Abstract

Non-Communicable Disease is a chronic disease that tends to last a long time and can cause death. It can cause individuals to become less productive. However, controlling risk factors through early detection can prevent these problems. At this time, early detection is mostly carried out at the village / health facilities level, not yet at work / institutional level. Bondowoso Campus Jember University is one of the largest educational institutions in the BASUKI RAYA area, which has many employees, and an average age of over 20 years, which is the productive age group. Early detection through Non-Communicable Disease screening activities is important in preventing and reducing morbidity and mortality due to the disease. This activity is also useful in regularly monitoring the health of employees and also minimizing lost opportunities for employees to carry out early detection of diseases due to examinations. Methods of this activity include counseling, early detection of PTM as well as counseling and counseling based on screening results. Data analysis were performed using univariate and bivariate. Different test was performed using Wilcoxon with a level of ɑ = 0.05. The results showed that there was an increase in employee knowledge regarding non-communicable diseases and how to prevent them. (p = 0.03, sig <0.05).

Abstract

Non-communicable diseases (NCDs) are catastrophic diseases that can cause an increase in the socio-economic burden for sufferers, their families and the government, because their treatment takes a long time, costs a lot and requires high technology. Cardiovascular disease is one of the PTM diseases in Jember Regency which has a high prevalence of cases. Screening activities through posbindu are one of the efforts that can be done to prevent and control PTM. This activity aimed to screen NCDs and improve Cardiopulmonary Resuscitation (CPR) skills in the Kranjingan Village community, Sumbersari District, Jember Regency. This activity was carried out through several stages, starting with counseling, examining early detection of PTM risk factors, counseling and CPR training. Screening activities were important to be carried out to increase public awareness of non-communicable diseases through early detection, early treatment and controlling risk factors so as to reduce morbidity and mortality rates. After this activity, it was known that there has been an increase in participants' knowledge related to Cardiopulmonary Resuscitation (CPR) skills in the community in Kranjingan Village, Sumbersari District, Jember Regency.

Abstract

Stunting is a growth disorder in children as a result of chronic nutritional problems. This causes the child's height does not match his age. Various efforts have been made to reduce the prevalence of stunting. One of the innovations that can be done is the development of new food products by modifying meatballs derived from tuna with anchovy flour substitution (tori meatballs). This study aims to determine the effect of giving tori meatballs on total protein levels and body weight. The study was conducted for 14 days. The research sample consisted of 27 male wistar rats which were divided into 3 groups, namely K as the control group, P1 as the treatment group with 1 g/day of tori meatball, and P2 the treatment group with 2 g/day of tori meatball. Body weight was measured daily with a digital scale. Total protein assay using Kingsley Method with biuret reagent. The results showed that body weight and total protein content were not statistically different. The provision of tuna meatballs with anchovy flour substitution (tori meatballs) had no effect on body weight and total protein content of wistar white rats. Keywords: stunting; tori meatballs; protein total levels; wistar rats

