Abstract

Corn flour and seaweed are foodstuffs that have high fiber content and low calories. Beetroot was a functional food ingredient that can be used as a source of vitamins and minerals as that have good benefits for the body. The purpose of this research is to create a wet noodle formulation with the substitution of corn flour, seaweed, and beetroot so that it can be used as an alternative food for obesity. The research method used an experimental design with a completely randomized design consisting of two comparable groups, one experimental group and one control group. Chemical laboratory tests were analyzed using the ANOVA test and Duncan's advanced test. The results of the chemical test of macronutrients and crude fiber were different with the P-value sig. < 0.05. The macronutrient levels of F0, F1, F2 and F3 are 6.78 g protein; 7.43 g; 7.72 g; 7.86 g, 6.21 g fat; 7.45 g; 8.57 g; 8.85 g, carbohydrates 33.04 g; 33.67 g; 34.78 g; 36.10 g, fiber 0.53 g; 0.72 g; 0.87 g; 1.03 g. Determination of the best nutritional value was carried out using an effectiveness test, with the result values ​​at F0, F1, F2, and F3 being 0; 0.38; 0.74; 1. The best nutritional value was in formula 3 with 18% corn flour substitution, 7% seaweed, and 15% beetroot. So that F3 wet noodles can be consumed as a substitute for staple foods or as a variety of carbohydrate sources while still paying attention to a balanced nutritional diet and the contents of my plate, namely adding side dishes, vegetables, and fruits.

Abstract

Stunting is a physical growth disorder that occurs in children which is influenced by low nutrient intake and characterized by low height based on age. The purpose of the study was to determine the levels of macronutrients, zinc and texture in snack chips made from Moringa seed flour and milkfish. The research method used a laboratory experimental approach and research design with a completely randomized design (CRD) with control formula (F0) and treatment formula F1 (60% wheat flour, 3% Moringa seed flour, 37% milkfish), F2 (58% wheat flour, 2% Moringa seed flour, 40% milkfish) and F3 (56% wheat flour, 1% Moringa seed flour, 43% milkfish). Analysis of chemical assay using the One Way Anova test and Duncan's advanced test. The results of chemical tests on nutritional levels of protein F0 1.51 g, F1 1.81 g, F2 2.22 g, F3 2.86 g, fat F0 0.54 g, F1 0.82 g, F2 1.01 g, F3 1.34 g, carbohydrates F0 12.97 g, F1 13.35 g, F2 13.54 g, F3 13.61 g, zinc F0 0.51 mg, F1 0.58 mg, F2 0.65 g, F3 0.75 and texture F0 0.51%, F1 0.62%, F2 0.77%, F3 1.02%. The results of the analysis using statistical tests there were significant differences in protein, fat, zinc, carbohydrates and texture and there were no significant differences in carbohydrates in the F2 and F3 formulations. The best nutritional value in each formulation using the effectiveness test is found in F3.

Abstract

Stunting ada kaitannya dengan mengkonsumsi protein, seng, dan zat besi. Tujuan penelitian untuk mengetahui pengaruh subsitusi tepung labu kuning dan tepung daun kelor terhadap sensori dan kadar gizi cookies. Metode penelitian menggunakan desain eksperimental rancangan acak lengkap dengan 4 formulasi dengan kode F0, F1, F2, dan F3. perbedaan uji sensori dan kadar gizi cookies dianalisis dengan uji Two Way Anova. Hasil penelitian sensori didapatkan nilai warna sign 0.087, nilai aroma sign 0.548, nilai tekstur sign 0.12, dan nilai rasa sign 0.053 sehingga sign lebih kecil 0.05 tidak signifikan yang artinya tidak terdapat perbedaan antara daya terima panelis terhadap cookies. Hasil uji kadar gizi didapatkan protein 6.31 g, karbohidrat 68.80 g, zat besi 0.1286 mg, dan seng 0.3889 mg sehingga sign lebih kecil 0.05 yang artinya terdapat perbedaan antara kadar gizi terhadap cookies. Kesimpulan cookies terbaik terdapat diformula F2 dengan konsumsi cookies tepung labu kuning dan tepung daun kelor 8 keping/hari dapat mencegah atau mengurangi stunting pada balita.

