Abstract

Daun sukun mengandung metabolit sekunder antara lain flavonoid, polifenol, kuinon, dan steroid1. Proses biosintetik dapat menyebabkan perubahan warna, kandungan, dan jenis kandungan yang ada pada daun sukun. penelitian menggambarkan konsentrasi total metabolit sekunder yang dipisahkan berdasarkan polaritas pelarut dan metode ekstraksi. Proses biosintetik adalah fermentasi daun hijau segar menjadi daun hijau fermentasi (HF) melalui metode fermentasi aerob dan anaerob. Ekstraksi dilakukan dengan dua metode yaitu metode panas (sokletasi) dan metode dingin (maserasi) untuk membandingkan metode ekstraksi yang lebih baik. Ekstraksi dilakukan dengan kepolaran bergradasi menggunakan pelarut N-heksana, etil asetat, dan etanol. Ekstraksi kepolaran bertingkat akan menghasilkan senyawa-senyawa tertentu yang terpisah secara spesifik pada setiap pelarut yang digunakan, oleh karena itu tujuan dari penelitian ini adalah untuk memperoleh data ilmiah mengenai pengaruh metode fermentasi, metode ekstraksi, dan gradien polaritas pelarut terhadap kandungan flavonoid dan steroid total ekstrak daun. . sukun (Artocarpus altilis (Parkinson) Fosberg). Hasil kandungan flavonoid total tertinggi adalah ekstrak etil asetat dari daun sukun fermentasi aerobik dengan metode maserasi 0,3054 g QE/100g dan kandungan steroid total tertinggi pada ekstrak N-heksana dari daun sukun fermentasi aerobik maserasi 0 , 1169g/100g. Berdasarkan penelitian yang telah dilakukan, dapat disimpulkan bahwa metode ekstraksi terbaik untuk menentukan kadar total flavonoid dan steroid adalah metode maserasi. Sedangkan polaritas pelarut yang baik untuk penentuan kadar flavonoid total adalah etil asetat aerobik, dan N-heksana aerobik untuk penentuan kadar steroid total, metode fermentasi yang efektif dalam meningkatkan kadar metabolit sekunder pada daun sukun adalah metode fermentasi aerobik.

Abstract

AbstractUV radiation can lead production of Reactive Oxygen Species (ROS) on the skin and can cause negative effects1. Sun protector and antioxidant ingredients are needed to protect the skin2. Phenolic compounds and flavonoids have been used as sun protectors and as antioxidants3. Pouteria campechiana is known for its high abundance of phenolic compounds4. This study reported the phytochemical group, total phenol and total flavonoid content, antioxidant activity, and sun protector factor of ethanol extracts of pulp, seed, leaves, and twigs of Pouteria campechiana. Determination of antioxidant activity, sun protection factor, and total phenol and total flavonoid content were carried out using UV-visible spectrophotometry. Crude drugs and extract of pulp, seed, twig, and leaves P.campechiana containing phenolic group, tannin, and flavonoid. The leaf extract had the highest total phenolic content, while the highest total flavonoid content was in the seed extract. All of the extracts tested had very strong antioxidant activity indicated by the Antioxidant Activity Index (AAI) to DPPH value, >2. At a concentration of 1000 µg/mL, the leaf extract showed the highest SPF value, 16.01 ± 0.38.The conclusion, the leaf extract had the potential to further as a natural antioxidant, and sun protector. AbstrakPaparan radiasi UV dapat meningkatkan produksi Reactive Oxygen Species (ROS) sebagai radikal bebas dan dapat menimbulkan efek negatif pada kulit. Dibutuhkan senayawa aktif sebagai fotoprotektor dan senyawa penangkal radikal bebas yang disebut antioksidan untuk melindungi kulit. Golongan senyawa fenol dan flavonoid dapat menyerap radiasi UV dan menangkal radikal bebas. Pouteria campechiana dilaporkan mengandung senyawa fenol. Penelitian ini melaporkan golongan senyawa kimia, kadar fenol dan flavonoid total, aktivitas antioksidan terhadap DPPH dan aktivitas fotoprotektor yang menggunakan parameter nilai Sun Protector Factor (SPF) dari ekstrak etanol daging buah, biji, ranting dan daun Poteria campechiana. Ativitas antioksidan, nilai SPF, kadar fenol total, dan flavonoid total diukur secara spektrofotometri UV-Sinar tampak. Hasil penelitin menunjukkan simplisia dan ekstrak etanol daging buah, biji, ranting dan daun P.campechiana mengandung golongan senyawa fenoli, tanin, dan flavonoid. Ekstrak etanol daun memiliki kadar fenol total tertinggi, sedangkan kadar flavonoid total tertinggi ada pada ekstrak etanol biji. Keempat ekstrak tergolong pada antioksidan sangat kuat, dengan parameter nilai AAI >2. Pada konsentrasi 1000 µg/mL, ekstrak daun menunjukkan nilai SPF tertinggi yaitu sebesar 16,01 ± 0,38. Kesimpulan, ekstrak etanol daun P.campechiana lebih berpotensi untuk dikembangkan sebagai bahan baku aktif antioksidan alami dan fotoprotektor.

