Abstract

Background: households are one of the biggest contributors to food waste in DKI Jakarta. This is caused by household food loss and waste (FLW) behavior and the impact of this behavior is economic loss and nutritional loss in vain. Objective: To analyze the correlation between FLW behavior and household economic and nutrition loss during the Covid-19 pandemic in West Jakarta. Methods: This study is a quantitative study with a cross-sectional design involving 100 households in the Kebon Jeruk area, West Jakarta. The analysis in this study uses the Spearman Rank correlation. Data were collected by interview technique using FLW behavior questionnaire and food waste questionnaire form filled out by respondents for 4x24 hours. The value of this economic loss will be analyzed using the market price listed on Hargapangan.id and the value of nutrition loss will be analyzed using nutrisurvey2007. The results: there is a relationship between FLW behavior on economic loss (p = 0.02; p <0.05) but there is no relationship between FLW behavior on nutrition loss, namely energy loss (p = 0.15; p> 0.05), protein loss (p=0,20;p>0,05), fat loss (p=0,33;p>0,05) and carbohydrate loss (p=0,12;p>0,05). Households are expected to change their FLW behavior in order to minimize economic losses and optimally utilize nutrition.

Abstract

Penelitian ini bertujuan menganalisis efek pemberian minyak ikan lemuru terhadap penurunan kadar glukosa darah puasa pada tikus dengan hiperglikemia. Penelitian ini merupakan experimental laboratories dengan racangan The Randomized Post Test Only Control Group Design. Sampel penelitian ini adalah 25 ekor tikus jenis Rattus Norvegicus Strain Wistar jantan, usia 2-3 bulan yang dibagi menjadi lima kelompok. Teknik analisis data menggunakan uji one-way ANOVA dan Tukey HSD. Pada uji one-way ANOVA diadaptkan nilai P (0,001) < 0.05. Hasil Tukey HSD didapatkan rata-rata kadar GDP antara K0 dengan K1 (P < 0,005), P1 dengan K1 (P < 0,005), P2 dengan K1 (P < 0,005), P3 dengan K1 (P < 0,005), sedangkan K0 dengan P1, K0 dengan P2, K0 dengan P3, P1 dengan P2, P1 dengan P3, dan P2 dengan P3 tidak menunjukkan perbedaan signifikan (P > 0,05). Berdasarkan hasil penelitian disimpulkan bahwa terdapat perbedaan pengaruh yang signifikan pemberian minyak ikan lemuru (sardinella lemuru) terhadap kadar glukosa darah puasa. Terdapat perbedaan yang signifikan antara K0 dengan K1, P1 dengan K1, P2 dengan K1, P3 dengan K1, sedangkan K0 dengan P1, K0 dengan P2, K0 dengan P3, P1 dengan P2, P1 dengan P3, dan P2 dengan P3 tidak menunjukkan perbedaan yang signifikan.

Abstract

Kelebihan lemak yang menyebabkan terjadinya obesitas dapat berpengaruh dalam proses penuaan dan menurunkan angka harapan hidup. Hal ini disebabkan oleh karena adanya peningkatan Reactive Oxygen Species (ROS) yang memicu terjadinya stres oksidatif dan proses inflamasi dari organisme yang memengaruhi telomer, yang berperan sebagai penanda usia biologis. Kandungan serat makanan dan antioksidan yang tinggi pada kurma Ajwa menjadikannya pilihan untuk pengobatan berbagai penyakit seperti diabetes, obesitas, kanker, dan penyakit jantung. Penelitian ini bertujuan untuk mengetahui perubahan berat badan tikus Sprague dawley setelah pemberian ekstrak kurma Ajwa (Phoenix dactylifera L.). Rancangan penelitian yaitu pre-post test with control group design. 15 ekor tikus jantan Sprague dawley dibagi dalam 5 tikus kelompok kontrol, 5 tikus kelompok perlakuan I yang diinduksi diet tinggi lemak dan 5 tikus kelompok perlakuan II yang diintervensi ekstrak kurma Ajwa. Induksi PTL diberikan selama 30 hari dan pemberian ekstrak kurma Ajwa selama 7 hari. Hasil penelitian menunjukkan kelompok tikus yang diberi PTL mengalami perubahan berat badan yang signifikan, diperoleh nilai p<0,011. Kesimpulannya, terjadi penurunan berat badan pada tikus Sprague dawley yang diberikan ekstrak kurma Ajwa.

