Abstract

The high demand for organic rice on the market indicates that the organic rice business has good potential and opportunities to be developed, so as to encourage organic agriculture to become competitive and sustainable. This is an opportunity for farmers, especially farmers who are under CV. Sirtanio Organic Indonesia is expected to provide high value added to its member farmers, so as to boost the economy of farmers towards prosperity. The purpose of this study are: (1) Assessing the simple feasibility of organic rice farming based on Internal Control System (ICS) organic farming in the company is seen from the financial aspect; (2) Describe and analyze the characteristics of organic rice products in supply chains based on ICS in organic farming; and (3) Formulate supply chain strategies for organic rice based ICS agricultural products. The analytical method used is business feasibility analysis which is then identified internal and external factors which are then accumulated using SWOT and formulated several strategies using QSPM. The conclusion of the research results are: (1) The advantage is quite good (>1), the analysis of the R/C ratio calculation for organic rice farming for farmers and companies, namely farmers (2.25) and CV Sirtanio (1.56); (2) Organic certification is an internal force with the opportunity to offer export market share that is quite open, so that it is obtained a ICS -based supply chain development strategy, namely: (a) Development of collaboration with online-shop (score 5,895); (b) Strengthening ICS-based supply chain functions through the implementation of internal audits conducted by the ICS team (score 5,671); and (c) Maintained the organic farming system based on the agreed ICS according to the rules of SNI 6729: 2016 (score 5,541).

Abstract

Boiled fish is a processing of fishery products that have great potential because of high public demanding. UMKM Cindy Group is a small and medium enterprise in Bogor regency who wished that their product could be competitive, so that the application of quality management is required. The objectives of this research were: (1) to identify the level of quality management implementation at traditional and hygienic boiled fish SMEs as well as; (2) to analyze the relation of the level of quality application to the performance of traditional and hygienic boiled fish SMEs. The method used was descriptive analysis; trend analysis (financial performance: Net Profit Margin (NPM), Return on Investment (ROI), Return on Equity (ROE) and non-financial performance (number of training, production volume, number of customers); and discriminant analysis. Sampling technique for filling questionnaire was purposive sampling. The results of the study found that the level of application of quality management system at traditional boiled fish was at the level between Quality Control Operator (OQC) and Foreman Quality Control (FQC), while hygienic cleansing was at the level between Statistic Quality Control (SQC) and Total Quality Management (TQM). The result of discriminant analysis show that the level of SMM implementation has an effect on the company performance of UD Cindy Group that was seen from sig value <0.05. On hygienic displacement had an increasing trend of non-financial performance and higher on the average of the last three years compared with traditional boiled fish

Abstract

Pharmaceutical industry in Indonesia has made progress and the development of a high around 12-13% in 2013. With high growth indirectly lead to intense competition among the entrepreneurs engaged in this field, especially in the area of Solo, Central Java. Solo City is not a big city like Jakarta, but the competition between the pharmaceutical industry that large, medium and small so large, both in terms of product to service. PT Bouti Usabda Farma is a company engaged in the pharmaceutical field for 21 years since 1992 and now has experienced new growth after the year 2009 the company experienced a split in the internal management. Now the company has only 4 pharmacies courses, where earlier there were 12 pharmacies owned. The purpose of this study is to analyze the problems experienced PT Bouti Usabda Farma, to identify the factors which become obstacles in the face of competition and finding ways for business development and feasibility PT Bouti Usabda Farma. Assessment methods used in this study using the Internal Factor Evaluation (IFE), External Factor Evaluation (EFE), Strengths, Weaknesses, Opportunities and Threats (SWOT), Quantitative Strategic Planning Matrix (QSPM), Payback Period (PBP) and Break Event Point (BEP). Internal factors are the main problem lies in the lack of Human Resources (HR) power, while the external factors are the biggest threat is the number of similar companies. Farma PT Bouti Usabda lies in quadrant V position and medium flats. Alternative strategies that can be used is the utilization of marketing, technology and capital for business development plan. Judging from the financial side, the company is able to perform in a payback period of 4 years, so the company is worth to be developed.

