Abstract

Penjamah makanan merupakan orang yang bersentuhan langsung dengan makanan dan peralatan pengolahannya. Penjamah makanan harus menjaga kebersihan agar terhindar dari bahaya yang ditimbulkan akibat penularan dari proses penyelenggaraan makanan. Oleh karena itu, perlu dilakukan tindakan untuk meningkatkan pengetahuan dan sikap terhadap kebersihan individu penjamah makanan melalui penyuluhan melalui media poster. Penelitian ini bertujuan untuk mengetahui pengaruh penyuluhan dengan media poster terhadap peningkatan pengetahuan dan sikap terhadap higiene individu penjamah makanan. Desain penelitian yang digunakan adalah quasi eksperimen dengan rancangan one group pretest-posttest design dan subjek penelitian sebanyak 35 penjamah makanan. Analisis data menggunakan Wilcoxon. Pengetahuan dan sikap penjamah makanan setelah diberikan penyuluhan melalui media poster berada pada kategori baik. Hasil uji Wilcoxon menunjukkan adanya pengaruh penyuluhan dengan media poster terhadap peningkatan pengetahuan dan sikap terhadap higiene individu penjamah makanan (p-value < 0,05).

Abstract

Background: Obesity is strongly linked to elevate leptin levels and oxidative stress, both of which contribute to the development of various metabolic disorders. Leptin, a hormone that regulates metabolism and appetite, becomes less effective in obese individuals due to leptin resistance, thereby exacerbating metabolic dysfunction.Objective: This study aims to evaluate the effect of red dragon fruit (hylocereus polyrhizus) juice on leptin levels in Sparague Dawley rats using an overweight model.Method: This experimental study used a pre-post test control group design and involved six groups of rats (n=6 per group), including a normal group, a negative control group, a positive control group (orlistat), and three treatment groups receiving different doses of red dragon fruit juice (3.5 g, 7 g, and 10.5 g per 200 g body weight). The intervention was carried out for 14 days following a 14- day induction of obesity using a high-fat and high-carbohydrate diet. Leptin levels were measured before and after the intervention.  Results: The results showed that administration of red dragon fruit juice significantly reduced leptin levels (p<0,001) in all treatment groups. The greatest reduction was observed in the group receiving the 10.5 g dose, with an average decrease of 75.03%, which was nearly equivalent to the orlistat group that reduced leptin levels by 79.93%.Conclusion: Red dragon fruit juice has the potential to serve as a non-pharmacological agent in reducing leptin levels and oxidative stress under obesity conditions, with an effectiveness approaching that of orlistat.

Abstract

Latar belakang: Balita usia 24-59 bulan merupakan usia yang rentan mengalami stunting. Kadar protein pada cookies dengan penambahan tepung daun kelor dan tepung biji kacang hijau dapat menjadi solusi untuk menangani stunting pada balita. Tujuan: Penelitian ini bertujuan untuk menganalisa kandungan protein yang terdapat pada cookies. Metode: Penelitian ini menggunakan rangcangan acak lengkap dengan satu faktor perlakuan Uji Organoleptik dilakukan dengan menggunakan metode hedonik atau disebut uji kesukaan. Teknik sampling menggunakan probability sampling dan diperoleh sebanyak 31 sampel mahasiswi Universitas Bumigora. Hasil: Hasil penelitian menunjukan bahwa pada hasil uji organoleptik atau uji kesukaan pada produk cookies tepung daun kelor dan tepung biji kacang hijau pada warna yang tertingi pada perlakuan t4 sebesar 3,56. Aroma pada perlakuan t5 sebesar 3,84. Tekstur perlakuan t5 sebesar 3,84. Rasa perlakuan t5 sebesar 4,03. Kadar protein tertinggi pada perlakuan t3 dengan kombinasi tepung daun kelor dan tepung kacang hijau sebesar 16,27 %. Kesimpulan: Tidak memiliki pengaruh yang nyata terhadap organoleptic cookies. Kadar protein tertinggi diperoleh pada perlakuan t3 dengan kombinasi tepung daun kelor dan tepung kacang hijau sebesar 16,27 %.

Abstract

Abstract : Proper nutritional intake is a key factor in supporting optimal athletic performance during competition . Bananas are a natural source of energy that can help improve endurance due to their carbohydrates content and essential nutrients such as potassium . Potassium plays an important role in carbohydrates metabolism , including the formation and storage of glycogen and glucose as energy sources , thereby helping to maintain muscle function . This study aimed to determine the effect of Ambon banana consumption on improving VO₂ Max. Methods : This study employed a quasi-experimental method with a quantitative approach using a one-goup pretest-posttest design . A total of 37 participants were given an intervention in the form of 150 gams of whole Ambon banana daily for 7 days . Results : The results showed that the mean VO₂ Max value increased from 36,360 before the intervention to 39,570 after the intervention . Statistical analysis indicated a significant effect of Ambon banana consumption on improving VO₂ Max (p < 0.05). Conclusion : The consumption of Ambon bananas has a significant effect on Improving VO₂ Max in Futsal players .

Abstract

Early marriage still needs to be a concern due to the high incidence of cases and the impact it has on the health and nutritional status of toddlers. One of the long-term effects of early marriage is stunting, namely impaired growth and development in toddlers due to malnutrition. This study aims to explore the relationship between maternal age at marriage and nutrition knowledge levels with the nutritional status of toddlers. This research uses observational research with a cross-sectional design. The sample in this study was 48 mothers of toddlers with a history of early marriage. Data analysis used Spearman’s Rank test. The results showed that most of the mothers of toddlers married in their early adolescence (14 to 18 years), namely 29 people (60.4%). As many as 58.3% of toddlers have poor nutritional status, and 1.7% are in the good nutritional status category. The majority of mothers’ knowledge related to nutrition is lacking, as many as 24 (50%). There is a significant relationship between levels of a mother’s knowledge about nutrition and the nutritional status of toddlers with a p-value of 0.001. However, mothers who marry early need to increase their understanding of balanced nutrition in toddlers to prevent malnutrition. Future research needs to look at the nutritional status of toddlers based on the education level of mothers of toddlers who marry early, which may be one of the causes of malnutrition status in toddlers.
