Abstract

Fisheries are sector with great potential to meet food needs. Teaching Factory Canning Politeknik Negeri Jember (Polije) is one of the Fish Processing Units (UPI) engaged in canning seasoned sardines. Teaching Factory Canning Polije is a UPI included in the medium-large category. This research aims to determine the processing feasibility of canning teaching factory. Data were collected by interview and checklist analysis referring to the Ministry of Marine Affairs, namely the Decree of the Minister of Marine Affairs and Fisheries No.Kep.01/MEN/2007. The application of basic eligibility requirements is carried out by analyzing whether there is a discrepancy with existing regulations or deviations, which are then synchronized with the value of the eligibility criteria. The production process of Teaching Factory Canning has followed the processing feasibility certification set by KKP No.Kep.01/MEN/2007 with good eligibility criteria. The assessment is based on 6 minor deviations, 7 significant deviations, and 1 serious deviation. In addition, the GAP Analysis of the UPI TEFA Canning Polije Processing Feasibility Certification showed that the basic feasibility had met the basic requirements and 1 general requirement by correcting the deviations found

Abstract

Good Manufacturing Practice (GMP) can improve the quality of one of the processed tape products, dodol tape, at UMKM Raja Tape 32 Bondowoso Regency by paying attention to several assessment aspects. This activity aims to improve the quality of dodol tape products so that they can increase consumer interest through the implementation of the GMP system. Service activities were conducted using counselling related to GMP material, providing equipment assistance to implement GMP and assistance in implementing GMP to see whether it is going well according to what is expected. The results of the service activities showed that most of the assessment aspects had met the assessment standards. However, two aspects sufficiently meet the assessment standards, namely production equipment and storage containers, and one assessment aspect that does not meet the standards, namely the recording and documentation aspects. Aspects of sufficient assessment can be carried out by providing tools that can help improve quality and for aspects that need to meet an understanding of the importance of recording and documentation. Good Manufcturing Practice (GMP) dapat digunakan untuk meningkatkan kualitas salah satu produk olahan tape yaitu dodol tape di UMKM Raja Tape 32 Kabupaten Bondowoso dengan memperhatikan beberapa aspek penilaian. Tujuan kegiatan ini adalah untuk meningkatkan kualitas produk dodol tape agar lebih dapat meningkatkan minat konsumen melalui terlaksananya sistem GMP. Kegiatan pengabdian dilakukan dengan menggunakan penyuluhan terkait materi GMP, pemberian bantuan alat sebagai salah satu upaya untuk penerapan GMP dan melakukan pendampingan penerapan GMP untuk melihat apakah sudah berjalan dengan baik sesuai apa yang diharapkan. Hasil kegiatan pengabdian menunjukkan bahwa Sebagian besar aspek penilaian sudah memenuhu standar penilaian namun ada 2 aspek yang cukup memenuhi standar penilaian yaitu alat produksi dan wadah penyimpanan, dan 1 aspek penilaian yang tidak memenuhi standar yaitu aspek pencatatan dan dokumentasi. Aspek penilaian yang cukup memenuhi dapat dilakukan dengan pemberian alat sehingga dapat membantu meningkatkan kualitas dan untuk aspek yang tidak memenuhi dilakukan pemahaman tentang pentingnya pencatatan dan dokumentasi.

Abstract

A purple leaf or possibly called a wungu leaf (Graptophyllum pictum) is a commonly used plant as an herbal medicine. Purple leaves have many benefits, and it is known that one can potentially counteract free radicals caused by high flavonoid compounds. One of the key stages in simplishing is the drying method. The study aims to identify the effects of temperature and long periods of drying as well as variations in temperature and length of time on the flavonoid, the sensory properties (color, scent, taste, and texture), water levels, and rendement on the dried purple leaves using fast dryer. The design of the experiments is a Randomized Block Design (RBD). The first factors are drying temperatures consisting of 45°C (C1), 50°C (C2), and 55°C (C3). The second factors is drying time of 3 hours (F1), 4 hours (F2), and 5 hours (F3). The data analysis is done using a ANOVA and if the results show a real difference then a nt test with a 5% confidence level. Studies indicate that the higher the temperature and time spent in drying, the greater the levels of flavonoid and sensory properties and the lower the water content and rendement in dried purple leaf.