Abstract

The Micro, Small, and Medium Enterprises (MSMEs) sector still faces several issues, such as a lack of capital for business development and limited access to financing from the banking sector. MSMEs play a crucial role in the Indonesian economy, contributing to 61.07 percent of the Gross Domestic Product (GDP) and employing 97 percent of the workforce. One of the government programs aimed at improving access to financing for MSMEs through financial institutions with a guarantee scheme is the People's Business Credit (KUR). This study aims to (1) identify the characteristics of MSMEs, (2) analyze the effectiveness level of KUR financing, (3) analyze the relationship between business characteristics and revenue growth, and (4) analyze customer satisfaction with these services. The methods used include descriptive analysis, validity reliability, cross-tabulation, chi-square, and Importance Performance Analysis (IPA). The results of the study indicate that out of 40 respondents who were customers of KUR financing at BSI KCP Bogor Pomad, the majority of them were engaged in trading and their businesses were located within a distance of 0.5 km-5 km. Their business objectives were primarily focused on working capital needs. After obtaining KUR financing from BSI KCP Bogor Pomad ranging from Rp10 million to Rp50 million, most customers reported monthly sales profits ranging from Rp1 million to Rp5 million, indicating significant assistance from KUR financing. Based on the analysis of the four aspects of financing effectiveness, the most dominant aspect is the accuracy in fund utilization with the highest value of 3.55. This finding is supported by three other variables: accuracy of financing amount (3.53), accuracy of margins (3.5), and accuracy of procedures (3.51). Regarding the relationship between business characteristics and revenue development, it was observed that the financing amount and the purpose of financing have a significant relationship (Chi-Square value <0.05). The results of the IPA analysis highlight the attributes that require improvement, which include clarity of the on-the-spot time for the notification of principle approval, speed of on-the-spot time for issuing the notification of principle approval, clarity of required costs, and speed of handling questions and complaints.

Abstract

 Tuna adalah salah satu spesies scombridae yang memiliki bahaya keamanan pangan, yaitu histamin. Unit Pengolahan Ikan (UPI) mengendalikan bahaya histamin pada produk tuna yang dapat terjadi sepanjang rantai proses dengan menerapkan prinsip Hazard Analysis and Critical Control Point (HACCP). Penelitian ini dilakukan untuk mengetahui variabel persyaratan penting pada rantai proses yang belum diterapkan dengan optimal oleh UPI yang dapat berkontribusi terhadap meningkatnya kandungan histamin pada produk tuna. Metode penelitian menggunakan survei terhadap penanggung jawab mutu UPI di Indonesia yang mengolah produk tuna beku ekspor. Data hasil survei dianalisis untuk perhitungan tingkat pemenuhan persyaratan, korelasi dan determinasi antar variabel. Hasil penelitian menunjukkan variabel persyaratan yang belum dipenuhi secara optimal oleh UPI adalah bahan baku tuna yang diterima oleh UPI hanya berasal dari kapal yang sudah memiliki sertifikat Cara Penanganan Ikan yang Baik (CPIB). Tingkat pemenuhan persyaratan oleh UPI terhadap bahan baku hanya berasal dari kapal ikan yang memiliki sertifikat CPIB sebesar 29.89%. Persyaratan untuk bahan baku hanya berasal dari kapal ikan yang memiliki sertifikat CPIB berkorelasi positif terhadap UPI mensyaratkan sertifikat CPIB untuk kapal ikan pemasok bahan baku (Phi Correlation 0,509), dengan nilai determinasi sebesar 25.91%.

Abstract

ABSTRACTComplementary food for breastfeeding period is known as one of the nutrition source for children aged 6 – 24 months old. However, nutritional content of complementary good has not been confirmed with international and national standard, yet, nutrition problems in Indonesia.  This research on processed complementary food, aimed to confirmnutritional content with standard and identify the most frequently-appeared nutritional claims. There were nine samples of processed complementary food in a format of instant powder and five samples in a format of biscuit representing mereks and categories were in scope of this research. Conformity of nutritional content obtained from information on the label, were compared with international standard (Codex Alimentarius- CAC/GL 8-1991) and Indonesian National Standard (SNI 2005). According to this research, 88 percent of nutritional compositions in instant powder were conformed to Codex Alimentarius standard, however only 31 percent in biscuit were conformed to this international standard. On the comparison with Indonesian National Standard, 94 percent of nutritional content in instant powder were conformed to the standard and 86 percent of nutritional compositions in biscuit were also conformed to standard. The most frequently-apperead nutritional claims in the processed complementary food in scope were iron, calcium, protein, dietary fibre, and vitamin A. Three from five nutrients were closely relevant with current nutrition problem in Indonesia namely aenemia, protein/chronic energy deficiency, and vitamin A deficiency. ABSTRAKMakanan pendamping air susu ibu (MP-ASI) merupakan salah satu sumber zat gizi pada anak usia 6 – 24 bulan. Namun demikian, kandungan zat gizi pada MP-ASI belum dikonfirmasi dengan standar internasional serta nasional, serta permasalahan gizi di Indonesia.Penelitian produk MP-ASI pabrikan bertujuan untuk mengkonfirmasi kesesuaian kandungan gizi dengan standar dan mengidentifikasi klaim kandungan gizi yang paling banyak muncul. Sampel penelitian ini adalah sembilan sampel MP-ASI bubuk instan dan lima sampel biskuit yang dipilih secara purposif dan mewakili merek dagang dan jenisnya. Kesesuaian kandungan gizi diukur menggunakan informasi kandungan gizi yang terdapat pada label produk dan dibandingkan dengan standar internasional dari Codex Alimentarius (CAC/GL 8-1991) serta Standar Nasional Indonesia (SNI MP-ASI 2005). Tingkat kesesuaian zat gizi pada  MP-ASI bubuk instan dengan Codex Alimentarius mencapai 88 persen Sedangkan kesesuaian kandungan zat gizi pada MP-ASI biskuit dengan Codex Alimentarius hanya sekitar 31 persen. Jika dibandingkan dengan SNI baik untuk bubuk instan maupun biskuit, sebanyak 94 persen zat gizi pada MP-ASI bubuk instan dan 86 persen pada MP-ASI biskuit sudah memenuhi SNI. Klaim kandungan gizi dengan frekuensi kemunculan tertinggi berturut-turut pada MP-ASI bubuk instan dan biskuit adalah zat besi, kalsium, protein, serat pangan, dan vitamin A. Tiga dari lima zat gizi ini merupakan zat gizi yang berkaitan erat dengan masalah gizi yang ada di Indonesia yaitu Anemia, Kekurangan Energi Protein (KEP), dan Kekurangan Vitamin A (KVA).

