in some rural and urban areas of Indonesia. This ecological study was conducted by analysing the 62 districts in Indonesia. The data of food consumption was part of set Riset Kesehatan Dasar (Riskesdas 2007). The data of food production, population density, poverty, GDP, and education collected from the Central Statistic Agency (BPS). The statistical test was pearson correlation and stepwise linear regression. The study shows that consumption of carbohydrate food sources in rural more than in urban area and dominated by rice. Energy contribution from carbohydrate food sources is a half of total energy contribution (55.9% in rural and 48.05% in urban). In rural area, consumption of rice, corn, cassava, and sweet potato per capita per year were 109 kg, 4.69 kg, 2.51 kg, and 0.66 kg. While in urban area, consumption of rice, corn, cassava, and sweet potato per capita per year were 95 kg, 1.24 kg, 3.51 kg, and 0.209 kg. The food availability was significantly affected to the consumption of carbohydrate food sources in rural and urban areas.

Abstract

The research objectives were to analyzed the family food security and its factors of the participants in the community empowerment program at rural area. The research design was crossectional study and the data collection technique used a survey method toward 300 families, and their specification were 140 families from the National Program of Community Empowerment (PNPM), 107 families from The Keluarga Harapan Program (PKH), 31 families from the Raksa Desa Program and 22 families from The Business Development Program of Rural Agribusiness (PUAP). The highest percentage (52.0%) of the family categorized into food vulnerable and as many as 37.3 percent was insecure category. It was found 10.7 percent families categorized into secure category. Base on the program, more than a half families of PKH group (50.5%) and PUAP (63.6%) are insecure category. Food vulnerable category is in PNPM group (60.0%) and Raksa Desa group (61.3%). The highest percentage (15.0%) thar categorized into secure category is in PNPM group. The factors which influence significantly toward the family food security are the income per capita, the family size and the asset.

Abstract

The objective of this study was to isolate oligosaccharides from local honey of Pulau Sumbawa and province of Kalimantan Timur and to analyze its prebiotic activity in vitro. Oligosaccharides were isolated with activated charcoal adsorption and ethanol treatment. Effectiveness of this method was evaluated by Thin Layer Chromatography and colorimetry. The isolates were then being a sample to prebiotic examination. Honey from Sumbawa forest has higher oligosaccharides content than honey from Kalimantan. Qualitative and quantitative assays showed that oligosaccharide isolation method was effective to concentrate the oligosaccharide with high degree of polymerization but ineffective for mono- and disaccharides removal. The highest percentages of hydrolysis of oligosaccharide from Sumbawa and Kalimantan by mimic gastric juice were 1.78% and 0.59 %. Whereas, the hydrolysis was higher with amylase, 11.87% for Sumbawa and 21.03% for Kalimantan honey oligosaccharides. Prebiotic activity was 0.32, and 0.09 for honey oligosaccharide from Sumbawa and Kalimantan respectively. Honey oligosaccharide from Sumbawa presented higher prebiotic activity than inulin as prebiotic reference (0.11). GC-MS chromatogram showed L. acidophilus cultured in media added with Sumbawa honey oligosaccharide produced lactic acid as the highest metabolite (48.01%).

Abstract

Indonesia has a potency to produce its own propolis, however the propolis market in Indonesia is dominated by imported product, such as from Brazil. Currently, still there is no reasearch which evaluate bioactive compound and nutrient content of Indonesian Propolis (IP) compare with Brazilian Propolis (BP). The objectives of this study were to analyze bioactive compounds and nutrient contents of IP compared to BP. Bioactive compounds and nutrients content were analyzed by gas chromatography–mass spectrophotometry. The resultsshowed both IP and BP contain fenol, α-amyrin, cylolanost, and pyrimidines. Bioactive compounds which specifically found in IP were eudesmane compound, ethyl acridine, lupeol, friedooleanan; while β amyrin and cinnamic acid compound only found in BP. The nutrient contents of IP were higher than BP except for vitamin A. In conclusion, IP might have potential health benefit, similar to BP.