Abstract

Kakao merupakan tanaman perkebunan yang memiliki nama ilmiah Theobroma cacao L, berasal dari Amerika Selatan yang saat ini banyak ditanam di berbagai kawasan daerah tropika. Biji hasil pengeringan merupakan produk olahan yang dikenal dengan nama biji kakao bulk. Biji kakao bulk sebelumnya difermentasi dalam bak kayu dan ditutup dengan sak kemudian didiamkan selama 3-4 hari hingga suhunya tercapai sekitar 45-50 oC, lalu disiram dengan air untuk menghentikan proses fermentasi. Penelitian bertujuan untuk mengetahui pengaruh cara pengeringan, lama pengeringan, dan interaksi cara pengeringan dan lama pengeringan terhadap sifat organoleptik biji kakao bulk. Disain penelitian menggunakan Rancangan Acak Kelompok Lengkap (RAKL), terdiri dari dua faktor dengan tiga kali ulangan. Faktor pertama yaitu cara pengeringan (A) yang terdiri dari : A1 = cara pengeringan sinar matahari, A2 = cara pengeringan dengan alat (cabinet dryer) suhu 60 ◦C dan faktor yang kedua yaitu lama pengeringan (B) yang terdiri dari : B1 = 48 jam, B2 = 56 jam, B3 = 64 jam Hasil penelitian disimpulkan (1) pengeringan mekanik berpengaruh terhadap mutu meliputi rasa (khas kakao) dan warna (khas kakao) serta aroma (normal kakao), (2) pengeringan sinar matahari pada lama pengeringan 48 jam berpengaruh terhadap mutu meliputi rasa (khas kakao) dan warna (khas kakao) serta aroma (sangat khas kakao), serta (3) kombinasi cara pengeringan mekanik dan lama pengeringan 56 jam berpengaruh terhadap mutu rasa 3,90 (khas kakao) dan warna rata-rata 3,89 (khas kakao) serta kadar air 5,69% dapat dipilih sebagai perlakuan yang terbaik.

Abstract

Interest in reading should be instilled from an early age, especially at school age. The fear of students coming to the library and the availability of books are internal and external factors. Both of these factors should be addressed properly. Thus, in this service, a literacy corner and book additions were held at SDN Menampu 04 Jember. There are several stages in the implementation of this service including 1) survey and observation, 2) planning, 3) implementation and 4) evaluation. A literacy corner is held in each class. In addition, 123 books, both fiction and non-fiction, were added. The books added also use Indonesian, English, and Regional languages. The publishers and authors of the added books also vary. So that it can increase reading interest from SDN Menampu 04 Jember. Procurement of literacy corners equipped with additional books can increase the reading interest of SDN Menampu 04 students. This is due to the existence of literacy corners in each class, as well as the many variations of books in SDN Menampu 04.

Abstract

Perumda Perkebunan Kahyangan Jember, sebagai bagian dari Badan Usaha Milik Daerah (BUMD) Pemerintah Kabupaten Jember, fokus pada budidaya kopi robusta di lima kebunnya, termasuk Kebun Sumber Wadung. Meskipun Sumber Wadung menghasilkan biji kopi robusta berkualitas tinggi, mutu kopi yang dihasilkan masih cenderung rendah karena pengolahan yang mendasar setelah panen. Proses pemanggangan menjadi kunci penting dalam menentukan profil rasa akhir kopi, dengan suhu dan durasi pemanggangan sebagai variabel utama. Keterbatasan pengetahuan dalam proses pemanggangan kopi dapat menghasilkan produk di bawah standar. Oleh karena itu, penelitian ini bertujuan untuk menguji organoleptik kopi robusta berdasarkan variasi suhu dan lama waktu penyangraian dan dilaksanakan antara bulan Februari hingga Mei 2023. Rancangan eksperimental menggunakan Rancangan Acak Lengkap (RAL) Faktorial dengan enam perlakuan. Parameter yang diamati meliputi warna, rasa, aroma, tekstur, dan endapan. Hasil penelitian menunjukkan bahwa suhu dan lama waktu penyangraian secara signifikan memengaruhi preferensi konsumen terhadap parameter organoleptik kopi.

