Abstract

Pengolahan pangan semakin berkembang seiring dengan perkembangan pengetahuan dan perkembangan teknologi. Berbagai inovasi dilakukan oleh beberapa industri pengolahan makanan dalam menciptakan produk makanan baru yang dapat diterima masyarakat. Seiring dengan beragamnya jenis makanan olahan dari buah pisang, maka meningkat pula jumlah limbah yang dihasilkan dari para pengusaha olahan pisang tersebut. Tujuan dari kegiatan ini adalah memberikan pengetahuan dan pemahaman kepada mitra dalam pengolahan limbah kulit pisang menjadi selai kulit pisang. Sasaran program pengabdian ini adalah Aisyiah Ranting Gedung Johor Kecamatan Medan Johor yang berjumlah 10 orang. Mitra yang ikut berpartisipasi adalah anggota Aisyiah yang tergolong dalam usia produktif dan berprofesi sebagai ibu rumah tangga. Metode dalam kegiatan pengabdian ini adalah: (1) sosialisasi atau penyuluhan, yaitu memberikan pemahaman kepada mitra sasaran akan kesadaran kelestarian lingkungan, (2) pelatihan, yaitu memberikan pengetahuan kepada mitra sasaran bagaimana mengolah limbah kulit pisang menjadi selai kulit pisang. Hasil yang diperoleh dari kegiatan pengabdian ini adalah antusias mitra sasaran dalam setiap proses, umpan balik dari mitra sasaran yang dinilai positif dan memberikan manfaat kepada mitra sasaran baik dalam bidang sosial yaitu memberikan rasa percaya mitra untuk berwirausaha maupun bidang ekonomi yaitu sebagai penambah penghasilan keluarga.

Abstract

Saat ini, penyebaran infeksi Corona Virus Disease (COVID) -19 belum berhenti di banyak negara di dunia. Jika kita cermati dari kasus pertama Covid-19 di Wuhan, China pada akhir Desember 2019, jumlah kasus yang terinfeksi virus tersebut tidak berkurang. Kasus virus corona telah mencapai lebih dari 43 juta. Untuk sensus ini, 1.157.714 orang meninggal, atau 5.580 per 1 juta orang. Obat herbal telah lama menjadi obat tradisional. WHO menjelaskan bahwa 65% penduduk negara berkembang menggunakan obat tradisional. Jahe adalah salah satu tanaman biofarmaka yang paling sehat dan efektif. Ada banyak jenis yang tersedia di pasaran. salah satunya adalah varietas jahe merah. senyawa dari tanaman jahe memiliki aktivitas anti-bakteri. Senyawa ini memiliki fungsi yang kuat untuk mencegah bakteri. Salah satu produk olahan jahe yang dapat dihasilkan adalah sirup jahe. Sirup jahe merupakan produk olahan yang bisa dikonsumsi sebagai pengganti teh dan kopi di masa wabah saat ini. Selain itu, pengolahan agroindustri komoditas jahe dapat menghasilkan pendapatan diluar dari pendapatan yang biasanya didapatkan dari pekerjaan utama.

Abstract

The  research on the utilization of waste cabbage (Brassica oleracea) as a preservative tilapia (Oreochromis sp) with RAL factorial method with 2 replications.The first factor is the concentration of NaCl with a password (N) which consists of 4 levels, namely: N1 = 1%, N2 = 2%, N3 = 3% , N4 = 4%. Factor II is a password storage time (P) which consists of 4 levels, namely: P1 = 1 days, P2 =3 days, P3 = 5  days, P4 = 7 days.The parameters observed from the data analysis showed that NaCl concentration and storage time significantly affected the protein content, moisture content, organoleptic aroma, texture organoleptic tests,and organoleptic color not significant. Keywords: longdepository,concentration  sodium chloride

Abstract

This study aims to study edible coating avocado starch on strawberry fruit and also to know the amount of zingiber extract used in the manufacture of edible coating on avocado seeds for strawberry fruit. This study used a complete randomized design (RAL) factorial with (2) two replications. Factor I is the amount of avocado seed starch with a password (P) consisting of 4 levels: P1 = 0%, P2 = 5%, P3 = 10%, P4 = 15%. Factor II is the amount of addition of zingiber extract with a password (D) consisting of 4 levels ie D1 = 0%, D2 = 3%, D3 = 6%, D4 = 9%. Parameters observed included: weight loss, TSS, Vitamin C, Total Acid, color organoleptic test, organoleptic aroma, organoleptic flavor. The result of statistic analysis on each parameter gives the following conclusion: the amount of avocado seed concentration gives a very significant different effect on P < 0.01 level to weight shrinkage, TSS, Vitamin C, Total Acid, color organoleptic test, and organoleptic test of flavor. While at P> 0,05 level was not significant on the organoleptic test of aroma, the amount of extract of betel leaf extract had very different effects on p <0,01 to weight shrinkage, TSS, Vitamin C, Total acid, color organoleptic test, an organoleptic test of flavor. While at p> 0,05, it was not significant to an organoleptic test of aroma. And on the interaction, the amount of avocado starch concentration and the addition of zingiber extract has a very significant different effect on weight loss, Vitamin C, and total acid. And different not significant on TSS, color organoleptic test, the organoleptic test of aroma and taste organoleptic test. The best results on weight loss were P4D4 which was 0,0900%, vitamin C was P4D4 21,130 mg / 100 gr, and total P4D4 acid 2,112%.

