Abstract

Kuok Village is one of the villages in the Kuok sub-district which has an area of 6000 hectares. The population in this village is 8352 people. The majority of the population in the Kuok village works as farmers. One of the commodities that cultivated by farmers is the orange orchard. Oranges in this village are still managed in fresh form and have not been made into a by-product. Hence, the Unri Community Service Team diversified its oranges derivative products, namely marmalade. The purpose of this community service is to solve the decay of oranges during the harvest season by processing oranges into marmalade that can increase community income. The methods used are survey, socialization and training. The process of making this jam begins with peeling the oranges, then all that is taken is the oranges flesh then mashed, then boiled the orange juice until it boils, then added sugar and put it in until the temperature is 105ºC, then the jam is placed in a jar.

Abstract

Waste is a residual object produced from nature or human activities. One of the solid wastes generated from human activities that can be utilized is waste from processing pineapples. Pineapple is one of the main fruit commodities that grow in Riau Province. Pineapple skin contains water 87.72%, crude fiber 20.87%, carbohydrates 17.53%, protein 4.41%, and reducing sugar 13.65%. Nata de pina can be used as a nata de pina drink which contains a lot of fiber as a result of the activity of Acetobacter xylinum which converts sugar into cellulose. The method used in this activity is to conduct a survey of production and marketing preparation, preparation of production tools and materials, training in making D'PINA drinks. Production of nata drink using raw materials in the form of pineapple skin obtained from industry in Kualu, Kampar Regency or pineapple fruit traders in traditional markets using a blender by adding water (1:1). 4 or 8% sucrose and added 0.5% urea (food grade) from the volume of the medium and then heated at 100ºC for 30 minutes this medium added 20% starter A. xylinum by opening a little one end of the tray cover then the tray was closed and incubated at room temperature for about 7–14 days.

Abstract

Pagaruyung Village is the largest pineapple producer in Kampar Regency with sales of 10.330 tons per year. The main problem faced by Pagaruyung Village as a pineapple producing center is that most of the pineapples produced are sold fresh at low prices, around Rp. 3,000-5,000 per fruit, so that there are often several obstacles in the distribution of fresh pineapples related to quality, storage, and transportation. Pineapples can be processed into other processed products such as syrup. Syrup is a processed food product that has a long shelf life and a simple production stage. Pineapple syrup can be an effective solution as well as a characteristic of the village to attract local and international tourists, as well as support independent food security efforts. The aim of the community service program through mentoring activities is that Pagaruyung Village, Tapung District, can become an entrepreneurial village in order to create an independent village and improve the economy of village communities through synergy between Riau University as a university and assisted villages within the scope of Riau Province. In this activity, an approach was taken through socialization regarding various processed products made from pineapple, direct practice in making pineapple syrup using simple technology, as well as evaluating activities using a questionnaire. The results of this training reveal the community's innovation and enthusiasm in processing pineapple into pineapple syrup. To achieve the main goal, namely improving the local economy and making Pagaruyung Village a tourist destination, ongoing coaching and training efforts are needed.

Abstract

Pagaruyung Village, Kampar, Riau, has great potential in the agricultural sector, particularly in the abundant production of pineapples. However, these agricultural products have not been fully utilized to improve the welfare of the community. One effort to optimize this potential is by developing Micro, Small, and Medium Enterprises (MSMEs) based on pineapple processing. The objective of this community service activity is to improve the capacity of MSME actors in business management to support the welfare of the community in Pagaruyung Village, Kampar, Riau. The activity involved 16 MSME members and village officials through pre-tests, material delivery, practice, interactive discussions, and post-tests. The results of the activity showed an increase in participants' knowledge and skills in business management, financial recording, product innovation, packaging techniques, and digital marketing strategies. A comparison of the pre-test and post-test results showed an increase in the average score of the participants, which was an indicator of the success of the training. In addition, a community of MSME actors in Pagaruyung Village was formed as a forum for collaboration and sustainable business development with the support of village officials. This activity had a positive impact not only on improving individual capacity but also on strengthening village MSME institutions, which is expected to contribute to improving the community's welfare in a sustainable manner.
