Abstract

ABSTRACTThe aims of this reaserch are to determine the right combination of glucose syrup and gelatin, to analyze the physical and chemical components and to evaluate the preference level of the panelists in kuini mango jelly candy. This research has used factorials RAL method with 2 factors, which A factor is glucose syrup concentration and B factor is gelatin concentration. The result of the research found that A3B3 samples that contain 50% of glucose syrup and 25% of gelatin were the most preferred sample by panelist. In conclusion, mostly panelists prefer the sweetest and the hardest sample. Keywords: kuini mango, glucose syrup, gelatine, jelly candy

Abstract

ABSTRACTThe purpose of this research is to identify the chemical properties of goroho plantain  flour produced through the process of modification of cold-boiled, cold-steamed and cold-roasted. The method used in this study is the experimental method. The parameters measured were starch content, amylose content, resistant starch content and in vitro digestibility of starch on modified goroho plantain flour. The results obtained in this study were an increase in starch content in cold-boiled treatment 79.29%, cold-steamed 76.83%, cold-roasted 72.86%, amylose content in cold-boiled treatment 25.54%, cold-boiled 24.37%, cold-roasted 21.40 %, resistant starch content of cold-boiled treatment 28.87%, cold-steamed 28.18%, cold-roasted 27.21%, and in vitro digestibility cold-boiled treatment 46.17%, cold-boiled 55.66%, cold-roasted 66.12%. The modification of goroho plantain flour with boiled, steamed and roasted treatments can increase the levels of resistant starch in goroho plantain flour. Keywords: goroho banana flour, resistant starch, goroho banana

Abstract

ABSTRACTThis study aims to determine the proportion addition of soursop juice and analyze the chemical contents of isotonic drink from mature coconut water (Cocos nucifera L.) This research was conducted by adding 100 ml, 200 ml, and 300 ml of soursop juice to 1000 ml of coconut water. The test parameters were organoleptic tests using hedonic methods including flavor, taste, and turbidity. The best treatment was followed by chemical testing including sodium, potassium, acidity (pH), total acid and total sugar. The result of organoleptic test showed that 1000 ml of coconut water without soursop juice addition has a value of 2,73 (neutral), while the addition of 100 ml soursop juice has a value of 3,43 (neutral), the addition of 200 ml soursop juice has a value of 3,54 (like), and the addition of 300 ml soursoup juice has a value of 3,71 (like). In conclusion, the best result is the addition of 300 ml soursop that had a mineral content of sodium as much as 469,36 mg/kg, potassium as much as 2014,45 mg/kg, pH 4,65, total acid 0,54% and total sugar 6,33%. Keywords: Isotonic Drinks, Soursop Juice, Coconut Water

Abstract

ABSTRACTModern community life makes the need for fast food increases. One of the fast foods that is often consumed is cereal and beans. This research was conducted to produce snack bars that are healthy and rich in fiber. This study uses a completely randomized design (CRD) research method with the treatment of coconut pulp and yellow sweet potato flour, each treatment is carried out with 3 replications. The parameters tested were chemical properties (water content, ash content, protein content, fat content, carbohydrate, crude fiber, and antioxidant activity), physical properties (hardness test), and sensory properties (color, taste, scent, and texture).Based on the organoleptic test results of snack bars the panelists preferred were treatment C (50% coconut pulp flour : 50% yellow sweet potato flour) with moisture content of 28.28%, ash content of 1.60%, protein content of 7.74%, content of fat 14.27%, carbohydrates 48.11%, crude fiber 12.51%, antioxidant activity 49.64 ppm, and in terms of physical properties the hardness level is 80.55 mm/g/sec. Keywords : Snack Bars , Coconut Pulp Flour, Yellow Yam Flour ABSTRAKKehidupan masyarakat yang modern membuat kebutuhan makanan siap saji semakin meningkat. Salah satu makanan siap saji yang sering dikonsumsi adalah sereal dan kacang-kacangan. Penelitian ini dilakukan untuk menghasilkan produk snack bars yang sehat dan kaya akan serat. Penelitian ini menggunakan metode penelitian Rancangan Acak Lengkap (RAL) dengan perlakuan tepung ampas kelapa dan tepung ubi jalar kuning masing-masing perlakuan dilakukan dengan 3 kali pengulangan. Parameter yang diuji adalah sifat kimia (kadar air, kadar abu, kadar protein, kadar lemak, karbohidrat, serat kasar, dan aktivitas antioksidan), sifat fisik (uji tingkat kekerasan), dan sifat sensoris (warna, rasa, aroma, dan tekstur).Berdasarkan hasil uji organoleptik snack bars yang paling disukai panelis adalah perlakuan C  (50% tepung ampas kelapa : 50% tepung ubi jalar kuning) dimana kadar air 28,28%, kadar abu 1,60%, protein 7,74%, lemak 14,27%, karbohidrat 48,11%, serat kasar 12,51%, aktivitas antioksidan 49,64 ppm, dan sifat fisik tingkat kekerasan 80,55 mm/g/det.Kata kunci: Snack bars, Tepung Ampas Kelapa, Tepung Ubi Jalar Kuning

Abstract

The purpose of this study was to evaluate the effect of the addition of mung bean juice on the level of liking, hardness, and analyze the water content, ash content, and reduced sugar content of coconut water hard candy. The research method used is the Completely Randomized Design (CRD) method with 5 treatments where A. The addition of 10% mung bean juice, B. The addition of 15% mung bean juice, C. The addition of 20% mung bean juice, D. The addition of 25% mung bean juice, E. The addition of 30% mung bean juice then measured the level of liking test, hardness test, water content, ash content and reducing sugar content. The results showed that coconut water hard candy with the addition of mung bean juice had no significant effect on the level of liking test on taste 4.76 (rather like) - 5.68 (like), aroma 4.56 - 5.36 (rather like), color 4.56 - 5.36 (rather like), and had a significantly different effect on the hardness test with an average value of 3.88 (rather hard) - 5.16 (neutral). The results showed that coconut water hard candy with the addition of nut juice had a significantly different effect and had an average value of water content of 0.60% - 2.44%, ash content of 0.32% - 1.19%, and the test of reducing sugar content showed that it had a not significantly different effect which ranged from 1.38% - 2.18%.