Abstract

ABSTRACTBackground: Factors that cause anemia in pregnancy include food taboos and adherence to taking iron tablets. The application of food taboos affects the diversity of food consumption so that it has an impact on meeting the need for iron. The Iron supplement program is a government effort to reduce the incidence of anemia in pregnancy.Objectives: This study aims to analyze the relationship between food taboos and compliance with consuming iron supplement tablets with the incidence of anemia in pregnant women.Methods: This type of research was survey research with a cross-sectional approach. A sample of 35 people from 37 pregnant women was selected using simple random sampling. Samples were randomly selected using software on a mobile phone. This research was conducted on September 5-23, 2022. In this study, food taboos and adherence to consuming iron supplement tablets were the independent variables, and the dependent variable was anemia in pregnant women. In this study, primary data included: general characteristics of the respondents (age, working status, education, distance between pregnancies, family income), food taboos and adherence to consuming iron supplement tablets. Primary data was collected by filling out a questionnaire and secondary data related to Hb in the second trimester of pregnant women was obtained from the MCH handbook. Bivariate analysis using chi square.Results: The results showed that 40.0% of the respondents who applied food taboos had anemia and 25.7% of them experienced anemia. Based on the results of the chi-square test, a p-value of 0.001 was obtained, which means that there is a relationship between food taboos and the incidence of anemia in pregnant women. 28.6% of respondents get anemia from 45.7% of respondents who were non-compliant in consuming iron-supplement tablets and the results of the chi-square test between adherence to consuming iron-supplement tablets and the incidence of anemia in pregnant women obtained a p-value of 0.001, which means there is a relationship between both;Conclusions: There is a relationship between food taboos and compliance with consuming iron supplement tablets with the incidence of anemia in pregnant women  in the working area of Sukowono Public Health Center, Jember Regency.Keyword: Anemia; Food taboos; The adherenceABSTRAKLatar Belakang: Faktor penyebab anemia kehamilan diantaranya adalah food taboo dan kepatuhan mengkonsumsi tablet tambah darah. Penerapan food taboo mempengaruhi keberagaman konsumsi pangan sehingga berdampak terhadap  pemenuhan kebutuhan zat besi. Program pemberian tablet tambah darah merupakan upaya pemerintah untuk menurunkan kejadian anemia kehamilan. Tujuan: Penelitian ini bertujuan untuk menganalisis hubungan antara food taboo dan kepatuhan mengkonsumsi tablet tambah darah dengan kejadian anemia pada ibu hamil.Metode: Jenis penelitian ini yakni penelitian survei dengan pendekatan cross-sectional. Sampel sebanyak 35 orang dari 37 ibu hamil yang dipilih menggunakan simple random sampling. Sampel dipilih secara acak dengan menggunakan perangkat lunak pada handphone. Penelitian ini dilaksanakan pada 5-23 September 2022. Dalam penelitian ini, food taboo dan kepatuhan mengkonsumsi tablet tambah darah merupakan variabel bebas (independen), serta variabel terikatnya adalah anemia pada ibu hamil. Pada penelitian ini data primer meliputi karakteristik umum responden (usia, status bekerja, pendidikan, jarak kehamilan, pendapatan keluarga), food taboo dan kepatuhan dalam mengkonsumsi tablet tambah darah. Data primer dikumpulkan melalui pengisian  kuesioner dan data sekunder terkait hb ibu hamil trimester II diperoleh dari buku KIA. Analisis bivariate menggunakan chi square.Hasil: Hasil penelitian dinunjukkan dari 40% responden yang menerapkan food taboo sebesar 25,7% responden mengalami anemia. Berdasarkan hasil uji chi-square memperoleh p-value sebesar 0,001 yang artinya terdapat hubungan antara food taboo dengan kejadian anemia pada ibu hamil. Sebesar 28,6% responden mengalami anemia dari 45,7% responden yang tidak patuh dalam mengkonsumsi tablet tambah darah dan hasil uji chi square antara kepatuhan mengkonsumsi tablet tambah darah dengan kejadian anemia pada ibu hamil hamil mendapatkan p-value sebesar 0,001 yang artinya terdapat hubungan diantara keduanya.Simpulan: Terdapat hubungan antara food taboo dan kepatuhan mengkonsumsi tablet tambah darah dengan kejadian anemia pada ibu hamil di wilayah kerja Puskesmas Sukowono Kabupaten Jember.Kata Kunci : Anemia, Food taboo, Kepatuhan

