Abstract

The capture fisheries agroindustry faces serious business sustainability threats in the future, both from economic, resource, environmental, technological and social aspects. Lemuru fish (Sardinella sp.) based agroindustry in Puger District, Jember Regency also faces a similar threat. This research aims to analyze the sustainability of the lemuru fish processing business and provide recommendations for improving its sustainability. The analytical method used is Rapfish (Rapid Appraisal for Fisheries), while the recommendations are prepared descriptively. The results of the analysis show that the Lemuru agro-industry sustainability index is in the less sustainable category with a score of 42.61. The environmental dimension has the lowest index value in the bad category, followed by the social and technological dimensions which are categorized as less sustainable, while the resource and economic dimensions are categorized as quite sustainable. Efforts to improve the environmental dimension can be made by organizing mentoring programs to develop environmental management efforts. For the social and technological dimensions, technological guidance, management and horizontal diversification of processed lemuru waste can be carried out into various innovative products. Abstract

Desa Arjasa yang terletak di Kecamatan Arjasa Kabupaten Jember memiliki potensi pelaku ekonomi kreatif yang menghasilkan produk-produk subsektor kreatif, seperti Batik Silabango, Kerajinan Lukis Bakar, Tape Atapai, dan Keripik Bago. Modal bukan merupakan satu-satunya kendala pengembangan UMKM. Kendala yang lain yaitu belum cukupnya wawasan pelaku usaha untuk mengembangkan strategi pemasaran yang tepat. Pengembangan wawasan pelaku usaha adalah tujuan pelaksanaan pengabdian kepada masyarakat ini. Pengembangan pengetahuan dan wawasan pelaku usaha di Desa Arjasa dilakukan dengan menyelenggarakan program Pacapa Untung. Program ini merupakan program pembelajaran masyarakat yang bersifat rutin yang dirancang untuk menjadi wadah diskusi UMKM secara berkelanjutan. Topik pada masing-masing pertemuan Pacapa Untung antara lain penguatan merek, penemuan kerangka acuan kompetitif (competitive frame of reference), penemuan poin pembeda (Point of Differences/POD), dan perancangan Brand Mantra. Luaran kegiatan Pacapa Untung adalah UMKM Batik Silabango dengan POD motif dan warna khas serta brand mantra fashion, heritage, anggun. UMKM Kerajinan Lukis bakar menyusun POD pada teknik lukis serta menciptakan brand mantra yaitu seni, natural, dan unik. UMKM Keripik Bago menemukan POD berupa citarasa dan kemasan, dengan brand mantra yaitu snack, renyah, dan menyenangkan. UMKM Tape Atapai menyusun POD berupa citarasa dan tekstur tape, dengan brand mantra yaitu kudapan, keluarga, hangat.

Abstract

AbstractPerusahaan Daerah Perkebeunan (PDP) Kahyangan Jember in East Java is a regional company owned by The Jember Regency Government that is engaged in the plantation business. PDP Kahyangan Jember implements supply chain management in its business, however there are still some problems in its implementation and management. Some of the issues are the quantity of ground coffee production that does not meet the targeted quantity, decreased coffee beans quality, and reduced coffee yields. These problems can be reduced using a risk management approach. This study aimed to identify the activities of the ground coffee supply chain in PDP Kahyangan Jember and its risks, to determine the level of the risks, and to develop a risk management strategy for PDP Kahyangan Jember ground coffee supply chain. This study used the House of Risk (HOR) method which consists of two phases, i.e. HOR 1 and HOR 2. HOR 1 is used to identify risks in the supply chain. HOR 2 is used to develop a strategy for handling these risks. The HOR 1 analysis results show there are 28 risk events and 33 risk sources, with 15 priority risk sources being considered in the risk management strategies preparation. The results of HOR 2 analysis show eight priority management strategies that can be implemented by PDP Kahyangan Jember.Keywords: House of Risk, risk management, supply chain AbstrakPerusahaan Daerah Perkebunan (PDP) Kahyangan Jember di Jawa Timur adalah perusahaan daerah milik Kabupaten Jember yang bergerak pada bidang usaha perkebunan. PDP Kahyangan Jember menerapkan manajemen rantai pasok pada bisnisnya, namun dalam penerapan dan pengelolaannya masih terdapat beberapa permasalahan. Permasalahan tersebut antara lain adalah jumlah produksi kopi bubuk tidak sesuai target perencanaan produksi, penurunan kualitas biji kopi, dan hasil panen kopi yang menurun. Pendekatan manajemen resiko dapat digunakan untuk mengurangi permasalahan tersebut. Tujuan penelitian ini adalah mengidentifikasi aktivitas rantai pasok kopi bubuk di PDPD Kahyangan Jember dan risikonya, menentukan tingkat risiko, dan menyusun strategi penanganan risiko pada rantai pasok kopi bubuk di PDP Kahyangan Jember. Metode yang digunakan pada penelitian ini adalah House of Risk (HOR) yang terdiri dari dua fase, yaitu HOR1 dan HOR 2. HOR 1 digunakan untuk mengidentifikasi risiko pada rantai pasok. HOR 2 digunakan untuk menyusun strategi penanganan risiko tersebut. Hasil analisis HOR 1 menunjukkan bahwa terdapat 28 kejadian risiko dan 33 agen risiko dengan 15 agen risiko prioritas yang dipertimbangkan dalam penyusunan strategi penanganan risiko. Hasil analisis HOR 2 menunjukkan bahwa terdapat 8 strategi penanganan prioritas yang dapat diimplementasikan oleh PDP Kahyangan Jember.Kata kunci: House of Risk, manajemen risiko, rantai pasok