Abstract

Pemberian antioksidan merupakan salah satu strategi dalam manajemen menopause, karena diketahui bahwa stres oksidatif berkontribusi pada patogenesis penyakit yang terkait dengan menopause. Ubi jalar ungu diketahui memiliki aktivitas antioksidan karena kandungan flavonoidnya terutama antosianin. Tujuan dari penelitian ini adalah untuk mengevaluasi aktivitas antioksidan ubi jalar ungu kultivar Bali pada hewan model menopause, yang didahului dengan pengukuran kandungan flavonoid dan antosianin total, serta kapasitas antioksidan. Penelitian dengan rancangan post-test only control group design  ini,  menggunakan 28  ekor tikus Wistar betina yang diovariektomi bilateral. Hewan coba dibagi secara acak menjadi kelompok kontrol (P0), dan kelompok perlakuan (P1, P2, dan P3). Kelompok P1, P2, dan P3 diberi ekstrak etanol ubi jalar ungu (20mg/ml) per oral 7 hari setelah ovariektomi dengan dosis 1 ml, 2 ml, dan 4 ml/hari,  sedangkan P0 diberikan saline 0,9% 1 ml/hari selama 30 hari. Sampel darah diambil untuk pengukuran MDA plasma dengan menggunakan metode reaksi asam tiobarbiturat. Penelitian ini menemukan kadar total flavonoid ekstrak ubi jalar ungu sebesar 676.9 mg/100g, kadar antosianin 56.78 mg/100g, dan kapasitas antioksidan 2516.82 mg/L GAEAC. Hasil analisis data menemukan terjadi penurunan kadar MDA plasma pada P1 (2,431±0,087 mol/L), P2 (2,174±0,096 mol/L), dan P3 (1,886±0,109 mol/L) dibandingkan dengan P0 (2,795± 0,063 mol/L) (p = 0,000). Kesimpulannya, ekstrak etanol ubi jalar ungu dapat menurunkan kadar MDA plasma tikus model menopause

Abstract

Low birth weight (LBW) is influenced by various factors, such as maternal education, gestational age, maternal nutritional status, and economic level. The high pregnancy rate in adolescent mothers is in line with pregnancy complications experienced, one of which is giving birth to LBW babies. The aim of this study was to analyze the risk factors most associated with the incidence of LBW babies in mothers aged less than 20 years old in Wagir District, Malang Regency. The data collection method was used cross-sectional. The inclusion criteria in this study were mothers who were less than 20 years old, had given birth to a baby with LBW, and were domiciled in Wagir District. The data was analysed by logistic regression test. A total of 106 respondents participated in this study. The results showed that the factors that were significantly related were nutritional status (p-value 0.012), economic level (p-value 0.030), and gestational age (p-value 0.046). The dominant factor was nutritional status (p-value 0,012; OR 0,666). Nutritional status is the most influential thing for the health of both mother and baby, so the role of health workers in educating women during the preconception period regarding nutrition and the risk of pregnancy is essential.

Abstract

Drug-induced Liver Injury (DILI) dapat disebabkan oleh penggunaan obat seperti acetaminophen yang mengalami metabolisme di hati. Kerusakan hati dideteksi melalui peningkatan enzim transaminase. Madu trigona mengandung flavonoid yang tinggi dan memiliki peran protektif terhadap inflamasi dan stres oksidatif. Penelitian ini bertujuan mengetahui efek pemberian madu trigona sebagai hepatoprotektor terhadap kadar enzim transaminase tikus Sprague-Dawley (SD) yang diinduksi acetaminophen. Penelitian ini menggunakan desain post-test with control group design dimana 12 ekor Rattus norvegicus galur SD dibagi dalam empat kelompok: kontrol negatif, kontrol positif, perlakuan 1 dan perlakuan 2. Semua kelompok kecuali kontrol negatif diinduksi acetaminophen selama 7 hari dilanjutkan pemberian madu kelulut pada kelompok perlakuan 1 dan 2 dengan dosis masing-masing 9,3 g/kgBB dan 18,6 g/kgBB selama 7 hari. Pengukuran ALT dan AST  pada hari ke-1, ke-8 dan ke-15 menggunakan spektrofotometri. Uji statistik menggunakan One Way Anova. Hasil penelitian didapatkan perbedaan signifikan  kadar ALT (nilai p=0,000) dan AST (nilai p=0,000) pada hari ke-15 antara kelompok yang diberikan madu trigona dengan tidak diberikan setelah diinduksi acetaminophen. Sebagai kesimpulan, madu trigona memiliki efek hepatoprotektor menurunkan kadar ALT dan AST.