Abstract

Jamu is a traditional medicine from Indonesia. Jamu beras kencur is one of the most popular jamu in Indonesia. Jamu beras kencur are often added with other ingredients to increase the efficacy. Turmeric (Curcuma domestica) was a traditional medicinal plant that has high antioxidant and anti-inflammatory effects. Phenolic compound is the largest secondary metabolite in turmeric. The aimsf this research were to determine antioxidant activity and total phenolic content of extract jamu beras kencur wich was added of various concentrations of turmeric and the differences boiling time in processing jamu preparations. The processing of jamu beras kencur with the addition of turmeric with boiling time (15 minutes and 30 minutes). Variation of concentration of tumeric were 5%, 10% and 20%. The concentration of turmeric used addition 5%, 10% and 20. Each preparation was extracted using ethyl acetat. Aantioxidant activity of each extract was performed by DPPH method wich demonstrated as IC50 DPPH. Determination of total phenolic was performed by UV-Vis spectrophotometry and expressed in g GAE/100 g extract. The highest antioxidant activity (IC50 of 485 μg/mL) and the highest total phenolic (41.336 g GAE /100 g extract) was given by jamu beras kencur wich 20% turmeric and 15 min boiling time. Addition of turmeric and differences of boiling time in processing jamu preparations can affect antioxidant activity and total phenolic content.

Abstract

Background: Tempeh is a widely consumed food due to its health benefits, affordability, and suitability for long-term consumption. The production process of tempeh from soybeans involves several stages, including soaking, dehulling, and inoculation with Rhizopus oligosporus yeast. Fermentation plays a key role in enhancing the nutritional quality of tempeh, particularly by increasing the levels of aglycone isoflavones. Tempeh contains three major types of aglycone isoflavones: daidzein, glycitein, and genistein. Among these, daidzein and genistein are classified as phytoestrogens due to their structural similarity to endogenous estrogen and their associated health-promoting properties. Objectives: This study was conducted on six different soybean seed varieties and their corresponding tempeh products, processed using traditional methods and subjected to three different fermentation durations (42, 47, and 52 hours). Methods: Soybean seeds and tempeh samples were extracted using a cold extraction method and analyzed for daidzein and genistein content through the standard addition method. Results: The results indicated variations in daidzein and genistein content across the six soybean varieties and among tempeh products fermented for different durations. The tempeh produced from the Dering 1 soybean variety showed the highest daidzein content (2.59%), while the Devon 1 variety exhibited the highest genistein content (2.13%) after 47 hours of fermentation. Conclusions: These findings support the potential of tempeh made from local soybean varieties as a functional food, due to their elevated levels of bioactive isoflavones.

Abstract

Health is a very important aspect in human life. Degenerative diseases are a serious challenge faced by modern society. Community service aims to describe the level of knowledge of the community in Cinunuk District, Cileunyi, Bandung Regency, as well as analyzing the extent to which breadfruit leaves are used in efforts to prevent and treat degenerative diseases. This community service was carried out on October 26 2023 at the Sebaguna Building, Cinunuk Cileunyi District, Bandung Regency in collaboration with Medina Farma Pharmacy. A total of 78 people took part in counseling activities related to degenerative diseases, plants used as herbal medicines, healthy lifestyles to prevent degenerative diseases, workshops on making breadfruit leaf tea products, health checks such as blood pressure, instant blood sugar, total cholesterol levels, accompanied by health counseling and distribution of pamphlets, 45 of them filled out the questionnaire online using g-form. The results of respondents before the counseling and workshop were 45.89%, indicating that the level of knowledge of respondents was very poor, after the counseling and workshop on making herbal tea preparations there was an increase in the knowledge of the people of Cinunuk District by 81 .48% with a high category of respondents' knowledge regarding degenerative diseases, plants that can be used as herbal medicine, the use of breadfruit leaves and their processing in the form of herbal tea preparations which makes it easier for people to consume them in traditional treatment efforts as preventive and curative.

Abstract

Stunting masih menjadi masalah kesehatan masyarakat yang signifikan di Desa Karyamukti, Kabupaten Garut. Berbagai upaya telah dilakukan namun prevalensi tetap tinggi. Program pengabdian kepada masyarakat oleh STFI yang berkerjasama dengan Rumah Tangguh Stunting (RTS) bertujuan untuk meningkatkan kesadaran dan pengetahuan masyarakat terkait pencegahan stunting. Program ini mentargetkan ibu-ibu serta kader posyandu melalui kegiatan edukasi terstruktur dan pendampingan langsung. Metode yang digunakan mencakup Focus Group Disussion (FGD), penyebaran kuisioner pre-test dan post-test, serta pengenalan produk tambahan gizi berbasis lokal seperti serbuk telur dan madu curcumin. Hasil program ini menunjukkan peningkatan yang signifikan dalam pengetahuan dan kesadaran peserta, dengan kader posyandu menjadi lebih proaktif dalam memantau tumbuh kembang anak. Inisiatif ini membuktikan bahwa edukasi terarah dan intervensi yang tepat dapat meningkatkan upaya pencegahan stunting, sekaligus menekankan pentingnya keterlibatan komunitas dan pemantauan berkelanjutan untuk mencapai hasil yang berkesinambungan