Abstract

Tourism is a human activity that utilizes natural resources for recreational needs. It is without considering long term sustainability can damage nature and be detrimental to human life. Gadingan Village in Situbondo Regency is building a spring tourist destination called Gadingan Mas. Pokdarwis efforts in the construction of Gadingan Mas are constrained by the lack of public awareness to preserve the environment , which is indicated by the use of springs for toilet activities by some communities and the disposal of garbage around waterways. The principle of sustainability in the triple bottom line was adopted by socializing the development of clean Gadingan Mas tourism, so that it is useful and brings profit to the community. The method of implementation is by counseling the importance of maintaining environmental health, socializing environmental sanitation to the community around tourism and providing hygiene facilities. The results of the activity show the use of cleaning facilities that show awareness and cleanliness. The sustainability of Gadingan Mas tourism is supported by public awareness of cleanliness which encourages an increase in the number of tourists in Gadingan mas tourism.

Abstract

Gadingan Village is located on the coast of Jangkar District, Situbondo Regency. Some residents have difficulty accessing clean water. In 2020, Gadingan Village received PAMSIMAS grants including drilling for water sources, deep water pumps, and reservoirs. Currently, these facilities have not been fully utilized because the management agency has not yet been formed. The Gadingan Village Government encourages BUMDes as PAMSIMAS managers, but BUMDes does not yet have knowledge of network management and planning. People who use water do not believe in the quality of the water and the quantity of the water. The problem solving method used is the socialization of PHBS and PAMSIMAS to the community, as well as BUMDes assistance for PAMSIMAS management and PHBS awareness. The results obtained are increased public awareness in the use of clean water and the provision of sanitation and hygiene facilities.

Abstract

Kepuasan konsumen merupakan hal yang sangat penting dalam setiap usaha. Kepuasan konsumen dihasilkan dari kualitas produk dan pelayanan terhadap konsumen. Konsumen yang tidak puas akan berakibat pada penurunan penjualan. Salah satu usaha yang mengalami penurunan penjualan adalah UMKM De Nisa Bakery sebanyak 100 hingga 150 box dalam satu tahun. Penelitian ini bertujuan untuk menentukan atribut mutu yang berpengaruh terhadap kepuasan konsumen, menentukan tingkat kepuasan konsumen terhadap bolen pisang De Nisa Bakery, dan memberikan rekomendasi perbaikan produk untuk meningkatkan kepuasan konsumen dengan menggunakan metode Customer Satisfaction Index (CSI) dan Importance Performance Analysis (IPA). Jumlah responden yang digunakan sebanyak 80 responden dengan menggunakan kuesioner. Atribut yang dianggap penting oleh konsumen pada produk bolen pisang adalah rasa, tekstur, variasi rasa, konsistensi rasa, kemasan, harga, pelayanan, dan lokasi yang strategis. Hasil penelitian menunjukkan nilai CSI sebesar 80,2% yang berarti bahwa konsumen puas. Walaupun termasuk kategori puas, namun diperlukan perbaikan pada atribut variasi rasa, konsistensi rasa, dan kemasan. Rekomendasi perbaikan dapat berupa penambahan variasi rasa seperti rasa bolen nanas, tape singkong, nangka dan durian agar konsumen tidak merasa bosan, pemilihan bahan baku dan proses produksi sesuai dengan standar agar produk yang dihasilkan memiliki rasa yang konsisten, dan perbaikan desain kemasan agar lebih menarik serta dilengkapi dengan label yang lebih informatif.

