Abstract

Snakehead fish has been sources that have high protein content and can be used as antioxidant and anti-diabetes. To increase the level of protein content and amino acid in snakehead fish, the treatment of hydrolysis and fermentation were chosen in this study. Therefore, the purpose of this study was to evaluate the characteristics of snakehead fish protein and its potential as antihyperglycemic. Three samples were used in this study, i.e., hydrolysate, fermented and non-fermented isolates. The experimental design used was completely randomized design. Data were analyzed by analysis of variance (ANOVA) and continued by Duncan multiple range test (DMRT) (α = 5%).  The current study reported that the hydrolysate had higherprotein content 90.43%, as compared to the fermented and non-fermented isolates were 84.43% and 78.69%, respectively. At a concentration of 10.000 ppm, hydrolysate showed highest inhibition activity (74%), as compared to fermented isolate inhibited 59% and none-fermentation isolate inhibited 56%. Hydrolysate also had higher amino acid content than fermented and non-fermented isolates of 51.15, 44.34, and 32.00 %w/w, respectively. Hydrolysate had the lowest molecular weight (<10 kDa), while fermented and non-fermented isolates were <10 kDa. This probably due to the hydrolysis process using an enzyme was capable to break the peptide fractions of snakehead fish protein. Hence, it increased the levels of protein, amino acids, there by protein hydrolysate had high inhibitory potential than fermented and non-fermented isolates.

Abstract

Long bean plants (Vigna cylindrica L), one type of long bean horticultural plant, are a source of vitamin C and minerals. Long bean production in Pekanbaru is not yet optimal, many factors cause low long bean production. One of them is the Red and Yellow Podzolic land which is majority owned by Pekanbaru. PMK soil is a type of soil that has poor physical, chemical and biological properties, so it requires the addition of ameliorant substances such as manure. The aim of this research was to determine the effectiveness and obtain the best dose of the interaction of liquid organic fertilizer from snakehead fish waste and ghost growth regulator (ZPT) on the growth and production of long bean plants. The research was carried out on land at the Faculty of Agriculture, Riau University, 16 meters above sea level, with flat tropography with Red and Yellow Podzolic soil (PMK). This research was conducted for 2 months, starting from January to February 2023. This research was carried out experimentally using a factorial Completely Randomized Design (CRD), which consists of two factors, namely P (Liquid Organic Fertilizer), consisting of 3 levels, and the factor Z (Ghost ZPT) 3 replications, the number of experimental units was 27 plots, each plot consisted of 4 plants and 2 plants as samples, so that the total plants were 27 x 4 = 108 plants.Based on the results of research that has been carried out on the interaction of giving Snakehead Fish Waste Liquid Organic Fertilizer and Ghost Growth Regulator (ZPT) on the growth and production of long bean plants, it can be concluded that the interaction of giving Cow Manure and Hantu ZPT has a significant effect on the parameters of flowering age, stem diameter, number of fruits, and fruit length. Meanwhile, the fruit weight parameter had no significant effect. The best treatment interaction is P2Z2 with a dose of Liquid Organic Fertilizer of 10 ml/plot and giving Ghost ZPT 4 ml/l.

Abstract

Fish wealth in the Indonesian region is abundant and efforts are continuously being made to increase the catch. Abundant fish catches become leftover fish or discarded fish due to various reasons, for example the fishermen's limited knowledge and facilities in fish processing methods. It turns out that the remaining fish or discarded fish can still be used. Nowadays snakehead fish (Channa striata) is widely used to make fish sauce, but in the manufacturing process only the flesh is used, this causes the skin and bones to become unusable waste. In general, fish waste contains many nutrients, namely N (Nitrogen), P (Phosphorus) and K (Potassium), which are components of organic fertilizer. The increase in waste production greatly influences global warming which triggers climate change. With proper processing in accordance with the environment and its presence in the environment, it is hoped that the environment will be clean, healthy and comfortable, in addition, appropriate waste can produce use value that will add income. From the research results, it can be concluded that the addition of the bromelain enzyme with a concentration of 150 mL produces the highest nitrogen content, namely 0.39%, while for the phosphorus content, the addition of 150 mL of enzyme shows a higher value, namely 0.168% and the highest nitrogen content, namely 0.037%, is owned by POC with the addition of 150 mL of bromelain enzyme.

Abstract

Indonesia has abundant marine resource potential, including the spread of seaweed across various coastal areas. One area with a great potential is Tanjungpinang. Along the coastline, various types of seaweed have been found, including Eucheuma cottonii, known as red seaweed, which has high economic and ecological value. This study aimed to determine the best treatment for E. cottonii seaweed extract based on yield parameters and antioxidant activity. Samples were extracted using three types of solvents with different polarities, namely ethanol, ethyl acetate, and n-hexane, with a 1:3 (w/v) ratio for each sample. The parameters analyzed included yield, phytochemicals, and antioxidant activity of the DPPH method. The results showed that the yield of E. cottonii powder was 10.34±0.01%. The yield of E. cottonii seaweed extract produced in ethanol, n-hexane, and ethyl acetate was 4 %, 0.40%, and 0.60 %, respectively. E. cottoni extract with ethanol solvent was detected qualitatively to contain alkaloids, flavonoids, phenols, and saponins. The ethyl acetate extract contained alkaloids, phenols, and flavonoids. The n-hexane extract contains alkaloids, flavonoids, and saponins. The ethanol extract had the strongest antioxidant activith (IC50 value of 86.79 ppm, followed by n-hexane (100.76 ppm) and ethyl acetate (114.57 ppm). This study demonstrates the potential of E. cottonii as a source of natural antioxidants.

Abstract

Seafood shell waste from restaurants is often discarded or used as animal feed, despite its considerable untapped economic potential. One promising high-value utilization is processing this waste into chitosan, a biopolymer widely demanded in the pharmaceutical, cosmetic, and agricultural industries. This study aims to assess the financial potential of producing chitosan from seafood shell waste in small businesses. We gathered 500 grams of shell waste from multiple seafood restaurants in Pekanbaru over the course of seven days. The waste was NaOH solution stirred for 90 minutes at 70°C. The resulting Vannamei shrimp chitosan was a white powder with 2.8% moisture content and solubility in acetic acid. Meanwhile, the chitosan derived from mangrove crab shells appeared as an off-white powder with 4.34% moisture content, also soluble in acetic acid. We conducted an economic analysis by calculating the total production cost and comparing it to the market prices of chitosan on various e-commerce platforms. The results indicate that the chitosan produced has a significantly higher market value than its production cost. These findings indicate that seafood shell waste is not merely an environmental issue but also a promising economic opportunity for MSMEs. Waste-to-chitosan conversion presents an innovative strategy to promote circular economy principles and empower small-scale enterprises.
