Abstract

Currently, Indonesia is facing double nutritional problems, namely lack of nutrition and over nutrition. Over nutrition is considered as the early signal of the coming of degeneratif disease such as Coronary Heart Disease. The attempt efforts to overcome and to prevent Coronary Heart Disease is by regulating food consumption pattern especially by controlling the fat supplied by the food consumed. The purpose of this study was to find out the between the food consumption patternand the level of total blood cholesterol in Civil Servants in the regional Office of Directorate General of Treasury, the Province of Sumatera Utara, Medan  with cross-sectional design. The primary data for this study were obtained by distributing questionaires containing food consumption, characteristic, total blood cholesterol, measurement of Civil Servants. The secondary data were obtained from general description of the regional Office of Directorate General of Treasury, the Province of Sumatera Utara, Medan. The correlation between the food consumption pattern and the level of cholesterol was descriptively analyzed through Exact-Fisher statistic test at α = 0.05. The result of this study showed that most of the Civil servants often consumed aminal food (1-3 times a week) such as eggs, chicken, beef/mutton, ampele, shrimp/squid/crab and other food containing fat such as fried and coconut-milk contained food. The average total blood cholesterol was 120.8 mg/dl, most of the energy consumed by the Civil Servants was good (80%) and there was no correlation between energy consumption and the level of total blood cholesterol (p=0.768). fat energy consumption was higher (75%), therefore, there was a significant correlation between fat energy consumption and the level of total blood cholesterol (p=0.001), between saturated fatty acid intake and the level of blood cholesterol (p=0.002), and between unsaturated fatty acid intake and the level of total blood cholesterol (p=0.001). The Civil Servants are suggested to control their consumption pattern by reducing to consumed fat and controling the frequncy or eating fat and cholesterol containing food.   Keywords : Food Consumption Patterns, Total Blood Cholesterol Level, Civil Servant

Abstract

Nutrient is one of main determinant factors for the quality of human resources.  The needs of  food can be seen not only from its portion, but also from the  quality of  nutrient substances found in the food consumed.  The fulfillment of nutrient substance for pregnant mother are influenced by some factors and one of the factors is knowledge of the mother.     This research was intended to know the  knowledge of pregnant mother of first trisemester about nutrient and eating pattern for the fulfillment of nutrient.  This research used descriptive design and sampling techniques used total sampling. Data collection was carried out in September 2013 using questionnaire consisting of 2 parts, namely first part  contained the demography data and   second part contained the questionnaire about the knwoledge of the pregnant mother of first trisemester  in the  fulfillment of nutrient.  The  data on eating pattern was taken from the interview using  food recall, then analyzed using  frequency distribution table and the total respondents was for 54.                       The results of research showed that mostly the   knowledge of respondents were with medium knowledge for 24  respondents (44.4%), and the least were with good knowledge for 14 respondents  (25.9%).  Energy  intake less of  38.9% with moderate knowledge , whereas  good knowledge of 3.7% with good energy intake. Protein intake less of 22.2% with moderate knowledge, whereas good knowledge of 1.9% with sufficient protein intake.       Based on the reuslts of research, need for increased knowledgeand information to the first trimesterpregnant women about the importanceof a diet that is nutritious and balanced and as preparation for yourself during pregnancy or after childbirth.   Key words : Knowledge of nutrition, food pattern, nutritiont fulfillment, first trismester of pregnant women

Abstract

Nutrition have important part in human life cycle. The low Index Of Human Development in Indonesia is influenced by the nutrition status and public health. It can be seen from the high infant mortality rates, and children under five, and also maternal mortality.   This research aims to know the relations between characteristics family with sever malnutrition case of children under five at rubber farmer family in the region's of Wahana Visi Indonesia Area Development Program in Nias in 2013. This research is observational by using case control design. Populations are all children under five, which sever malnutrition and those who not malnutrition in three distric in Kabupaten Nias which is the region’s of WVI ADP NIAS. Data analysis by using chi-square to find Odds Ratio (OR).   The result that there is a meaningful relation between mother’s knowledge with children under five malnutrition cases (p=0,003;OR=9,100), family income with children under five malnutrition (p=0,000;OR=0,037). Variable of mother education and children’s amount in family do not show any meaningful relation with children under five malnutrition cases.   WVI ADP Nias and the health center is expected, especially in Kabupaten Nias to improve health education, counseling about land use in order to maintain the availability of food and provide health counseling, especially to mothers of malnourished children on the importance of keeping nutrition for children stay healthy as well as its effects and consequences when children are not getting enough nutrition.   Keyword : Mother characteristic, family economy social level, children under five nutritional status.

