Abstract

Whey dangke fermentation producing lactic acid as a food additive can overcome environmental pollution caused by whey dangke; however, its high water content causes a short shelflife product and makes distribution difficult. Drying fermented products requires additional ingredients to overcome stickiness issue in the dryer. This research aimed to examine the use of carrageenan as drying aids at 4, 6, 8, and 10% levels and drying time of 23, 24, and 25 hours in the production of fermented whey powder in drying oven. The quality parameters of the fermented whey dangke powder included yield, water content, solubility, and protein and lactose contents. The results showed that the fermented whey dangke powder had a yield of 33.15-49.20%; water content of 2.30-9.07%; solubility of 94.0-99.0%; protein content of 9,70-13,92%; and lactose content of 7.92-15.58%. Carrageenan level has a very significant effect (P<0.01) on yield, water content, and lactose content, and it also has a significant effect (P<0.05) on protein content, while drying time has a significant effect (P<0.05) on lactose content. The use of carrageenan at 8% level and 24-hour drying time is the most optimal treatment to produce the best physicochemical characteristics of fermented whey dangke powder.

Abstract

The objective of this study was to determine the effect of undegradable dietary protein (UDP) using protected soybean meal supplementation on blood metabolites of lactating dairy cows. Eighteen early lactating Friesian Holstein cows of 1 to 3 years old were used in this study and observed twelve weeks. All cows received forage and concentrate in a ratio of 62:38 (DM basis). Adaptation to the diet was conducted for 4 weeks. The  cows were divided into 3 groups with different dietary treatments: control diet without UDP and mineral mix (T0), control diet + UDP 40 g/L milk + mineral mix (T1), and  control diet + UDP 60 g/L milk + mineral mix (T2). Fresh water was also offered ad libitum in the pen. In the days 14 and 7 pre-treatment, and in the days 1, 7, 14 and 21 post-treatment, cows were weighted and their blood were collected for chemical analysis. Means between treatments were analyzed using one-way analysis of variance (ANOVA). The results obtained from this study revealed that blood metabolites pattern of lactating cows before and after UDP supplementation subjects to considerable varia-tions. The UDP supplementation had a significant effect on the concentration of Ca. For comprehensive assessment of the effect of UDP supplementation on blood metabolites at different stages of parturient period, further detailed studies should be performed

Abstract

Madura and Bali cattle are two of Indonesian indigenous breeds. One possible method to increase their productivity is through artificial insemination (AI) using frozen semen. This study conducted at the Singosari National Artificial Insemination Center, East Java, Indonesia, to evaluate the semen characteristics of different bull breeds ranging in age from 7 to 10 years and to provide useful recommendations regarding the efficacy of older cattle. A total of 2016 ejaculation data recorded from Indonesian indigenous cattle (Madura and Bali bulls) and Bos taurus bulls (Simmental) were used in this study to analyze semen volume, sperm motility, and sperm concentration. Results revealed differences in semen volume, sperm motility, and sperm concentration among bull breeds (p < 0.05). Simmental bulls have the highest semen volume (p < 0.05) compared with Bali and Madura bulls. Base on sperm motility, Bali bulls showed the highest average value (p < 0.05) compared with Simmental and Madura bulls. Sperm concentration was the highest (p < 0.05) among Bali bulls compared with Simmental and Madura bulls. Another important finding was that the average semen volume, sperm motility, and sperm concentration of older bulls fulfilled the standard criteria established for frozen semen processing. Therefore, it would be possible to improve the performance of these breeds through artificial insemination using frozen semen of Madura and Bali bulls, which can be more widely distributed to farmers to increase their herd productivity. This study also indicates that Indonesian indigenous bulls have superior semen characteristics than Simmental bulls.

Abstract

Ongole Crossbred cattle or more popular known as Peranakan Ongole (PO) cattle is one of local breeds cattle in Indonesia. For improving the population and genetic quality, superior bull with high capacity to produce semen is seriously required. This study aimed to find out the estimation value of semen production of PO bull based on body weight and scrotal circumference. A total sampling of 9 bull candidates of PO cattle available at National Artificial Center (NAIC) Singosari, Malang, Indonesia were used in this study. The method used was case study. Scrotal circumference was directly measured as a primary data. While body weight, semen volume, semen concentration and sperm motility were collected from BBIB Singosari from secondary data. Data was analyzed using simple linear regression. The results showed that with the limited number of samples, there is no significant correlation (P>0.05) between body weight and scrotal circumference on semen volume, semen concentration, and sperm motility.  It was concluded that with limited number of samples involved in this study, there was no significantly on semen production based on body weight and scrotal circumference on PO bull. The suggestion was to improve the correlation value and significant result. The number of samples should be increased.

Abstract

The Faculty of Animal Science, IPB University, produces pasteurized milk daily under the D-farm milk processing unit. In order to maintain the product quality, as well as its safety, the fresh milk as raw the main material and the produced pasteurized milk quality is tested periodically. The aim of this research is to evaluate the quality of fresh and pasteurized milk produced by the D-farm milk processing unit. The tested fresh milk was originated from two different farms, while the tested pasteurized milk was made by using pasteurizer machine and double-wall pan heating. The tests were carried out by using a lactoscan milk analyzer. The results showed that the fresh milk used by the D-farm milk processing unit had good milk quality, even though still below the SNI standard, while the produced pasteurized milk has met the SNI standard. In addition, the pasteurization by using pasteurizer produced better pasteurized milk quality compared to the traditional pasteurization by using double-wall pan heating.
