Abstract

The use of local food ingredients in ice cream production remains limited, highlighting the need for alternative ingredients that can improve its nutritional value. Loka pere flour is a promising local substitute to enhance the quality of ice cream. This study aimed to determine the effects of adding loka pere flour on the physical, chemical, and organoleptic properties of ice cream.This experimental study employed a Completely Randomized Design (CRD) with four formulas and three replications. Parameters tested included overrun, melting time, nutritional content (carbohydrates, protein, fat), and organoleptic attributes (color, aroma, taste, texture). Data were analyzed using analysis of ANOVA followed by Duncan’s post hoc test. Results showed that loka pere flour addition influenced the physical and sensory qualities of ice cream. Formula 3 had the highest overrun value at 43,44%, while Formula 2 recorded the longest melting time at 36.98 minutes per gram. Organoleptic testing revealed that Formula 2 (with 20% loka pere flour) was the most preferred by panelists, characterized by a yellowish-white color, banana-like aroma, sweet taste, and smooth texture. This formula also contained 20,52% carbohydrates, 2,21% protein, and 5,6% fat. In conclusion, adding loka pere flour particularly at a 20% concentration can improve the physical and organoleptic quality of ice cream while enhancing its nutritional profile. Loka pere flour has strong potential as a local substitute ingredient in the development of more nutritious ice cream products.

Abstract

The menstrual period is one of the triggers for adolescents to experience anemia, characterized by a decrease in hemoglobin levels. This study aims to analyze the effectiveness of combining progressive muscle relaxation and cat stretch exercise in improving hemoglobin levels among adolescent girls, a population at high risk of anemia, particularly during menstruation. This study was quasi-experimental with a pretest-posttest design with two group designs in June-August 2023. Fifty adolescent girls meeting the inclusion criteria were selected using purposive sampling and proportionally divided into two groups, the progressive muscle relaxation and cat stretch exercise combination group, and the walking group. The Point of care testing (examinations carried out near the patient outside the laboratory) method measures adolescent hemoglobin and hemodynamic levels before and after the intervention. The intervention was given for 4 weeks with weekly monitoring. Data were analyzed using the paired t-test and Mann-Whitney test. The combination of progressive muscle relaxation and cat stretch exercise was effective in increasing hemoglobin levels in both groups with an average increase of 0.484 and 0.184 respectively, but there was no difference in average hemoglobin in the two groups after the intervention (p-value 0.011 and 0.004). Physical activity, such as either the combination of PMR and cat stretch exercise or walking, was proven effective in increasing hemoglobin levels. These findings suggest that both methods have the potential to serve as simple and affordable interventions for reducing anemia in adolescent girls during menstruation.

Abstract

One of the factors influencing growth and development is nutritional status. Growth and developmental disorders in infants may result in delays in neuromuscular development, speech ability, emotional regulation, socialization, auditory sensory function, and even autism. This study aimed to examine the relationship between nutritional status and psychosocial stimulation with the growth and development of infants aged 6–12 months in the working area of Tabaringan Health Center, Makassar. A cross-sectional design was employed. The sample consisted of 30 mothers with infants aged 6–12 months who met the inclusion criteria, selected using an accidental sampling technique. The collected data included maternal characteristics, nutritional status, and infant characteristics. Psychosocial stimulation data were obtained through interviews using the HOME questionnaire, consisting of 17 questions. Infant social-personal and language development was assessed using the Denver Developmental Screening Test II (DDST), which included 20 items. Data were analyzed using the Pearson correlation test (Chi-square). The results showed no significant relationship between psychosocial stimulation and both language and personal-social development. However, there was a significant relationship between nutritional status and personal-social development in infants, while no significant relationship was found with language development. Further research is recommended to explore other factors that may influence infant language and personal-social development.

