Abstract

Gunung Kidul merupakan salah satu daerah di Daerah Istimewa Yogyakarta yang memiliki kekayaan potensi jenis wisata alam yaitu gugusan pantai. Salah satu pantai yang tengah dikembangkan pariwisatanya adalah pantai Ngrenehan, khususnya kuliner olahan laut. Salah satu tuntutan pengembangan wisata kuliner adalah kualitas makanannya. Penelitian ini bertujuan untuk mengetahui kualitas makanan laut di pantai Ngrenehan. Metode yang digunakan adalah deskriptif kualitatif dimana data diambil dari wawancara dengan wisatawan yang membeli produk kuliner olahan laut yang menilai enam variabel utama dengan 30 pertanyaan yang difokuskan pada kualitas produk kuliner olahan laut. Hasil penelitian ini adalah kualitas kuliner olahan laut di pantai Ngrenehan berada pada ambang diragukan artinya kualitas kulinernya masih belum baik untuk semua variabel yang diteliti.

Abstract

Pertumbuhan industri kuliner di kawasan Tangerang, khususnya Gading Serpong, mendorong munculnya unit usaha edukatif seperti Can Ngopi, yang dijalankan oleh mahasiswa magang dan berfungsi sebagai ruang pembelajaran praktik manajemen operasional dapur. Penelitian ini penting karena mengkaji efektivitas sistem mentoring antar mahasiswa dalam menjaga kestabilan operasional dapur, sebuah aspek yang belum banyak diteliti. Menggunakan pendekatan kualitatif dengan metode deskriptif, data dikumpulkan melalui wawancara semi-terstruktur dan observasi langsung terhadap pelaksanaan operasional. Analisis data dilakukan secara tematik dengan triangulasi metode dan sumber untuk memastikan validitas. Hasil menunjukkan bahwa sistem mentoring antar mahasiswa terbukti sangat efektif dalam mempercepat adaptasi kerja, meningkatkan kompetensi teknis dan soft skills, serta menciptakan suasana kerja yang suportif dan kekeluargaan. Relasi sosial yang setara antar mahasiswa menjadi katalis keberhasilan proses mentoring. Penelitian ini menyimpulkan bahwa mentoring sejawat tidak hanya menunjang operasional, tetapi juga membentuk budaya kerja yang profesional dan kolaboratif. Disarankan agar sistem mentoring ini diformalkan agar keberlanjutan dan pemerataan pembinaan dapat lebih terjamin.

Abstract

This study examines the shift and leave scheduling system in the kitchen operations of Can Ngopi, an educational-based culinary business operated by students in the Gading Serpong area. The significance of this research lies in evaluating the effectiveness of scheduling systems within a semi-professional environment, where students serve not only as operational staff but also as learners of managerial practices. This study employs a descriptive qualitative method, with data collected through direct observation and semi-structured interviews with the General Manager, kitchen leader, and students involved in kitchen shifts. Data analysis was conducted using thematic analysis to identify patterns and themes from the field findings, providing an in-depth understanding of the scheduling dynamics. The results indicate that although the existing system functions adequately, it still faces challenges such as last-minute shift exchanges, insufficient rest periods, and complaints about unfair leave distribution. In conclusion, while the current system offers educational value, further improvements such as scheduling digitalization and periodic evaluations are recommended to enhance the efficiency and fairness of student-based kitchen operations in the future.

Abstract

Industri kuliner merupakan sektor strategis dalam pertumbuhan ekonomi kreatif di Indonesia. Salah satu tantangan utama dalam operasional dapur adalah menjaga konsistensi mutu produk, terutama ketika tenaga kerja bersifat dinamis seperti mahasiswa magang. Penelitian ini bertujuan untuk menganalisis implementasi Standar Operasional Prosedur (SOP) di dapur Can Ngopi Gading Serpong, sebuah kafe edukatif berbasis program Merdeka Belajar Kampus Merdeka (MBKM). Metode yang digunakan adalah kualitatif deskriptif dengan teknik pengumpulan data berupa observasi, wawancara semi-terstruktur, dan dokumentasi. Data dianalisis menggunakan pendekatan tematik untuk menggali pola penerapan SOP, tantangan teknis, serta peran pembimbing dan mahasiswa senior. Hasil penelitian menunjukkan bahwa SOP telah diterapkan secara menyeluruh pada seluruh kategori menu, namun keberhasilan pelaksanaannya tetap bergantung pada keterampilan individu. Peran pembimbing dan sistem mentoring internal menjadi faktor penting dalam menjaga kualitas layanan. Dengan demikian, SOP berfungsi tidak hanya sebagai panduan operasional tetapi juga sebagai alat pembelajaran di lingkungan kerja edukatif. Penelitian ini merekomendasikan penyempurnaan konten SOP dan pelatihan berkelanjutan untuk memastikan peningkatan kualitas layanan secara konsisten.

