Abstract

Indonesia is a country with a Muslim population of 207,176,162 people, or reaching 87.21% of the total population, so the need for halal products is quite high. This encourages business actors, especially in the food and beverage sector, to develop products based on halal guarantees. Where the aim is to guarantee the halalness of the products produced as regulated in Law No. 33 of 2014 concerning Halal Product Guarantees. One product that is widely used in the food and beverage industry today is ice cubes. Frozz Jaya Group Home Industry is an ice cube manufacturer that is preparing to apply for halal certification. This activity was carried out using learning service method. In this activity, 3 stages were carried out, namely socialization, observation and discussion to improve partners' preparation in applying for halal certification. This activity's results showed that several minor findings and positive things needed to be maintained. Partners are committed to immediately improving the conclusions of this activity so that they will be ready for halal certification. This was marked by several improvements such as applying for a well drilling permit and using tools and materials that are halal certified.

Abstract

The Singojuruh District in Banyuwangi Regency plays a pivotal role in rice cultivation, characterized by a large agricultural area and the highest levels of rice production and productivity compared to other districts. Among the various rice farming practices, organic red rice cultivation has emerged as a promising alternative due to its growing market demand and favorable selling prices for farmers. However, its productivity and profitability remain suboptimal, primarily due to the limited use of agricultural machinery such as transplanters and combine harvesters. This study aims to examine the effects of mechanization—specifically the use of transplanters and combine harvesters—on working time, labor requirements, and farmers' income in organic red rice farming in the Singojuruh District. A survey method was employed, involving farmers as respondents to assess the relative conditions, distribution patterns, and inter-variable relationships. Furthermore, an independent sample t-test was conducted to compare the variables. The findings reveal that the application of transplanters and combine harvesters significantly reduces working time and labor requirements while simultaneously increasing farmers' income in organic red rice farming.

Abstract

Susu sapi segar merupakan bahan pangan bergizi tinggi yang mudah rusak akibat aktivitas mikroba dan enzim. Proses pemanasan konvensional seperti pasteurisasi dan sterilisasi termal dapat memperpanjang umur simpan, tetapi berpotensi menurunkan kualitas sensori dan nilai gizi. Oleh karena itu, teknologi non-termal seperti High Pulsed Electric Field (HPEF) dan penyinaran ultraviolet (UV) mulai dikembangkan sebagai alternatif. Penelitian ini bertujuan untuk menganalisis pengaruh frekuensi dan lama waktu perlakuan kombinasi HPEF – UV terhadap mutu susu sapi segar, dengan parameter warna (lightness, redness, yellowness), pH, dan EC (electrical conductivity). Penelitian dilakukan dengan mengkombinasikan dua faktor. Faktor pertama adalah frekuensi HPEF (10, 20, dan 30 Hz), sedangkan faktor kedua adalah lama waktu perlakuan (10, 15, dan 20 menit). Parameter warna diuji menggunakan colorimeter, pH dan EC diukur menggunakan water quality tester, dan data dianalisis menggunakan two-way ANOVA serta uji lanjut DMRT pada taraf 5%. Hasil penelitian menunjukkan bahwa frekuensi dan lama waktu perlakuan berpengaruh nyata terhadap semua parameter mutu. Nilai lightness (L*) dan redness (a*) menurun dengan meningkatnya frekuensi dan durasi perlakuan, menandakan sedikit penggelapan warna dan penurunan rona kemerahan akibat perubahan struktur protein dan lemak. Sebaliknya, nilai yellowness (b*) meningkat signifikan, menunjukkan penguatan rona kekuningan. Perlakuan HPEF – UV juga mampu mempertahankan kestabilan pH, mengindikasikan inaktivasi enzim penghasil asam dan penurunan aktivitas mikroba. Sementara nilai EC menurun pada frekuensi rendah, namun meningkat kembali pada frekuensi tinggi akibat pelepasan ion-ion bebas dari efek elektroporasi ireversibel

