Abstract

Brown rice, derived from white rice with the removal of the husk, contains higher dietary fiber and a lower glycemic index than regular white rice. These advantages can be an alternative diet for individuals with type 2 diabetes mellitus. Type 2 diabetes mellitus is a metabolic disease ranked as the fourth leading cause of death in the world, often associated with obesity. In addition, insulin insensitivity in individuals with type 2 diabetes leads to increased hunger (polyphagia) and overeating, resulting in increasing BMI and waist circumference. The purpose of this study is to determine the effect of the brown rice diet intervention on BMI and waist circumference of patients with type 2 diabetes. This study was a pre-experimental study without control variables and the sample was not selected randomly, using a one-group pretest-posttest design with a 3-month intervention. Data analysis in this study used the Shapiro-Wilk normality test followed by the paired t-test to determine the difference between two paired samples. The statistical results showed significant changes in BMI and abdominal circumference (p = 0.002 and p = 0.008, respectively). In conclusion, there are differences in BMI and abdominal circumference of patients with type 2 diabetes mellitus before and after the intervention of a brown rice-based diet menu.

Abstract

Cancer has become a leading cause of mortality worldwide, with approximately 8.2 million deaths attributed to the disease in 2012. Antioxidants have demonstrated potential in combating cancer, and natural sources rich in vitamins, such as fruits and vegetables, are believed to be beneficial. This study aims to assess the chemical and organoleptic qualities of fruit and vegetable juice (tomatoes, Pontianak oranges, and carrots) as functional food for cancer patients. The study used an experimental design with a Complete Randomized Design (CRD) approach, with distinct processing techniques for each treatment level, and three replications were conducted. Data collection involved hedonic scale tests by 20 panelists to evaluate organoleptic quality, spectrophotometric tests to measure vitamin C levels, and DPPH tests to assess antioxidant activity. The results show that the processing of fruit and vegetable juice does not significantly influence vitamin C levels, aroma, or texture (p = 0.50). However, it has a significant effect on antioxidant levels, color, and taste of the juice (p=0.007).

Abstract

The prevalence of stunting in children under five years old has decreased from 25% in 2013 to 18% in 2019 in The Gambia. The consumption of certain food groups, as part of minimum dietary diversity, serves as a measure of the adequacy of nutrient density for children. This study aims to examine the association between stunted children under five years old and types of food sources, as well as wealth status. Secondary data from The Gambia Demographic and Health Survey 2019-2020 were analyzed, involving 2,533 out of 8,362 children. Logistic regression tests were performed with a 95% confidence interval. Staple foods were identified as the dominant food source for stunted toddlers (p< 0.05; OR = 1.78; 95% CI = 1.436-2.216) and considered a risk factor for stunting. Food intake from more than four food sources (OR = 0.6; 95% CI = 0.403-0.88), place of residence (OR = 0.72; 95% CI = 0.53-0.95), middle wealth status (OR = 0.47; 95% CI = 0.33-0.68), and wealthy household (OR = 0.74; 95% CI = 0.52-1.05) were significantly associated with a reduced likelihood of stunting and considered protective factors. The incidence of stunting is linked to the diversity of food sources given to toddlers. In providing care for stunted toddlers at the community level, stakeholders must consider food diversity, economic capacity, and type of residence.

Abstract

Cancer prevalence is steadily increasing each year and becomes the second leading cause of death worldwide. In Indonesia, breast cancer had a prevalence of 16.7% in 2018. Free radicals contribute to the occurrence of breast cancer, while antioxidants play a vital role in protecting cells and repairing the damage caused by free radicals. Ihau, an endemic fruit in Kalimantan Island, contains phytochemical compounds with potential antioxidant and anticancer properties. Utilizing local food as natural antioxidants could serve as an alternative for breast cancer prevention and treatment. This study aims to assess the anticancer potential of Ihau fruit extract on the MCF-7 breast cancer cell line. A post-test-only control group design method using the MTT assay was used, with two treatment groups: water and 96% ethanol extract, and four different concentrations (125, 250, 500, and 1000 ppm), and each was replicated three times. Statistical analysis using the ANOVA test found no significant difference among all concentrations. The IC50 values of the cytotoxic activity of water and ethanol extracts were 1,197.7 ppm and 1,148 ppm, respectively. It can be concluded that both water and ethanol extract of Ihau fruit exhibited very weak cytotoxic activity.

