Abstract

This study aims to evaluate the effect of substituting composite flour made from modified jackfruit seed starch and rice bran flour on the dietary fiber content and antioxidant activity of dried noodle products. Jackfruit seed starch was modified using the autoclaving-cooling method, a physical technique designed to enhance the functional properties of starch, such as thermal stability, resistance to digestion, and increased resistant starch content. On the other hand, rice bran flour was utilized as a source of insoluble fiber and bioactive compounds such as γ-oryzanol and phenolic acids, which are known for their antioxidant properties. The two ingredients were combined in a 1:1 ratio to produce composite flour, which was then substituted into the noodle formulation at levels of 5%, 10%, and 15% of the total flour used. The final noodle products were analyzed for insoluble, soluble, and total dietary fiber content using a multi-enzyme method, as well as antioxidant activity using the DPPH assay. The results indicated a significant increase (p<0.05) in dietary fiber content and antioxidant activity with higher substitution levels. The 15% substitution treatment yielded the best results, with total dietary fiber content of 6.86% and antioxidant activity of 33.70%. This study demonstrates that the combination of modified jackfruit seed starch and rice bran flour holds great potential as a sustainable and nutritious functional ingredient in healthier dried noodle formulations.

Abstract

Stunting in children is a major global public health concern, affecting approximately 155 million children worldwide and contributing to high child mortality rates, recurrent infections, and reduced opportunities for play and learning. Exclusive Breastfeeding (EBF) is a key nutritional intervention proven effective in stunting prevention. The objective of this article is to explore the prevalence of stunting and exclusive breastfeeding practices in Indonesia based on the latest available data, and to identify associated factors. This study employed a cross-sectional design using secondary data analysis based on the results of the Indonesian Nutrition Status Survey (SSGI) conducted by the Ministry of Health in 2024. The 2024 SSGI results indicate that the prevalence of stunting among toddlers in Indonesia is 19.8%, a significant decrease from 24.4% in 2022. The coverage of exclusive breastfeeding for infants aged 0-5 months reached 74.73%. However, there are variations in this figure, with the proportion among the working mother group (72.89%) being slightly lower than the non-working mother group (76.06%). Furthermore, the study identified that higher education of the Head of Household (HOH), higher household economic status, and urban residence play a significant role in reducing the prevalence of stunting in toddlers. Although stunting prevalence has decreased, EBF coverage (74.73%) remains below the government's 2024 target of 80%. Therefore, it is recommended to intensify targeted education and support programs, especially for working mothers and households with lower educational and economic status in non-urban areas, to achieve the EBF coverage target and accelerate the reduction of stunting in Indonesia.

Abstract

Breast milk provides numerous benefits; however, many mothers face challenges in providing exclusive breastfeeding, one of which is insufficient milk production. This study aimed to evaluate the organoleptic properties and acceptance level of Mamakesuka cereal as a functional beverage to support breast milk production. The study employed an experimental design using a Completely Randomized Design (CRD). Organoleptic testing and acceptance assessment were conducted with 30 trained panelists. The results showed that formulation L2 was the most preferred. The color most frequently selected was dark brown but still acceptable (70.0%), the taste was described as naturally sweet and savory and well liked (56.7%), the aroma was considered distinctive (56.7%), and the texture was perceived as soft, slightly dense, and crunchy (86.7%). In the acceptance test, formulation L2 was also the most favored, with color rated as “very liked” (70.0%), taste as “liked” (63.3%), aroma as “liked” (53.3%), and texture as “liked” (76.7%). In conclusion, formulation L2 was identified as the best Mamakesuka cereal formulation based on organoleptic evaluation and consumer acceptance, indicating its potential for further development as a locally based functional food product.

Abstract

Dental caries is a chronic infectious disease that remains a major global health problem, primarily caused by Streptococcus mutans, a bacterium capable of forming dental biofilms. Preventive strategies can be developed through the use of natural non-cariogenic agents such as erythritol which exhibits anti-biofilm properties and licorice root (Glycyrrhiza glabra L.), which contains antibacterial compounds including flavonoids and saponins. This study aimed to evaluate the in vitro antibacterial potential of erythritol candy supplemented with licorice root extract against Streptococcus mutans. The study employed a Completely Randomized Design (CRD) consisting of four treatments with different concentrations of licorice root extract (0%, 2%, 3%, and 5%), along with a positive control (ampicillin) and a negative control (distilled water). Antibacterial activity was assessed using the well diffusion method and the inhibition zone diameters were analyzed statistically using Kruskal–Wallis test. The results showed that increasing the concentration of licorice root extract tended to enhance antibacterial activity with inhibition zones ranging from 1.00 ± 0.70 mm (2%) to 3.25 ± 1.76 mm (5%), although the differences were not statistically significant (p > 0.05). In conclusion, erythritol candy containing licorice root extract demonstrated potential antibacterial activity against Streptococcus mutans, although the effect was relatively weak. Further studies are recommended to determine the Minimum Inhibitory Concentration (MIC), evaluate anti-biofilm activity, and conduct in vivo testing to confirm its effectiveness under physiological conditions.