Abstract

Rembangan Dairy Farm merupakan sentra produksi susu segar dan susu pasteurisasi di kawasan wisata Rembangan, Jember. Namun, proses pengolahan yang masih bergantung pada pasteurisasi konvensional menyebabkan mutu sensoris mudah menurun dan tidak mampu mengatasi mikroorganisme termodur, sehingga keamanan dan umur simpan produk masih terbatas. Kegiatan pengabdian ini bertujuan meningkatkan mutu dan keamanan susu melalui penerapan teknologi sterilisasi non-termal berbasis High Pulsed Electric Field–Ultraviolet (HPEF–UV) serta penguatan kapasitas mitra dalam pengoperasian alat. Pelaksanaan kegiatan meliputi identifikasi kondisi mitra, perancangan dan pembuatan alat HPEF–UV, serta diseminasi melalui sosialisasi penggunaan alat, dan troubleshooting. Evaluasi keberdayaan dilakukan melalui wawancara terstruktur dan observasi berbasis checklist untuk menilai peningkatan pengetahuan dan keterampilan teknis mitra. Hasil kegiatan menunjukkan peningkatan pemahaman mitra terhadap prinsip sterilisasi non-termal, fungsi komponen alat, dan tahapan kerja dalam SOP. Mitra juga mampu mengoperasikan alat secara mandiri dan menangani masalah teknis dasar. Implementasi teknologi HPEF–UV memberikan solusi terhadap keterbatasan pasteurisasi serta meningkatkan kesiapan mitra untuk menghasilkan susu yang lebih aman, stabil, dan kompetitif sebagai produk unggulan wisata Rembangan. Kegiatan ini membuktikan bahwa transfer teknologi tepat guna dapat memperkuat keberdayaan mitra sekaligus meningkatkan nilai tambah produk peternakan lokal.

Abstract

Limbah ampas tebu merupakan salah satu sumber energi biomassa yang potensial namun belum dimanfaatkan secara optimal di Indonesia. Pengolahan ampas tebu menjadi briket dapat menjadi solusi energi alternatif yang ramah lingkungan, namun masih terkendala oleh keterbatasan alat pencetak yang sederhana dan terjangkau. Penelitian ini bertujuan untuk merancang dan menguji kinerja alat pencetak briket manual, menentukan kapasitas produksi, kualitas hasil cetakan, serta indeks kehancuran briket. Penelitian dilaksanakan di Laboratorium Logam dan Kayu serta Laboratorium Alsintan Politeknik Negeri Jember. Metode penelitian meliputi perancangan dan pembuatan alat, proses pembuatan briket melalui tahap pengeringan, karbonisasi, penumbukan, pengayakan, pencampuran perekat, dan pencetakan, serta pengujian kinerja alat. Hasil penelitian menunjukkan bahwa alat memiliki kapasitas kerja rata-rata 0,84 menit per buah dengan tingkat keberhasilan cetak sebesar 96,58%. Indeks kehancuran tertinggi diperoleh pada penggunaan perekat tepung tapioka sebesar 345,8 N, sedangkan terendah pada perekat tetes tebu sebesar 29,62 N.

Abstract

Fisheries are sector with great potential to meet food needs. Teaching Factory Canning Politeknik Negeri Jember (Polije) is one of the Fish Processing Units (UPI) engaged in canning seasoned sardines. Teaching Factory Canning Polije is a UPI included in the medium-large category. This research aims to determine the processing feasibility of canning teaching factory. Data were collected by interview and checklist analysis referring to the Ministry of Marine Affairs, namely the Decree of the Minister of Marine Affairs and Fisheries No.Kep.01/MEN/2007. The application of basic eligibility requirements is carried out by analyzing whether there is a discrepancy with existing regulations or deviations, which are then synchronized with the value of the eligibility criteria. The production process of Teaching Factory Canning has followed the processing feasibility certification set by KKP No.Kep.01/MEN/2007 with good eligibility criteria. The assessment is based on 6 minor deviations, 7 significant deviations, and 1 serious deviation. In addition, the GAP Analysis of the UPI TEFA Canning Polije Processing Feasibility Certification showed that the basic feasibility had met the basic requirements and 1 general requirement by correcting the deviations found
