Abstract

Dangke is one of traditional food from Enrekang Province Sulawesi Selatan which is made from buffalo milk and enzimatically processed using papain from papaya’s gland secretion. Research on this local product as source of lactic acid bacteria (LAB) has been done. Counted 30 LAB was successfully isolated and 3 of them were potentially to be able to yield antimicrobial compound. Enterococcus faecium DU55 is one of LAB isolate available to be applied for producing bacteriocin compound through fermentation. Optimum condition of fermentation was specified by determining the highest antimicrobial activity generated by filtrate of fermentation result. Antimicrobial activity examination was carried out through diffusion agar method by measuring inhibition zone growth of pathogen bacterium Salmonella typhimurium FNCC 0050. Research results indicate that maximum bacteriocin compound production by BAL isolate E. faecium DU55 was obtained at condition of optimum fermentation at 30 °C during 42 hour using M1 medium with the same composition to medium MRS (Man Rogosa and Sharpe).Keyword: dangke, LAB isolate, bacteriocin, antimicrobial activity

Abstract

Telah dilakukan penelitian mengenai ?Retensi Karoten Dalam Berbagai Produk Olahan Labu Kuning (Cucurbita moschata Durch)?.Penelitian ini bertujuan untuk mengetahui retensi karoten labu kuning yang diolah menjadi kerupuk, mie dan biskuit fungsional. Pencapaian tujuan dilakukan melalui tiga cara pengolahan dari setiap produk olahan labu kuning. Hasil penelitian menunjukkan retensi karoten dari masing-masing produk olahan yaitu kerupuk 79,44%, biskuit 71,27% dan mie 64,46%. Faktor pengolahan seperti suhu dan waktu mempengaruhi retensi karoten produk olahan labu kuning

Abstract

The investigation about study of the use of chelating agent to reduce iron content in clove oil has been done. This study aimed to determine the type of chelating agent that has the best ability in reducing the iron content in clove oil and to determine the optimum concentration of the chosen chelating agent in reducing the iron content in clove oil. Determination of iron content (Fe) was conducted using Atomic Absorption Spectrophotometry (AAS). The result obtained show that the type of chelating agent that has the best ability in reducing the iron content in clove oil was EDTA with 1,8% of the optimum concentration. It could reduced the iron content from 3,75 ppm to 0,625 ppm or approximately 83,333% of iron reduction.

Abstract

Ta'aruf is one of the realms of social interaction which is the door to building a relationship between human beings in general. This has been discussed in the Qur'an which is a book that contains instructions for humans, that humans are created with different shapes or characters. The goal is for people to get to know each other. In other terms known as the term ta'aruf earlier. However, in this discussion the word ta'aruf is interpreted more specifically as an effort to recognize the opposite sex to be a life partner. So, ta'aruf is part of the initial stages before building a lasting relationship, namely marriage. Related to this, the law or sharia whose function is to fill the space for all community behavior, also follow these developments so that they can always provide explanations about new things that arise. The aim is to be able to provide legal certainty regarding a new lifestyle that is developing in society. This study uses the library method, namely by collecting as much data as possible from previous research and then concluding it into new research, it is intended that this research will later become one of the sources for similar discussions.

Abstract

Patchouli oil refining waste is biomass or organic waste which has chemical contect so that it has antibacterial potential. This study aims to determine the antibacterial activity of patchouli oil refining waste against Staphylococcus aureus and knowing the groups of compounds identified as having antibacterial activity after the TLC Bioautography test was carried out. The sample was extracted using the maceration method with 96%  ethanol solvent. Antibacterial activity testing was carried out with a concentration variant of 50%, 25% and 10% with the well method. Thin layer Chromatography (TLC) using n-hexane : ethyl acetate (3:1) elucants. TLC Bioautography using contact bioautography method. From the research that has been done, it is found that the ethanol extract of patchouli oil refining can inhibit Staphylococcus aureus which has the largest diameter of resistance with a concentration of 50% which is categorized as very strong. The results of the TLC Bioautography study showed the saponin compound class after being sprayed with H2SO4 10% reagent, it was found that the ethanol extract of patchouli oil refined pulp has antibacterial activity against Staphylococcus aureus and compounds to play a role in antibacterial activity are saponins.

Abstract

Endophytic fungi produce bioactive metabolites that exhibit antibacterial, antioxidant, and anti-cancer activity. Rui (Harrisonia perforata (Blanco) Merr.) is a traditional medicinal plant proven to be an antibacterial and anticancer. Endophytic fungi live in plant tissues without damaging or producing chemicals that infect the host cell. Endophytes produce the same and similar compound as an original plant. This study aimed to isolate the endophytic fungi from Rui and determine their antibacterial, antioxidant, and cytotoxic activity. 13 fungal isolates were successfully isolated using PDA for seven days at 30°C. Molecular identification using the ITS1 and ITS4 DNA sequences only revealed six species: Diaporthe sp., Phomopsis sp., Aspergillus tubingensis, Aspergillus viridinutans, Pseudofusicoccum sp., and Daldinia eschscholtz. Seven isolates showed antibacterial activity based on plate assay. Aspergillus tubingensis and RA-1 exhibited antibacterial activity against Staphylococcus aureus and Salmonella typhi, with the MIC and MBC starting from 24 to 32 mg/ml. The DPPH assay showed the most increased antioxidant activity in Daldinia eschscholtzii with an IC50 of 98.14±2.39 µg/ml. The Brine Shrimp Lethality Test (BSLT) showed the highest potential cytotoxic activity, as shown by Aspergillus tubingensis and Phomopsis sp. with LC50 of 7.78±7.48 and 30.83±0.39 µg/ml. In conclusion, our study demonstrates that the fungal extract from Rui could be a source of antibacterial, antioxidant, and cytotoxic agents.

