Abstract

Red bean is one of the types of nuts that are potentially to be developed in a variety of industrial products food. Red Bean have a nutritional quality is not inferior to other types of nuts, but its utility becomes food hawker is still limited. Red bean flour can be processed to various food product that can give his nutrient contributing such as food hawker a schoolchild. One such product is the biscuit. The purpose of this research is to know the nutrient content and acceptability from a biscuit with addition of red bean flour. This research is a research experiment, that is the manufacture of biscuits with the addition of red bean flour by 10%, 17.5% and 25%. Panelists in this study are elementary school students of SDN 067097, as many as sixty people. Acceptance of test data obtained were analyzed by descriptive and nutrient value of protein and fiber is determined using the Kjeldhal Method and Gravimetry Method in the test in Research Agency and Industrial Standardization Laboratory Medan. The result showed that the acceptability of students elementary school against granting biscuit by the addition of flour red beans who favored is biscuit by the addition of 10 % The addition of flour red beans in making biscuits give increased amount of protein and fibers in biscuit The addition of flour red beans in making biscuits with wide variations give the influence of different real the assessment test acceptability both in terms of texture and flavor and the resulting nutritional biscuits Then it is advisable to socialization of information that can be made and received biscuits from red bean flour is primarily used as a additional food school children. Abstract

Food consumption pattern is a description of the quantity , type and frequency of food that people eat everyday and it is typical to one particular group of people. The research objective was to determine the relationship of the pattern of food consumption with haemoglobin levels in pregnant mother in the third trimester in Desa Lalang Health Center in Medan Sunggal SubDistrict in 2013. This type of research is an observational cross-sectional design. The population is all pregnant mother with gestational age 27-40 weeks ( third trimester ) who reside in the Desa Lalang Health Center as many as 70 people. The samples are randomly by 50 people. The results showed that mothers who have normal haemoglobin levels are 40.0 % and 60.0 % are anemia . There are significant relationship between energy sufficiency, the adequacy of protein , the adequacy of iron , the adequacy of folic acid and iron supplement tablets  with hemoglobin levels in pregnant mother in the third trimester Desa Lalang Health Center in Medan Sunggal SubDistrict in 2013. In other hand there was no relationship between the adequacy of vitamin B12 with the levels of hemoglobin in the third trimester pregnant mother. It is recommended to pregnant mother to pay attention to the pattern of food consumption and nutrition supplements of iron tablets during pregnancy to prevent anemia in pregnant mother in the third trimester that affecting mother and fetus.  Desa Lalang Health Center in Medan Sunggal SubDistrict need to improve health care and provide information to pregnant mother in hopes of improving the welfare of mother and child as the nation's resource development.   Keywords : Haemoglobin Levels, Food Consumption Pattern, Pregnant Mother, Third Trimester

Abstract

It is noted highly rate population growth in Indonesia, to respond it, the government adoptthe Family Planning (KB) as a strategic program nationally since 1970. This program is referredmainly to those new and fertilized couples to have own arrange interval of birth. The family withmany children may influence the quality care and this is going to impact on nutritional status forunderfive children. The objective of this study is to determine the correlations of arrange timeinterval of birth and the caring pattern with the nutritional status of the underfive children in theterritory Tanjung Tiram Sub district Community Health Centers in Batu Bara District for 2013.This study adopted a descriptive method with cross sectional design. The population of thisresearch involved 4.883 underfive children. The data was gathered for November 2013 usingquestionnaire, interview them directly about their daily practicing in feeding the underfive childrenand how to care. About the sample, to take them in purposively and the sample was assessed inproportional allocation and choose them systematic random sampling, further the data wasanalyzed by using a distribution frequency table and total sample involved 94 underfive children.The result indicated that the interval of birth 2 years with nutritional status noted 14.3% iscategorized malnutrition, 85.7% is categorized less nutrition whereas with interval of birth > 2years noted 87.1% is normal. The caring pattern based on practiced meal feed more is notedmalnutrition category is noted 82.1% whereas caring health with moderate category is noted81.4%.By this research is suggested to the health worker keep improving public knowledge aboutthe KB program and encourage the mothers given counseling how to enrich nutritional status forunderfive children. Abstract

