Abstract

Penelitian ini bertujuan untuk mempelajari pengaruh pelapisan kitosan pada jeruk lemon lokal selama penyimpanan dan untuk mendapatkan konsentrasi kitosan yang sesuai untuk memperpanjang umur simpan jeruk lemon lokal. Penelitian ini dilakukan secara eksperimen dengan menggunakan metode rancangan acak lengkap dengan 6 perlakuan dan 3 ulangan. Perlakuan dalam penelitian ini adalah konsentrasi kitosan 1%, 1,5%, 2%, 2,5% dan 3%. Pengamatan dilakukan pada hari ke-0, 4, 8, 12, dan 16 tehadap susut bobot, vitamin C, kekerasan, dan total padatan terlarut. Data yang diperoleh dianalisis secara statistik menggunakan analisis of variance (ANOVA) pada taraf 5%. Sidik ragam menunjukkan penggunaan pelapis kitosan berpengaruh nyata terhadap susut bobot, vitamin C, kekerasan, dan total padatan terlarut. Perlakuan terbaik berdasarkan parameter yang telah diuji adalah jeruk lemon dengan konsentrasi kitosan 3%. Hasil penelitian menunjukkan jeruk lemon yang disimpan hingga 16 hari mengalami susut bobot 10,59%, vitamin C 5,54 mg, kekerasan 1,86 kgf/cm2 dan total padatan terlarut 1,343%.

Abstract

Orange and pineapple juice drinks are one of the products that have been made by UKM Desa Pulau Jambu. The processing of the fruit juice drink is still done manually for the whole process. The purpose of this service activity is to provide innovation in the processing of orange and pineapple juice drinks. The method implemented in this community service activity is to provide guidance and training from the production aspect. The training provided is the processing of orange and pineapple juice using the development of processing technology in the form of a semi-automatic orange and pineapple juice mixer machine. The automatic mixer is proven to be able to facilitate the production process of orange and pineapple juice drinks compared to manual mixing.

Abstract

Mayonnaise is an oil in water (O/W) emulsion despite containing 70–80% fat and egg yolk.  The addition of extract ginger var. Rubrum serves as an ingredient that is able to cover the characteristic of mayonnaise of red palm oil taste and aroma and also contains high antioxidants.  The aim was to find the best mayonnaise of red palm oil with extract ginger var. Rubrum addition according to the SNI.  The experimental was arranged in a completely randomized design (CRD) with 3 treatments and replicated 3 times then continued tested using DNMRT at a 5% level.  The treatment was five-level extract ginger var. Rubrum addition: 0.5%, 1%, 1.5%, 2%, and 2.5%.  Parameters observed were moisture content, antioxidant activity, color with a colorimeter, and sensory evaluation on mayonnaise.  The result showed that the addition of extract ginger var. Rubrum significantly affected color, descriptive sensory assessments such as aroma, taste, and viscosity, hedonic assessments such as aroma and taste.  Whereas moisture content, color sensory assessment and hedonic viscosity were not significantly affected.  The best treatment was 2.5% addition of extract ginger var. Rubrum with a value of 25.83% moisture content, 87.45 ppm (strong) antioxidant activity, color with colorimeter L*: 55.27; a*: 11.36; and b*: 48.86 and preferred overall acceptance.

Abstract

Limbah kulit nanas mengandung senyawa flavonoid, tanin, dan saponin serta mengandung senyawa yang berpotensi sebagai antibakteri. Serai wangi juga memiliki komponen senyawa utama yang terdiri dari sitronellal, sitronellol, dan geraniol yang memiliki kemampuan aktivitas antibakteri. Penelitian ini bertujuan untuk mengetahui keefektifitasan serta memperoleh rasio terbaik limbah kulit nanas dengan campuran ekstrak serai wangi sebagai bahan aktif antibakteri pengganti alkohol dalam bentuk gel hand sanitizer. Hasil penelitian menunjukkan bahwa rasio ekstrak kulit nanas dan ekstrak serai wangi berpengaruh nyata terhadap karakteristik dan aktivitas antibakteri gel hand sanitizer yang dihasilkan. Perlakuan terbaik dalam penelitian ini adalah KNSW4 (ekstrak kulit nanas 75% : 25% ekstrak serai wangi) memberikan karakteristik fisikokimia gel hand sanitizer dengan nilai viskositas 333,10 cP, densitas 1,07 g/mL, homogenitas yang baik, pH 3,6, dan daya sebar 7,98 cm. Uji organoleptik menunjukkan hand sanitizer yang dihasilkan memiliki warna cokelat kekuningan, agak beraroma serai wangi, tekstur agak lengket dan secara keseluruhan agak disukai oleh panelis. Hasil penelitian ini diharapkan dapat menjadi inovasi bagi masyarakat dalam pemanfaatan limbah kulit nanas dan serai wangi sebagai bahan baku gel hand sanitizer alami.

