Abstract

Most pineapple peels are discarded as waste, although they contain 8.3% pectin, a valuable component for edible film production. This study aimed to examine the effects of temperature and extraction time on pectin yield and to evaluate the texture of edible films produced with glycerol. The overall process consisted of three stages: pineapple peel pretreatment, pectin extraction, and edible film preparation. Results showed that extending extraction time increased the amount of pectin obtained. The maximum yield was recorded at 125 minutes and 100°C, reaching 8.985 grams. In terms of tensile strength, higher extraction temperatures accelerated gelatinization and improved film strength. The best tensile strength was obtained at 70°C for 150 minutes, achieving 34.898 N/mm. Organoleptic evaluation involved 208 responses, where 49.5% rated the film as normal (103 responses), 37.5% as like (78 responses), 4.8% as really like (10 responses), and 8.2% as don’t like (17 responses). Overall, edible films made from pineapple peel and tapioca were considered acceptable. The highest preference was observed for texture, followed by color, while taste and flavor scored lower. These findings highlight the potential of pineapple peel films, although further formulation improvements are needed for better consumer acceptance.

Abstract

The persistence of antibiotic contaminants such as ciprofloxacin (CIP) in aquatic environments poses significant environmental and health risks, necessitating the development of efficient removal strategies. In this work, a zinc ferrite-anchored two-dimensional carbon nitride nanocomposite (ZF@2DCN) was synthesized via a simple calcination and hydrothermal approach to achieve synergistic adsorption–photocatalytic degradation of CIP under visible light. Structural and optical characterizations confirmed the successful formation of a ZF–2DCN heterojunction with high crystallinity, strong interfacial interactions, and enhanced visible-light absorption. The incorporation of ZF reduced the bandgap of 2DCN from 2.8 to 2.6 eV, promoting improved charge separation. Adsorption studies revealed rapid equilibrium within 30 min and multilayer adsorption on heterogeneous active sites, with a maximum adsorption capacity of 11.7 mg g-1. Under visible-light irradiation, ZF@2DCN achieved up to 81% CIP degradation within 60 min, exhibiting an apparent reaction rate approximately 2.5 times higher than that of pristine 2DCN. The enhanced performance is attributed to the strong synergy between adsorption-driven pollutant enrichment and photocatalytic degradation. Overall, ZF@2DCN shows strong potential as an efficient material for antibiotic removal in wastewater treatment.

Abstract

Indonesia has a wealth of flora with great potential to be developed as a functional food ingredient with economic value. One local plant that has this potential is the butterfly pea flower (Clitoria ternatea), which is known for its attractive natural color and beneficial bioactive compounds. This community service activity aims to introduce diversified butterfly pea flower processing to students through training in making food products as a home business idea based on local potential. The training was carried out using the method of material presentation, interactive discussions, and organoleptic product testing. The products developed include Azure Petal Tea, Citrus Spice Infusion, Blue Velvet Milk Tea, and Indigo Dream Pudding. The processing process is carried out using simple methods that are easy to apply. The results of the activity showed that participants were highly enthusiastic about the process of creating product characteristics and demonstrated a better understanding of the potential for diversifying butterfly pea flowers into value-added food products.

Abstract

Proses stabilisasi dedak padi sebagai limbah utama dari proses penggilingan padi dengan bantuan gelombang mikro telah dilakukan. Proses ini meliputi dua tahapan, tahapan pertama berupa proses stabilisasi dedak padi menggunakan gelombang mikro dikuti tahapan kedua yaitu proses ekstraksi minyak dedak padi. Pengaruh variabel proses yaitu waktu stabilisasi dan masa simpan dedak padi terhadap perolehan minyak dedak padi dan kadar asam lemak bebas dipelajari secara sistematis. Hasil penelitian menunjukkan bahwa dengan menggunakan daya microwave daya 3, dan waktu stabilisasi 1-3 menit, kadar asam lemak bebas minyak dedak padi yang diperoleh cenderung konstan selama 2 minggu masa simpan dedak padi. Hal ini menunjukkan bahwa proses stabilisasi dengan menggunakan microwave efektif untuk menonaktifkan enzim lipase yang ada di dalam dedak padi. Massa minyak tertinggi sebesar 7,58% diperoleh pada waktu stabilisasi selama 5 menit dengan masa simpan dedak padi 1 minggu pada daya 3.

Abstract

Limbah organik yang menumpuk menyebabkan permasalahan di lingkungan. Solusi untuk mengurangi dampak tersebut adalah dengan melakukan pengolahan limbah organik tersebut. Salah satu limbah organik yang dapat dilakukan pengolahan yakni limbah kulit pisang raja menjadi bioplastik. Tujuan penelitian untukmengetahui pengaruh dari penambahan clay terhadap penguraian bioplastik berbahan dasar limbah kulit pisang raja. Penelitian yang dilakukan dibagi menjadi 2 tahapan. Tahap pertama adalah pengambilan kandungan patibdari kulit pisang raja. Sedangkan tahap kedua adalah pembuatan bioplastik dengan variabel 6, 8, dan 10% dari massa pati. Hasil penelitian yang dilakukan menunjukkan bahwa semakin tinggi persentase clay yang ditambahkan maka bioplastik semakin cepat terurai di dalam tanah. Hasil terbaik yang diperoleh adalah pada variabel clay 10%, persen fraksi berat residual pada hari ke 9 yaitu sebesar 30%.
