Abstract

Abstrak - Isolat protein kedelai (ISP) memiliki kandungan protein tinggi yang dapat dimanfaatkan sebagai bahan tambahan makanan pada berbagai produk olahan. Selain kandungan protein, isolate protein kedelai mampu memperbaiki karakteristik organoleptik produk olahan. Tujuan penelitian ini untuk mengetahui karakteristik organoleptik kamaboko ikan lele (Clarias gariepenus) dengan penggunaan isolat protein kedelai (ISP) sebagai bahan tambahan. Metode penelitian yang digunakan adalah metode rancangan lengkap dengan lima perlakuan dan tiga kali ulangan. Hasil penelitian diperoleh karakteristik organoleptik kamaboko ikan lele terbaik terdapat pada perlakuan penambahan isolat protein kedelai sebanyak 7.5%. Karakteristik organoleptik meliputi tekstur dengan nilai 5.01, aroma dengan nilai 5.08, warna dengan nilai 5.01. Nilai karakteristik organoleptik yang dihasilkan berada pada katagori suka. Kata Kunci : Clarias gariepenus, Isolat Protein Kedelai, Kamaboko, Organoleptik. Abstract - Isolate soy protein (ISP) has a high protein content which can be used as a food additive in various processed products. In addition to protein content, isolate soy protein can improve the organoleptic characteristics of processed products The aim of this study was to determine the organoleptic characteristics of catfish kamaboko (Clarias gariepenus) using isolate soy protein (ISP) as a food additive. The research method used was a complete design method with five treatments and three replications. The results showed that the best organoleptic characteristics of catfish kamaboko were found in the addition of 7.5% isolate soy protein. Organoleptic characteristics include texture with a value of 5.01, aroma with a value of 5.08, color with a value of 5.01. The resulting organoleptic characteristic values are in the like category. Abstract

The floating aquaponic system using different types of plants can be an environmentally friendly cultivation solution, easy to apply on a household scale and profitable. However, various types of plants in aquaponics have different nutrient absorption capacities that can affect the quality of fish meat. This research aimed to see the type of plant that is best at producing quality of tilapia (Oreochromis niloticus) meat produced from cultivation with a floating aquaponic system using different types of plants. The types of plants used included spinach (Ipomoea aquatica), pakcoy (Brassica rapa), lettuce (Lactuca sativa), and control (without plants), which were repeated three times. Experimental method is used in this research. The results showed that the best treatment was I. aquatica plant treatment which produced a dry weight of tilapia meat of 19.608%; protein of 61.575% DW (Dry Weight); fat of 3.586% DW and ash content of 8.239% DW. The results showed that using I. aquatica plants produced better meat quality than the other two plants. Compared to the control treatment, the difference was very significant. This method has the potential to be widely applied at the household scale in urban and semi-urban areas to get a source of nutritious animal protein and vegetables with minimal use of land, facilities and water.

Abstract

Graphical Abstract Research Highlights The combination of honey and hirta improved hematological parameters of C. gariepinus catfish infected with A. hydrophila bacteria. The combination of honey and hirta positive affected the histopathology of liver, kidneys, and gills, which led to a restoration of organ function to normal levels. The combination of honey and hirta also improved the morphology of C. gariepinus. The most effective combination of honey and hirta was treatment C (1:2). Abstract Honey and Euphorbia hirta are natural ingredients that may serve as alternative treatments for Clarias gariepinus catfish infected with Aeromonas hydrophila bacteria. Both honey and E. hirta contain bioactive compounds with known antibacterial properties. This study aims to investigate the effects of combining honey and E. hirta on various hematological parameters, including erythrocytes, leukocytes, MCH, MCV, as well as histopathological and morphological changes in C. gariepinus catfish infected with A. hydrophila. This study used an experimental design involving three treatment combinations of honey and E. hirta, which were A (2:1), B (1:1), C (1:2) and a control with three replications. The treatments were administered to the fish through immersion. Honey was diluted at a 50% concentration in distilled water. Meanwhile, E. hirta was prepared as a coarse powder and boiled at a 3% concentration. The results showed that the combination of honey and E. hirta affected the hematological, histopathological, and morphological parameters of C. gariepinus catfish within the normal ranges. The most effective treatment was found to be treatment C (1:2). Therefore, the combination of honey and E. hirta is potential as a therapeutic option for bacterial infections in fish.

Abstract

This research aims to determine the effect of using papaya (Carica papaya L) leaves on blood glucose and growth rate of Lates calcarifer. This research used a completely randomized design (CRD) with 4 treatments and 3 replications. Treatment A with the addition of papaya leaves powder (C. papaya) of 3.25 g/L, B of 3.75 g/L, C of 4,25 g/L and D as a Control or without the addition of papaya leaves. The parameters measured were blood glucose, absolute growth and survival. The best treatment is treatment A (C. papaya 3.25 g/L) which produced fish blood glucose on the 60th day of 90 mg/dL, 100% survival rate, absolute weight growth and length of 6.43 g and 6.20 cm. .

Abstract

Catfish (Clarias sp.) has high nutritional content. However, processed products such as nuggets from this fish are still limited in Kupang city. So, the nutritional content of the nuggets is less known. Therefore, this study aims to analyze the nutritional content of catfish nuggets derived from aquaponic cultivation, with proximate analysis. The stages of making catfish nuggets briefly begin with ground meat, then steamed, then coated with breadcrumbs and stored in the freezer. The proximate test obtained was the content of 11.67% protein, 30.139% carbohydrates, 7.82% fat, 48.137% water content, 2.22% ash and 0.014% crude fiber. So, with its nutritional content, catfish nuggets can be used as a substitute for chicken nuggets.

