Abstract

Lack of fiber and antioxidants can increase the risk of obesity which lead to oxidative stress. Eucheuma cottonii seaweed contains dietary fiber which provide anti-obesity effects. Beside dietary fiber, antioxidant is also needed to prevent oxidative stress in obesity. Canistel fruit (Pouteria campechiana) contains antioxidants such as vitamin C, beta carotene and polyphenols. The purpose of this study was to determine the effect of the proportion of seaweed and canistel on the content of dietary fiber, antioxidant activity, physical properties, and organoleptic properties of sorbet. This research method used a one-factor completely randomized design (CRD) with two repetitions. These factors are the proportion of seaweed and canistel, namely F1 (20%:80%), F2 (30%:70%), and F3 (40%:60%). The ANOVA test results showed that the proportion of seaweed and canistel had a significant effect (p< 0.05) on the dietary fiber and overrun, while the antioxidant activity and organoleptic properties of sorbet had no significant effect (p >0.05). The selected formula by using Exponential Comparison Method (ECM) results the F1 formula with the proportion of 20%:80%. The selected formula products contained 5.19% dietary fiber, 48% w / v antioxidant activity, and 34.32% overrun.

Abstract

Diabetes Mellitus (DM) patients in Indonesia are ranked fourth in Asia and seventh in the world. In Depok, 15% of Depok residents suffer from DM. Low knowledge of the dangers and management of DM disease nutrition, as well as lack of early detection of DM disease, contributes to the severity and complications of the disease. This activity aims to reduce the prevalence and severity of DM in Gandul in a preventive way. The target audience in this activity is elderly women members of the Anggrek Bulan Gandul Posbindu and Posbindu Delima Senja, Gandul, Cinere. The implementation of this activity uses counseling and question and answer methods. Then monthly blood sugar detection is carried out monthly, and measurements of abdominal circumference and body weight to see symptoms of obesity. The enthusiasm of the participants was quite good seen from the presence of the participants who came. Early detection is done regularly per month and found 2 (2 of 34 mothers) elderly mothers of Posbindu Anggrek Bulan and 4 elderly mothers in Posbindu Delima Senja (4 out of 30 mothers), who have type 2 diabetes. Knowledge about DM was measured by questionnaire. The results of the questionnaire showed 3 people (10%) with good results, 4 people (13.3%) with sufficient results, and 23 people (76.67%) with poor results after counseling. This activity should be a routine monthly activity and measurement of understanding is carried out with a questionnaire after giving the material, as well as making a DM booklet for elderly DM patients so that they can re-read the material providedABSTRAK; Pasien Diabetes Mellitus (DM) di Indonesia menduduki peringkat keempat terbesar di Asia dan peringkat ketujuh di dunia. Di kota depok, sebanyak 15% penduduk kota Depok menderita DM. Pengetahuan yang rendah tentang bahaya dan tatalaksana nutrisi penyakit DM, serta kurangnya deteksi dini penyakit DM, memberikan kontribusi keparahan dan komplikasi penyakit. Kegiatan ini bertujuan mengurangi tingkat prevalensi dan keparahan DM di Gandul dengan cara preventif. Khalayak sasaran dalam kegiatan ini adalah ibu-ibu lansia anggota posbindu Anggrek Bulan Gandul dan posbindu Delima Senja, Gandul, Cinere. Pelaksanaan kegiatan ini menggunakan metode penyuluhan dan tanya jawab. Kemudian diadakan deteksi gula darah secara berkala perbulan, dan pengukuran lingkar perut dan berat badan untuk melihat gejala obesitas. Antusiasme dari para peserta cukup baik dilihat dari kehadiran peserta yang datang. Deteksi dini dilakukan secara berkala per bulan dan didapatkan 2 (2 dari 34 ibu-ibu) ibu-ibu lansia Posbindu Anggrek Bulan  dan 4 ibu-ibu lansa di Posbindu Delima Senja (4 dari 30 ibu-ibu), telah mengidap DM tipe 2. Pengetahuan tentang DM diukur dengan kuesioner. Hasil kuesioner memperlihatkan 3 orang (10%) dengan hasil yang baik, 4 orang (13,3%) dengan hasil cukup, dan 23 orang (76,67%)  dengan hasil buruk setelah penyuluhan. Kegiatan ini sebaiknya menjadi kegiatan rutin bulanan dan diadakan pengukuran pemahaman dengan kuesioner setelah pemberian materi, serta pembuatan booklet DM untuk para pasien DM lansia, agar dapat membaca kembali materi yang diberikan.