Abstract

The teenage phase is a crucial period in preparing to become a woman of childbearing age who is able to prepare for the health of future generations. Therefore, nutritional status and supporting factors for growth and development in adolescence are the focus of attention in sensitive nutrition interventions. One effort to improve adolescent nutrition is through providing snacks in the form of nutritious snack bars which are formulated using local food ingredients typical of the target area. The potential of snakehead fish which has a high protein content has been used as a traditional snack such as pempek, so efforts are needed to increase the use of snakehead fish as a snack bar product. The aim of this research was to carry out social mapping and develop local food-based products as an initial project in a sensitive nutrition intervention effort to accelerate stunting reduction. Social mapping related to teenagers was carried out on 100 young women at SMA Negeri 4 Palembang and product formulation was carried out at the Nutrition Laboratory, Faculty of Public Health, Sriwijaya University. The results of the social mapping research showed that 59 subjects (59%) were at risk of CED and 30 subjects (30%) had anemia. The snack bar formulation product most liked by the trained panelists was the snakehead fish formulation with the addition of gulo puan F3, F6 and F9. The product formulation most preferred by consumer panelists is the F3 formulation.

Abstract

Contractions that are disturbed due to tension in smooth muscles and blood vessels cause stiffness of the cervix, causing perineal rupture and also the lack of progress in the labor process, especially the second stage, which will increase maternal and infant morbidity and mortality. Prenatal yoga is an exercise using slow movements combined with breathing exercises to maintain the mother's posture during pregnancy, preparing for the birth process by reducing the sensation of pain with breathing exercises. The aim of this research was to examine the effect of prenatal yoga on perineal rupture and the duration of the second stage of labor. This study used a quasi-experimental design with a post-test control group. A total of 42 pregnant women participated in this study. The participants were divided into two groups: a control group and a treatment group. The sampling technique used was purposive sampling. Data were analyzed using the Mann-Whitney test. The results of this study indicated that the p-value was 0,00 <0,05 for perineal rupture and the p-value was 0,01 <0,05. These results indicated that there are differences in perineal rupture and duration of kala II between the control group and the treatment group. The Conclusion is that there is an effect of prenatal yoga on perineal rupture and length of stage II. Pregnant women can empower themselves by doing prenatal yoga so that labor is minimally traumatic and smooth.

Abstract

Self-acceptance in patients with schizophrenia remains low, as many patients do not fully understand their condition. They often harbor negative prejudices toward others, including family and the community, who tend to stigmatize them. This negative self-stigma leads to low expectations, resulting in diminished self-esteem and self-efficacy, which directly affects the recovery process. This includes reduced self-awareness or insight into the illness, ultimately impacting the quality of life of patients with schizophrenia. This study aimed to determine the effect of psychoeducation about mental health issues on self-acceptance in post-treatment schizophrenia patients in the working area of Wonorejo Public Health Center. The research used a quantitative method with a quasi-experimental design, specifically a pre-test and post-test with a control group. The sampling technique used was random sampling, involving 34 participants-17 in the intervention group and 17 in the control group. Data were collected using a questionnaire and analyzed using univariate and bivariate analysis with paired t-test and Mann-Whitney test. The results showed that psychoeducation had a significant effect on the self-acceptance of post-treatment schizophrenia patients. It is recommended that families provide continuous support and attention to the mental health of schizophrenia patients

Abstract

Stunting is a growth and development disorder experienced by toddlers due to prolonged nutritional deficiencies, especially during the first 1,000 days of life. One effective method to address stunting is providing stimulation through infant massage therapy, which functions to promote growth and development. This study aimed to assess the extent to which infant massage therapy affected weight gain and motor development in children under two years old who were at risk of stunting in the working area of Muara Satu Public Health Center, Lhokseumawe City. The study used a quantitative method with a quasi-experimental design and a pretest-posttest control group approach, comparing the conditions before and after the massage therapy intervention. The findings showed that the average difference in infant weight between the intervention group and the control group after the treatment was 0,51 kg. The results of the Independent T-test showed a p-value of 0,196 (p-value >0,05), indicating no statistically significant difference in weight between the two groups after the intervention. Therefore, it was concluded that infant massage therapy did not have a significant effect on increasing the weight of children at risk of stunting. However, in terms of motor development, the Mann-Whitney test showed a p-value of 0,023 (p-value <0,05), indicating a statistically significant difference between the intervention and control groups at post-test. Thus, infant massage therapy was proven to be effective in improving motor development in children under two years at risk of stunting.