Complementary Feeding is given to infant while it is 6 months old to fulfill as nutrition, especially micro nutrient like minerals. Nowadays, mineral content of local complementary feeding have not know yet, and one of local complementary feeding that is treated became banana  flour with additional rice flour as a base for complementary feeding. This research aims to know the mineral content of mixed awak banana and rice flour and its contribution to infant Recommended Dietary Allowance (RDA). This research is descriptive study conducted in the laboratory which based on chemical analytic to mineral content in mixed of awak banana and rice flour. Analyzed the content of iron and zinc by Atomic Absorption Spectrophotometry method (AAS), the content of potassium, natrium, and selenium by Inductively Couple Plasma method (ICP), the content of phosphor by spectrophotometry method, the content of calcium by titration method and iodide content by HPLC method performed in the laboratory of PT. Sarawanti Indo Genetech Bogor. The results of the research suggested that mixed of awak banana and rice flour contain macro mineral by calcium, potassium, natrium and phosphor for 14,70 mg, 396,40 mg, 8,58 mg and 100,7 mg respectively. Whereas the content of micro mineral in mixed of awak banana flour and rice flour contain the iron, zinc, iodide and selenium for 3,43 mg, 8,08 mg, 42,74 ug and 0,30 ug respectively. Both macro mineral and micro mineral, except zinc and potassium in mixed of awak banana and rice flour has not fulfill the standart of complementary feeding appropriate 224/Menkes/SK/II/2007 aged 7-12 months according the Widyakarya Nasional Pangan dan Gizi 2004. Abstract

The elderly need attention and support from family for adaptation on any changes and deterioration that happened in the aging process because family is the main support system for those elderly. The role of family is needed for those elderly in order to fulfill their nutrition intake. In order to fulfill elderly nutrition intake, family shall provide it and prepare food. This kind of study that used descriptive method with cross sectional design, that purpose to know the family’s behavior in providing food to the elderly and to know sufficiently nutrition level of elderly in Desa Aek Nabara Tonga Kecamatan Aek Nabara Barumun Kabupaten Padang Lawas. The primary data for this study were obtained by distributing questionnaires family characteristic, knowledge, behavior, food and nutrition intake preparation. The secondary data were obtained from general description of the Desa Aek Nabara Tonga. The result of this study showed that family knowledge level in supplying food for those elderly mostly categorized in moderate rate noted 86,8%, in supply food for the elderly is categorized shortage noted 73,9% and 26,1% is moderate. The family’s behavior in supplying the food mostly is categorized moderate note about 73,6%, but in supplying the food of the elderly shortage note 82,1% and 17,9% is categorized moderate in supplying the foods. In supplying food for the elderly most in shortage category noted 64,2%. The rate of sufficientcy nutrition mostly on defecient such as energy noted 52,8% . The rate of sufficiently to dissolve vitamin in fat mostly on moderate such as category vitamin A (88,7%), moderate vitamin D (83%). The rate of sufficiently to dissolve vitamin in water such as most in moderate C (90,6%). The sufficient rate of mineral mostly is categorized moderate calcium (50,9%), and most in shortage (49,1%). It is suggested to elderly family their consumption harvest such as vegetables and fruits shuld be priority for family’s requirement. Keywords : Family behavior, sufficient in nutrition, elderly.

Abstract

Overnutrition is a unbalance condition between intake energy and output energy. Overnutrition known as overweight or obesity. According to the healthy research database (2013), prevalence of overnutriton in Indonesia increase from 2010 to 2013 that is 10 % become 13,5%. Result of research by Lestari in Medicine Faculty USU in 2012 showed 20,1% prevalence of overweight and obesity with the risk factor namely high supply of protein, fat an carbohydrate. This research is to know the risk factor caused overnutrution to student of public health faculty at USU. Conducted research using case control design. The aim of this research is to know relathionship among genetic, pattern of consumption, and physical activity with incidence of overnutrition. The sample for this study were 64 students of 2010-2012 years . 32 for case group and 32 for control group selected through purposive sampling technique. Univariate data namely age, sex, houselife, job of parents were analyzed descriptively and bivariate data namely genetic, pattern of consumption, and physical activity were analyzed using the chi square test with 95% CI. The data were collected by used food recall 24 hour form and physical activity form. The result of bivariate analysis showed relationship between genetic (p=0,005;OR=2,006), father’s nutrition status (p=0,019;OR=2,003), mother’s nutrition status (p = 0,001;OR=2,468),  protein supply (p = 0,009), fat supply (p = 0,042), carbohydrate supply (p = 0,010) and physical activity (p = 0,045;OR=7,154) with the incidence of overnutrition. And there is no relationship between frequency of eating with the incidence of overnutrition (p=0,157) It was recommended for the students doing physical activity routinely and consume healthfull food to decrease the incidence of overnutrition Keywords:       Risk Factor, overnutrition, public health