Abstract

Anemia is a global health problem that affects a third of the world's population, one of which is the lack of iron-containing food sources. The aim of this study was to analyze the nutritional content, iron content, and organoleptic properties of the selected formulation of anchovy sausage substituted with tempeh flour as an iron-rich snack. This study used a one-factor Completely Randomized Design (CRD) method with three different treatments and two repetitions. The proportions of tempeh flour with anchovy are F1 (35:45), F2 (40:40), and F3 (45:35). The results of the ANOVA test showed that there was no significant effect (P>0.05) on water content, ash content, protein content, fat content, carbohydrate content, and iron content. The results of the Kruskal-Wallis test showed that there was no significant effect (p>0.05) on the panelists' preference for color, aroma, taste, and texture characteristics. The sausage formula was selected through the exponential comparison method (MPE), namely the F3 formula. The serving dose of the selected formula sausage has an energy content of 228 kcal; protein 16.4 g; fat 11.3 g; carbohydrates 15 g; 2.4 mg of iron in one serving, which is 100 grams.

Abstract

Complementary foods for breast milk (MP-ASI) are needed as additional food if breast milk intake does not meet the needs of toddlers. So far, the practice of giving MP-ASI is often ignored, especially in terms of nutrient density. This is due to the lack of knowledge and skills of mothers and posyandu cadres in making nutrient-dense MP-ASI. The purpose of this program is to increase the knowledge of mothers and posyandu cadres about the manufacture of MP-ASI made from nutrient-dense local ingredients. The method used is training with video tutorials on making MP-ASI made from local ingredients and educational videos related to MP-ASI. This program provides significant benefits because there is an increase in knowledge after participating in the training (97.74% > 68.11%), both in the aspect of making MP-ASI made from local ingredients and processing quality MP-ASI, especially from mixed food ingredients (BMC). Other than that, the activity provides a sustainable impact in order to meet the nutritional needs of toddlers

Abstract

Dampak tekanan sosial dan ekonomi akibat pandemi Covid-19 memicu hal positif. Salah satunya motivasi untuk bertahan (coping strategy) secara ekonomi berupa efisiensi atau sumber pendapatan baru. Wujudnya berupa tumbuhnya usaha kecil yang terutama digerakkan kaum perempuan. Berdasarkan analisis situasi ditemukan adanya usaha rintisan atau UKM yang berbasis pengolahan pangan lokal di RW 05 Kampung KB Kelurahan Gandul, Kecamatan Cinere, Depok, Jawa Barat. Namun keterbatasan pengetahuan menjadikan usaha rintisan ini belum berkembang padahal potensial. Sehubungan dengan hal ini, dibutuhkan program peningkatan keterampilan dalam hal pengemasan dan pelabelan produk pangan sehingga memiliki nilai jual yang lebih baik. Adapun tahapan pelaksanaan program meliputi pelatihan dan pendampingan dengan muatan materi pengemasan pangan, pelabelan pangan serta materi penunjang lainnya seperti aspek kesehatan dan keamanan pangan olahan. Kegiatan telah berdampak positif bagi masyarakat sasaran yaitu tampilan produk menjadi lebih menarik dan lebih tahan lama sekaligus memperhatikan peraturan pelabelan pangan dan aspek keamanan pangan. Melalui pengetahuan dan implementasi pengemasan yang menarik dan pelabelan sesuai ketentuan serta memperhatikan aspek keamanan pangan mendorong UKM yang dirintis ini mulai menjual di toko-toko daring yang sudah ada. Kata kunci: Pengemasan pangan, pelabelan pangan, pangan lokal, kewirausahaan ABSTRACT The Covid-19 pandemic affected not only people’s health but also their social and economic. But on the other side has triggered positive things. One of them is a coping strategy by earning income from new small businesses. It helped the economic condition of the affected people. Initiated by women, small businesses for local food processing were growing. Based on the situation analysis, there were many new small businesses started. For instance, some new businesses or SME based on local food processing which is located at RW 05 Kampung KB, Gandul Cinere Village, Depok, West Java. However, limited knowledge makes this startup business not yet developed, even though it has potential. Therefore, an additional skill improvement program is needed such as packaging and labeling of food products so that they have a better selling value. The stages of program implementation include training and assistance for food packaging, food labeling, and other supporting issues such as health and safety aspects of processed food. The activity has had a positive impact on the targeted community, namely the appearance of the product becomes more attractive and more durable while paying attention to food labeling regulations and food safety aspects. Through knowledge and implementation of attractive packaging and labeling according to regulations and paying attention to food safety aspects, this SME started selling in existing online shops. Abstract