Abstract

Abstrak: Pengaruh Pemberian Bakso Tongkol (Tori) Dengan Subtitusi Tepung Teri Terhadap Kadar Albumin Tikus Wistar. Salah satu masalah gizi utama di Indonesia yaitu Kekurangan Energi Protein (KEP) yang ditandai dengan keadaan kurang gizi berupa energi dan protein, kondisi hypoalbuminemia dan gangguan daya cerna. Upaya terbaik yang dapat dilakukan untuk mengurangi kejadian hypoalbuminemia yaitu dengan pemberian makanan tinggi protein seperti bakso tongkol (TORI) dengan subtitusi tepung ikan teri. Penelitian ini bertujuan untuk mengetahui pengaruh pemberian bakso TORI terhadap kadar albumin. Metode penelitian menggunakan true experiment dengan post-test only control group design. Penelitian dilaksanakan selama 14 hari dengan menggunakan 27 ekor tikus wistar jantan yang dibagi menjadi 3 kelompok yaitu kelompok kontrol (K), kelompok perlakuan 1 (P1) dengan pemberian 1 gram perhari bakso TORI dan kelompok perlakuan 2 (P2) dengan pemberian 2 gram perhari bakso TORI. Kadar albumin diukur dengan metode BCG end point dan reagen Dumalob. Uji normalitas menggunakan Saphiro-Wilk test sedangkan analisis data menggunakan one-way ANOVA test dan dilanjutkan dengan post Hoc Bonferroni. Hasil penelitian menunjukkan bahwa pemberian bakso TORI pada tikus wistar jantan terhadap kadar albumin tidak berpengaruh secara signifikan.

Abstract

Latar Belakang: Stunting masih menjadi masalah gizi utama karena dampak yang diakibatkan sangat kompleks. Stunting dapat mengganggu perkembangan otak, kepandaian anak, dan menghambat pertumbuhan fisik serta dapat menurunkan kemampuan kognitif anak apabila terjadi dalam jangka waktu panjang. Tujuan: untuk menganalisis hubungan antara pola asuh keluarga dengan kejadian stunting di Puskesmas Mangli. Metode: Penelitian ini menggunakan jenis penelitian kuantitatif dengan rancangan studi Case Control. Sampel penelitian sebanyak 46 balita usia 12̶ 24 bulan sebagai sampel kasus dan 92 balita usia 12-24 bulan sebagai sampel kontrol. Data diperoleh melalui wawancara door to door pada sampel kasus dan kontrol. Wawancara dilakukan menggunakan kuesioner yang berisi 37 pertanyaan dan setiap pertayaan mengacu pada buku kesehatan ibu dan anak. Analisis data menggunakan uji Chi-Square dan Odd Ratio (OR). Hasil: Sebagian besar responden kelompok kasus (63%) menerapkan pola asuh yang kurang baik, sedangkan kelompok kontrol (72,8%) telah menerapkan pola asuh yang baik pada balita. Penelitian ini menunjukkan bahwa terdapat hubungan yang signifikan antara pola asuh dengan kejadian stunting pada anak balita usia 12-24 bulan di wilayah Puskesmas Mangli Kabupaten Jember (p<0,001 dan OR=4,572). Kesimpulan: Balita yang memiliki pola asuh kurang baik berisiko 4,6 kali lebih besar mengalami stunting dibandingkan balita dengan pola asuh baik.

Abstract

Kabupaten Jember merupakan daerah potensi kopi terbesar kedua di Jawa Timur dan salah satu kopi yang dibudidayakan yaitu Kopi Robusta. Bentuk diversifikasi produk kopi robusta diantaranya adalah pembuatan permen jeli. Permen jeli yang bertekstur lunak dan manis serta digemari oleh semua kalangan masyarakat dapat dijadikan sebagai alternatif camilan bagi penderita diabetes mellitus (DM). Namun, rasa manis dari gula (sukrosa) yang berlebih dapat memperparah penderita sehingga dibutuhkan pemanis pengganti yang aman bagi kesehatan, yaitu stevia. Stevia merupakan pemanis yang disarankan untuk penderita diabetes karena memiliki kalori yang rendah dan tidak memberikan efek samping. Oleh karena itu, penelitian ini bertujuan untuk mengetahui pembuatan permen jeli kopi robusta dengan formulasi yang tepat dan sesuai sebagai alternatif camilan bagi penderita DM. Metode penelitian yang dilakukan yaitu eksperimental di laboratorium dengan variasi perlakuan stevia dan sukrosa (3:0, 2:1, 1:2, dan 0:3) yang akan dilakukan ulangan sebanyak 3 kali ulangan. Hasil penelitian pada uji organoleptik menunjukkan adanya perbedaan tingkat kesukaan panelis terhadap warna dan rasa serta tidak terdapat perbedaan tingkat kesukaan panelis terhadap aroma dan tekstur permen jeli kopi Robusta. Selain itu, secara keseluruhan ada perbedaan yang signifikan terhadap tingkat kesukaan panelis pada permen jeli kopi Robusta. Berdasarkan uji tekstur dan kadar gula didapatkan hasil tertinggi pada perbandingan konsentrasi ekstrak stevia dan sukrosa (0:3) yaitu berturut-turut sebesar 60,60 g dan 17,46%.