Abstract

Penelitian ini bertujuan untuk mengkaji kesenjangan antara ekspektasi visual yang dibentuk melalui media sosial dan realitas fisik yang dialami oleh wisatawan di destinasi Danau Cinta Balocci, Sulawesi Selatan. Berangkat dari fenomena meningkatnya kunjungan wisatawan yang dipicu oleh konten estetik di platform seperti TikTok dan Instagram, namun tidak diiringi kesiapan infrastruktur dan informasi yang memadai di lapangan, yang dapat berujung pada ketidakpuasan dan risiko keselamatan. Metode yang digunakan adalah pendekatan kualitatif dengan teknik deskriptif. Data dikumpulkan melalui wawancara mendalam terhadap wisatawan dan pelaku lokal, serta analisis konten media sosial yang berhubungan dengan destinasi tersebut. Analisis data dilakukan melalui proses kategorisasi naratif berdasarkan tahapan perjalanan wisatawan: pra-kunjungan, saat kunjungan, dan pasca-kunjungan, serta analisis visual konten digital. Hasil penelitian menunjukkan bahwa ekspektasi tinggi yang dibentuk oleh konten media sosial sering kali tidak sesuai dengan kenyataan di lapangan, terutama dalam hal aksesibilitas dan kenyamanan fasilitas. Hal ini berdampak pada kepuasan pengalaman wisatawan dan persepsi terhadap destinasi. Kesimpulan dari penelitian ini menegaskan pentingnya penyelarasan antara daya tarik visual digital dan narasi yang realistis serta pengelolaan aksesibilitas fisik. Saran untuk penelitian selanjutnya adalah mengintegrasikan pendekatan visitor journey dengan strategi komunikasi destinasi yang lebih transparan dan berorientasi pada keberlanjutan.

Abstract

This study aims to examine the implementation of fair work practices and work-life balance among employees in high-intensity industries in Indonesia, and their effects on organizational outcomes, including job satisfaction, organizational commitment, and performance. Fair work practices are measured across four organizational justice dimensions: distributive, procedural, interactional, and informational justice. Work-life balance is assessed through time balance, involvement balance, and satisfaction balance, guided by boundary management theory. Using a quantitative correlational design, the study collected data from 300 professional employees working in technology, finance, consulting, and startup companies across Jakarta, Bandung, Surabaya, and Bali. Data were gathered via online questionnaires and enriched through semi-structured interviews, HR manager focus group discussions, and document analysis. Data analysis involved CFA, reliability testing, Pearson correlation, and Structural Equation Modeling (SEM), including mediation tests using bootstrapping. The results indicate that fair work practices have a positive and significant effect on work-life balance (β = 0.48; p < 0.001). Additionally, both fair work practices and work-life balance positively and significantly influence job satisfaction, organizational commitment, and performance. Work-life balance also significantly mediates the relationship between fair work practices and all organizational outcomes, with significant indirect effects. Overall, the findings highlight the importance of fair workplace policies to enhance employee well-being while supporting organizational performance in high-intensity work environments.

Abstract

This study aims to analyze the factors influencing the adoption of eco-friendly products among urban millennials in Indonesia and to develop a predictive model and effective intervention strategies to reduce the green attitude–behavior gap. The research employed a mixed-methods design using a sequential explanatory approach: a quantitative phase through surveys to test relationships among variables and hypotheses, followed by a qualitative phase using in-depth interviews, focus group discussions, expert interviews, and observations in retail outlets. The population consisted of urban millennials aged 25–40 living in metropolitan cities with at least one million residents. The quantitative sample included 600 respondents, while the qualitative phase involved 40 participants plus experts and retail observations. The findings indicate that eco-friendly product adoption is significantly shaped by internal factors (environmental values and knowledge), external factors (social influence and economic conditions), and product characteristics (quality and innovativeness). Environmental values positively affect environmental concern (β = 0.52; p < 0.001), while price sensitivity negatively affects purchase intention (β = −0.32; p < 0.001). Product availability also enhances perceived behavioral control (β = 0.40; p < 0.001). The study further confirms moderating effects of green self-identity, income level, urban infrastructure, and product innovativeness. Four main adoption segments were identified (Green Champions, Selective Adopters, Price-sensitive Considerers, and Skeptical Non-adopters). The study proposes the Urban Millennial Green Adoption Model (UMGAM), integrating input factors (individual, social, contextual), processing mechanisms (cognitive, affective, behavioral), and adoption and impact outcomes. The results are expected to guide producers, retailers, and policymakers in designing more targeted strategies to promote sustainable consumption.

Abstract

This study examines the impact of hybrid work management on employee productivity and team collaboration in organizations implementing a work model that combines on-site (office) and remote work. The research aims to analyze how hybrid work management affects employee productivity and team collaboration, while also identifying supporting and inhibiting factors in its implementation. The study uses a quantitative approach through surveys, complemented by qualitative analysis from literature review. One supporting study applies Structural Equation Modeling (SEM) using SmartPLS. The findings indicate that hybrid work can significantly improve productivity—up to 82.4%—when backed by appropriate management practices and adequate technology. However, several challenges need to be addressed, including ineffective communication, social isolation, unequal access to information, and difficulties in monitoring performance. The study suggests that managers should conduct routine check-ins, leverage collaboration technologies, set clear expectations and work targets, and prioritize employee well-being to maintain team cohesion in hybrid working arrangements.

Abstract

This study aims to examine the management of multicultural organizational culture in empirically based Indonesian companies. The research background is driven by the organizational need to manage cultural differences effectively so as to create a harmonious, productive, and adaptive workplace environment. The research method employs a quantitative approach, with data collection conducted through questionnaires administered to relevant stakeholders within the companies. The collected data were then analyzed using appropriate statistical techniques, including tools such as SPSS, as well as modeling and relationship analysis among variables using SEM. The results indicate that implementing multicultural organizational culture management contributes significantly to strengthening key organizational aspects, as reflected in the observed empirical data. The discussion further suggests that proper cultural management can enhance organizational effectiveness in responding to diversity. In conclusion, the study addresses the proposed hypotheses and provides recommendations for improving multicultural management practices, as well as suggestions for future research.