Abstract

Adolescents were vulnerable to nutritional problems. Knowledge of nutrition, body image, and consumption of fast food are factors studied and analyzed for their significant level on the nutritional status of adolescents. The purpose of the study was analyzed the relationship between nutritional knowledge, body image, and consumption of fast food with the nutritional status of adolescent girls in Gresik District Senior High School. This type of research uses an analytical observational cross-sectional approach. In this study, the independent variables were knowledge of nutrition, body image, and consumption of fast food, while the dependent variable was nutritional status. The number of samples was as many as 124 respondents divided by each high school and each class. Data collection used questionnaires and anthropometric measurements. Data analysis used Spearman rank The results of the Spearman rank correlation test on the nutritional knowledge variable with nutritional status obtained P value = 0.660> 0.05. In the body image variable with nutritional status, the P value = 0.445>0.05. Then fast food consumption with nutritional status obtained P value = 0,568 > 0.05 In this study it can be concluded that the relationship between nutritional knowledge, body image, and fast food consumption with the nutritional status of adolescent girls in SMA District Gresik there is no significant relationship on nutritional status.

Abstract

Hendrosari Village is one of the siwalan fruit-producing villages. Old siwalan fruits are wasted because many siwalan fruit products are sold unripe or half ripe. The objective of this program is to produce food from old siwalan fruit to contribute in the development of the tourism industry in Hendrosari Village. Community service methods use socialization, demonstrations, practices, discussions, and evaluations. Innovation in food products using food processing technology allows for the production of ice cream and cookies from old siwalan fruit. 75 percent of the community was very excited to take part in this program and hoped that other innovations in the use of the highly valuable old siwalan fruit would be held.

Abstract

Penyakit tidak menular masih tinggi nilainya dan penyebab kematian terbanyak di Indonesia. Penyakit tidak menular (PTM) dapat menjadi penyebab sekitar 56% tingkat kematian di Indonesia. Laporan Dinkes Gresik (2014) dilakukan pemeriksaan tekanan darah penduduk di wilayah kerja Puskesmas Kepatihan sebanyak 5.397 orang dan di Menganti sebesar perempuan 131 orang. Responden penelitian ini adalah WUS di desa Hendrosari Kecamatan Menganti, Kabupaten Gresik. Tujuan Penelitian memberikan gambaran potensi status gizi dan sosio ekonomi Berdampak pada WUS mengalami penyakit hipertensi di Desa Hendrosari, Kecamatan Menganti. Metode penelitian ini menggunakan pendekatan Cross Sectional yang dilakukan di Puskesmas Kepatihan, Menganti, Kabupaten Gresik. Pengambilan data dilaksanakan pada bulan Maret 2022. Hasil Penelitian ini menunjukkan bahwa korelasi status gizi dan sosio ekonomi terhadap kejadian hipertensi pada WUS dengan uji multivariat Regresi linier bernilai sebesar 0,277, mengartikan besar pengaruh status gizi, sosio ekonomi pada WUS mengalami penyakit hipertensi. Nilai R square sebesar 0,077. Nilai error (1-R square) yaitu 0,923, mengartikan ada pengaruh faktor lain. Kesimpulan penelitian ini yaitu tidak terdapat hubungan signifikan pada status gizi dan sosio ekonomi sebagai faktor penyebab kejadian hipertensi pada WUS. Hal ini dikarenakan faktor lain dari penyebab kejadian hipertensi yang lebih besar dan perlu dilakukan studi lebih lanjut.

Abstract

Socio-economic include education, employment, and income of parents. The implementation of exclusive breastfeeding in Gresik were was excellent and many mothers are aware of the importance of breastfeeding. The nutritional status of children was measured based on 3 indices, BB/U, PB/U, BB/PB. This study aimed toanalyze the relationship between socioeconomic status and exclusive breastfeeding with nutrition for children aged 6-59 monts. This study uses observational analysis with a cross-sectional conducted in the working area of the puskesmas in January - June 2022. With a sample of 148 toddlers, data analysis using the Spearman test and Lambda test. The results of the bivariate test showed that there was a socio-economic relationship with toddlers with nutritional status based on BB/U (p: 0.001), PB/U (p: 0.002), BB/PB (p: 0.003). For Lambda test results, it was found that there is a relationship between exclusive breastfeeding and the nutritional status of toddlers based on PB/U (p: 0.004) based on BB/U (0.009) but there is no relationship between exclusive breastfeeding and nutritional status of toddlers based on BB/PB (p: 0.705).