Abstract

Kopi sebagai komoditas perkebunan banyak dimanfaatkan sebagai minuman. Pola produksi tanaman kopi di Jember semakin meningkat seiring bertambah tahun. DIversifikasi olahan kopi dapat dilakukan dengan mengolah kopi menjadi permen jelly kopi. Penggunananbahan gelasi seperti cmc dan bubuk agar dapat dilakukan. Penelitian ini menggunakan variasi komposisi bahan gelasi CMC dan bubuk agar dengan variasi perlakuan F1 (10g bubuk agar), F2 (6g bubuk agar, 0,2g CMC), F3 (3g bubuk agar, 0,3g CMC) dan F4 (2g bubuk agar, 0,4g CMC) hasil penelitian menunjukkan pengaruh nayata keempat perlakuan terhadap nilai mutu sensoris berupa warna, aroma, rasa dan tekstur permen jelly kopi dengan pelakuan terbaik adalah F4 yang memberikan hasil sensoris warna cokelat mengkilat, aroma khas kopi, rasa manis agak asam dan tekstur kenyal

Abstract

Siamese oranges are a member of the tangerines which have the scientific name Citrus nobilis var.Microcarpa. It is called Siamese orange because it comes from Siam (Muangthai). The quality of Siamese oranges is determined by their physical properties. These physical properties include size, weight, volume and diameter. Post-harvest technology for Siamese oranges can be done by grading to obtain quality Siamese oranges according to standards. This research aims to determine the physical properties of Siamese oranges used in the grading process. Determination of sphericity and roundness is measured using a caliper. Determination of volume and density is measured using a beaker. Analysis of research data used a one-way z-test normal distribution to the left. The results of data analysis show that the z-count value of roundness, roundness, volume and density is 1.05; 0.79; 0.55; 0.53 and -ztable of -1.645. This means zcount ≥ -ztable, where the average value of the physical properties of Siamese oranges is greater than or equal to the research object, roundness is 0.92, roundness is 0.93, volume is 87 cm3 and density is 1.02 g/ cm3. Thus, the results of these physical properties can be used as a reference when grading Siamese oranges code size 2.

Abstract

Buah fresh-cut melon merupakan produk buah yang diolah minimal dan siap santap untuk dikonsumsi oleh konsumen. Buah fresh-cut melon ini mudah rusak dalam keadaan segar. Alternatif penangangan buah fresh-cut melon adalah dengan menggunakan teknologi ozon dikarenakan mampu menekan pertumbuhan mikroba dan bebas dari residu kimia. Tujuan dari penelitian ini adalah untuk mengetahui pengaruh konsentrasi larutan ozon terhadap lama penyimpanan dan karakteristik mutu fisika, kimia dari buah fresh-cut melon. Metode penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 2 faktor, faktor pertama adalah larutan konsentrasi ozon 0.4, 0.8, dan 1.6 ppm. Faktor kedua adalah lama waktu penyimpanan selama 3 hari dan 5 hari. Hasil penelitian ini menunjukkan bahwa hasil kadar vitamin C sebesar 8.43–11.60 mg/100g, pH sebesar 5.19-4.83, total padatan terlarut sebesar rerata 5.10–6.34 °Brix, susut bobot penyimpanan 10 °C sebesar 8.87–14.14% dan susut bobot penyimpanan 30 °C sebesar 15.23–22.30%. Konsentrasi larutan ozon dan lama waktu penyimpanan buah fresh-cut melon memiliki pengaruh tetapi tidak berbeda nyata (p > 0.01) terhadap kadar vitamin C (mg/100g), pH, total padatan terlarut (°Brix), dan susut bobot (%). Lama waktu penyimpanan memiliki pengaruh yang nyata terhadap susut bobot penyimpanan 10 °C. Perlakuan konsentrasi larutan ozon yang baik terdapat pada 1.6 ppm dan lama waktu penyimpanan buah fresh-cut melon yang paling baik yaitu selama 3 hari

Abstract

Purple sweet potato (Ipomoea batatas var Ayumurasaki) has deep purple flesh and tuber skin. The variety of processed purple sweet potato products is increasingly diverse as purple sweet potato production increases, such as cookies and chips. Therefore, a process is needed to turn purple sweet potato into flour before being made into a variety of processed products, namely the drying process. Drying is a process of reducing the water content of a material to a certain level. To determine how much fuel is used by dryer machine, it is necessary to evaluate the effectiveness of the machine. So that in this study the aims were to determine the amount of energy needed to dry purple sweet potatoes, calculate the efficiency of the flash dryer machine and find out the temperature distribution on each tray of the drying machine. Based on the research results of the rack-type flash dryer drying machine, it can be concluded that the mechanism of the heat transfer rate in the purple sweet potato drying process occurs by forced convection heat transfer from the drying air to the purple sweet potatoes and a mass flow rate value of 0.1272 kg/s is obtained, the convection transfer rate in the drying chamber is 836.84 W and the sensible heat value is 1033.84 W. Hence, the amount of heat to dry 3 kg of purple sweet potato for 4 hours is 1870.68 W and an efficiency value of 55.26% is obtained. The total energy required to dry 3 kg of purple sweet potato in 4 hours is 5712.86 kJ.
