Abstract

Breakfast was a meal at the start of the day that was often overlooked by teenagers, even though it played animportant role in concentration and academic performance. This study aimed to analyze the eect of breakfastintervention on concentration in adolescents. The research method used a quasi-experimental study design withsecondary data. Data processing was carried out from February to April 2025. The study subjects were dividedinto the intervention group (Cibungbulang Junior High School 1) and the control group (Cibungbulang Junior HighSchool 2), with a purposive sampling technique. The inclusion criteria were that the subjects were in class VII,had no history of diabetes mellitus, and had complete data on the variables studied, while the exclusion criteriawere incomplete and irrational data.The statistical tests used were the Mann-Whitney dierence and Spearmancorrelation tests. The results showed signicant dierences in intake and levels of energy and nutrient adequacybetween the intervention and control groups (p<0.05). The correlation test also showed a signicant relation-ship between intake and levels of energy and nutrient adequacy with adolescent learning concentration (p<0.05).Therefore, providing breakfast that met balanced nutritional guidelines was important to improve concentrationand support adolescents' academic performance.

Abstract

Infused water is developed as a functional beverage alternative containing natural antioxidants. The combination of dates and lime in infused water can enhance phenol levels and antioxidant activity. This study aimed to examine the effect of adding lime to date-infused water on total phenolic content, antioxidant activity, and consumer preference. The research employed an experimental method with a Completely Randomized Design (CRD), involving two replications of three formulations. The treatments: F1 (45 grams of dates: 10 grams of lime), F2 (45 grams of dates: 20 grams of lime), and F3 (45 grams of dates: 30 grams of lime). The infused water was soaked for 12 hours at 4°C in a chiller. Total phenol content was measured using the Folin-Ciocalteu method with a UV-Vis spectrophotometer, while antioxidant activity was tested using the DPPH method. A hedonic test was conducted with 25 semi-trained panelists. Data were analyzed using a normality test, ANOVA, and Duncan’s post hoc test. The results showed that the addition of lime significantly increased the total phenol content and antioxidant activity (p-value = 0.0001). F3 had the highest phenol content (244.34 mg GAE/ml) and antioxidant activity (IC50 = 57.94 ppm), while F2 was the most preferred. In conclusion, lime addition influenced the functional and sensory qualities of date-infused water.

Abstract

Adolescent anemia is characterized by iron deficiency associated with menstruation and unbalanced nutrient intake. Red dragon fruit and moringa leaf flour are rich in iron, flavonoids, and phenolic compounds, which possess antioxidant properties and may help prevent anemia. Both ingredients can be developed into snack products such as ice cream, which is popular among adolescents. The objective of this study was to analyze the total flavonoid and total phenolic contents in red dragon fruit ice cream with the addition of moringa leaf flour. This research employed a Completely Randomized Design (CRD) with five formulations and two replications. Chemical analysis and The ice cream was prepared at the Laboratory of Aisyah University, Pringsewu, in January 2025. Data were analyzed using One-Way ANOVA followed by Duncan’s multiple range test. The results showed significant differences (p < 0.05) among the formulations. The highest total flavonoid content was observed in formulation F4 (10%) with 0.53 mg quercetin equivalent per gram (p = 0.001). The highest total phenolic content was found in formulation F0 (0%) with 5.48 mg gallic acid equivalent per gram (p = 0.002). In conclusion, the addition of up to 10% moringa leaf flour in red dragon fruit ice cream increased the total flavonoid content but decreased the total phenolic content. Therefore, this product has potential as a functional food rich in antioxidant compounds that may benefit adolescent girls.