Abstract

Torbangun leaves soup is one of the traditional diets commonly consumed by lactating mothers among the Batak society. The soup is believed to increase breast milk production and helps recovery process after the mother giving birth. Unfortunately, until now the soup is only served directly after cooking thereby limits its usefulness. Given the potential of the soup is quite important, the preservation of the cooked soup needs to be done so that the soup can be consumed at anytimeany time. This study aims to determine the shelf life of torbangun soup in a variety of packaging and at various storage temperatures. The soup is stored at three different temperatures (3-5oC, 10-12oC and 27-30oC) and in 3 types of packaging namely polyethylene terephthalate (PET), polypropylene (PP) and cans. Changes in product quality during storage are analyzed and estimated the shelf life of products. The results show that the soup stored at the 3-5oC and 10-12oC has longer shelf life compared to 27-30oC (day 8 vs day 3). In addition, the cans are the best packing among other packaging materials.Key words: torbangun leaf, Coleus amboinicus Lour, soup, shelf lifeABSTRAKSup daun Torbangun torbangun adalah salah satu makanan tradisional yang biasa dikonsumsi oleh ibu menyusuidi kalangan masyarakat Batak. Sup ini diyakini dapat meningkatkan produksi ASI dan membantu proses pemulihan setelah ibu melahirkan. Sayangnya, sampai saat ini sup daun torbangun hanya disajikan langsung setelah dimasak sehingga membatasi kegunaannya. Mengingat potensi sup ini cukup penting, penggunaan bahan pengawet pada sup matang perlu dilakukan agar sup ini dapat dikonsumsi kapan saja. Penelitian ini bertujuan untuk menentukan umur simpan sup torbangun dalam berbagai kemasan dan pada berbagai suhu penyimpanan. Pada penelitian ini sup disimpan pada tiga suhu berbeda (3-5oC, 10-12oC dan 27-30oC) dan di simpan dalam tiga jenis kemasan yaitu polietilen tereftalat (PET), polypropylene (PP) dan kaleng. Perubahan kualitas produk selama penyimpanan dianalisis dan dilakukan perkiraan umur simpan produk. Hasil penelitian menunjukkan bahwa sup yang disimpan pada suhu 3-5oC dan 10-12oC memiliki umur simpan lebih lama diban- dingkan dengan sup yang disimpan pada suhu 27-30oC (8 hari vs 3 hari). Selain itu kaleng adalah kemasan terbaik di antara bahan kemasan lainnya.

Abstract

This survey was conducted to estimate levels of health and nutrition problems as well as the associated factorsamong under-five children in the Area Development Program of World Vision Indonesia and Wahana Visi Indonesia in Merauke district. As many as 30 Posyandus were randomly selected as the cluster units where the information was collected among children U-5 and their mothers (n=542). From this survey we estimated the prevalence of underweight, stunted, wasted, and anemic children were 11.7%, 21.0%, 7.5%, and 73.7% respectively. It was assumed that these nutritional problems were associated with several factors such as: family income, mother’s literacy, knowledge and practices of mothers on health and nutrition, as well as the existing nutrition and health program implementation. This survey concluded that the nutrition problems in the study site were categorized as a public health concern. Thus, as the recommendations, two strategies to alleviate the local nutrition and health problems were proposed: direct and indirect. The direct approach is mainly focus on the improvement of existing nutrition and health programs (i.e. GMP, high dose vitamin A program, promotion of proper child feeding, etc.) implementation. Prior to that, a health system review must be carried out to identify the presence and functioning of the essential system components. Indirectly, a program need also to be carried out through multisectoral and community participation based on the government’s leadership for the sake of alleviating poverty and illiteracy as the major underlying factors of malnutrition.Key words: malnutrition, children underfive years, anemia, quality of heath service, MeraukeABSTRAKPenelitian ini bertujuan untuk menilai besaran masalah gizi dan kesehatan serta faktor-faktor yang mempengaruhinyadi wilayah kerja World Vision Indonesia dan Wahana Visi Indonesia di Merauke. Sebanyak 30 posyandu dipilih acak sebagai unit klaster. Pengumpulan data dilakukan pada ibu balita (n=542) di unit klaster terpilih. Hasil penelitian menunjukkan estimasi prevalensi balita dengan berat badan kurang, pendek, kurus, serta menderita anemia berturut-turut adalah 11.7%, 21.0%, 7.5% dan 73.7%. Masalah ini diasumsikan terkait dengan beberapa faktor seperti: pendapatan keluarga, tingkat literasi pengasuh, pengetahuan dan praktik pengasuh yang berkaitan dengan gizi dan kesehatan, serta implementasi program gizi dan kesehatan. Penelitianini menyimpulkan bahwa kasus kurang gizi masih tergolong permasalahan kesehatan masyarakat. Sebagai rekomendasi, disarankan untuk menjalankan dua strategi secara paralel yaitu 1) dengan mengoptimalkan program-program yang sudah berjalan seperti pemantauan status gizi di posyandu, program suplementasi vitamin A, pencegahan dan pengendalian penyakit, dan promosi pemberian ASI dan MP ASI dengan didahului oleh review sistem kesehatan agar diketahui komponen sistem yang mana yang perlu penguatan, 2) melalui kerjasama lintas sektor dan melibatkan partisipasi masyarakat bersama-sama dengan pemerintah untuk mengentaskankemiskinan dan iliterasi yang menjadi akar permasalahan kasus kurang gizi.