Abstract

Indonesia has health problems that still often occur, especially in women of childbearing age, namely a lack of red blood cells or can be called anemia caused by nutrient intake. The problem of anemia, especially in women of childbearing age, has a bad impact on the sufferer and the generation to be born. This study aims to determine the relationship between diet and nutritional status to hemoglobin levels in college of the Faculty of Health, University of Muhammadiyah Gresik. The type of research is obvarsional analytics with a cross sectional approach. A total of 85 samples were taken using purposive sampling techniques. Data analysis using the spearman rank test, dietary data collection was carried out day food konsumtionbsurvey with repeated 24-h-recall and food freques method. the data of nutritional status was determined by measurment of body mass index, hemoglobin levels were obtained by hemoglobin examination using digital easy touch. The results of the spearman rank correlation test on the dietary intake variable showed a p-value result of <0.05 which means that there was a relationship of diet to hemoglobin levels, and in the nutritional status variable, it shows a p-value result of >0.05 which means that there is no relationship of nutritional status to hemoglobin levels. There is a relationship between diet and hemoglobin levels, contrasts with food intake, the correlation of nutritional status and hb level showed not significant (p-value >0,05). there is no relationship between nutritional status and hemoglobin levels in students of the Faculty of Health, University of Muhammadiyah Gresik.

Abstract

Salah satu komoditas perikanan yang terkenal di Gresik yaitu ikan bandeng. Kandungan gizi ikan bandeng merupakan sumber asupan protein, mineral, dan vitamin. Stunting merupakan kondisi seorang bayi/ balita memiliki pertumbuhan tinggi badan yang dibawah tinggi badan seusianya. Faktor besar penyebab stunting adalah terjadinya malnutrisi dalam beberapa periode kehidupan manusia. Pemanfaatan ikan bandeng untuk bahan utama MP-ASI diharapkan dapat meningkatkan asupan gizi pada bayi/ balita. Desa Sumengko ditemukan terdapat 10 balita mengalami stunting tersebar dari 4 posyandu. Hal ini diperlukan Kerjasama dengan berbagai bidang ilmu, khususnya Kesehatan. Peranan nutrisi dalam perbaikan status gizi pada bayi/ balita yaitu dalam tumbuh kejar tinggi bayi/ balita dapat melalui mencukupkan asupan zat gizi. Asupan Gizi meliputi kebutuhan makronutrien dan mikronutrien yang dapat memanfaatkan bahan pangan lokal di desa Sumengko, Gresik. Bahan pangan lokal diolah dan dijadikan MP-ASI yang dapat dikonsumsi bayi/ balita dengan memprioritaskan kandungan sumber protein hewani, mineral, dan vitamin. Kegiatan ini bertujuan memberikan pengetahuan, survei tingkat pemahaman, dan pelatihan pembuatan produk ikan bandeng untuk alternatif MP-ASI di desa Sumengko, Kecamatan Duduksampeyan. Responden merupakan ibuibu yang memiliki bayi/ balita usia 0 sampai 48 bulan. Responden mengikuti keseluruhan rangkaian kegiatan. Hasil kegiatan meliputi meningkatnya pengetahuan tentang MP-ASI sehat dan pembuatan MP-ASI dari bahan pangan lokal yaitu ikan bandeng. Responden merespon dengan baik selama kegiatan berlangsung sampai dengan selesai. Adanya kemudahan bahan, peralatan, dan cara pembuatan MP-ASI dapat menambah alternatif MP-ASI untuk bayi/ balita.

Abstract

Perubahan gaya hidup dapat mempengaruhi baik atau buruknya pola makan, yang berdampak pada kejadian GERD dan status gizi. Tujuan penelitian ini adalah menganalisa hubungan pola makan dan GERD dengan status gizi mahasiswa. Jenis penelitian menggunakan observasional analitik dengan 96 responden dengan menggunakan teknik proportionate random sampling. Hasil penelitian menunjukkan ada hubungan pola makan, terkait jumlah intake (energi = 0,030; protein = 0,000; lemak = 0,000) dan keteraturan makan (0,000) dengan GERD. Serta ada hubungan jumlah intake (energi = 0,009; protein = 0,000; lemak = 0,000) dan keteraturan makan (0,000) dengan status gizi. Tetapi, tidak ada hubungan intake karbohidrat dengan GERD (0,513) dan status gizi (0,162). Selain itu, ada hubungan GERD dengan status gizi dengan nilai signifikan 0,000. Dapat disimpulkan bahwa ada hubungan antara intake jumlah intake, kecuali karbohidrat dengan GERD dan status gizi, serta terdapat hubungan antara GERD dengan status gizi.
