Abstract

High antioxidant content of banana peel can be utilized as a source of antioxidant for other foodstuffs so it will be more economically valuable. One of foodstuffs that can be added by banana peel extract is tofu. However, adding banana peel extract as a source of antioxidant to the production of tofu need to be studied further related to the shelf life of tofu base on total microbes. This study aims to find out the effect of adding banana peel extract as a source of antioxidant to the production of white tofu. Stages of research: 1) The making of banana peel extract, 2) Antioxidant test of banana peel extract, 3) Phytochemical test of extract, 4) Production of tofu with the combination of banana peel extract with variations in concentration namely 5%, 10%, and 15%, 5) The extraction of fortification tofu, 6) Test of tofu antioxidant activity, and 7) Test with TPC test. The result ahow that banana peel extract contains alkaloid, tannins, flavonoid, steroids and triterpenoid. Banana peel extract shows the antioxidant activity as much as 58,02%. The addition of banana peel extract in the production of tofu is the most optimum at the concentration of 15% with a shelf life of 1 day at room temperature that show antioxidant activity as much as 51,87%. The best TPC value on tofu with banana peel extract is produced at concentration of 15% with a shelf life of 1 day at room temperature.

Abstract

Cadmium (Cd) increases oxidative stress, which increases the likelihood of health problems. To protect the body from oxidative stress, natural antioxidants obtained from plants are required. The kabau plant (Archidendron bubalinum) is thought to have antioxidant phytochemicals. The purpose of this study was to assess the antioxidant activity and total phenolic component content of kabau pod peels, as well as their effect on the quantity of erythrocytes and leukocytes in male mice exposed to cadmium. This study used a completely randomized design, with 24 mice divided into six groups: three control groups and three treatment groups. The findings of assessing the antioxidant activity of peel extract revealed that the IC50 was 93.6 ppm, which is considered strong. The phenolic content of peel extract was 72.26 mg GAE/g. Giving pod peel extract to mice increased the number of erythrocytes and leukocytes, however the impact was not significant (p = 0.028 and P = 0.239). Mice with 380 mg/kg BW produced better outcomes. Abstract

Laboratory mice are widely used in biomedical research due to their genetic similarities to humans. The dietary needs of mice in Indonesia. However, they are frequently not satisfied by commercially available feed. This indicates the necessity for locally obtained, customized feed formulations, like those that include mung beans, which are high in vital nutrients and promote sustainable agriculture. This study aims to compare the effect of various mung bean-based feeds on the weight gain of female mice and their feed conversion value. Four feed formulations with varying concentrations of mung beans (85%, 75%, 65%, and 55%) were compared to commercial Broiler II feed, using 20 female mice over two months. The study involved daily feeding, weighing consumed feed, and mice’s body weight to determine the Feed Conversion Ratio (FCR), and the Kruskal-Wallis test for statistical analysis. The results show no statistical difference between treatments, which means all treatments are comparable to the control groups in promoting mice growth in all the parameters observed. Nevertheless, a certain trend was observed where the higher the mung bean content, the more similar the results to the control group. Thus, treatments MB85 containing 85% mung beans might have the greatest potential to promote mice growth.

Abstract

Caffeine is known to have various biological effects, including its potential to modulate the central nervous system. This study aims to identify the molecular targets of caffeine and explore their relationship with Alzheimer's disease using a bioinformatics approach. The methods used include target prediction using SwissTargetPrediction and SuperPred, target relationship analysis with disease through the DAVID database, protein interaction exploration and enrichment analysis using STRING-DB, and network analysis using Cytoscape. The results showed that from the total targets obtained, there were 20 overlapping targets related to Alzheimer's. Protein interaction analysis revealed 17 nodes with 32 significant interactions, which provide insight into the molecular pathways that caffeine can manipulate in the context of neuroprotection. These findings are in line with various studies showing that caffeine consumption is associated with a reduced risk of Alzheimer's through modulation of the nervous system and inflammation.

Abstract

Wick system is an easy-to-do and energy-efficient hydroponic system. Used plastic bottles can be used as planting media, thereby reducing the amount of plastic waste. Pahawang Village is facing the problem of plastic bottle waste and there has been minimal effort to reduce and manage the plastic waste. Training in leafy greens cultivation using the wick system is very much needed by residents because the production can be consumed to meet the nutritional needs of the family. This activity aims to improve community knowledge and skills through training in vegetable cultivation with wick system using plastic bottle waste. The training succeeded in increasing the understanding and skills of participants regarding cultivation with the hydroponic wick system. There are several factors that drive this outcome, including the easy-to-understand content of material presentation, the easy wick system, and the motivation of the participants. Continuous community assistance needs to be carried out as a follow-up so that cultivation efforts can be continued. In that case, the community can generate economic benefits after fulfilling the nutritional needs of the family.