Abstract

Oxidative stress indicates an imbalance between free radicals and antioxidants, which can potentially cause health problems. This condition can be prevented through the intake of foods rich in antioxidants, including modifying local foods that use purple sweet potato flour and corn flour in Apem cakes as a composite ingredient for rice flour. The purpose of this study was to determine the effect of purple sweet potato flour and corn flour composites on anthocyanin levels and antioxidant activity in Apem cakes. The research method uses an experiment with a completely randomized design consisting of four types treatment based on the percentage of flour comparison. A: 100% rice flour; B: 15% purple sweet potato flour + 35% corn flour + 50% rice flour; C: 25% purple sweet potato flour + 25% corn flour + 50% rice flour; D: 35% purple sweet potato flour + 15% corn flour + 50% rice flour. Anthocyanin content was tested using the pH differential method, and antioxidant activity was analyzed using the DPPH method. The results of this study showed that there were significant differences in anthocyanin content and antioxidant activity between treatments, with p-values of 0.003 and 0.000, respectively. The conclusion was that the highest anthocyanin content and antioxidant activity were found in Apem Cake treatment D, which was 20.14 ppm and 70.74%.

Abstract

Liquid yogurt has limitations in terms of distribution and shelf life; therefore, it has been developed in an instant form to improve product stability. The addition of purple sweet potato extract can enhance the functional value of instant set yogurt. The aim of this study was to determine the effect and identify the best treatment based on variations in maltodextrin concentration on the chemical and physical characteristics of instant set yogurt enriched with purple sweet potato extract. This study employed a Randomized Block Design (RBD) with one factor, consisting of four levels of maltodextrin addition (5%, 10%, 15%, and 20%) and three replications. The analyzed parameters included moisture content, ash content, total lactic acid, fat content, total solids non-fat, antioxidant activity, solubility, and yield. The results showed that maltodextrin had a significant effect on moisture content, ash content, solubility, yield, total lactic acid, antioxidant activity, and total solids non-fat, but did not significantly affect fat content. It was concluded that the best treatment was obtained with the addition of 20% maltodextrin, which produced the following characteristics: moisture content 10.20 ± 0.86%, ash content 2.94 ± 0.43%, total lactic acid 1.69 ± 0.06%, fat content 4.36 ± 0.09%, total solids non-fat 95.20 ± 0.05%, antioxidant activity 422.58 ± 13.30 ppm, solubility 85.71 ± 0.74%, and yield 34.06 ± 0.23%.

Abstract

Stunting is a crucial health problem in Indonesia due to its high prevalence of 21.6% in 2022. Stunting is influencedby many factors, one of which is exclusive breastfeeding. This study aims to determine the relationshipbetween exclusive breastfeeding and stunting in children (6-9 months) in the working area of the Labuhan HajiHealth Center, East Lombok Regency. This research method is observational analytic with a cross-sectional ap-approach. The sample size was 86, selected using a simple random sampling method. Primary data were obtainedfrom questionnaires on breastfeeding history, environmental sanitation, and complementary feeding history usingan interviewer-administered questionnaire. Secondary data were obtained from data at the Labuhan Haji HealthCenter. Data analysis of both variables was performed using the Chi-Square statistical test. Bivariate test results showed a significant association between exclusive breastfeeding and stunting in children (6-9 months) inthe working area of the Labuhan Haji Health Center, East Lombok Regency (p-value = 0,000; PR = 6,932). InConclusion: There is a significant association between exclusive breastfeeding and stunting in children (6-9 months)in the working area of the Labuhan Haji Health Center, East Lombok Regency.

Abstract

Stunting is a condition of growth failure in children under 5 years of age caused by chronic malnutrition, repeated infections, and lack of adequate psychosocial stimulation. The prevalence of stunting in South Sulawesi in 2024 was still 23.4%. The purpose of this study was to analyze the relationship between maternal hygiene in food processing and household kitchen sanitation with the incidence of stunting in toddlers. The study design used was an analytical observational with a cross-sectional approach, involving 43 toddlers aged 6–59 months in the working area of ​​the Sudiang Raya Community Health Center, Makassar City. Maternal hygiene data were obtained through the WHO Five Keys to Safer Food questionnaire, while kitchen sanitation data were based on the Regulation of the Minister of Health of the Republic of Indonesia Number 2 of 2023. The nutritional status of toddlers was measured through anthropometry and analyzed using the chi-square test. The results showed that 25 toddlers (58,1%) were stunted and 18 toddlers (41.9%) were normal. There was a significant relationship between maternal hygiene and the incidence of stunting (p = 0.018) and between household kitchen sanitation and the incidence of stunting (p = 0.004). Thus, it can be concluded that improving maternal hygiene behavior and kitchen sanitation can be an effective strategy for preventing stunting by reducing the risk of recurrent infections in toddlers.