Partners in this joint partnership program are the Home Industry of cassava jerky which is located in Ciantra Village, South Cikarang District, Bekasi Regency. This joint partnership program activity is part of a community service program that is carried out jointly between a team of lecturers, students, and the community of small business actors in Ciantra Village. The problem faced by small businesses with cassava leaf jerky is that the process of cutting cassava leaf jerky dough is still done traditionally, so it takes a very long time, this condition causes the production process to be hampered and production capacity decreases and the quality of the product is not uniform. The solution offered to overcome the problem is to increase the quantity and quality of food product production through technological innovation of cassava leaf jerky production with the application of a cassava leaf jerky dough cutting machine. The method for implementing this community service activity is a demonstration method through a group discussion approach. The community partnership program methods carried out were initial discussions, outreach, implementation and training on the use of cutting machines. The results of the implementation of this activity partners receive assistance from a cassava leaf jerky dough cutting machine, partners are able to use and implement the use of cutting machines, and through the application of cutting machines small business actors in Ciantra Village can increase production productivity in terms of quality and quantity, specifically for products. cassava leaf jerky.   ABSTRAK: Mitra pada kegiatan program kemitraan bersama ini yaitu Industri Rumah Tangga dendeng daun singkong yang berada di Desa Ciantra Kecamatan Cikarang Selatan, Kabupaten Bekasi. Kegiatan program kemitraan bersama ini merupakan bagian dari program pengabdian kepada masyarakat yang dilaksanakan secara bersama antara tim dosen, mahasiswa, dan masyarakat pelaku usaha kecil di Desa Ciantra. Permasalahan yang dihdapi usaha kecil Dendeng Daun Singkong adalah proses pemotongan adonan dendeng daun singkong masih dilakukan secara tradisional, sehingga memerlukan waktu yang sangat lama, kondisi tersebut mengakibatkan proses produksi terhambat dan kapasitas produksi menurun serta kualitas hasil produk tidak seragam. Solusi yang ditawarkan untuk mengatasi permasalahan adalah meningkatkan kuantitas dan kualitas produksi produk pangan melalui inovasi teknologi produksi dendeng daun singkong dengan penerapan mesin pemotong adonan dendeng daun singkong. Metode pada pelaksanaan kegiatan pengabdian kepada masyarakat ini adalah metode demonstrasi melalui pendekatan diskusi kelompok. Metode program kemitraan masyarakat yang dilakukan adalah diskusi awal, sosilaisasi, penerapan dan pelatihan penggunaan mesin pemotong. Hasil dari pelaksanaan kegiatan ini mitra mendapat bantuan mesin pemotong adonan dendeng daun singkong, mitra mampu menggunakan dan menerapkan penggunaan mesin pemotong, dan melalui penerapan mesin pemotong pelaku usaha kecil di Desa Ciantra dapat meningkatkan produktivitas produksi ditinjau dari aspek kualitas dan kuantitas, secara khusus untuk produk dendeng daun singkong

Abstract

Introduction: Labor is everyone who can do work to produce goods and services to meet their own needs and for society. Objective: Mencari's relationship between nutritional status, disease history, work motivation, and work discipline with productivity during the Covid-19 pandemic. Method: This type of research uses a cross-sectional research design. The population of this study was the entire non-lecturer workforce, and the sample in this study was 30 people. Results: Uji bivariate obtained a relationship between nutritional status (p= 0.03), work motivation (p = 0.04) with work productivity. Conclusion: A person with a normal nutritional status, good work motivation, and good work discipline can improve labor productivity. Companies are advised to pay attention to the nutritional status of work motivation and discipline.

