Abstract

Nutrition is a process of organisms using food that is normally consumed through several processes to maintain the normal life, growth and function of the organs and generate energy. Consumption of good nutrition and enough is needed by someone, especially in children under five. Nutrition consumption will affect how the nutritional status of children under five. The fact that malnutrition is irreversible (can not recover). Malnutrition that occurs in this golden period can lead to infectious diseases that often occur in infants is diarrhea. The high incidence of diarrhea in infants is influenced by the lack of family knowledge, especially mothers in doing diarrhea treatment at home. This study was conducted to acknowledge the relationship between mother’s care pattern with the incident of diarrhea in children under fivein the Village of Sirandorung, North Rantau Sub District Labuhanbatu Regency. This study was an analytical descriptive research with cross sectional design. The data were obtained from direct interviews to mother covering the data of parenting (feeding, hygiene and environmental sanitation, and child care), and diarrhea incidence data. Data analysis was done univariat, bivariate, using chi-square test. The results of this study indicate good feeding care pattern of 55.7%, hygiene and environmental sanitation categorized both by 44.3% and good child care by 78.5%. Most infants had diarrhea in the last 3 months (67.1%). There is a relationship between mother's feeding pattern with the incidence of diarrhea in infants (p = 0.0001). There is a relationship between hygiene care pattern and environmental sanitation with the incidence of diarrhea in infants (p = 0.0001). And there is a relationship between child care with the incidence of diarrhea in infants (p = 0.036). Based on the results of the study is expected to improve counseling about good parenting patterns to under five and for health workers to motivate health cadres in disseminating information to mothers about parenting patterns in children underfive.

Abstract

Worker nutritional status is one of the important factors that contribute  in supporting workforce productivity. The fulfillment of nutrients will increase a better workforce productivity. This research aims to determine the description of nutrient intakes, workforce productivity and nutritional status of palm oil workers of  PT. Socfindo Sungai Liput Aceh Tamiang. This research is descriptive study with the samples of research about 40 workers in the processing plant. Data collection method is collected by  interviews using employee identity questionnaires, food recall forms and body measurements of workers including weight and height. The results of this research indicate that 65.0% of Socfindo factory workers had normal nutritional status. Workforce productivity of workers is 72,5% productive workers with normal nutritional status 65,4% and workers withnormal hemoglobin level 72,5%. Based on this research, it is recommended to the company of Socfindo palm oil factory especially in the health department to provide guidance to the workers to improve their knowledge about nutrition and do routine health check up related to nutritional status. Abstract

One effort to reduce infant morbidity and mortality is to give exclusive breastfeeding. WHO and UNICEF suggest giving breastfeeding exclusively to the baby until was six months. The success of breastfeeding is influenced by the mother's knowledge about breastfeeding. Alongside mother's knowledge, early initiation of breastfeeding also can determine the success of exclusive breastfeeding. This study aimed to determine the relationship of the level of mother's knowledge about exclusive breastfeeding and early initiation of breastfeeding action against the status of exclusive breastfeeding in Desa Bandar Klippa, Kecamatan Percut Sei Tuan, Kabupaten Deli Serdang. Type of this research was a analytic survey with crossectional design. Analysis data used chi-square test and the sample of research were 73 mothers that have baby with aged 7-12 months. The results showed that there was relationship between mother's knowledge with exclusive breastfeeding status (p = 0.014) and there was correlation between early initiation of breastfeeding action with exclusive breastfeeding status (p = 0.034). The results of research are expected to health workers to improve the promotion of exclusive breastfeeding and support to do early initiation of breastfeeding after maternal and do not encourage mothers to give milk formula instead of breast milk. Abstract

Red rice and arrowroot are functional foods that have great benefits, but the level of awareness and consumption remains low. This food can be processed into noodles, one of the more preferred foods. In this study apply the concept of glycemic index that emphasizes the importance of choosing the right foods to improve and maintain health based on the speed of rising blood sugar levels. Type of research is experiment. The acceptability test with organoleptic test to see the panelist’s preference level against the test food. Subjects in the acceptability test amount to 30 people and 8 volunteers to glycemic index analysis. The glycemic index is calculated by comparing the area under the food test curve with reference food. The object of this research is the noodles from red rice (50% red rice flour, 50% flour), noodles from arrowroot (15% arrowroot flour, 85% flour), noodles from red rice and arrowroot (35% red rice flour, 15% arrowroot flour, 50% flour). Nutritional content seen include carbohydrate, protein, fat and coarse fiber.The glycemic index values ​​of the three test food are in low category where the lowest is the red rice noodle 25,39%, arrowroot noodle 36,26% and red rice and arrowroot noodle 33%. Arrowroot noodle contains the highest 91.40% carbohydrate and 5.3% protein, the lowest fat 2.33% in red rice noodle and the highest coarse fiber found in red rice and arrowroot noodle 0.75%. Result of organoleptic test, panelist like red rice and arrowroot noodle the most in aroma, flavor and texture indicator of which each have score 67,7%, 65,5%, 68,8% with likes criteria, while for color panelist like arrowroot noodle the most that have score of 66.5% with likes criteria. The resulting noodles can be an alternative for staple foods. Red rice noodle can be recommended for diabetics, while red rice and arrowroot noodle can be consumed in society because it has the highest score in the acceptability test. Abstract