Abstract

Irregular menstrual cycle is an imbalanced hormone impact in women reproductive system. While imbalance of energy relates to estrogen reduction, disturbance of metabolism, and oligomenore as well as polimenore. Excessive physical activity also affects the menstrual cycle. The purpose of this research is to determine the relation between dietary habit and physical activity with menstrual pattern for student majoring sports in State University of Medan 2014. This is descriptive research using cross sectional design research. The population of this research is student of PJKR UNIMED of 2012, 2013, and 2014 batch. Technique of sampling is using proportional simple random sampling which involves 58 sampels (23 sampels of first grade, 20 sampels of third grade and 15 sampels of fifth grade). Dietary habits, menstrual pattern, and physical activity data gained after doing interview by using questionare. to measure dietary habits using food recall and food frequency questionare. Then data analized by using Chi Square test. The research results showed that student dietary habit of is at good category (56,9%). Student physical activity is at medium category (53,4%). Student menstrual cycle is irregular (51,7%). Based on Chi Square test, it is known that there is correlation between dietary habit (quantity) with menstrual blood volume (p=0,003). While there is no correlation between dietary habits and physical activity with menstrual cycle, long menstruation, and menstrual blood volume. It is recommended that student maintan their dietary habit and reproductive health as well by applying their diet in accordance with Guideline for Balanced Nutrition (GBN). Abstract

The phase of school age is the most important in the next physical formation of kid. Physical qualities reflected from physical growth. Physical growth change will certainly seemed at the time of kid entered the age of school. The purpose of the research is to know the corelation between the food consumption patterns and social  economic of the family  with the growth of new kid entered the age of school  in elementary school padangsidimpuan no.142442. The type of research is descriptive using a cross sectional design. The population is all students in the first class of elementary school padang sidimpuan no.142442 . The sample as many as 54 of students taken with the technique of proportional sample.  Data about the consumption of food obtained through interviews directly to students who assisted by their mothers.  Data of the height of kid  measured with microtoise.  The growth of new kid entered school based  with  z-score height by age. Furthermore, to prove the hypothesis the chi-square test is used. The research showed 51,9 percent had height with short category,  40,7 percent normal and 7,4 percent kids were tall category. The analysis bivariat with chi-square test showing that there are significan  relationship between the level of family income(p = 0,037), kinds of food (p = 0,038),  the level of energy suffiency (p = 0,027) and the level of zinc suffiency (p = 0,044) with the growth of the new kid enter the school. There was not correlation with the variable of the level of mother’s educational, the level of mother’s occupation, the level of vitamin A sufficiency, the level of iodium sufficiency, the level of calcium sufficiency and the level of iron sufficiency with the growth of the new kid entered the school. It is hoped  the mothers provide multiform food being  for kids. Additionally, mothers should be pay attention to the level of nutrient sufficiency that will be consumed for a kid. Abstract

ABSTRACT Indonesia is the country with the highest rice consumption reached 139 kg/capita/year in 2013. The consumption is not supported by appropriate rice production, so the government import rice from other countries. In addition, the government has also been implementing diversification program for the utilization of local food, including cassava. Desa Tanjung Beringin produce cassava but underutilized because accustomed to eating rice. This research is an experimental research that is making analog rice using cassava flour with the addition of water. Panelists in this research are women in the village of Tanjung Beringin as many as 30 people. Acceptability test results obtained with organoleptic and was analyzed descriptively. The value of nutrient content adjusted to DKBM. The results of this study indicate that the acceptance of women in the village of Tanjung Beringin to analog rice is low. It is seen from the percentage of rice taste assessment analog only 47.778% and categorized dislikes. The color rice is less liked by the percentage rating of 63.333%. Aroma and texture of rice analog liked category by their respective percentages of 80% and 78.889%. Based DKBM, comparison of the quantity of nutrients contained in the rice and rice analogue of cassava flour is almost same. Both of the rice and analog rice contain of carbohydrates, phosphor and calcium and they produce nearly the same energy. So have suggested the addition of the composition to improve the flavor and color of rice analog and enrichment nutritional content and need to be developed a diversification program of cassava that can be accepted by society.

