Abstract

Early marriage has a risk impact on the fetus and pregnant women. This triggers anemia and chronic lack of energy in the mother and has an impact on the growth of the fetus and children born with low birth weight. Law Number 16 of 2019 stipulates a basic age of 19 years for marriage for both men and women. This study is a community based cross-sectional study conducted in April 2022. Random sampling was used to select 117 samples. Data on the baby's weight, anemia, and mother's arm circumference were obtained from the 2019-2021 Health Center cohort data. Socio-demographics were collected using a structured questionnaire. Babies born to mothers aged 19 years and under were used as research subjects. The results confirm that the covid 19 pandemic, place of residence, education level, and work status are related to the incidence of early marriage in women. Education level has a significant impact on changes in birth weight in mothers who early marriage during the Covid-19 with p-value<0,05. There was no significant relationship found that women who were married at the age of 19 and under had a risk of suffering from anemia, chronic lack of energy and low birth weight with p-value>0,05. Education level has a significant impact on changes in birth weight in mothers who early marriage during the Covid-19. The use of other samples as controls may be needed at the time of further research so that the results obtained become a comparison of intervention cases.

Abstract

Efforts are being made to address malnutrition in Indonesia, one of which is food diversification based on innovation and the development of additional food formulations to increase toddler immunity. One of the progs being developed is moringa oleifera. Moringa leaves contain a variety of nutrients, including protein, ß-carotene, vitamin C, iron, zinc, and calcium. Combining jelly with vegetables is one way to help parents deal with their children who don't like vegetables. This study looked at how adding moringa leaf flour to pudding affected the amount of calcium, iron, and zinc, as well as organoleptic testing. This type of study is an actual experiment with four (four) treatments of adding moringa leaf powder and a fully randomized design, namely 0 g, 3 g, 5 g and 7 g. Data analysis utilizing the Mann Whitney and Kruskal-Wallis tests. 25 moderately trained panelists underwent organoleptic testing, and the amounts of Ca, Fe, and Zn were measured at the Baristand Padang.  According to the study's findings, pudding with 3g of moringa leaf flour added was the best treatment when combined with Ca 116,53 mg, Fe 2,05 mg, and Zn 5,17 mg. Therefore, it can be inferred that adding moringa leaf flour to pudding has an impact on the organoleptic tests, Ca, Fe, and Zinc levels.

Abstract

Leprosy reaction type 1 or reversal reaction is a clinical condition in leprosy patients that can occur when the patient receives MDT treatment. Patients with a reversal reaction have high MDA levels due to oxidative stress caused by inflammation and bacterial activity. The aim of this study was to determine the effectiveness of the antioxidant C. ternatea in reducing serum MDA of leprosy patients with reversal reaction. The research method used an experimental study with a randomized single blind controlled trial design to compare 2 groups (11 subjects each). Group 1 was the control group which was only given standard prednisolone therapy. Group 2 is the treatment group that was given standard therapy plus adjuvant C. ternatea flower extract 2gr/day for 1 month. Blood sampling was carried out before and after treatment in each group to test MDA levels using the ELISA method. Statistical analysis of differences in MDA levels used the Mann Whitnet test. The difference in pretest-posttest MDA levels in the control group had a median of 0,33 pg/ml (-0,05-1,55) pg/ml, while the difference in pretest-posttest MDA levels in the treatment group was 0,89 pg/ml (0,55-4,44) pg/ml with a value of p=0,020 (p-value<0,05). The difference in pretest-posttest MDA levels in the treatment group was higher than the control group. This shows that standard therapy and adjuvant C. ternatea extract are more effective in reducing MDA levels in patients with type 1 leprosy reaction than just standard therapy.

Abstract

Traditional coconut oil of mandar is oil extracted from coconut flesh through a heating process. Repeated use of cooking oil has the potential to reduce the oil’s quality, characterized by an increase in free fatty acid levels. The study aimed to analyze the fatty acid composition and the effect of repeated use on the quality of traditional coconut oil from mandar. This study was an experimental design with a completely randomized design (CRD). The frying technique used was deep fat frying with a total of 9 liters of oil. The product being fried was kepok banana, with a total weight of 9 kg, fried at 180°C for 10 minutes in each cycle. There was a 5-minute interval between frying cycles, and a total of 9 cycles were performed on the same day. The parameters analyzed in this research were free fatty acid content and fatty acid profile of traditional coconut oil of Mandar. The results showed that the fatty acid profile was dominated by saturated fatty acids (76,49%) and a small portion of unsaturated fatty acids (0,59%). The level of ALB in traditional coconut oil of mandar did not exhibit significant differences (p>0,05) from the initial use up to the 9th repetition. Thus, traditional coconut oil from Mandar remains suitable for frying purposes for up to 9 cycles.

Abstract

Stunting in children is associated with motor problems and death, stunted brain development, motor, mental growth, and reduced physical capacity, productivity and economy. The incidence of stunting in Indonesia is still higher than the maximum stunting incident set by WHO. Nutrition-based interventions can reduce the incidence of stunting. Local food-based foods that children like can be an alternative to increase the intake of protein and micronutrients needed in children's growth. This study aimed to determine the most preferred formula of rebon flour substitution in mackerel sausage. The research design was experimental with a completely randomized design method. The product consists of F0, F1, F2, F3, F4, and F5. Formulation F0 was a control sausage formulation made from mackerel: rebon flour with a ratio of 100%:0%. F1 was the formula for mackerel rebon sausage with the composition of mackerel: rebon flour (95%:5%), F2 (90%:10%), F3 (85%:15%), F4 (80%:20%) and F5 (75%:25%). The ANOVA test showed that the panelists' preference for each formulation differed significantly (p=0,000). The greater the percentage of rebon flour subsites used in mackerel sausage, the less favorable the aroma, color, taste, and texture. Friedman's test showed that mackerel sausage substituted with 5% dry rebon flour was the most preferred sausage formulation. 100 g of boiled sausage contained 147 kcal of energy, 11,72 g of protein, 20,67 g of carbohydrates, 18 mg of Fe, 3,69 mg of Zn and 217,73 mg of calcium. The energy content of sausages can be increased by serving sausages after frying.