Abstract

Obesity is a chronic low-grade inflammatory condition that occurs in the White Adipose Tissue (WAT). Diet is the strongest factor regulating energy balance and influencing inflammatory responses in the body. This inflammatory response can be calculated using the Dietary Inflammatory Index (DII). The aim of this research was to determine the differences between DII values for obese and non-obese people in the work area of the Sumbersari Public Health Center, Jember Regency, which was carried out from May to June 2023. This was a cross-sectional study with sample selection through a simple random sampling method. Thirty participants were included in each group. Data collection was carried out using the Semi-Quantitative Food Frequency Questionnaire (SQ-FFQ), and the data were analyzed using an independent t-test. The normality test was performed using the Kolmogorov-Smirnov test, and the data were normally distributed. The results obtained that There was a significant difference (p=0,000) between the DII values of the normal and obese groups. It is known that the average DII value in the normal group was +2,29 and in the obese group was +1,32, indicating that the normal group had a higher pro-inflammatory diet than the obesity group. In conclusion, there was a significant difference between the DII values in obese and non-obese groups in the working area of the Sumbersari Community Health Center, Jember Regency.

Abstract

The female body condition is declared anemic if the hemoglobin level is ˂12 mg/dL. Moringa leaf flour contains iron 28.2 mg/100 g so that it can be an alternative to overcome anemia of adolescent girls in substituting almond crispy. The purpose of this study was to analyze the iron content and acceptability of almond crispy with variations in moringa flour substitution of 0% (control), 5%, 10%, and 15%. This research design was quasi experimental and involved 30 adolescent girls as panelists. Iron content was analyzed using Kruskal Wallis and Mann Whitney tests and acceptability test using Friedman and Wilcoxon Sign Rank Test. The results of the analysis showed that there was a significant relationship between variables with more substitution of moringa flour, the iron content increased. The results of the analysis of the acceptability of moringa-substituted almond crispy on color, aroma, taste, and texture were most liked by 5% moringa flour substitution. Consumption of 12 pieces of almond crispy with 5% moringa flour substitution can fulfills 30.6% of the 2019 RDA of iron requirement for 1-time snacks in adolescent girls. Almond crispy meets the requirements in the aspects of odor, color, and taste according to SNI Biscuits 2973:2018.

Abstract

Good nutritional intake in early childhood can help maintain a child's immune system so that it is not easily exposed to infectious diseases, especially during the Coronavirus Disease (COVID-19) pandemic like today. Parenting by mothers plays an important role in how nutritional intake in children can be fulfilled. This study aims to describe the mother's eating style, breakfast habits, and fruit and vegetable consumption in early childhood. This study is a descriptive study conducted on 36 parents of early childhood in Al Amien Jember Kindergarten. This research has received ethical approval from KEPK FKG UNEJ No. 1171/UN25.8/KEPK/DL/2021. The results of research on eating patterns, it is known that in most early childhood 83.3% always have breakfast every day. Nevertheless, Most early childhooders consume vegetables and fruits less than 3 times a day. The results of research on maternal parenting showed that as much as 50%. 44.4% of mothers sometimes apply parenting by forcing children if the child refuse food that is usually consumed. Even though the dietary consumption pattern in this study is quite good, there needs to be further education about parenting, and feeding, especially the provision of balanced nutritious foods and diverse foods.
