Abstract

Background: Recently, the increase in population and the shift in food consumption patterns has affected the whole food production system. In addition, it encourages the government to implement imports, which causes a fluctuation of food prices and can affect food vulnerability for the poor. Most of the population in Indonesia live as farmers in the countryside. Some of them tend to struggle because of the uncertainty of food production which is caused by the limitations of natural resources, climate change, and natural disasters. Consequently, it makes them food insecure. Some of the farmers have already employed organic horticultural agriculture. It means indirectly they have already applied a sustainable food system that has a positive impact on three-dimensional aspects: economic values, social benefits, and environmental sustainability. Objectives: The purpose of this study is to determine the extent to which farmers have implemented a sustainable food system. Methods: With the qualitative method, this research uses Focus Group Discussion (FGD) and in-depth interviews approach to find out the opinions of participants on implementing a sustainable food system. Results: It can be confirmed from this research that all of the participants have applied the sustainable food system (SFS) theory from their own perspectives. They consider using less chemical fertilizer and pesticides, sharing information about how to manage pests, fungus, and diseases among the farmers; and using the intercropping method. Based on those activities, they construct their own sustainability. Conclusions: The conclusion from this study found that participants have implemented SFS in different ways, although the SFS theory carried out by research participants has the same goal, namely for sustainability for future generations.

Abstract

Background: Tempeh is a fermented soybean product which high in protein, that beetroot also contains protein and antioxidant compounds. The substitution of tempeh flour and beetroot flour for the cookies can increase the protein nutritional value in cookies. Objectives: This research was to determine the nutrition value of the selected formulation cookies (F1) based on the result of acceptability test of cookies substitution with of tempeh flour and beetroot flour which compared with the SNI standard for supplementary feeding (MP-ASI biscuits). Methods: This is an experimental research with completely randomized design (CRD) with 2 treatment for cookies F1 (substitution of 0.09% tempeh flour and 10% beetroot flour) and cookies F0 (without substitution tempeh flour and beetroot flour). Parameter observed were the nutritional value of cookies are protein, carbohydrate, fat, fiber, water value, and ash value with 3 repetitions. The result of the analysis will be compared the SNI standard for MP-ASI biscuits. Results: From the results of the analysis of the nutrition value of the F1 cookies, that the protein value 12.19%, carbohydrate value 69.19%, fat value 22.73%, fiber value 11.15%, water value 2.96%, and the ash value 2.25% according to SNI requirements for MP-ASI biscuits with protein value of not less than 6 grams per 100 grams. There is a significant difference in protein nutrition value between F0 cookies and F1 cookies. Conclusions: Cookies F1 has protein value, water value, ash value according to SNI standard while charbohydrate and fat value exceeds SNI standard. One serving (2 pieces of cookies equivalent to 20 grams) can meet 9 - 16% of protein needs in toddler 1 - 5 years.

Abstract

Latar Belakang: Buah kersen mengandung serat pangan dan antioksidan, namun belum banyak dimanfaatkan sebagai pangan fungsional. Sari buah berpotensi sebagai bahan dasar minuman sinbiotik. Prebiotik dapat membantu ketahanan bakteri. Maltodekstrin atau gum arab membantu menguragi kelengketan dan menjaga kandungan buah kersen saat proses pengeringan dengan spray dryer. Tujuan: Menganalisis karakteristik fisik, kimia, total bakteri asam laktat (BAL) pada formula minuman sinbiotik sari buah kersen instan dengan penambahan enkapsulator dan prebiotik, serta menentukan formula terbaik. Metode Penelitian eksperimental ini menggunakan rancangan acak lengkap faktorial, dengan variabel bebas jenis enkapsulator (maltodekstrin, gum arab) dan jenis prebiotik (FOS, inulin). Terdapat empat formula dengan kombinasi masing-masing jenis enkapsulator dan prebiotik. Analisis karakteristik fisik mencakup Aw, pH, sifat rehidrasi (wettability, dispersibility, solubility); karakteristik kimia mencakup proksimat, total gula, serat pangan total, aktivitas antioksidan; serta total BAL. Uji beda antar formula menggunakan ANOVA two-way dan uji lanjut Duncan. Hasil: Sari buah kersen dapat digunakan sebagai bahan dasar minuman sinbiotik instan. Formula dengan enkapsulator gum arab memiliki kadar abu dan serat pangan total signifikan lebih tinggi, serta kadar karbohidrat dan dispersibility signifikan lebih rendah dibandingkan formula dengan enkapsulator maltodekstrin (p value <0,05). Formula kombinasi gum arab dan FOS memiliki nilai wettability tertinggi, sedangkan formula kombinasi maltodekstrin dan FOS memiliki nilai total BAL tertinggi (p value <0,05). Kesimpulan: Produk mengandung serat pangan, antioksidan, serta probiotik. Formula dengan enkapsulator gum arab dan prebiotik FOS merupakan formula terbaik karena kandungan serat yang lebih tinggi, kandungan karbohidrat yang lebih rendah, serta aktivitas antioksidan yang sama, dan total BAL yang tidak jauh berbeda dengan formula lainnya.