Abstract

The objective of this study was to analyze the determinant factors of nutritional status (weight/age and height/age) on children aged 0 – 36 month from the Conditional Cash Transfer Family Program (CCTFP) participants. This data was analised from the CFP survey at six provinces in 2007. The survey was conducted in six provinces in Indonesia (DKI Jakarta, West Java, East Java, North Sulawesi, Gorontalo, and East Nusa Tenggara). Numbers of samples were 9221. The study showed the protective factors of underweight (W/A) on children aged 0 – 36 month were being female (OR = 0.75; CI 95%:068-083), family received cash transfer or BLT (OR = 0.80; CI 95%:0.70-0.91) and family received food aids or Raskin (OR = 0.74; CI 95%:0.63 -0.88). Protective factor of stunting and severe stunting (H/A) children were being female (OR = 0.75; CI 95%:0.69-0.81), family received BLT (OR = 0.86; CI 95%:0.77-0.95) and Raskin (OR = 0.85; CI 95%:0.75 - 0.96).Key words: Conditional Family Program, underweight, stunting, children 0–36 months, protective factorABSTRAKPenelitian ini bertujuan untuk menganalisis berbagai faktor determinan kejadian status gizi kurang (underweight)dan pendek (stunting) pada batita (anak umur 0 – 36 bulan) yang berasal dari keluarga peserta ProgramKeluarga Harapan/PKH. Data yang dianalisis dalam penelitian ini berasal dari survai PKH tahun 2007 yang dilaksanakan di enam propinsi (DKI Jakarta, Jawa Barat, Jawa Timur, Sulawesi Utara, Gorontalo, dan Nusa Tenggara Timur) di Indonesia. Jumlah contoh dalam penelitian adalah sebanyak 9221 anak usia 0 – 36 bulan. Hasil penelitian menunjukkan bahwa faktor protektif terhadap kejadian gizi kurang (underweight) pada anak usia 0 – 36 bulan adalah anak dengan jenis kelamin perempuan (OR = 0.75; CI 95%: 068-083), keluarga yang mendapatkan BLT (OR = 0.80; CI 95%: 0.70-0.91) dan yang mendapatkan Raskin (OR = 0.74; CI 95%:0.63-0.88). Abstract

The objective of this study was to analyze the effect of one dish meal breakfast on dietary intake and adequacy level of energy and other nutrients of elementary school children. The study used pre-experimentalone-group pretest-posttest design and was conducted from March to May 2011 at Kebon Kopi 2 Public ElementarySchool in Bogor City. The total number of sixty two elementary students were fully participated in this study, most of them were girls aged 11 years old. The Ethical Approval for this study was obtained from Komisi Etik Badan Penelitian dan Pengembangan Kesehatan No. KE.01.05/EC/301/2011.
