Abstract

Peningkatan kebeutuhan pemanis alami rendah kalori yang aman dan bernilai fungsional mendorong pengembangan gula cair berbasis stevia. Namun, ekstrak stevia umumnya memiliki warna gelap, meninggalkan rasa pahit, serta stabilitas mutu masih terbatas. Di sisi lain, daun pandan berpotensi sebagai sumber senyawa aromatik dan antioksidan alami yang dapat meningkatkan kualitas produk. Penelitian ini bertujuan untuk mengoptimasi proses pemurnian ekstrak stevia serta mengevaluasi pengaruh penambahan ekstrak pandan terhadap karakteristik fisikokimia dan aktivitas antioksidan gula cair stevia. Ekstraksi stevia dilakukan secara padat-cair menggunakan pelarut etanol 30%-air dengan variasi rasio 9:11, 10:10, dan 11:9, dilanjutkan pemurnian melalui distilasi dan adsorbsi menggunakan kalsium bentonit teraktivasi. Ekstrak pandan diperoleh melalui ekstraksi menggunakan air dan ditambahkan ekstrak stevia dengan rasio 1:10. Hasil penelitian menunjukkan bahwa pemurnian dengan bentonit menurunkan volume ekstrak 50-60% dan meningkatkan kejernihan. Nilai pH berada pada kisaran 3,6-4,0 dan berat jenis meningkat setelah penambahan pandan. Uji antioksidan menunjukkan bahwa penambahan pandan meningkatkan aktivitas perendaman radikal, ditandai dengan nilai EC50 ekstrak stevia-pandan sebesar 70-93 ppm, lebih rendah dibandingkan ekstrak stevia tanpa pandan sebesar 114-122 ppm. Nilai ini mendekati EC50 asam askorbat sebesar 39 ppm, mengindikasikan adanya sinergi senyawa antioksidan stevia dan pandan.