At present, Indonesia faces multiple nutritional problems that are less nutritional problems and more nutritional problems. The problem of malnutrition is generally caused by poverty, lack of food availability, poor quality of environment, lack of knowledge of society, on the other hand nutritional problem is more caused by economic progress in certain society layer accompanied. The results of Riskesdas (2013) nationally estimated the prevalence of malnourished children under five and less by 19.6%. Number of 23,708,844 children, so the number of malnutrition and less equal to 4,646,933 children under five.The results of the preliminary survey in the work area of Sibuhuan Health Center with the number of children under five years of age 1,536 people. showed that nutritional status of BB/U malnutritional 2.60%, TB/U short 1.82% and BB/TB lean 2.27%. The purpose of this study is to know the description of income, knowledge and parenting patterns of mother and nutritional status of children under five in the working area of Sibuhuan Public Health Center in Padang Lawas year 2017. Type research is a descriptive survey with cross sectional research design. The population in this study was all childrens aged under 12-59 months with a sample of 94 people.                The result of the research showed that the nutritional status of children based on the weight of the nutritional status with malnutrition status category and less was 58,6%, chronic malnutrition (TB / U) with short and short nutritional status category 55,3%, while the nutritional status of chronic (BB / TB) with the category of nutritional status is very thin and thin 47,8%, more income in the category of income below the UMK (<Rp 1.605.000) as much as 55,3%, more knowledge in 40,4% enough category, mother in feeding more on category not good 55,3% and care of children under five more in good category 56,4%, then mother care pattern (feeding and care of children under five) more in category not good 52,1% while good 47,9%.  It is recommended that Padang Lawas District Health Office, Sibuhuan Health Center and health workers are expected to increase counseling, supervision and more active in handling nutritional status of children under five so that better nutrition of children under five and increasing of public health status. Abstract

Coconut milk and persimmon fruit can be processed into a variety of food products one of them yoghurt that can contribute nutrients such as protein, calsium, vitamine A, and chemical content (pH and total acid) and microbiological content of lactic acid bacteria. Those components, which are essential for every human being. The purpose of this study was to knowed and analize the acceptability and nutrition community to the utilization of coconut milk and persimmon fruit as a raw material for making yoghurt. This research is an experimental research using complete randomized design. making yogurt with the addition of coconut milk and persimmon fruit with composition ratio (50%: 50%) and (70%: 30%). Research on acceptance test and yoghurt was conducted at Public Health Nutrition Laboratory, Faculty of Public Health, University of Sumatera Utara with 30 panelists, while nutrient analysis, chemistry and microbiology of yogurt was done at Food Science and Technology Laboratory, Faculty of Agriculture (FP). The results of organoleptic test to taste, aroma, texture and color of coconut milk yoghurt and persimmon fruit at a ratio of 50%: 50% protein contributed 6.41%, calcium 0,30%, vitamine A 0,31%, and water content 32 %, chemical content in yoghurt is pH 5.0 and total acid 1,2% and microbiology content is total lactic acid bacteria (BAL) 19x107 cfu/ml in 100 gram of material. While in the ratio of 70%: 30% protein contributed 2.6%, calcium 0.24%, vitamine A 0.28%, and moisture content 25%, chemical content in yogurt that is pH 4.0 and total acid 0, 7% and microbiological content of total lactic acid bacteria (BAL) 16x107 cfu / ml in 100 grams of material. Suggestions from this study is that people to use coconut milk and persimmon fruit in making yoghurt as alternative healthy snack, and drinking milk substitute for society (Elderly, teenager and toddler) who is unable to digest lactose (lactose intolerance). Abstract

  Orange juice is a beverage sold in the University of North Sumatra commonly. The existence of orange juice vendor is considered as one of thirst loose that can fulfill vitamins and water needs. On the other hand there are concerns related to the use of inappropriate food additives, including sweetener (cyclamate) and dye (tartrazine). The impacts of short-term use of cyclamate are migraine, memory loss, insomnia, irritation, etc. Intolerant reactions in some body will be produced when tartrazine are consumed. In the long term use, cyclamate   and tartrazine can induce cancer. This research used descriptive observational method. The research was conducted in University of Sumatera Utara area. The data were obtained from cyclamate qualitative analysis using precipitation method and cyclamate quantitatively using thermogravimetric method, while tartrazine was qualitatively tested by chromatographypaper method and quantitatively using thermogravimetric method. The test of both samples will be conducted in the Laboratory of Biochemistry and Food Chemistry, FMIPA USU. The result of the analysis is compared with the quality standard based on regulation from the head of BPOM RI number 4 year 2014 about sweetener as food additives and number 37 year 2013 about dye as food additives. Based on examination results of 8 samples of orange juice, it showed that the orange juice contained cyclamate and tartrazine. The content of cyclamate was above maximum permitted level of 200 mg / kg which was not safe to be consumed. Tartrazine was still below maximum permitted level 70 mg / kg that safe to be consumed. In accordance with these statements, the public is suggested to consume orange juice sold in the University of North Sumatra unregularly. In addition, Vendors are not expected to use inappropriate artificial sweetener above maximum permitted levels as it not only endanger consumers’ health but also break the law. Abstract