Abstract

Latar Belakang: Banyak individu mengalami emotional eating saat pandemi sebagai cara untuk mengatasi rasa cemas dan bosan. Kondisi ini mengakibatkan peningkatan konsumsi makanan tidak sehat yang mengarah pada kenaikan berat badan tidak terkontrol.  Tujuan: mengetahui hubungan emotional eating dan kualitas diet dengan kenaikan berat badan pada masa pandemi. Metode: Penelitian ini menggunakan metode cross-sectional. Jumlah subjek sejumlah 139 mahasiswi, berusia 18-23 tahun menggunakan metode consecutive sampling. Data yang dikumpulkan meliputi data kenaikan berat badan, data emotional eating menggunakan Dutch Eating Behavior Questionnaire (DEBQ), asupan makan menggunakan Semi Quantitative Food Frequency Questionnaire (SQFFQ), kualitas diet menggunakan Diet Quality Index-International (DQI-I),  data pengetahuan gizi menggunakan kuesioner pengetahuan gizi seimbang, aktivitas fisik menggunakan International Physical Activity Questionnaire Short Form (IPAQ-SF), dan durasi tidur menggunakan The Pittsburgh Sleep Quality Index (PSQI). Data dianalisis dengan uji rank spearman. Hasil: Terdapat 69% subjek mengalami kenaikan berat badan, 47% subjek mengalami emotional eating tinggi, dan 81% subjek memiliki kualitas diet rendah. Penelitian ini menunjukan adanya hubungan emotional eating (p=0,005; r=0,236) dan kualitas diet (p=0,002; r=-0,261) dengan kenaikan berat badan. Kesimpulan: Emotional eating dan kualitas diet berhubungan dengan kenaikan berat badan mahasiswi pada masa pandemi Covid-19.

Abstract

Background: Policies and regulations related to stunting reduction in Indonesia are manifested in both specific and sensitive interventions. Throughout the process, these intervention efforts require cross-sector cooperation while noting that stunting is caused by multi-dimensional factors. Unfortunately, the current Covid-19 pandemic has worsened the target achievement of stunting reduction due to limited human resources at the primary service level and various Covid-19 prevention protocols that must be adhered to; both are considered as factors leading to the declining of services at the community level.   Objectives: This research was conducted to analyze the implementation of stunting prevention policy by reviewing the literature that doing a research to prevent stunting in pandemic era. Discusion: The results showed that the lack of human resources, which results in inadequate health services, may be one of the indirect causes of ineffective of stunting prevention policy. Conclusions: The development of an information system for recording the nutritional status of children under five with stunting can be an alternative to prevent the impact of stunting through a multilevel approach by involving health cadres and health professionals who are responsible for public health within the community health center scope.