Abstract

Early detection of nutritional problems is a vital skill for individuals as it enables timely prevention before any symptoms arise. This skill can be fostered through enhancing knowledge, practicing skills via educational activities and mentoring, and seeking support from peers who share similar challenges. This study aims to investigate the impact of peer tutoring on the development of a balanced menu and healthy snack consumption based on fish and vegetables among 11th-grade female students at a state high school in Singosari, Malang Regency. This study examined the effect of these interventions on the intake of energy, protein, and iron among the participants. Data were gathered by collecting food consumption data using the 24-hour food recall method and measurement of weight, height, Hb, and Albumin levels. The study employed a purposive sampling technique by conducting pretest, intervention, and post-test. The results showed significant improvements in the health indicators of the participants, including knowledge, intake, Hb, and Albumin levels (p=0.000; α=0.005). These findings demonstrate the potential of education and mentoring through peer tutoring in promoting healthy eating habits and preventing nutrition-related problems among female adolescents.

Abstract

Formula enteral blenderized dan komersial merupakan makanan cair yang umum digunakan di Rumah Sakit, akan tetapi pengunaan formula enteral komersial masih sangat terbatas, oleh karena itu untuk memenuhi kebutuhan energi dan zat gizi pasien, maka perlu diberikan formula enteral blenderized Penelitian ini bertujuan untuk mengetahui perbedaan kandungan energi, zat gizi makro, dan omega 3 pada formula enteral blenderized dan komersial. Penelitian ini merupakan Rancang Acak Lengkap (RAL). Jumlah sampel dalam penelitian ini adalah 3 sampel yang terdiri dari formula enteral blenderized, formula komersial merk A dan merk B. Masing-masing sampel tersebut dilakukan pengulangan sebanyak 3 kali. Sampel-sampel tersebut dilakukan analisis energi, zat gizi makro, dan omega 3 sebagai immunonutrient. Perbedaan kadar energi, karbohidrat, dan lemak dianalisis dengan menggunakan One Way ANOVA, sedangkan protein dan omega 3 menggunakan Kruskall-Wallis.Hasil penelitian ini menunjukkan bahwa rata-rata kandungan energi dan karbohidrat formula enteral blenderized  sebesar 80 kkal dan 12,43 gram berbeda bermakna dengan komersial merk A dengan kandungan energi dan karbohidrat sebesar 96,3 kkal dan 15,93 gram (p=0,005 dan p=0,007). Kandungan energi dan karbohidrat formula enteral tersebut juga berbeda bermaknda dengan komersial merk B yang kandungan energi dan karbohidratnya 97 kkal dan 16,15 gram (p=0,004 dan p=0,006), sedangkan kandungan protein (3,22; 3,69; 3,19 gram), lemak (1,92; 1,98; 2,18 gram ), dan omega 3 (0,12; 0,09; dan 0,12%) ketiga kelompok (formula enteral blenderized, komersial merk A, dan B) tidak berbeda bermakna (p=0,97; p=0,33; dan p=0,08).Dari penelitian ini dapat disimpulkan bahwa terdapat perbedaan yang signifikan rata-rata kandungan energi dan karbohidrat antara formula enteral blenderized dan komersial merk A dan B, namun tidak terdapat perbedaan yang signifikan untuk kandungan protein, lemak dan omega 3

Abstract

Pola konsumsi makanan berlemak berlebih menimbulkan berbagai gangguan metabolik dan inflamasi sistemik sehingga memicu peningkatan penanda inflamasi, yaitu high sensitivity C-Reactive Protein (hs-CRP). Madu hutan Apis dorsata mengandung antioksidan  tinggi, namun belum banyak penelitian mengenai aktifitas antioksidan madu hutan ini terhadap perubahan kadar hs-CRP di dalam darah.  Penelitian bertujuan untuk mengetahui pengaruh pemberian madu hutan Apis dorsata terhadap kadar serum hs-CRP tikus Sprague dawley jantan diinduksi pakan tinggi lemak (PTL). Rancangan penelitian yaitu pre-post test with control group design. 15 ekor tikus jantan Sprague dawley dibagi dalam tikus kelompok kontrol negatif (K-), kontrol positif (K+) diinduksi PTL,  dan perlakuan (P) diinduksi PTL + madu hutan Apis dorsata dosis 0,5 ml/200 g BB. Induksi PTL diberikan selama 30 hari dan madu selama 7 hari. Serum hs-CRP diambil dua kali, yaitu setelah pemberian PTL dan setelah pemberian madu, kemudian diukur menggunakan metode ELISA. Hasilnya menunjukkan kelompok tikus yang diberi PTL+intervensi madu hutan mengalami penurunan kadar hs-CRP yang signifikan (p=0,009). Hal ini menandakan efek antioksidan dan antiinflamasi pada madu hutan Apis dorsata dapat menurunkan kadar hs-CRP. Kesimpulannya, Madu hutan Apis dorsata dosis 0,5 ml/200 g BB mampu menurunkan kadar serum hs-CRP tikus Sprague dawley jantan yang diinduksi pakan tinggi lemak.

