Abstract

Duck eggs are a source of animal protein which generally have lower foam properties and stability compared to purebred chicken eggs, so that the use of duck eggs is still very less compared to purebred chicken eggs in various processed food products. One form of processed food product from duck eggs is salted duck eggs which are obtained by preserving them using salt (salting). In the preservation process, duck eggs are very susceptible to contamination, so alternatives are needed that can inhibit bacterial growth. Fragrant pandan leaves (Pandanus Ammaryllifolius) are believed to be able to suppress the growth of Escherichia Coli and Staphylococcus aureus bacteria, which are 2 types of bacteria that are an indication of food safety. The aim of this research is to determine the effectiveness of adding fragrant pandan leaf extract (Pandanus Amoryllifolius) on the quality of salted duck eggs produced. The method used in this research was a Completely Randomized Design (CRD) model analysis with the concentration factor of adding fragrant pandan leaf extract (Pandanus amaryllifolius). The method used in this research was a Completely Randomized Design (CRD) model analysis with the concentration factor of adding fragrant pandan leaf extract (Pandanus Amaryllifolius) consisting of 5 treatments, namely A = 0%, B = 3% C = 6%, D = 9 %, E = 12%. Each treatment was carried out 4 times to obtain 20 experimental units. Each treatment was carried out 4 times to obtain 20 experimental units. The results of the research showed that the addition of fragrant pandan leaf juice (Pandanus Amoryllifolius) had a significant effect on the organoleptic test of salted eggs, marked by a decrease in weight loss, ranging from 0,14-13,26 with an  average value of 3.09. The total microbacterial test ranged between 0.63x10-7 CFU/mL- 16.16 x 10-7 CFU/mL with an average value of 6.15 x 10-7 CFU/mL, and organoleptic test that the panelists still like.

Abstract

Ganoderma sp. is a pathogenic fungus that causes basal stem rot in oil palms, leading to significant yield losses. This study explores the antifungal potential of Uncaria gambir Roxb. extract against Ganoderma sp. using in silico and in vitro methods. In silico analysis from the KNApSAcK and PASS Online databases identified 18 secondary metabolites with probability activity (Pa) values ranging from 0.5 to 0.7, indicating high potential. Cinchonain Ia, an alkaloid with the highest Pa value of 0.638, has poor solubility. In vitro tests on U. gambir extract at various concentrations (0%, 1.5%, 2%, 2.5%, and 3%) showed that the extract was ineffective in inhibiting the growth of Ganoderma sp. Further research with variations in solvents, extraction methods, and formulations is needed to optimize the antifungal activity of this extract.

Abstract

Mocaf flour is a local product that can be utilized as an alternative to wheat flour in various food products. Using local food sources, such as cassava, is essential to support food security and reduce dependence on imports. This article is a review examining various methods of processing cassava into Mocaf flour. Mocaf flour is a cassava-based product with the potential to replace wheat flour. The Mocaf processing method consists of several stages, including sorting, peeling, washing, cutting, fermentation, drying, milling, and sieving, which result in high-quality flour with improved texture and flavor. A critical stage in the production of Mocaf flour is the fermentation process. Cassava fermentation can be done using microbes, such as Lactobacillus plantarum bacteria and tape yeast, or through non-microbial fermentation. This fermentation process alters the physicochemical properties of cassava, enhancing viscosity, and rehydration capacity, and reducing its bitterness.

Abstract

Candlenut is a plant that has many uses and can be utilized as a basic ingredient for kitchen spices and pharmaceutical ingredients. The increasing demand for candlenuts from other countries makes farmers in Indonesia increasingly active in making candlenuts as the main crop Candlenut seeds have very high benefits and selling value if they have gone through a good and correct peeling process. This study aims to determine the effect of the length of time drying candlenut seeds processed with a peeling machine on the yield of candlenut grain. This research was conducted in Seulimum Village, Seulimum District, Aceh Besar in April 2024. This study used a non-factorial Randomized Block Design (RBD) of 4 treatments and 6 replications resulting in 24 experimental units. The parameters observed were the percentage of intact nuclei (%) and the percentage of broken nuclei (%). The results showed that the test treatment of the length of time drying candlenut seeds with sunlight with different intervals of the number of days did not give a significant effect on the percentage of intact candlenuts, and the percentage of broken nuclei.

Abstract

Mitragyna speciosa Korth (MSK) plant or known as Kratom is a leading export commodity from West Kalimantan Province. The leaves of this plant are processed by farmers into crumbs and flour to be sold to collectors and exported abroad, especially to the United States. The leaves of this plant have long been used by local people as a traditional herbal medicine to relieve pain and provide a calming effect if the boiled water is drunk. The purpose of this study was to evaluate the content of Kratom as an Antinociceptive, Analgesic, General Anesthetic, Vasodilator, and 5 Hydroxytryptamine Release Stimulant (5HRS). Active metabolites and most of the simplified molecular input line entry (SMILE) codes of the MSK plant were obtained from the Knapsack database. The relationship between active metabolites and proteins in the human body was analyzed using STITCH software computationally. There are 23 active metabolites in MSK leaves. Isomitraphylline, Isopaynantheine, and Paynantheine have the highest Antinociceptive bioactivity (82.8). Corynoxine and Corynoxine B have higher Analgesic bioactivity (81.5) compared to other ligands. Isomitrafoline and Speciophylline show the strongest general Anesthetic (92.2) compared to other ligands.