Abstract

Latar Belakang: Obesitas dan overweight merupakan penyakit tidak menular yang masih dirasa menjadi masalah global di dunia baik pada anak dan dewasa. Laporan WHO, tahun 2018 menunjukkan 124 juta anak mengalami obesitas dan 213 juta anak mengalami overweight. Kejadian ini tidak lepas dari beberapa faktor, yakni faktor pola asuh yang diberlakukan di keluarga, status gizi dan pemberian asupan gizi pada anak. Tujuan: Mendeskripsikan pola asuh, status gizi orang tua berdasarkan Indeks Massa Tubuh (IMT) dan pemenuhan asupan zat gizi anak serta menguji hubungan diantaranya terhadap kejadian kelebihan berat badan anak. Metode: Desain penelitian ini deskriptif korelasional dengan pendekatan cross-sectional yang dilakukan di SD Kristen Satya Wacana pada bulan Oktober 2020 sampai dengan bulan Maret 2021 dengan jumlah responden 41 siswa dari kelas 1-6 yang mengalami kelebihan berat badan beserta orang tuanya. Instrumen pengambilan data yang digunakan yakni Semi-Quantitatif Food Frequency Questionnaire (SQ-FFQ), Food Recall 2x24 jam, dan kuesioner terkait pola asuh orang tua. Analisis data secara deskriptif dan Bivariate dengan Spearman-Rank. Hasil: Semua orang tua responden menerapkan tipe pola asuh demokratis (100%), tingkat status gizi orang tua sebagian besar masuk dalam kategori status gizi normal (ayah:46,3%, ibu:36,6%), pemenuhan asupan zat gizi anak menurut kategori kecukupan semua masuk kategori kelebihan asupan. Uji korelasi Spearman rank menunjukkan bahwa tidak ada hubungan antara status gizi orang tua dan asupan gizi anak terhadap kejadian kelebihan berat badan anak (nilai p>0,05). Kesimpulan: Berdasarkan seluruh variabel yang diuji, tidak ada satupun yang mempengaruhi kejadian kelebihan berat badan pada anak. Oleh karena itu, penelitian ini menyarankan perlunya penelusuran pada pola asuh orang tua yang beragam dan mengkorelasikannya dengan anak yang memiliki status gizi normal.

Abstract

Background: Poor quality and quantity are the main factors that contribute to the increasing inadequacy of micronutrients intake such as Iron, Calcium, Zinc, Vitamins A, and C since the complementary food was introduced at 6 months of infant’s age. Objectives: To analyze the prevalence and risk factors of inadequate micronutrients intake among children aged 6-23 months in Indonesia. Methods: A cross-sectional study used Individual Food Consumption Survey 2014 data from Indonesian Health Study and Development Agency involving 1575 children aged 6-23 months as the total subjects. Minimum Dietary Diversity (MDD) was measured by eight food groups for children under two years old. The prevalence of inadequate micronutrients intake used the probability approach. Binary logistic regression was used as a multivariate test to determine the risk factors of inadequate micronutrients intake. Results: The highest prevalence of inadequate micronutrients intake was vitamin C, while the lowest was zinc, with overall inadequate multiple micronutrients intake being 61.9%. About 57.7% and 15.9% of subjects were low in energy intake and achieved the MDD, respectively. Lived in rural area [OR=1.37(95%CI:1.06-1.77)], low education mother [OR=1.71(95%CI:1.32-2.22)], low energy intake [OR=6.22(95%CI:4.84-7.99)] and not achieved MDD [OR=4.84(95%CI:3.47-6.75)] were more likely to have inadequate micronutrients intake, while not consuming breast milk were less likely to have  inadequate micronutrients intake in children [OR=0.55(95%CI:0.43-0.71)]. Conclusions: Almost two-thirds of subjects were inadequate in overall multiple micronutrients. Low energy intake and not achieved MDD were the highest risk of inadequate micronutrients intake of subjects, instead of low mother education and living in rural areas.