The problem of Protein Energi Malnutrition in children under five is a very difficult problem to overcome, the cause of malnutrition is basically a simple deficiency in food consumption. Tackling Protein Energi Malnutrition can be done by increasing protein intake. Withgiving of food, like crackers. But most crackers have carbohydrates while the protein content is relatively low. So make crackers by utilizing moringaleaves flourand catfish flour to improve the nutritional composition. Type of research was experiment. The study used a complete randomized design with a organoleptic test to see the panelist's preference level on the test food. Organoleptic test subjects amounted to 30 people students of FKM USU. The object of this study were crackers with moringaleaves flourand catfish flour treatment A1 (15gr and 50gr), A2 (20gr and 45gr) and A3 (25gr and 40gr) from the weight of the main ingredient. The nutrition content seen include fat, protein, iron, and calcium. Crackers with moringaleaves flourand catfish flour have the highest protein content of 16.0% found crackers with 25gr moringaleaves flour and 40gr catfish flour. The highest fats were found in crackers with 15gr moringaleaves flourand 50gr catfish flour which was 22.3%. The highest iron are crackers with 25gr moringaleaves flourand 40gr catfish flour which is big 10.4% while the highest calcium is 5.42% found in crackers with 25gr moringaleaves flourand 40gr catfish flour. The results of the organoleptic test, the panelists most liked crackers with moringaleaves flour15gr and 50gr catfish flour in color, aroma and taste indicator which each have a score of 88.8%, 79.9%, 85.5% with likes criteria, whereas for panelist textures most liked crackers with 25gr moringaleaves flourand 40gr catfish flour which has a score of 78.8% with the likes criteria. Crackers produced can be used as additional food. Moringa leaves and catfish can be recommended for ingredients in the manufacture of crackers that have protein content. Abstract

In infancy when malnutrition can cause impaired the development of the physically, mental, social, and intellectual nature of the settled and continue to be taken until the child becomes adult. The aim of this research was to know the pattern of give Complementary Feeding and growth in infants age 6-8 months in Puskesmas Simalingkar Medan region working area. Types of this research was descriptive by cross sectional design. The samples were 61 baby by total sampling methode. The primary data were obtained through interviews using food recall 24-hour and questionnaire. The result showed that an average of give Complementary Feeding has been done well, types and forms of food given to infancy age 6-8 months, which was crushed food milk or porridge and porridge filter was 41,0%, ordinary soft or food porridge and team rice was 44,2% and solid food or family meal was 14,8%. The baby growth based on weight for age (W/A) the category  normal 52,6% the category is very low 19,7%. The baby growth based on lenght for age (L/A) the category normal 37,7%, category of very sort 8,2%, the baby weight for length (W/L) category normal 47,5%, the category of very thin 8,2 %. The baby’s growth based index antropometry (W/A), (L/A), and (W/L) in this research by the outline in normal category even though the pattern of given Complementary Feeding there is still not approriate.   Key Word : Complementary feeding, growth, baby age 6-8 month

Abstract

Children under five years are particularly vulnerable to problems of nutrition for children under five years require more nutrients. Natural disasters can threaten and interfere with people's lives like the eruption of Mount Sinabung which made them to flee so as to make people live within the limitations of the limited availability of food, for example. This causes stunted growth and development in infants that will affect physical endurance and intelligence so that it can have an impact on life in the future. This study aims to describe the availability of food, the number of energy and protein adequacy and nutritional status of infants in evacuation Sinabung. This research was a descriptive cross sectional design. Samples taken are entire populations that as many as 95 children under the age of 12-59 months. Data collected include food availability, energy consumption and protein, as well as nutritional status was analyzed by univariate to see the frequency distribution. The results showed that most of the nutritional status of children under five by BB / U in the category of less than 58,9%, TB / U in the category amounted to 65.2%, and weight / height within the normal ranges of 62.2%. Of 38.9% children who fulfilled the need for energy, and amounted to 75.8% children who fulfilled their protein requirements. The availability of food in the family of children in refugee camps in a state of mild hunger rate of 80.0% and in a state of famine was 20.0%. Expected their mothers raising awareness on health and nutritional needs are increased in children under five years and a concerted effort from the government to further increase the availability of food while in refugee camps in order to avoid food shortages.
