Abstract

Functional food is growing along with the increasing public awareness of body health. One of them is a probiotic functional food. Probiotics according to WHO/FHO (2001) are microorganisms added to products that will benefit the health of the body if consumed sufficiently, namely 106-108 CFU/ml. Probiotics have benefits in the digestive tract, on the other hand, probiotics need nutrients for their development, namely prebiotics which are expected to change the intestinal microflora and maintain balance in the gut. Probiotics have many benefits for the health of the body, one of which is to improve the immune system. Probiotics will interact with intestinal epithelial cells and be recognized by dendrites then produce IL-12 (Interleukin-12) and IFNγ (Inferon γ) by IDC (Interstitial Dendritic Cell) which can modulate the immune response system. The secretion of IFNγ (Inferon γ) by IDC proinflammatory cytokines has a dual function where IFNγ (Inferon γ) and IL-12 (Interleukin-12) circulate in the bloodstream to reach the epithelium and help alveolar macrophages and NK (Natural Killer) cells kill VR. Then pro-inflammatory cytokines IFNγ (Inferon γ) and IL-12 (Interleukin-12) secreted in the gut ecosystem after colonizing some probiotic strains help the immune system for specific Th1/Th17 (T helper cell) immune response. in addition, dendrite 4 cells will secrete IL-17 (Interleukin-17) which enhances the innate immune response. Probiotics can help B lymphocytes differentiate into plasma cells that can secrete specific immunoglobulin A. Some bacteria that can improve the immune system are Lactobacillus casei L431, Lactobacillus rhamnosus GG, Bifidobacterium longum Subsp Infantis R0033, Pediococcus acidilactici DS1, Lactobacillus plantarum HD02 and many more. In the future, probiotics can be developed as immunotherapy and other diseases such as cancer to improve the quality of human life.

Abstract

Exopolysaccharides (EPS) are biopolymers produced by various microorganisms and belong to the postbiotic group, which has great potential for application in food products, especially livestock products. In recent years, EPS has been increasingly studied owing to its ability to improve the functional properties of food, such as antioxidant, antibacterial, antibiofilm, immunomodulatory, and antitumor activities, as well as its potential as a prebiotic and agent for enhancing probiotic properties, while also improving product technology characteristics. From a food processing technology perspective, EPS play an important role in increasing viscosity, emulsion stability, texture, system stability, and gel formation ability, thereby contributing to improved product quality and stability. The advantage of EPS over live probiotics as a postbiotic lies in its higher stability under processing and storage conditions, making it more applicable in various food matrices. This review focuses on the effects of applying EPS produced by various microorganisms on the quality and functional properties of livestock food products, including milk, meat, eggs, and their processed products. Various research results have shown that the addition of EPS can improve physical stability, improve texture, extend shelf life, and increase functional value. The information provided discusses the influence of EPS produced by various types of microorganisms that have a positive impact on livestock products, such as milk, meat, eggs, and their processed products. Based on the results of this search, this is the first compilation to study the application of EPS in livestock products.

Abstract

This study aims to obtain the effect of adding telang flower extract (Clitoria ternatea. L) on the edible whey film's physical and chemical properties and antioxidant activity. This research uses a randomised design group of 4 treatments and five working groups. Conducted on antioxidant activity and physical characteristics. The study's results obtained edible whey film with telang flower extract was 0.14 mm, moisture content of 16.14%, solubility time of 45.60 seconds, and water vapor transmission rate of 3.72 g/m2. day, met the standards of JIS 2019. has the highest B*(bluish) color test value of 6.50 and average antioxidant activity of 17.60% to 49.60%. Based on the research results, it can be concluded that adding telang flower extract (Clitoria ternatea L.) can act as an antioxidant in edible whey film.

Abstract

Utilization of cheese waste, namely whey, is one alternative to increase the added value of whey by processing it into nata de whey. This study aims to determine the effect of using Katuk leaves (Sauropus androgynus (L) Merr) as a substitute for ZA (Ammonium Sulfate) on the yield, thickness, color, texture, and organoleptic of Nata de whey.  This study used 8 liters of whey and Katuk leaves (Sauropus androgynus (L) Merr) as much as 600 g.  The experimental design used in this study, namely the Randomized Block Design (RBD) with four treatments and five repetitions.  The treatment in this study was A = 0.5% ZA, Katuk leaves (B = 5%, C = 10%, and D = 15%). The observed variables were yield, thickness, color, texture, and organoleptic.  The results showed that the treatment differed significantly (P<0.05) in yield, thickness, color, texture, and organoleptic.  The best treatment result is treatment B with a yield value of 91.94%, thickness of 7.77 mm, lightness (L*) 59.17, greenness (a*) -4.16, yellowness (b*) 7.52, texture 5.25 N/cm2, organoleptic color 3.90, scent 3.58, taste 3.82, texture 3.78.