Abstract

This article discusses the condition of interfaith marriages in Indonesia after the emergence of SEMA No. 2 of 2023. Before the emergence of SEMA, interfaith marriage was something that was often debated by academics because there were no regulations that clearly regulated legal interfaith marriage. The emergence of SEMA is considered to provide legal certainty to support the implementation of Law no. 1 of 1974 so that marriage is based on the provisions of each religion. The SEMA is considered effective in closing the way for interfaith marriages, but its reach is limited to the judicial environment, while the reality in society is still happening even after the SEMA was established. This is because there is still a gap, namely through registration at the Disdukcapil Office. So it is considered necessary to harmonize norms in a number of laws and regulations such as the Marriage Law and the Administering Law. This research uses library research methods. Research data was obtained through literature study, namely reading and analyzing documents relevant to this research.

Abstract

Penyerapan tenaga kerja mengacu pada proses recruitment sumber daya manusia sebagai pekerja yang memiliki tugas pokok dan fungsi sesuai dengan peran mereka serta situasi dimana terdapat lapangan pekerjaan yang tersedia untuk diisi oleh para pekerja usia produktif yang belum memperoleh pekerjaan. Studi ini dilakukan dengan tujuan yakni memahami faktor apa saja yang mempengaruhi proses penerimaan tenaga kerja sektor industry pengolahan di Kabupatem Pinrang. Data yang dipakai yaitu data sekunder dengan mengambil data 15 tahun terakhir dari BPS Kabupaten Pinrang, yakni dari tahun 2008 hingga 2022 yang kemudian akan diolah menggunakan bantuan software / computer yaitu program SPSS versi 25. Studi ini menggunakan metode kuantitatif dengan teknik olah data data yakni analisis regresi linear berganda, koefisien determinasi, serta uji hipotesis. Studi ini berhasil menunjukkan bahwa kuantitas unit usaha berpengaruh negatif dalam proses penyerapan tenaga kerja, sedangkan untuk variabel investasi dan UMK bergerak positif terhadap penyerapan tenaga kerja sektor industry dan pengolahan Kabupaten Pinrang. Kata Kunci: Jumlah Unit Usaha, Investasi, Upah Minimum, Penyerapan Tenaga Kerja.

Abstract

Background: Eco-enzyme is the result of fermenting organic waste that possesses antibacterial properties. Objectives: This research aims to develop the best formula for an environmentally friendly antiseptic gel. Methods: The analysis carried out in this research includes testing the physical parameters and antibacterial activity of preparation. Results: The liquid eco-enzyme product produced has a distinct strong acid aroma with a pH of 3.1. Antiseptic gels were created in five formulations (F1-F5) by substituting the active alcohol ingredient traditionally used as an antibacterial agent. Test results showed that F1, F2, and F3 met all the requirements for the physical parameters of the gel, including pH (4.5-6.5), viscosity (2000-4000 Cp), spreadability (5-7 cm), and homogeneity (homogeneous). Meanwhile, F4 did not meet the physical parameter of viscosity, and F5 did not meet the parameters for viscosity and spreadability. Antiseptic gel made from eco-enzyme extracted from rambutan fruit peels exhibited higher antibacterial activity against S. aureus and E. coli bacteria compared to two commercial antiseptic gels and F1, which served as the negative control. Conclusion: An antiseptic gel preparation containing rambutan peel eco-enzyme with a concentration of 50% and 50% alcohol (F3) is the best formula.

Abstract

Indonesia saat ini menghadapi ketergantungan tinggi pada impor tepung terigu, yang menjadi tantangan bagi ketahanan pangan nasional. Fluktuasi harga dan ketersediaan tepung impor akibat dinamika pasar global semakin memperkuat urgensi diversifikasi pangan berbasis bahan lokal. Pisang kepok (Musa acuminata Colla) merupakan salah satu komoditas lokal yang melimpah di Sulawesi Tengah, dengan potensi besar sebagai bahan baku alternatif tepung serbaguna. Namun, pemanfaatan pisang kepok selama ini masih terbatas pada konsumsi langsung atau produk sederhana seperti keripik, dan keterampilan pengolahannya belum berkembang luas di masyarakat. Kegiatan pengabdian ini bertujuan meningkatkan pengetahuan dan keterampilan anggota Persaudaraan Muslimah (Salimah) Kota Palu dalam mengolah pisang kepok menjadi tepung serbaguna. Metode pelatihan yang digunakan adalah pendekatan partisipatif, mencakup penyuluhan, praktik langsung, dan diskusi tentang pengembangan produk turunan. Hasil evaluasi menunjukkan peningkatan signifikan dalam pemahaman peserta terkait potensi pisang kepok dan teknik pengolahannya. Selain itu, peserta berhasil menerapkan langkah-langkah pembuatan tepung dengan menghasilkan produk berkualitas. Kegiatan ini juga membangkitkan antusiasme dan minat peserta untuk mengembangkan usaha berbasis tepung pisang, yang berpotensi mendukung ketahanan pangan lokal dan pemberdayaan ekonomi keluarga. Dengan demikian, pelatihan ini memberikan kontribusi positif dalam diversifikasi pangan lokal dan pemberdayaan komunitas.