Abstract

ABSTRACT The prevalence of iron deficiency anemia (IDA) in Indonesian under-five children is still high. Unhealty eating habit of under-five children will result in reducing nutrition intake, e.g. iron and vitamin C. This study was aimed to analyze the contribution of micronutrient intake (iron and vitamin C) to IDA status of under-five children. A total of 185 under-five children in range of 12-59 months old who had the data of consumption (SKMI 2014) and blood biochemical (Riskesdas 2013) was used in this study. Result showed that there were no significant differences in the level of adequacy of iron and vitamin C intake between all age groups (P > 0.05). There was a positive correlation significantly between the level of adequacy of iron intake in the normal category (≥77% RDA) with haemoglobin concentration (P < 0.05; r ˂ 0.5). There was a correlation between the level of adequacy of iron and vitamin C intake in the deficiency category (˂77% RDA) with ferritin and transferrin concentrations (P < 0.05; r ˂ 0.5). In conclusion the age of the young group (12-35 months) with the level of adequacy of iron intake ˂77% RDA is at risk of developing AGB. Keywords: iron deficiency anemia, under-five children, iron intake, vitamin C intake ABSTRAK Prevalensi anemia gizi besi (AGB) pada balita Indonesia masih tinggi. Kebiasaan makan balita yang kurang beragam menjadi salah satu faktor rendahnya asupan zat gizi, khususnya zat gizi mikro seperti zat besi. Penelitian ini bertujuan menganalisis kontribusi asupan zat besi dan vitamin C terhadap status AGB pada balita. Penelitian ini menggunakan data 185 anak balita dengan kisaran umur 12-59 bulan yang memiliki data asupan makanan (SKMI 2014) dan biokimia darah (Riskesdas 2013). Hasil penelitian menunjukkan bahwa tidak ada perbedaan tingkat kecukupan asupan zat besi dan vitamin C pada tiap kelompok umur (P > 0,05). Terdapat korelasi positif antara tingkat kecukupan asupan zat besi pada kategori normal (≥77% AKG) dengan konsentrasi hemoglobin (P < 0,05; r ˂ 0,5). Terdapat korelasi antara tingkat kecukupan asupan zat besi dan vitamin C pada kategori defisiensi (˂77% AKG) dengan konsentrasi feritin dan transferin (P< 0,05; r ˂ 0,5). Dapat disimpulkan bahwa umur kelompok muda (12-35 bulan) dengan tingkat kecukupan asupan zat besi ˂77% AKG beresiko mengalami AGB. Abstract