Abstract

Acute Respiratory Infections (ARI) incident become the main cause of children under 5 years of age mortality (59%) in developing or development countries. Children under 2 years of age period is critical period of health and golden period of brain development. This research purpose is to find out the correlation of nutritional status, exclusive breastfeeding, basic immunization status with Acute Respiratory Infections (ARI) incident for children age 12 to 24 months in Glugur Darat Public Health Centre at Medan City. This research is observational analytic using case control design. Population is children age 12 to 24 months in Glugur Darat Public Health Centre work area. Sample is taken according the exclusion and inclusion criteria for 30 cases and 30 controls. Data analysis included univariate and bivariate analysis with using chi-square test considering Odds Ratio (OR). Bivariate analysis result with chi-square test show that there is correlation between nutritional status and Acute Respiratory Infections (ARI) incident (p=0.045; OR =3,333), exclusive breastfeeding and Acute Respiratory Infections (ARI) incident (p=0,032; OR=3,2386), basic immunization status and Acute Respiratory Infections (ARI) incident (p=0,037; OR=3,763). It is recommended that the public health center to give implement education about health informations, especially to pregnant and breastfeeding mothers . For mothers is recommended to check frequently or period their children health and growth to posyandu/public health center. For society is recommended to keep environmental sanitation and reduce smoking at the home to prevent children from Acute Respiratory Infections (ARI) incident.

Abstract

Malnutrition is a state of less nourished caused by low consumption of energy and protein in the daily diet that make children weight under normal weight in appropriate age (W/A <-2SD). The prevalence of malnutrition in children under five years in Indonesia based on W/A showed an increase from 17.9% in 2010 to 19.6% in 2013. The purpose of the study is to analyze the relationship of income, infectious diseases and mothers knowledge with the incidence of malnutrition in Glugur Darat Public Health Center in 2014. This research is an observational study with cross sectional approach. Samples are 97 children taken by simple random. The research instrument used is a questionnaire and the meter measuring tool. Univariate data were analyzed descriptively and bivariate data were analyzed using the chi square test with 95% CI. The results showed there was 63 children (65%) well-nourished and 34 children (35%) less nourished. The highest proportion of respondent are under MSE revenue (59%), infectious diseases (82%) and good knowledge of mothers (88%). The results of the bivariate analysis showed that there was a significant association between income (p = 0.030), infectious disease (p = 0.027), and the knowledge of the mother (p = 0.014) with the nutritional status of children. Based on the results of the study suggested to the mothers who have children with malnutrition status routinely bring their children to posyandu so that the children’s weight monitored regularly to improve the nutritional status of children and to prevent malnutrition in children.

Abstract

ABSTRACT                Food consumption pattern  of  Tionghoa ethnic is  affected by  cultur factor  that has existed among generations. The family in choose the daily food menu. This study is a descriptive survey in order to the food consumption pattern and nutritional status of the ethnic Tionghoa family at kelurahan Asam Kumbang Kecamatan Medan Selayang. The population in this study are all ethnic Tionghoa  family at Kelurahan Asam Kumbang Kecamatan Medan Selayang that is 104 families. The sample is a portion of the population that is 51 Families. Data collection forms using diet Food List and Food Frequency. Nutritional status data obtained by weighing and measuring the height            The results showed that every day ( always ) ethnic Tionghoa families eat rice, meat and vegetables but fruits not every day. Good energy consumption of ethnic Tionghoa families can see from 78.4 % consume adequate energy ( ≥AKEK ) and for protein consumption 96.1 % consume adequate protein (≥AKPK). Father to be a priority in the distribution of food. ethnic Tionghoa families food with high value is pork. Ethnic Tionghoa families Food tabo is beef. Nutritional status of the family are in the normal category               Based on this research, it is expected distribution of food in the family based on nutritional needs, important to have menu cycle so that the food well-organized terms kind of food, frequency of food and the amount of food nor variation of food.   Keywords: food consumption patterns, Tionghoa ethnic, nutritional status of family