Abstract

Low Birth Weight is when an infant born with less than 2500 grams without looking at pregnancy. Breastfeeding is the best way to feed the infants. However, for some reasons mothers opt to add or replace breastmilk. An infant is classified as stunting if they has length of birth <46,1cm for male and < 45,4cm for female. Stunting is short stature caused by chronic malnutrition. This research aims to understand the difference in body length of LBW infants fed through the use of breastmilk or formula milk in the first two weeks of treatment at Saint Elizabeth Hospital Medan in 2011-2014. This research is using cross-sectional design. The participants consist of 56 infants of LBW with the age of two weeks under the treatment of Saint Elizabeth Hospital Medan in 2011-2014. This research using secondary data of medical record documentation in the Prenatal Hospital. Data analysis was performed using Independent Samples T-Test. The results shows that there is no significant difference between the increase in body length of breast-fed babies who were given with the increase in body length babies fed milk formula with p value (0,46) > α (0,05). Researchers suggest that in order to further improve the service to the handling of the problem of low birth weight, especially in the provision of nutrition for infants of low birth weight hospital institutions, nurses who worked in chambers of perinatology should be support and motivate mothers to breastfeed their infants and consider the condition of an infant during the maintenance. Abstract

Balanced diet on elementary student are rarely fulfilled. They tend to only eat foods with few nutrients dominant, such as burgers are high in carbohydrates and fats that can cause obesity. With the existence of such problems, nutrition education made by interested media to facilitate the provision of nutritional information, in particular a balanced diet. The aim of this research is to find out the effect of nutrition education about balanced diet through puzzle game to increase the knowledge of elementary student of SDN 067690 in Medan. The type of this research is quasi experimental with one group pretest posttest design. Total population is 249 children and the number of samples is 45 children. Analysis of data using statistical test of paired t-test, the significant level of 95%. The results showed that children given knowledge puzzle game with pretest scores of elementary student in low category (26.7%) and posttest scores in low category (0.0%). Statistical analysis showed there were differences in knowledge scores after nutrition education through puzzle game (p.= 0,000). The conclusion of this research is there were the effect of nutrition education through puzzle game for the elementary student’s knowledge about balanced diet, which is an increase of elementary student’s knowledge about balanced diet. Suggestions of this research was to implementing the nutrition workers in community health centers to use puzzle game to inform about balanced diet.   Keywords: balanced diet knowledge, puzzle game, elementary student

Abstract

Sweet potato rice is an alternative food are substituting rice with sweet potatoes. Orange sweet potatoes orange contents much β-carotene which is caused sweet potato rice as a kind of rice rich in antioxidants. Orange sweet potato can be processed into refined products, one of them into flour. Through the orange sweet potato flour can also be processed into orange sweet potato rice. The glycemic index is a blood glucose response to food compared with blood glucose response to pure glucose. The glycemic index is purpose for determining the blood glucose response to the type and amount of food consumed. The type of research used in this study is an experimental research, namely to produce rice from the rice with the addition of orange sweet potato flour with the ratio of one to one (1: 1). The purpose of this study was to determine the glycemic index food such as sweet potato rice test closer glycemic index rice or sweet potato glycemic index and how the velocity raise blood sugar levels after eating the test food. The composition of nutrients in orange sweet potato rice is water 52.6%, dust 0.29%, protein 4.74%, fat 0.57%, carbohydrate 41.2%  and crude fiber 0.44%. The energy content contained on orange sweet potato rice amounting to 234.6 kcal. The results of this study indicate that the glycemic index is based on the measurement of orange sweet potato rice by using a reference food such as white bread showed that orange sweet potato  rice has a glycemic index value of 83% and this figure is included in the category of food that has a high glycemic index value (> 70 ). Need to do further research on the glycemic index orange sweet potatoe rice with a composition ratio of the other as an ingredient in the produce of orange sweet potato rice and more further research on the measurement of glycemic index value of other processed foods made from sweet potato (Ipomoea batatas L). Abstract

In order to improve public health status, it is need to be implemented various health attemps community including monitoring the quality of drinking water consumed by the public. Water is the main component in the body. Body can survive for weeks without food, but only days whithout water. The water is indispensable because it helps the formation of chemicals that the body needs. Every time human beings will lose water throughyour breath, perspiration, urine and bowel movements. So, that the body is fungtioning normally, then lose water must be replaced with sufficient drinking water.                This study is a descriptive survey observasional with cross sectional designof drinking water consumption of the students SMA Negeri 3 at Medan. The population in this study are all students of class X and XI at Medan that is 1142 person. The sample is a portion of the population that is 93 person. Data collection forms using form questionnaires. Processing and analysis of data is done by manual and computer with SPSS.            The results showed that the level of knowledge of the students is a good knowledge category, 58,1 %. The attitude of the average students in the category of either the 81,7 %. The type of beverage consumed an beverage student is a type of drink Tea whit the amount of 32,3 %. The level of water consumption average student enough to be seen there are as many as 46,2 % of students with the amount of consumption of less category.            The results showed that the school in order to control and provide intensive appeal to the school cook shop manager as a provider of food and beverage snacks for more attention to the food and drinks to be sold students.  Keywords : attitude, drinking water consumption, Senior high school