Abstract

Stunting has become a dietary concern in Indonesia. Ogan Komering Ilir district of South Sumatra Province has a stunting prevalence exceeding 20%, highlighting a significant public health concern according to WHO. Addressing this challenge requires the active involvement of health cadres, who play a pivotal role in enhancing maternal and child health. This study aimed to enhance the knowledge of health cadres in stunting prevention through the application of the emotional demonstration method at the village level. A total of 23 active cadres from the healthcare system were purposefully selected to participate in this activity. The experiment group, consisting of 12 cadres, underwent training using the emotional demonstration method through interactive games, while the control group, totaling 11 cadres, followed conventional methods, such as lectures. The activity was held with separate sessions for each group. The participants’ knowledge was measured using questionnaires covering the understanding of stunting, exclusive breastfeeding, complementary foods, anemia, and sources of nutrients. Data were analyzed using a dependent t-test. Average pre-post knowledge gains were 1.15 scores higher for experiment groups compared to 0.19 scores higher for control groups. Statistically significant changes in knowledge scores were observed in the experiment group (p = 0.002), while the control group showed insignificant changes (p = 0.321). Education activities employing emotional demonstration through interactive games are effective in increasing knowledge of stunting prevention.

Abstract

Food service in hospital is aimed at providing high-quality meals and ensuring nutrition intake for patients. However, this aspect of healthcare faces numerous challenges, including high levels of food waste and patient dissatisfaction, often attributed to conventional food delivery practices in hospitals. The consumption of energy and macronutrients, including carbohydrate, protein, and fat, contribute greatly for hospitalized patients. Therefore, this study tried to implement a room service-like method in the food service system. This research was conducted in Class 1 and 2 of the inpatient wards of “Waled” Public Hospital, using a static pre-experimental design with two groups. Each group consisted of 38 patients selected from quota sampling. The control group followed the conventional food service method, while treatment group was given a room service approach. The treatment group was provided with a list of three menu options for each of the nine mealtimes, allowing them to choose their preferred food by sending a short message at the designated meal hour. Ordering times were specified as follows: 05:15 to 07:00 for breakfast, 10:00 to 12:00 for lunch, and 15:00 to 17:00 for dinner. Foods were prepared within 45 minutes after the order was placed. T-test analysis showed a distinct trend in the levels of energy, carbohydrates, proteins, and fats consumption between the control and treatment groups. The correlation between group variables and the level of energy consumption reached 15%, while the correlation between group variables and the level of protein consumption was 14%.

Abstract

The development of four-star complementary foods for breast milk (Makanan Pendamping ASI or MP-ASI) products signifies the inclusion of four nutritional elements, i.e. carbohydrates, animal protein, vegetable protein, and vegetables, needed to support the growth and development of children. This study aimed to determine the sensory evaluation, including taste, texture, aroma, appearance, and color, as well as the acceptability test of finger food products known as “Gulu Naga Ijo” made from a combination of corn, eggs, dragon fruit, and green bean flour. This research was an experimental study with a completely randomized design (CRD) on five treatment variations (P0: 0% composite flour, P1: 25% composite flour, P2: 50% composite flour, P3: 75% composite flour, and P4: 100% composite flour). This study revealed a significant difference in sensory evaluation of products and composite flour substitution (p<0.05). Overall, two samples (P1 and P3) obtained the highest preference from the panelists in the sensory evaluation, prompting for test acceptability score of the products The acceptability test for toddlers resulted in scores of 1.3 for formula P3 and 1.8 for formula P1. The use of composite flour has a significant effect on the sensory evaluation and acceptance of finger food product development.

Abstract

Many street food vendors lack an understanding of food safety standards, resulting in cases of poisoning due to microbiological and chemical contamination. One popular snack sold is aci dicolok (cilok). This study aims to analyze microbiological contamination and hazardous chemical additives in cilok and the sauce sold in the Southern Alun-alun of Kraton Yogyakarta. The parameters of this study included calculating the total number of bacteria and salmonella using Plate Count Agar (PCA) and Salmonella Shigella Agar (SSA) media and qualitatively analyzing the content of formaldehyde, borax, and rhodamine B using Easy test brand test kits on cilok and sauce samples from 10 sellers. The results were then compared with the standards of The Indonesian Food and Drug Authority (BPOM) and the Indonesian National Standard (SNI). The results showed that 40% of cilok and 100% of sauce samples exceeded the total bacteria limit of SNI and BPOM (1 x 105 CFU/g). For the total Salmonella content, 10% cilok and 0% sauce samples exceeded the SNI and BPOM salmonella limit (0 CFU/g). The analysis of hazardous chemical additives revealed that 10 samples were negative for formaldehyde and borax, but 10% of the sauce tested positive for rhodamine B. The study results indicate that cilok and sauce are subject to microbiological and chemical contamination, so education and supervision by the authorities are needed for cilok sellers.