Abstract

Acne is an inflammatory skin disorder often associated with infection by Cutibacterium acnes. Postbiotics in the form of cell-free supernatant (CFS) from Pediococcus acidilactici BK01 contain lactic acid, bacteriocins, and hydrogen peroxide, which exhibit potential antibacterial activity. This study aimed to formulate P. acidilactici BK01 CFS into a topical patch and evaluate its activity against C. acnes. Antibacterial activity and minimum inhibitory concentration (MIC) were determined using the well-diffusion method. The MIC (6.25%) was used to formulate patches via solvent-casting with HPMC K4M or PVA (2–4%) as polymers and glycerin, propylene glycol, or PEG 400 (0.2–0.6%) as plasticizers. The selected formulation was evaluated for antibacterial activity and physical characteristics. A combination of 4% PVA and 0.6% glycerin produced the best base and was used to prepare patches containing 6.25–75% CFS. The 65% CFS patch showed the highest inhibition against C. acnes ATCC 11827 (12.03 ± 0.373 mm), categorized as strong. The patch demonstrated acceptable organoleptic properties, thickness, folding endurance, pH, moisture content, and tensile strength. These findings indicate that the 65% CFS patch has potential as a topical anti-acne preparation.

Abstract

Kerupuk kulit merupakan cemilan krispi yang digemari oleh masyarakat, namun terkendala dengan ketersediaan kulit mentah sehingga mempengaruhi jumlah produksi. Produksi puncak kulit mentah adalah hari raya qurban. Hal ini sudah dimanfaatkan oleh mitra pengumpul sekaligus pengolah kulit latua di daerah Lubuk Begalung Padang sehingga mereka tidak mengalami kendala keterbatasan bahan baku. Kulit mentah diawetkan menggunakan metode penggaraman kering. Kerupuk kulit yang dihasilkan dari bahan kulit awetan akan mempengaruhi penerimaan terutama warnanya yang lebih gelap. Tujuan dari kegiatan ini adalah untuk peningkatan kualitas, kuantitas dan manajemen krupuk kulit mitra. Berdasarkan permasalahan: aspek manajemen, produksi dan pemasaran, solusi dan target luaran yang ingin dicapai adalah peningkatan kualitas pengumpul kulit dan peningkatan kuantitas pengolah kerupuk serta manajemen dengan perluasan pemasaran. Metode yang dipakai dalam pencapaian tujuan yaitu: 1) penyuluhan dan penyadaran, 2) pendampingan, 3) pelatihan, dengan tahapan: a) manajemen dan pengolahan bahan baku sampai menjadi krupuk kulit berkualitas, b) pelatihan dan percontohan proses pengawetan dan pengolahan krupuk kulit, c) manajemen produksi dan keuangan, d) sosialisasi dan pelatihan penjualan on line, dan e) konsultasi bisnis dan pendampingan mitra dalam perluasan pemasaran. Hasil kegiatan adalah kepemilikan P-IRT Mitra, perbaikan proses produksi, kemasan, labeling, dan e-commerce pada market share (medium) dan medsos (FB, IG dan WA). Kesimpulan dari kegiatan yang telah dilakukan disarankan agar pemilik dapat mengasah kemampuan secara optimal dalam pemanfaatan media sosial (medsos) untuk pemasaran secara on- line.

Abstract

Program pengabdian masyarakat dilaksanakan di kelompok tani Sago Pratama yang beralamat di Jorong Sibaladuang, Nagari Sungai Kamuyang, Kecamatan Luak, Kabupaten Lima Puluh Kota. Program ini bertujuan untuk mengenalkan dan menerapkan teknologi pengolahan susu pada peternakan rakyat. Selama ini sebagian peternak sudah melakukan pengolahan susu secara mandiri tanpa adanya binaan dari perguruan tinggi maupun pemerintah daerah. Pengolahan tersebut terkendala karena keterampilan peternak yang masih terbatas serta belum memiliki standar pedoman yang baku dalam produk olahan susu. Susu segar yang diperoleh dari peternakan seringkali tidak terjual habis kepada konsumen. Peternak melakukan proses pembekuan susu sehingga berdampak terhadap penurunan harga jual. Solusi yang ditawarkan untuk mengatasi permasalahan ini adalah dengan melakukan pengolahan susu menjadi produk kefir aneka sari buah. Metode penyuluhan dan pendampingan berupa pelatihan diterapkan untuk memudahkan difusi iptek kepada peternak. Pelaksanaan program pengabdian ini berdampak positif kepada peternak. Peternak mampu mengadopsi Iptek yang di sampaikan oleh tim pengabdi. Hasilnya peternak memiliki keterampilan mengolah susu menjadi kefir sari buah yang memiliki masa simpan lebih lama, kaya manfaat untuk kesehatan serta memiliki nilai jual yang lebih tinggi bila dibandingkan dengan susu segar. Usaha pengolahan susu kefir dengan sari buah ini diharapkan terlaksana secara terus menerus dan mampu meningkatkan pendapatan peternak.