Abstract

Dalam kehamilan anemia merupakan faktor penting yang terkait dengan peningkatan risiko kematian ibu anak. Asupan zat besi dan bioavailabilitas zat besi penting untuk pencegahan anemia defisiensi besi. Penelitian ini bertujuan untuk menganalisis perbedaan asupan makanan dan bioavailabilitas zat besi ibu hamil anemia dan non-anemia di Puskesmas Makasar. Studi cross sectional dilakukan pada 185 wanita hamil dari Mei -September 2019 di Puskesmas Kecamatan Makasar, Jakarta. Asupan makan diukur dengan menggunakan 24 hours food recall dan Semi Quantitative Food Frequency. Lingkar lengan atas diukur dengan metline. Kadar hemoglobin diukur dengan metode cyanmethameglobin. Data dianalisis dengan uji beda dengan nilai p<0,05 dianggap signifikan secara statistik. Hasil penelitian menunjukan prevalensi anemia sebesar 23,8%. Wanita hamil yang anemia cenderung mempunyai riwayat keguguran dan malnutrisi (p<0,05). Kepatuhan terhadap suplementasi zat besi tidak menunjukkan hubungan yang signifikan dengan status anemia (p>0,05). Secara umum total energi dan asupan protein ibu hamil kurang dari 70% EAR. Asupan makanan pada kelompok anemia lebih tinggi daripada kelompok non-anemia. Tidak ada perbedaan dalam zat besi heme dan non-heme pada anemia dan non-anemia, tetapi kelompok anemia cenderung memiliki asupan zat besi non-heme yang lebih tinggi. Dalam penelitian ini tidak adak perbedaan asupan zat besi pada ibu hamil anemia dan non-anemia.

Abstract

Diabetes dapat dicegah atau diturunkan prevalensinya dengan mengonsumsi makanan berindeks glikemik (IG) rendah. Bahan pangan yang potensial dikembangkan sebagai bahan baku rendah IG yaitu suweg (Amorphophallus paeoniifolius) dan bekatul. Tujuan penelitian ini adalah untuk mengetahui mutu organoleptik, kandungan gizi, dan nilai IG mi instan suweg dan bekatul. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan perlakuan 5 formulasi. Metode pengujian organoleptik menggunakan uji hedonik dan uji kandungan gizi menggunakan analisis kadar proksimat. Data mutu organoleptik dan kandungan gizi dianalisis menggunakan uji One Way ANOVA pada tingkat kepercayaan α=0,05 menggunakan program software SPSS versi 22. Hasil penelitian menunjukkan bahwa formulasi mi instan suweg dan bekatul terbaik pada mutu organoleptik (warna, tekstur, rasa, aroma, aftertaste, dan keseluruhan) dan kandungan gizi adalah mi formulasi P1 (60% tepung umbi suweg + 10% tepung bekatul + 30% tepung tapioka). Hasil penelitian menunjukkan IG mi instan suweg dan bekatul P1 termasuk rendah yaitu 48,04. Kesimpulannya adalah mi instan suweg dan bekatul P1 memiliki nilai indeks glikemik rendah sehingga dapat menurunkan respon glukosa darah dan cocok dikonsumsi penderita diabetes melitus.

Abstract

Diabetes Melitus Tipe 2 (DMT2) merupakan penyakit dengan karakteristik hiperglikemia yang disebabkan oleh resistensi insulin, gangguan sekresi insulin, maupun keduannya. DMT2 dapat diperbaiki melalui penatalaksanaan secara non farmakologi salah satunya melalui terapi nutrisi medis. Beras analog menjadi solusi alternatif bahan pangan sumber karbohidrat yang lebih sehat sebagai pengganti beras putih bagi pasien DMT2. Penelitian ini bertujuan untuk membuat produk beras analog kombinasi tepung kedelai edamame dan rumput laut untuk mengetahui hasil organoleptik dan kandungan gizinya. Uji organoleptik dilakukan kepada 25 panelis terlatih untuk mengetahui tingkat kesukaan berdasarkan rasa, aroma, warna, dan tekstur. Untuk mengetahui kandungan gizi, dilakukan uji proksimat dan uji anthrone. Penelitian ini merupakan penelitian eksperimental dengan 5 perlakuan dan 3 ulangan. Data hasil analisis diuji secara statistik menggunakan uji ANOVA dan dilanjutkan dengan uji Post Hoc Tukey. Persentase tingkat kesukaan tertinggi secara keseluruhan berada pada beras analog F3 (50%TE+50%TRL) yang mengandung karbohidrat sebesar 83,71 g, protein 2,76 g, lemak 0,23 g, kadar air 12,89 ml, abu 0,41 g, gula 0,18 g, serat larut 3,89 g, serat tidak larut 3,44 g total serat 7,29 g dan energi sebesar 346,92 kkal dalam 100 g. Uji statistika menunjukkan terdapat perbedaan yang signifikan antara kandungan gizi beras analog dengan beras putih (p<0,05).