Abstract

Latar Belakang: Penggunaan sosial media dapat membawa dampak negatif kaitannya dengan ketidakpuasan akan bentuk tubuh dan arahan menuju ke kekurusan (drive to thinness) terutama pada perempuan muda, perhatian belebih pada citra tubuh (body image concern), dan berbagai isu terkait kebiasaan makan yang salah. Tujuan: Penelitian ini bertujuan untuk mengetahui hubungan kebiasaan mengunggah swafoto pada Social Networking Sites (SNS) dengan kejadian eating disorders pada sejumlah negara serta faktor-faktor yang mungkin mempengaruhi. Ulasan:  Kondisi eating disorders sering tidak disadari oleh individu, terutama pada kelompok remaja dan dewasa muda. Data terkait prevalensi eating disorders di Indonesia juga sangat terbatas, padahal, penggunaan media sosial di kalangan remaja dan dewasa muda Indonesia semakin meningkat seiring dengan mudahnya akses internet dan perkembangan platform media sosial. Dari review sistematik yang dilakukan, hanya satu studi yang mendapatkan keterkaitan antara unggahan swafoto (selfie) dengan eating disorders, yaitu bulimia. Namun, hampir semua memiliki kesimpulan bahwa penggunaan sosial media berkaitan dengan rendahnya kepercayaan diri,   ketidakpuasan terhadap bentuk tubuh, citra diri negatif, serta berkaitan dengan karakteristik restriksi pola makan berlebihan. Kesimpulan: Telaah sistematik ini dapat menjadi acuan untuk pengembangan penelitian kedepan dengan memperhatikan fenomena sosial, penggunaan sosial media dan kaitannya dengan eating disorders maupun status gizi remaja dan dewasa awal.

Abstract

Latar Belakang: Anemia pada remaja Indonesia masih tinggi, meskipun program penanggulangan anemia pada remaja putri telah diterapkan. Keberhasilan program sangat dipengaruhi oleh kesadaran dari sasaran.Tujuan: Untuk mengidentifikasi gambaran pengetahuan, sikap, dan tindakan terkait pencegahan anemia pada remaja putri yang berlatar belakang sosio-ekonomi rendah di kota Makassar.Metode: Survei menggunakan kuesioner online dilakukan pada 150 remaja putri yang terdaftar di SMA Negeri di Makassar. Terdapat 30 pertanyaan terkait pengetahuan, sikap dan tindakan pencegahan anemia yang diberikan kepada responden yang terpilih secara acak. Analisis deskriptif dilakukan untuk melihat sebaran remaja berdasarkan variabel yang diukur. Analisis bivariat dengan uji Spearman dilakukan untuk mengetahui hubungan antara pengetahuan serta sikap dengan tindakan.Hasil: Pengetahuan tentang anemia masih rendah, dimana 65,3% responden berpengetahuan cukup dan 34,7% berpengetahuan baik. Mayoritas responden memiliki sikap positif (97,3%) terhadap anemia dan pencegahannya, namun 2,7% masih memiliki sikap negatif. Sebagian besar responden juga belum melaksanakan tindakan pencegahan anemia dengan baik (86,7%), di mana hanya 13,3% yang memiliki tindakan baik. Pengetahuan tidak berkorelasi dengan tindakan (p>0,05) sementara sikap berkorelasi dengan tindakan (p<0,05).Kesimpulan: Remaja putri dalam konteks penelitian ini masih mempunyai pengetahuan dan tindakan yang kurang baik terhadap anemia serta pencegahannya, meskipun sikap mereka cenderung dominan positif. Upaya edukasi dan pendekatan promotif lainnya perlu ditingkatkan untuk mendorong terjadinya perubahan perilaku di kalangan remaja putri.

Abstract

Background: Consumption of vegetables and fruit for young people in Indonesia is still far from the sufficient category (<400g/day). One of the contributing factors is the low knowledge of balanced nutrition, especially in the guidelines that recommend consuming vegetables and fruit per day. Online game media is used as an effort to increase young people's knowledge of vegetables and fruits because they prefer technology-based games. Objectives: Measuring the influence of the application of the online game "Berlayar Mencari Harta Karun" to the increase in knowledge of vegetables and fruits in young people aged 15-21 years. Methods: This study uses quantitative research, a pre-experimental type with one group pre-posttest design. Subjects as many as 20 people using the inclusion criteria that have been determined by the researcher. The instruments used are knowledge questionnaires and online game media "Berlayar Mencari Harta Karun" which can be accessed through each respondent's cellphone. Data analysis performed with paired T-Test and Wilcoxon test with a significance level of 0.05. Results: The results of the paired T-Test and the Wilcoxon test showed a significant difference in the value of knowledge about vegetables and fruit (p = 0.000) seen from initial nutritional knowledge and after being given the online game media "Berlayar Mencari Harta Karun." Conclusions: The application of educational media using the online game "Berlayar Mencari Harta Karun" succeeded in significantly increasing nutritional knowledge about vegetables and fruits.
