Abstract

Red palm oil (RPO) is an intermediate superfood derived from palm oil, with the potential to reduce stunting and supply sustainable phytonutrients aligned with SDGs 4 in Ibu Kota Nusantara (IKN), East Kalimantan. RPO contains significantly higher carotene levels than commercial oils which is produced through physical modification processes to remove phospholipids and palm distinctive smell by beta-ionone. This study focuses on optimizing the deodorization process that removing impurity and volatile compounds. The optimization used Response Surface Methodology (RSM) with Central Composite Design (CCD) across 13 experimental runs, varying two key parameter temperature (118–133°C) and heating time (238–253 minutes). The novelty of deodorization process using multi-flash autovaporization by lower temperature for better preserve carotene. The effects on carotene content, free fatty acids (FFA), and density were analyzed using Design Expert 13 software. The optimal condition was found at 120°C for 240 minutes, resulting in 280 ppm carotene, 1.11% FFA, and a density of 0.948 g/cm³. The carotene kinetic model has been foundwhere X is temperature and Y is time. Statistical and graphical analysis confirmed that the final product met Indonesian standards SNI 3741:2013 and 9098:2022, which require FFA below 5% and carotene above 30 ppm.

Abstract

The process of processing batik liquid waste using membrane technology has been implemented to overcome the problem of batik waste in the Sekar Buen Batik IKM Area through a community service program. The method used is the batik liquid waste filtration technique using a membrane. This community service activity is an effort to help strengthen the human resources of the batik industry community in the liquid waste processing process at the Sekar Buen Batik IKM located in North Penajam Paser. The activity has been carried out in several stages, including a preliminary survey, a discussion forum on batik waste problems with a partner team, making a design for a waste processing system based on membrane technology and working practices for the tool. This program can help partners in processing batik wastewater so that it can reduce its negative impact on the environment. The results of the program show that partners have an understanding of the technique of processing batik liquid waste based on membrane technology. Thus, industrial activities at the Sekar Buen Batik IKM can support the green industry area and be more environmentally friendly.

Abstract

Diversifikasi produk dan inovasi kemasan sambal ikan biji nangka (Upeneus moluccensis) di Rumah Produksi Ikan Asin di RT.08 Kampung Baru, Balikpapan merupakan kegiatan pengabdian masyarakat Tim ITK untuk menjawab tantangan para nelayan dalam meningkatkan nilai ekonomi produk hasil perikanan. Program ini bertujuan untuk mengolah ikan asin menjadi sambal siap saji dengan kemasan higienis yang mampu memperpanjang masa simpan serta menarik secara visual. Pelaksanaan kegiatan pengabdian menggunakan metode partisipatif yang mencakup pelatihan teknis, sosialisasi kepada mitra dan masyarakat Kampung Baru, pendampingan proses produksi dengan massa basis ikan asin 1 kg serta kondisi operasi proses suhu <150ºC selama <15 menit dalam satu kali, dan strategi pemasaran produk. Hasil kegiatan menunjukkan bahwa inovasi produk berhasil dilakukan, ditandai dengan meningkatnya proporsi respon positif masyarakat sebelum dan sesudah program melalui data kuisioner kesadaran pentingnya diversifikasi produk ikan nangka menjadi sambal dari 39,76% menjadi 62,07%. Berdasarkan hasil analisis metrik Likert, rata-rata skor ketertarikan program naik 12,4% dari 3,37 menjadi 3,79. Penyediaan fasilitas kebersihan seperti drum sampah turut mendukung lingkungan produksi yang bersih, sehat, dan berkelanjutan. Selanjutnya perlu dilakukan pendampingan dalam penguatan pemasaran produk secara digital serta pengurusan izin legalitas (PIRT dan sertifikasi halal) agar produk berdaya saing khas Balikpapan.