Abstract

The process of making skin crackers, which is carried out in four stages of frying, results in a high oil content in the product. This is a separate obstacle for business actors in making skin crackers. A high oil content can cause rancidity in the product and requires a long time for oil draining in the production process. IKM partner "Rizky" which produces skin crackers in Lubuk Buaya, Padang City still uses a manual spinning process at each stage of frying. The purpose of this activity is to apply an oil spinning machine (spinner) in the process of making skin crackers at Mitra IKM "Rizky" to increase the production efficiency and quality of skin crackers. The method in this activity is carried out by providing a semi-automatic oil spinning machine followed by training and assistance in using an oil spinning machine and practicing from the first stage of frying to the last stage in making skin crackers. The result of this activity is that the use of an oil spinning machine can shorten the oil draining process time from 3.5 hours to 15 min without damaging the product. In addition, the use of an oil spinning machine provided more optimal oil extraction results than the manual spinning method. The oil content in the skin crackers decreased, thereby reducing the potential for rancidity in the product. The conclusion from this activity is that the use of oil-spinning machines in the skin cracker production process at Mitra IKM can increase the production efficiency and improve the quality of skin crackers.

Abstract

Organic household and fish waste management remains a significant environmental challenge in coastal communities, where inadequate waste treatment contributes to environmental pollution and the underutilization of valuable organic resources. Although EM4-based composting and Black Soldier Fly (BSF; Hermetia illucens) bioconversion have been widely adopted as separate waste management technologies, their integration into a community-based waste management system has rarely been implemented or systematically documented in Indonesian coastal communities. This program aimed to evaluate the effectiveness of integrating EM4-based composting with BSF cultivation in enhancing community capacity and promoting sustainable organic waste management at the Sajameh Waste Bank in Bungus, Padang, Indonesia. The program adopted a Participatory Action Research (PAR) approach using a one-group pretest-posttest design involving 30 participants. Program activities included needs assessment, community education, hands-on training in composting and BSF cultivation, continuous mentoring, and evaluation through questionnaires, direct observation, and comparative analyses of pretest and posttest scores. The program increased participants' knowledge by 65%, achieved an 80% community participation rate, produced approximately 50 kg of compost per month during the initial implementation phase, and generated strong interest in BSF cultivation among 70% of participants. In addition, an independent community group was established to sustain waste management activities beyond the program period. These findings demonstrate that integrating EM4-based composting with BSF bioconversion effectively enhances community capacity while supporting environmentally sustainable organic waste management. This integrated community-based approach offers a practical and potentially scalable model for improving organic waste utilization and advancing sustainable waste management practices in coastal communities.

Antimicrobial potential of Pediococcus acidilactici from Bekasam, fermentation of sepat rawa fish (Tricopodus trichopterus) from Banyuasin, South Sumatra, Indonesia. Biodiversitas 20: 3532-3538. This study aimed to determine the antimicrobial potential of lactic acid bacteria isolated from bekasam. Bekasam is a result of sepat rawa fermentation from Banyuasin District, South Sumatra, Indonesia. The results showed that the morphological and biochemical properties of lactic acid bacteria were Gram-positive and cocci, negative catalase and included in homofermentative groups. The biggest antimicrobial activity was shown by bekasam isolate to Escherichia coli O157: H7 (21.26 mm), followed by Staphylococcus aureus ATCC25923 (18.23 mm) and Listeria monocytogenes CFSAN004330 (5.10 mm), while diameter barriers for crude bacteriocin supernatant isolates lactic acid bacteria to Escherichia coli O157: H7, Staphylococcus aureus ATCC25923 were 14.99 mm, 17.69 mm, and Listeria monocytogenes CFSAN004330 had no antimicrobial activity at neutral pH. The results of molecular identification with 16S rRNA showed that lactic acid bacteria isolated from bekasam isolate have similarity with Pediococcus acidilactici strain PB22 that has antimicrobial potential against pathogenic bacteria and potential as bio preservatives.