Abstract

Obesity is a condition characterized by excessive fat accumulation and is associated with elevated levels of low-density lipoprotein (LDL) cholesterol and triglycerides in the blood. A combination of herbal ingredients such as Chinese betel leaf (Peperomia pellucida L.) and red ginger (Zingiber officinale var. rubrum) is known to contain flavonoids and gingerol, which play a role in reducing blood lipid levels. This study aimed to evaluate the effect of a formulation of Chinese betel leaf and and red ginger on LDL and triglyceride levels in obese male Sprague Dawley rats.. This study was conducted using a true experimental design with a pretest-posttest control group approach. A total of 30 rats were divided into five treatment groups, including a control group and three intervention groups (P1: Chinese betel leaf, P2: red ginger, and P3: a combination of both). The results showed that the combination of 88 mg Chinese betel leaf and 115.5 mg red ginger significantly reduced LDL levels by 57.94% and triglyceride levels by 41.09% (p < 0.05). Conclusion is the combination of Chinese betel leaf and red ginger simplicia was effective in lowering blood lipid levels in an obese rat model.

Abstract

The condition of age-related loss of skeletal muscle mass, accompanied by a decrease in muscle strength and/or physical performance, is defined as sarcopenia. Handgrip strength is an indicator for detecting possible sarcopenia. Nutritional status also plays an important role in influencing handgrip strength. The purpose of this study was to analyze the determinants of sociodemographic factors, nutritional status, and smoking habits on the risk of sarcopenia using handgrip strength as an indicator. This research method uses cross-sectional data from the 2023 Indonesia Longitudinal Aging Survey (ILAS). The research subjects were elderly people aged ≥60 years living in households. Handgrip strength assessed using the 2019 AWGS criteria. The results showed that advanced age, female gender, not working, and nutritional status, are associated with low handgrip strength as an indicator of sarcopenia risk (p < 0.05), while educational level and smoking habits do not show a significant association (p > 0.05). The conclusion is that age, gender, nutritional status, and employment status are important determinants of sarcopenia risk in the elderly. Prevention efforts should focus on adequate nutritional intake and early screening of muscle strength.

Abstract

The COVID-19 pandemic has had a broad impact on the health system and the socio-economic conditions of communities, including in the Province of West Nusa Tenggara. Inequalities in healthcare access, the prevalence of comorbid diseases, and economic disparities have resulted in varying levels of risk across regions. This study aims to analyze clusters of health impacts resulting from the COVID-19 pandemic in West Nusa Tenggara. The research employed the K-Means and C4.5 Decision Tree methods with a CRISP-DM approach. Secondary data were obtained from the West Nusa Tenggara Provincial General Hospital, the West Nusa Tenggara Health Profile, Statistics Indonesia (BPS) 2022–2023, the 2021 Basic Health Research (Riskesdas), and the World Health Organization (WHO). The variables included COVID-19 cases per 100,000 population, vaccination rates, healthcare facility ratios, prevalence of hypertension and diabetes, and poverty rates. The K-Means results identified three risk clusters: high (Mataram, West Lombok), moderate (Central Lombok, East Lombok), and low (Sumbawa, Dompu, Bima). The C4.5 model achieved an accuracy of 80.67%, with age and comorbidities emerging as dominant factors. These findings highlight the potential of data mining analysis as a foundation for post-pandemic mitigation policies and strengthening regional health system resilience.