Abstract

Indonesia ranked eighth in the number of child marriages, with a total of 25.53 million cases. Bengkulu Province ranked sixth nationally and was the highest in Sumatra Island for child marriages among adolescents aged 10–14 years, with a prevalence of 14,33%. This study aimed to analyze the effectiveness of spinning wheel media in improving knowledge and attitudes regarding the maturity of marriage age (PUP) among adolescents in Bengkulu City. The research employed a quantitative approach with a quasi-experimental design, using a one-group pretest-posttest format. The sample consisted of 60 adolescents from SMPN 17 and SMPN 22 in Bengkulu City. Based on data analysis, after the implementation of the spinning wheel media, adolescents’ knowledge scores ranged from a minimum of 10 to a maximum of 15. The average knowledge score increased to 12,98 after the intervention. A positive change in attitudes was also observed, with a post-intervention average attitude score of 52. The spinning wheel media proved effective in increasing knowledge and promoting positive attitudes toward the maturity of marriage age. It can be utilized as an alternative educational tool in efforts to prevent child marriage.

Abstract

Elderly Posyandu cadres are pivotal in delivering promotive and preventive care to the older population. The efficacy of Posyandu services is intimately linked to the performance of the cadres. Various aspects that may affect the success of Posyandu cadres include motivation, communication, and rewards. This study sought to ascertain the correlation among communication motivation, incentives, and the performance of older Posyandu cadres in the Kepanjenkidul District of Blitar City. This research employed a cross-sectional study design, with 130 elderly Posyandu cadres from the Kepanjenkidul District in Blitar City as the study population. The sample approach employed a basic random sampling procedure, yielding 100 respondents who satisfied the inclusion criteria of being active cadres for over 6 months. Respondents unwilling to provide informed consent constituted the exclusion criteria. Data was gathered through a questionnaire administered in November 2023. The data analysis employed several linear regression tests. The analysis results indicated a correlation between motivation and the performance of Posyandu cadres (p-value=0,006), a correlation between communication and the performance of elderly Posyandu cadres (p-value=0,002), and a correlation between the two and the performance of elderly Posyandu cadres (p-value=0,000). Additionally, a correlation existed among motivation, communication, and incentives and the performance of older Posyandu cadres (p-value 0,000). Strategies for coaching and mentoring that Community Health Centers and Districts can be implemented to enhance the performance of older Posyandu cadres.

Abstract

The supplementary feeding program (PMT) is a crucial nutritional intervention aimed at improving toddlers' nutritional status and meeting their dietary needs. Patin fish, a local food commodity from Riau, has potential for development into attractive processed food, such as dim sum. This study aimed to evaluate the acceptability and protein content of patin fish dim sum with red bean flour substitution. A Completely Randomized Design (CRD) was used, comprising one control (100% patin) and three treatments with varying patin fish and red bean flour ratios: 95%:5%, 90%:10%, and 85%:15%. Sensory evaluation was conducted with 30 panelists and analyzed using the Kruskal-Wallis test, followed by the Mann-Whitney test if significant differences were found. The results showed a significant difference in color (p-value=0,002), while taste (p-value=0,445), aroma (p-value=0,694), and texture (p-value=0,341) showed no significant differences. The most preferred formulation was the control (without red bean flour). However, the formulation with 10% substitution (F2) had the highest protein content at 9.45%, equivalent to 9,45 grams per 100 grams of product. With this level of protein, the patin dim sum qualifies as a high-protein food product. This innovation highlights the potential of locally sourced, nutritious food for children and supports the success of supplementary feeding programs in regions like Riau that rely on local resources.