Abstract

Palm briquette briquette production as one of the fuel substitutes that began to thin and as a source of renewable alternative energy is done with the addition of cassava starch. This research used Factorial Randomized Complete Design (RAL) with two replications. Factor I is the addition of cassava husk starch with a password (P) consisting of 4 levels, namely: P1 = 5%, P2 = 10%, P3 = 15%, P4 = 20%. Factor II is the drying temperature with the code (S) consisting of 4 levels, namely: S1 = 1000C, S2 = 1100C, S3 = 1200C, S4 = 1300C. Parameters observed included heating value, moisture content, ash content. Statistical analysis result on each parameter show: The addition of Cassava Starch has a very significant different effect (P <0.01) on the calorific value. The addition of Cassava Starch gave a very significant different effect (P <0.01) on Briket Water Content. The addition of Cassava Starch gave a very significant different effect (P <0.01) on Ash Content in Briquette.Keywords : Cassava leaf,  palm stem, briquettes, calorific value

Abstract

Tofu pulp is a by-product of tofu processing which still contains high enough protein because in the process of knowing not all proteins can be extracted. The focus of the problem on the local community starts from observations in the field where some people have a home industry that knows its pulp not yet maximally utilized only limited to animal feed additives. Based on this problem it is necessary to empower rural communities, especially household mother by providing counseling and training on the use of vilages such as tofu industry waste to be processed into useful products with high economic value.Tofu dregs become crackers and abon in addition to nutritious family food (food diversification)  as well as  additional household income

Abstract

A research on the manufacture of instant beverages high calcium eggshell calcium levels To Improve methods completely randomized design (CRD) with two (2) replicates. The first factor is the drying time (P) ie: P0 = 0 hours, P1 = 1 hour, P2 = 2 Hours, P3 = 3Jam. The second factor is the addition maltodekstrine (M) which consists of four levels, namely: M1 = 0.2%, M2 = 0.4% = 0.6% M3, and M4 = 0.8%. The parameters observed: Serum calcium, yield, TSS, water content, organoleptic aromas and flavors. The statistical analysis was obtained, that the drying time had highly significant effect (P <0.01) in the levels of calcium, TSS, water content, organoleptic aromas and flavors. Extra maltodektris provide highly significant effect (P <0.01) in the calcium, yield, TSS, and had no significant (P <0.05) against TSS.

Abstract

Derajat pencangkokan anhidridamaleatpadakaretalamsiklissecara umum masih rendah, yang disebabkankurangnyadensitaselektronikatanrangkapanhidridamaleatsehinggareaktifitasnya rendah. Penelitian ini bertujuan untuk meningkatkanderajatpencangkokan denganpenambahan komonomer divinil benzen. Pada penelitian ini dilakukan penambahan anhidrida maleat 2, 4, 8 dan16 phr dengandan tanpa komonomer divinil benzen di dalampencampur internal suhu 150oC dan kecepatan rotor80 rpm.  Untuk mempelajari pengaruhpenambahankomonomerdivinilbenzenmakaditambahkananhidridamaleat 16 phrdankomonomer divinil benzen dengan variasimasing-masing: 0,5, 1 dan 2 rasiomol. Produk pencangkokan dikarakterisasidenganfourier transform infra red untuk melihatterjadinyapencangkokananhidridamaleatpadakaretalamsiklis. Kemudian derajat pencangkokan ditentukan dengan metode titrasi menggunakan NaOH 0,05 M. Dari spektrum FT-IR dapatdilihatbahwatelahterjadipencangkokananhidridamaleatpadakaretalamsiklisdenganadanyaserapankhaspadabilangangelombang 1780cm-1. Dari perhitunganhasiltitrasidiperolehbahwaderajatpencangkokanmeningkatdenganpenambahandivinilbenzen.Denganpenambahandivinilbenzensebanyak 0,5; 1 dan 2 molrasiomakaderajatpencangkokanmeningkatdari 3,57% menjadimasing-masing4,46%; 5,46% dan 6,54%. Kata kunci: anhidrida maleat,derajatpencangkokan, divinil benzen, karet alam siklis

Abstract

Porang (Amorphophallus oncophyllus Prain.) or often referred to as iles-iles belongs to the Araceae family and is one of the biological richness of Indonesian tubers. As a plant that produces carbohydrates, fats, proteins, minerals, vitamins, and dietary fiber, porang plants have long been used as food ingredients and exported as industrial raw materials. However, the plant has not been widely cultivated. Farmers generally only take and use plants that grow wild in the forest, in the fields under bamboo clumps, along riverbanks and mountain slopes. The Community Partnership Program is implemented in Lifeboat Village, District Besitang, Langkat Regency with partners consisting of citrus farmer groups. increase income. The method used to achieve the goals of this service is to conduct counseling or socialization of porang cultivation. The expected target is for partners to be able to cultivate porang as well as understand the benefits of porang plants for alternative food crops and can increase farmers' income so as to reduce food shortages in sustainability. The activity carried out is by distributing porang seeds in the form of frogs.