Abstract

This study was aimed to identify the differentiation of Arabica coffee from West Java, East Java, West Nusa Tenggara and Bali using an electronic food nose. The analysis was conducted based on variations in temperature and roasting time to evaluate the effect of these parameters on coffee aroma characteristics. This research used an electronic nose device to detect volatile compounds quickly and accurately. The electronic nose was equipped with MQ-3, MQ-8, MQ-135, and MQ-136 sensors, able to detect alcohol, hexane, hydrogen, carbon dioxide, and hydrogen sulfide gas. Arabica coffee from various parts of Indonesia was roasted on three levels (light, medium, and dark). The results showed that variations in roasting temperature (220, 230, and 240 °C) and time (10, 13, and 17 min) significantly affected the volatile compounds’ profile. The temperature and roasting time correlated proportionally to the hexane gas, CO2 , and alcohol produced. Conversely, the lower the temperature and the faster the roasting process, the higher H2S gas was produced. Based on this, using an electronic nose effectively distinguishes the aroma characteristics of coffee based on differences in temperature and roasting time. This research contributes to helping improve the quality of Indonesian arabica coffee by understanding how temperature variation and roasting time length can be used to optimize the coffee production process and improve the coffee quality produced.

Abstract

Agro-Industry Management and Technology Laboratory is a laboratory unit used for educational activities, namely practicums and research. In these activities, an incubator is needed to grow microorganisms. Internet of Things (IoT) is a concept where objects can transfer and receive data through a network without requiring human-to-human or human-to-computer interaction. The development of technology allows for monitoring and remote control processes via smartphones. This study aims to design a smart microbial incubator with the same working principle as a conventional incubator. It has the advantages in terms of practicality and system integration of tools, low production costs, and can control and monitor the incubator temperature in real time. This study uses a design and construction method so that systematic steps are needed to produce appropriate products, starting from identifying the need for tools and materials, system design, software development, testing and evaluation. The results of the incubator temperature test, as determined by comparing the readings of the IR thermometer, are known to have a low average error rate of 0.47 °C. This study can design an incubator with a temperature controller and monitoring via a smartphone using the Blynk application.

Abstract

Carrot as a vegetable is a food that has a fairly high level of losses in the distribution process. Actors involved in the carrot supply chain are farmers, agents, stall traders, mobile traders and consumers. The number of actors involved in the carrot supply chain will result in the risk of post-harvest losses that can affect the quality of carrots that consumers get. This study aims to analyze the risk of post-harvest losses and design a management strategy to reduce the incidence of carrot supply chain risk in Magetan District. The method used is the House of Risk which consists of 2 phases. The results showed that the types of mechanical damage that occurred in the carrot supply chain could be classified into abrasion, cracking, puncture, cutting, bruising, splitting, tearing, and skin cracking which were identified as risks caused by 15 risk agents. From the 15 risk agents obtained, 7 priority risk agents were selected and analyzed to determine the mitigation strategies that could be applied. The mitigation strategies obtained in this study were 6 mitigation strategies. With risk management and mitigation strategies in the carrot supply chain, it is expected to be able to minimize the risk of mechanical damage that occurs in the carrot supply chain in Magetan Regency.

Abstract

Taking a case study at Kedai Tujuh Gerobak Denpasar as the object of research, Analysis used at Kedai Tujuh Gerobak Denpasar with the Importance Performance Analysis (IPA) method. The research stage was carried out by twice distributing questionnaires with a total of 30 respondents to conduct validity tests and reliability tests on twenty-nine attributes. Attributes that are in accordance with the validity test and reliability test will be distributed in the form of questionnaires to 100 respondents. The questionnaire will be used as a source of data as material for conducting science analysis (Importance Performance Analysis). The age characteristics of respondents ranged from 17 to 25 years as many as 47 people, ages between 26 to 34 years as many as 31 people and ages over 34 years as many as 22 people. The characteristics of respondents based on profession are known to students / students as many as 56 people, civil servants. TNI/POLRI as many as 13 people for self-employed as many as 24 people. Characteristics based on the frequency of purchases between 1 to 3 times as many as 33 people between 4 to 6 times as many as 29 people and consumers with a frequency of purchases more than 6 times as many as 38 people. The results of the consumer satisfaction level questionnaire or IKP of 86.67% indicate that the products offered are in accordance with customer expectations and the services provided are able to provide comfort for customers.