Guava leaves extract were known to be rich in polyphenols and had an antihyperglycemic activity. Carbohydrate source food modified with polyphenols had lower digestibility and glycemic index than native. For that reason, tapioca (Manihot utilissima) modified with guava leaves extract was expected for reducing the risk of diabetes mellitus. The antihyperglycemic activity of tapioca starch modified with red guava leaf extract and its native starch were evaluated in streptozotocin-induced diabetic Sprague Dawley rats aged 2 months (weight 175-250 g). Rats were fed with tapioca starch modified with 4 percent guava leaf extract and native tapioca for 35 days. The rats, the blood glucose level, and pancreatic Langerhans islets were assayed. The result showed that tapioca starch modified with 4 percent guava leaves extract had antihyperglycemic activity compared to its native starch. Tapioca starch modified with 4 percent guava leaves extract significantly increased beta-cell pancreas density and even though it did not significantly lower blood sugar levels in diabetic rats, but at the end of treatment, blood sugar levels were lower than the diabetic rat fed with native tapioca.ABSTRAK Ekstrak daun jambu biji diketahui kaya akan polifenol dan memiliki aktivitas antihiperglikemik. Modifikasi pangan sumber karbohidrat dengan polifenol memiliki daya cerna dan indeks glikemik lebih rendah dibanding aslinya. Oleh karena itu pati tapioka (Manihot utilissima) termodifikasi ekstrak daun jambu biji merah diharapkan dapat mengurangi risiko diabetes mellitus. Aktivitas antihiperglikemik dari pati tapioka termodifikasi dengan ekstrak daun jambu biji merah dan pati aslinya dievaluasi menggunakan tikus Sprague Dawley berusia 2 bulan (175-250 g) yang diinduksi dengan streptozotocin. Tikus diabetes diberi pakan tapioka terdimodifikasi 4 persen ekstrak daun jambu dan tapioka asli sebagai pembanding selama 35 hari. Parameter yang dinilai adalah glukosa darah dan gambaran histopatologis pankreas tikus. Hasil menunjukkan bahwa tapioka termodifikasi 4 persen ekstrak daun jambu memiliki aktivitas antihiperglikemik dibandingkan pati aslinya. Tapioka termodifikasi ekstrak daun jambu biji merah secara signifikan meningkatkan kepadatan sel beta pankreas dan meskipun tidak signifikan menurunkan kadar gula darah pada tikus diabetes, namun pada akhir perlakuan, kadar gula darah lebih rendah dibandingkan kelompok tikus diabetes yang diberi pakan tapioka asli.

Abstract

Penelitian ini bertujuan untuk melihat perubahan total flavonoid sebelum dan setelah pencernaan in vitro dan  memperoleh waktu penyeduhan terbaik. Penelitian ini dilaksanakan dengan menggunakan Rancangan Acak Lengkap (RAL)  dengan perlakuan lama penyeduhan yang terdiri 5, 10, 15, 20, 25 menit dengan ulangan sebanyak 2 kali. Data dianalisis  dengan Analysis of Variance (ANOVA). Apabila hasil analisis menunjukkan adanya pengaruh yang nyata, akan dilanjutkan dengan analisis menggunakan uji Duncan’s New Multiple Range Test (DNMRT) pada taraf 5% untuk menentukan pengaruh  antara perlakuan yang berbeda. Parameter yang diamati adalah nilai total flavonoid sebelum dan setelah in vitro. Variasi lama  penyeduhan baik sebelum maupun setelah pencernaan in vitro menunjukkan hasil yang signifikan pada taraf 5%. Perubahan  nilai total flavonoid setelah pencernaan in vitro mengalami penurunan hampir 50%. Penyeduhan dengan 20 menit merupakan  perlakuan terbaik dengan memiliki nilai total flavonoid tertinggi baik sebelum pencernaan in vitro (10,34 mg QE/g) maupun  setelah pencernaan in vitro (2,84 mg QE/g).

Abstract

Jali (Coix lacryma-jobi L.) is a promising food crop in Indonesia, but its contribution to food security needs more improvement. This research aimed to analyze physico-chemical characteristics of native jali flour and its modified flour after treated by heat moisture treatment (HMT) and autoclaving-cooling (AC) method, and finally observe their effects on breakfast meal flakes (BMF). Both native and treated flour were analyzed for degree of whiteness, swelling power, solubility, water absorption index (WAI), water holding capacity (WHC), and gelatinization profile. HMT-modified jali flour exhibited solubility of 7.77%, gelatinization temperature of 74.95 °C, and peak viscosity of 3255 cP while amylose and resistant starch content reached 20.50% and 6.27%, respectively. Meanwhile, AC-modified jali flour showed lower solubility (4.13%), higher gelatinization temperature (76.15 °C), peak viscosity of 3220 cP, with amylose content of 22.30% and significantly higher resistant starch content (13.93%). Due to its superior resistant starch content, AC-modified Jali flour was selected for BMF formulation. The formulation was optimized through D-optimal with independent variables of 50−100% jali flour and 0−50% sorghum flour. As a result, the optimum formulation was obtained with a desirability value of 0.713, consisted of 100% jali flour without added sorghum flour. The optimized BMF had resistant starch 11.46%, rehydration capacity 58.48%, and hardness 415.12 gf. The product has the potential to diversify healthy breakfast options for community and may contribute to diabetes prevention.