Abstract

Dysmenorrhea is one of the most common menstrual disorders among adolescent girls, often affecting their learning activities and quality of life. One factor suspected to be associated with dysmenorrhea is dietary habits, particularly the frequent consumption of fast food, which is high in fat, sodium, and low in fiber. This study aims to determine the relationship between fast food consumption and the incidence of dysmenorrhea among female students at SMA Negeri 6 Madiun. This study employs a descriptive-analytic method with a cross-sectional approach to explain the relationship between fast food consumption and the occurrence of dysmenorrhea experienced by female adolescents at SMA Negeri 6 Madiun.. The population consisted of all female students at SMA Negeri 6 Madiun, with samples selected through simple random sampling. The results showed that most of the respondents frequently consumed fast food (51.3%) and experienced moderate dysmenorrhea (40.4%). The statistical test results from 154 female adolescents at SMA Negeri 6 Madiun show that a portion of the respondents (55.0%) experienced a significant relationship between fast-food consumption and the occurrence of dysmenorrhea (P value = 0.000 < 0.05). It can be concluded that the more frequently adolescents consume fast food, the higher their risk of experiencing dysmenorrhea. This study is expected to serve as a basis for nutrition education and reproductive health promotion efforts within the school environment.

Abstract

Stunting remains a child health problem because it affects physical growth and cognitive development. Posyandu cadres have a strategic role in early detection of stunting, but their knowledge and skills need to be improved. This study aims to evaluate changes in cadres' knowledge and skills after early detection training on stunting.  A quantitative, quasi-experimental study (one group pre-test and post-test design) was conducted on 40 posyandu cadres using a purposeful sampling technique. The instrument consisted of 20 questions (scored 0–20) assessing the cadres' knowledge and skills. Improvement in training outcomes was measured through pre-test and post-test analyzed using paired t-test. The average score increased from 11.60 ± 5.295 to 15.18 ± 5.028. The average difference in increase was 3.58. A P-Value of 0.000 was found in the results of the paired t-test, confirming that the training intervention had a very significant effect on improving cadre knowledge. Early detection training on stunting significantly improved the knowledge and skills of integrated health post (Posyandu) cadres, strengthening stunting prevention efforts in the community.

Abstract

School kids' nutritional understanding is still rather limited; they need engaging and straightforward learning materials; the display media isi piringku serves as a tool to help students grasp the notion of balanced nutrition in a more clear and efficient manner. The goal of this research is to assess how well the isi piringku nutrition education program uses the display media to teach elementary school students about nutrition. Using a quasi-experimental design with a one-group pre-test post-test model, the methodology collected data from 30 students in the fourth and fifth grades who satisfied the inclusion and exclusion criteria using a purposive sampling method. The sample size was determined using the Wilcoxon test formula. Data collection methods were used to compare knowledge and behavior before and after the intervention using univariate and bivariate analysis with the Wilcoxon test. In univariate and bivariate analysis of the knowledge variable, the study showed the findings of the Wilcoxon test to have a p value of 0.317 ( 0.05), while the behavioral value had a p value of 0.003 ( 0.05). The study's findings indicated that students' behavior changed significantly in a more favorable way after they got balanced nutrition education through the display media "isi piringku," even though the knowledge variable did not show a notable improvement.

Abstract

Permasalahan anemia pada remaja putri di Provinsi Riau masih mengkhawatirkan yang disebabkan oleh beberapa faktor, khususnya kurangnya asupan protein dan zat besi. Penelitian ini bertujuan untuk menganalisis pengaruh formulasi tepung ikan patin dan daun kelor terhadap organoleptik dan kandungan gizi stik patin kelor. Penelitian ini merupakan penelitian eksperimental dengan metode Rancangan Acak Lengkap (RAL) dengan empat perlakuan. Formulasi tepung ikan patin dan daun kelor terdiri atas F0 (0g :5g), F1 (30g :5g), F2 (40g: 5g), dan F3 (50g: 5g). Uji organoleptik dilakukan pada 25 panelis konsumen yang berasal dari remaja putri. Data hasil uji organoleptik akan dianalisis menggunakan aplikasi SPSS dengan uji Kruskal Wallis. Beberapa analisis zat gizi yang dilakukan, yaitu analisis proksimat, zat besi dan vitamin C. Penelitian menunjukkan bahwa F1 merupakan produk terpilih dengan rata- rata penerimaan sebesar 94%. Hasil analisis Kruskal Wallis pada uji hedonik menunjukkan adanya hubungan yang bermakna pada rasa dan tekstur produk stik patin kelor (< 0,05). Dalam setiap 100 g stik patin kelor terpilih terdapat 16,69% karbohidrat, 12,45% protein, 3,52% lemak, 4,32 mg zat besi dan 6,85 mg vitamin C. Formula F1 lebih disukai oleh panelis dan dapat diklaim sebagai camilan sumber protein dan zat besi, sehingga stik patin kelor berpotensi sebagai camilan sumber zat besi untuk mengatasi anemia pada remaja.