Abstract

Utilization of banana flour in making flakes is one of the efforts to diversify flakes products. Flakes made from kepok banana flour have a high carbohydrate but low protein content. According to SNI, the minimum requirement for protein in cereal products is 5%, so to meet the protein content in flakes, it needs to be combined with other ingredients, such as tempeh flour. The use of tempe flour in making flakes made from kepok banana flour is expected to increase the protein content of flakes. This research aimed to determine and obtain the best ratio between kepok banana flour and tempeh flour for making flakes. This research used a completely randomized design with four treatments and four replications. The treatments in this research were the difference in the ratio between kepok banana flour and tempeh flour, namely PT0 (kepok banana flour 100%), PT1 (90:10), PT2 (80:20), and PT3 (70:30). Data were analyzed using variance analysis and then continued with Duncan's New Multiple Range Test at 5% level. The result showed that the ratio of kepok banana flour and tempeh flour significantly affected moisture, ash, fat, protein, crude fiber, carbohydrate contents, crispy resistance in milk, and descriptive and hedonic sensory test. The best ratio of kepok banana flour and tempeh flour was 70:30, respectively. It had 1.77% moisture, 3.39% ash, 11.40% fat, 9,23% protein, 5.52% crude fiber, 74.22% carbohydrate, and crispy resistance in milk 7,61 minutes with a description of light brown, banana and tempeh flavored, crunchy texture, and banana and tempeh taste. Panelists preferred a hedonic assessment of color, aroma, taste, and overall assessment, and panelists preferred the crunchy texture

Abstract

The purpose of this research is to determine the optimum properties of biodegradable plastic made from banana weevil starch with the addition of straw cellulose as reinforcement. This research was conducted using Completely Randomized Method (CRD) with four treatments and four replications. In this study were the addition of straw cellulose with a ratio of starch and cellulose 1:0; 1:0,5 ; 1:1 and 1:1,5. Tests were carried out on strong tensile strength, elongation at break, biodegradation, swelling and water vapor transmission rate. The data obtained were analyzed statistically using analysis of variance (ANOVA). The addition of straw cellulose had a significant effect on the manufacture of biodegradable plastics. The result were biodegradable plastic increase tensile strength, decreases elongation at break, increase biodegradation and air resistance, reduces the rate of water vapor transmission. Biodegradable plastic with the best treatment is the ratio of starch starch ratio of 1 : 1.5 cellulose. The best result biodegrabable plastic has for tensile strength value of 9.56 MPa, elongation 6.8%, complete biodegradation on day 6, swelling 41.51% and WVTR 0.0156%.

Abstract

Penelitian dilaksanakan untuk mengetahui karakteristik dari plastik biodegradable berbahan dasar pati bonggol pisang dengan selulosa jerami. Penelitian dilakukan dengan metode Rancangan Acak Lengkap (RAL) dengan 4 perlakuan dan 4 ulangan. Pada penelitian ini melakukan penambahan selulosa jerami dengan perbandingan pati dan selulosa 1:0; 1:0,5 ; 1:1 dan 1:1,5. Pengujian dilakukan terhadap kuat tarik, perpanjangan putus, biodegradasi, pengembangan dan laju transmisi uap air. Data dianalisis secara statistik dengan menggunakan analysis of variance (ANOVA). Penambahan selulosa jerami berpengaruh terhadap pembuatan plastik biodegradable. Hasilnya adalah plastik biodegradable meningkatkan kekuatan tarik, mengurangi perpanjangan putus, meningkatkan biodegradasi dan hambatan udara, mengurangi laju transmisi uap air. Plastik biodegradabel dengan perlakuan terbaik adalah rasio perbandingan pati pati 1 : 1,5 selulosa. Plastik biodegrabable hasil terbaik memiliki nilai kekuatan tarik 9,56 MPa, perpanjangan 6,8%, biodegradasi lengkap pada hari ke 6, pembengkakan 41,51% dan WVTR 0,0156%.

