Abstract

Older people are vulnerable to infectious and degenerative diseases due to decreased organ function and lowered immune systems. This study aimed to analyze the quality and level of liking of the spice cookies formula and the fiber and antioxidant content of the selected cookies formula. The research method used a factorial complete randomized design with the treatment of wheat flour substitution using arrowroot flour and canna flour. There were three levels of substitution ratio, namely 50:50, 25:75, and 0:100, resulting in six formulas. The variables measured were sensory quality and level of liking using an organoleptic test by 30 semi-trained panelists. Organoleptic test data were statistically analyzed using the Kruskal Wallis test and Mann-Whitney further test. The two best formulas were selected using the exponential comparison method and then analyzed for dietary fiber content and antioxidant activity. The results showed that among the six formulas, there were significant differences in texture and aftertaste of the sensory quality and level of liking (p-value<0,05). The selected formulas were 50:50 substitution ratios of either arrowroot flour or canna flour. Cookies with canna flour substitution had a dietary fiber content of 9,6%, while cookies with arrowroot flour substitution were 7.8%. The antioxidant activity of cookies with canna flour substitution amounted to 9,5 mg/100g, while cookies with arrowroot flour substitution amounted to 12,0 mg/100g. In conclusion, spice cookies with a 50:50 ratio of canna flour and wheat flour substitution have the highest fiber content with strong antioxidant activity.

Abstract

A decrease in urine albumin levels in pregnant women, which can be checked through urine protein examination, is an indicator used to determine whether a pregnant woman is experiencing preeclampsia. Preeclampsia has become a cause of increasing morbidity and mortality rates which affects both mothers and newborns. This research aimed to early detect the preeclampsia through urine protein examination and see the correlation between the characteristics of the research subjects and urine protein. Used a descriptive design with a correlational design, the urine protein from 36 pregnant women was examined in their second and third trimesters of pregnancy. Next, univariate analysis was carried out and Spearman Correlation test was used in bivariate analysis for abnormally distributed ordinal data while the Contingency Coefficient Correlation test was carried out for data that used abnormally distributed nominal scale. Based on the bivariate analysis, the variables of age, education, employment, and obstetric history obtained a significant value of p value>0,05, showed no correlation with urine protein. Contrarily, the blood pressure variable had a significant value of p 0,049 < 0,05. Pregnant women in gestational age of >20 weeks with high blood pressure must examine the urine protein immediately to early detect preeclampsia and prevent maternal emergencies.

Abstract

Hypertension is a condition characterized by systolic blood pressure ratings. Blood pressure reflects the resistance generated each time the heart beats and sends blood flow through the arteries, the highest record pressure generated by these contractions is called systolic pressure. The study aimed to determine the relationship between knowledge and attitudes with the incidence of hypertension. Quantitative research design with cross sectional study, with a sample of 76 subjects. The results of the chi square test obtained knowledge p-value=0,038, attitude= 0,003. It can be concluded that there is a relationship between people's attitudes and the incidence of hypertension. Community recommendations further improve counseling programs on hypertension and work with health workers with the community in prioritizing health services so that people prefer and determine a better and correct way of life.

Abstract

The prevalence of stunting in children under five is influenced by genetic factors and nutritional status originating from direct nutritional intake. This study aims to determine the contribution of genetic factors and food intake to the occurrence of stunting in toddlers in the Rajapolah Community Health Center area. This research used an observational methodology with a case-control design involving a total of 66 toddler participants. Among them, 33 people were identified as having stunting (with height-for-age Z-score < -2 SD), while 33 people had normal nutritional status (height-for-age Z-score => -2 SD). The participants were selected using purposive sampling. Data analysis includes applying the unpaired T test for normally distributed data, as well as the Mann-Whitney test for non-normally distributed data. The results of this investigation highlight significant differences in genetic aspects of height (both father and mother) between the stunted and non-stunting toddler groups (with p values of 0,029 and 0.046, respectively). In addition, nutritional intake, including energy (p-value<0,001), protein (p-value<0,001), fat (p-value=0,01), and carbohydrates (p<0,001), was between the two groups. Based on these findings, it can be concluded that genetic factors (in the form of parental height) and nutritional intake (including energy, protein, fat and carbohydrates) have a significant influence on the occurrence of stunting in toddlers. Therefore, this research is a basis for designing interventions aimed at mitigating the problem of stunting within the operational scope of the Rajapolah Community Health Center.