Abstract

This research aims to determine the effect of the floating raft aquaponic system with different types of plants on water quality in cultivation of tilapia (Oreochromis niloticus) and to obtain plants that are very good for maintaining water stability. This study used a Completely Randomized Design (CRD) with 4 treatments and 3 replications. The parameters tested in this research were phosphate, pH, temperature and DO, with treatments K (control), A (water spinach plants), B (pakchoi plants) and C (lettuce plants). The difference in aquaponic system plants in tilapia (O. niloticus) cultivation had a significant effect on pH and DO. Water spinach plants (Ipomoea reptans poir) were the best plants in maintaining water quality with phosphate values in H56 of 1.41 mg/L, pH 8.51, temperature 25.7°C and DO 8.23 mg/L.

Abstract

Tablolong Beach, Kupang, West Nusa Tenggara, has significant potential for sea cucumber aquaculture development. This study examines the environmental conditions, climatic factors, and local natural resources that support sea cucumber farming in this area. The results showed that Tablolong Beach has very suitable environmental characteristics for sea cucumber growth, including suitable water temperature and sufficient natural food availability. In addition, the local community has strong traditional knowledge on sea cucumber collection and cultivation. the purpose of this study was to determine the potential and types of sea cucumbers found around Tablolong beach. This research method is an experimental method where samples are taken by diving in the waters of Tablolong beach. Sea cucumber species found consisted of H. atra, H. leucospilota, H. fuscocinerea, and S. monoturbeculatus. This research provides an important basis for designing a sustainable sea cucumber aquaculture development plan in Tablolong Beach, integrating ecological, economic, and social aspects. By utilizing the natural potential and local knowledge, the development of sea cucumber aquaculture in this area can become a model for sustainable utilization of marine resources and support the livelihoods of coastal communities

Abstract

Educational Sharing Session Activities Regarding Turtles and Hatchling Release Activities held on November 9, 2024 in the Nipah turtle conservation area, North Lombok. This activity aims to increase public awareness and understanding of the importance of turtle conservation. This activity involves local communities, academics, and conservation area managers, with speakers from turtle conservation managers who provide education about the threats faced by turtles, such as illegal hunting, pollution, and habitat loss. In addition to the educational session, this activity also includes the release of hatchlings into the sea, providing an opportunity for participants to participate directly in turtle conservation. Interactive discussions that took place during the educational session allowed participants to ask questions and share knowledge about turtle conservation. The results of this activity show that the community is increasingly aware of the importance of their role in turtle conservation, and there is a commitment to be more involved in conservation efforts. Collaboration between the community, academics, and conservation managers is the main key to achieving the goal of sustainable turtle conservation. It is hoped that this activity can be a foundation for the development of further conservation programs that involve more parties and strengthen turtle conservation efforts in the future.

Abstract

Budikdamber has emerged as a practical food-production strategy for urban areas with limited land resources, making it necessary to examine how stocking density influences the growth performance and survival of African catfish (Clarias gariepinus) cultured under this system. This study was conducted from June to August 2024 at the Aquaculture Field Laboratory, Universitas Nusa Cendana. The experiment employed a completely randomized design (CRD) consisting of three treatments with three replicates each: A (20 fish per container), B (30 fish per container), and C (40 fish per container). The evaluated parameters included survival rate, weight gain, and absolute length growth. The statistical analysis indicated that stocking density had a significant effect on survival (P<0.05), with treatment A achieving the highest survival rate of 100%. In contrast, no significant differences were detected for weight and length growth among treatments (P>0,05), although lower densities tended to support slightly better growth. Overall, the budikdamber system maintained stable water quality and supported satisfactory fish performance when stocking density was managed appropriately.

Abstract

Ketahanan pangan di kota Kupang menjadi permasalahan bagi masyarakat sekitar, sehingga keberadaan kelompok budidaya menjadi penting karena menjadi sumber salah satu sumber protein hewani. Kelompok Budidaya Ikan (Pokdakan) Hosana merupakan kelompok penghasil ikan budidaya di wilayah Kecamatan Alak terkhusus Kelurahan Batuplat. Namun, pada proses produksi terdapat beberapa permasalahan yang dihadapi. Oleh karena itu, tujuan dari kegiatan pengabdian kepada masyarakat ini adalah untuk mengatasi segala permasalahan yang terjadi pada mitra yaitu pelatihan terkait akuaponik dan pengolahan ikan budidaya, yang dapat berpengaruh positif pada ketahanan pangan. Metode yang digunakan pada kegiatan ini terbagi menjadi lima tahapan yaitu persiapan, penyuluhan, pelatihan, pendampingan dan evaluasi serta keberlanjutan program. Peserta kegiatan bukan hanya dari mitra tetapi juga dari masyarakat sekitar Batuplat. Pada evaluasi dilakukan pre test dan post test, serta survei kepuasan kegiatan. Hasil kegiatan menunjukkan adanya peningkatan pengetahuan dan keterampilan dari peserta. Berdasarkan hasil post test terlihat adanya peningkatan pengetahuan peserta, dimana peserta dapat menjawab dengan benar pertanyaan yang diberikan. Peningkatan keterampilan peserta juga nampak pada hasil produk yang telah dibuat pada saat pelatihan. Selain itu, survei kepuasan kegiatan pengabdian juga menunjukkan nilai rata-rata di atas 80%. Kegiatan pelatihan akuaponik dan pengolahan ikan menjadi solusi atas permasalahan mitra. Diharapkan peserta dapat terus berperan dalam menjaga ketahanan pangan.