Abstract

Penelitian ini bertujuan untuk menganalisis saluran pemasaran yang paling efisien pada agroindustri gula merah aren di Nagari Talang Maur. Metode yang digunakan dalam penelitian ini adalah observasi dengan pendekatan deskriptif kualitatif dan deskriptif kuantitatif.  Deskriptif kualitatif digunakan untuk menganalisis saluran pemasaran. Deskriptif kuantitatif digunakan dalam menghitung margin pemasaran, bagian petani, dan efisiensi pemasaran.  Saluran pemasaran agroindustri gula merah aren di Nagari Talang Maur terdapat dua saluran pemasaran, saluran I meliputi petani (produsen) – pedagang pengecer – konsumen dan saluran II petani (produsen) – pedagang pengumpul – pedagang pengecer – konsumen.  Saluran I memiliki nilai margin pemasaran sebesar Rp 4.000/kg dengan persentase margin 15,6%, nilai farmer’s share sebesar 84,3% dan efisiensi pemasaran sebesar 5,27% sedangkan saluran pemasaran II memiliki nilai margin pemasaran sebesar Rp  8000/kg dengan persentase margin 30,5%, farmer‘s share 71,4% dan efisiensi pemasaran 10,01%.  Maka dapat dikatakan bahwa saluran pemasaran I adalah saluran yang paling efisien karena memiliki margin pemasaran yang rendah, farmer’s share yang tertinggi dan efisiensi pemasaran yang rendah. Kata Kunci: gula merah aren, saluran pemasaran.

Abstract

This research aims to obtain the best addition of red ginger extract in corn starch edible coating to extend the shelf life of tomatoes. This research method used an experimental method, obtaining 15 experimental units by using a fully randomized design (CRD) with five treatments and three replications. The treatments used include P0 (without addition of red ginger extract), P1 (1% addition of red ginger extract), P2 (3% addition of red ginger extract), P3 (5% addition of red ginger extract), and P4 (7% addition of red ginger extract) in edible coating of corn starch with addition red ginger extract to extend shelf life tomatoes and stored for 21 days. The results showed that the addition of red ginger extract affected weight loss, hardness, total dissolved solids, pH, vitamin C and total microbes. Data were analyzed statistically using analysis of variance (ANOVA) and continued with DMRT at 5% level. The best treatment of this research was P4 with a 14.71% weight loss value, 5.58 kgf hardness, 1.413Brix total dissolved solids, 4.92 pH, 27.41 mg/100g vitamin C and 4.46 log CFU/g total microbes.

Abstract

Sago starch and sweet potato starch are promising alternatives for wet noodle production due to their high amylose and amylopectin content, which contribute to desirable quality characteristics. This study was conducted to determine the effect of the ratio of starch (sago and sweet potato respectively) to mung bean flour on the physicochemical properties of wet noodles, as well as to obtain the best wet noodle formulation. The research was conducted experimentally using a completely randomized design with ten treatments and four replicates. The treatments involved varying ratios of starch to mung bean flour for sago starch-based noodles (SP1: 100:0, SP2: 80:20, SP3: 70:30, SP4: 60:40, SP5: 50:50) and sweet potato starch-based noodles (JP1: 100:0, JP2: 80:20, JP3: 70:30, JP4: 60:40, JP5: 50:50). Parameters measured for the starches included water holding capacity (WHC), swelling power, and solubility. Wet noodle parameters included moisture, ash, and protein content, elongation, water absorption, and sensory characteristics (color, aroma, taste, chewiness, and overall preference). Data were analyzed statistically using ANOVA and further evaluated with DMRT at a 5% significance level. Results showed that different ratios of sago or sweet potato starch and mung bean flour significantly affected all observed parameters. Among the treatments, JP4 (60:40) received the highest hedonic scores, indicating panelists’ preference for all sensory attributes, including color, aroma, taste, chewiness, and overall acceptability. This study demonstrates the potential of using sago starch and sweet potato starch with mung bean flour substitution to develop wet noodles that meet both sensory and nutritional quality standards.