Abstract

Background: The main reason for discontinuing exclusive breastfeeding is the low milk supply. Torbangun and Katuk are galactagogues that can stimulate milk production and be modified into food bars to increase breast milk production. Modifying the food bar using Torbangun and Katuk is food fortification to increase milk production for breastfeeding mothers. Objectives: This study aimed to identify the total flavonoids and antioxidant activity of Torbangun flour, Katuk flour, and food bar Torbangun Katuk products and to analyze the effectiveness of Torbangun Katuk food bar in breastfeeding mothers Methods: This was pre-experimental with a pre-test and post-test design to analyze milk production before and after consuming food bars. Raw materials and food bar products were analyzed for total flavonoids with aluminum chloride (AlCl3) and antioxidant activity using the DPPH (1,1-diphenyl-2-picrylhydrazil) method. The food bar had 2.5% Torbangun flour and 5% Katuk flour. The effectiveness test was conducted on ten breastfeeding mothers. Effectiveness was seen from changes in breast milk volume before and after consuming food bars with pairing T test for analysis. Results: chemical analysis showed that the total flavonoids of Torbangun and Katuk flour were 4.06 mg/g and 5.30 mg/g, and antioxidants in Torbangun and Katuk flour were 39.77 ppm and 307.96 ppm, respectively. Furthermore, the total flavonoids and antioxidant activity of the Torbangun Katuk food bar product were 0.36±0.06 mg/g and 116.01±36.83 ppm, respectively. The effectiveness results showed an increase of 54.98% between the average breast milk volume before and after consuming food bars. Giving food bars significantly affected breastmilk production (p<0.05).  Conclusions: Torbangun flour and Katuk flour have the potential as food additives to increase breast milk production.

Abstract

Perceived body image is a person's satisfaction with the weight he has, satisfaction in appearance, body shape, evaluating appearance and orientation of appearance and attention. More than 50% of young women want a slim body and the same number of young men want a change in weight. Negative body image causes a person to do a strict diet which has an impact on nutritional status. Community service activities that aim to provide knowledge related to body image which is given through empowerment to cadres so they can prevent malnutrition. This community service activity uses the counseling method with Power Point media and leaflets. This activity was carried out from early January to November 2022. Counseling was carried out directly to cadres in Pasir Putih Village, Depok. There were 26 cadres present. In this community service activity, an evaluation of the cadres was carried out in the form of questions related to positive body image knowledge. Community service activities are effective in increasing the knowledge of cadres. The results of the evaluation of the cadres were analyzed using a paired t-test and found that there were differences in knowledge before and after counseling with a p value of 0.02. The average value before being given counseling was 74.62 and after being given counseling it increased to 82.31. This community service activity has proven to be effective in increasing the knowledge of the cadres so that it is hoped that the cadres can prevent malnutrition through a positive body image.

Abstract

Background: During the COVID-19 pandemic, the risk of computer vision syndrome (CVS) increased due to the prolonged use of digital devices. According to a study in 2018, the adult population in Indonesia suffered from micronutrient deficiency which is essential for the anatomy and physiology of the eye. Objectives: This study aims to compare the micronutrient intake among students with and without CVS. Methods: This study used a cross-sectional design. The data were collected online from 34 students of the Nutritional Science Program, Faculty of Health Sciences, Universitas Pembangunan Nasional “Veteran” Jakarta using 24-hour dietary recalls and questionnaires. The data collection was repeated four times. The diagnosis of CVS was established using the Computer Vision Syndrome Questionnaire (CVS-Q) which consists of 16 questions about the frequency and intensity of each symptom. The micronutrient intake was analyzed using an application, namely NutriSurvey 2007. A univariate analysis was carried out to describe the characteristics of the variables. An unpaired t-test or Mann-Whitney test was carried out to test the hypothesis about the difference in micronutrient intake between the non-CVS group and the CVS group. Results: From a total of 34 subjects, 22 subjects (64.7%) had CVS, most of whom suffered from micronutrient deficiency. The results showed no significant difference in subject characteristics and computer usage between the CVS group and the non-CVS group (p > 0.05). The two groups that showed no significant difference in micronutrient intake included Fe, Mg, Cu, vitamin E, vitamin A, retinol, vitamin C, and omega-3 (p > 0.05). However, the results of unpaired t-test showed a significant difference in Zn intake between the two groups (p = 0.036; CI = 0.125-2.716). Conclusions: Zn intake plays an important role in preventing CVS. Further research on the benefits of Zn supplementation in preventing CVS is necessary.
