Abstract

Minyak kelapa merupakan salah satu minyak yang mempunyai banyak manfaat bagi kehidupan manusia, karena tingginya kandungan asam lemak jenuh rantai pendek dan sedang. Permasalahan yang terjadi adalah bagaimanakah pengaruh waktu penambahan asam cuka terdapat kualitas minyak kelapa yang meliputi kadar air, berat jenis, indeks bias, angka asam, angka penyabunan, angka oid, angka piroksida, dan berapakah waktu penambahan asam cuka asam cuka yang optimum untuk menghasilkan minyak kelapa dengan kualitas terbaik. Sehingga penelitian bertujuan untuk mengetahui pengaruh penambahan asam cuka terdapat kualitas minyak kelapa dan mengetahui waktu penambahan asam cuka yang optimum untuk menghasilkan minyak kelapa dengan kualitas terbaik. Sampel yang digunakan yaitu minyak kelapa yang dibuat dengan waktu penambahan asam cuka 10 menit, 15 menit, 20 menit, dan 25 menit. Masing-masing sampel di analisis kualitasnya yang meliputi kadar air, berat jenis, indeks bias, angka asam , angka penyabunan, angka iod dan angka piroksida. Dari hasil penelitian diperoleh bahwa waktu penambahan asam cuka yang berbeda mempengaruhi kualitas minyak kelapa yang di hasilkan, yaitu dengan penambahan asam cuka, maka kadar air semakin besar, berat jenis semakin besar, angka asam semakin besar, angka penyabuhan semakin kecil, dan hanya waktu penambahan asam cuka 25 menit yang mempunyai angka piroksida. Kemudian dapat dilihat bahwa waktu penambahan asam cuka yang paling optimum untuk membuat minyak kelapa dengan kualitas terbaik adalah 10 menit, yang mempunyai % relative asam raulat sebesar 50,9 sp.

Abstract

Penelitian ini bertujuan untuk mengetahui rasio daging buah pala dan tepung pisang mulu bebe terhadap karakteristik kimia dodol pala yang dihasilkan. Rancangan percobaan pada penelitian ini menggunakan Rancagan Acak Lengkap (RAL) dengan lima perlakuan dan tiga kali ulangan. Perlakuan terdiri dari lima kombinasi rasio daging buah pala dan tepung pisang mulu bebe yaitu 65%:35%, 60%:40%, 55%:45%, 50%:50%, dan 45%:55%. Data hasil penelitian dianalisis ragam dan jika perlakuan brpengaruh yang nyata dilanjutkan dengan uji Beda Nyata Terkecil (BNT). Rasio penambahan daging buah pala 65% dan tepung pisang mulu bebe 35% efektif terhadap dodol dengan kadar sukrosa 47.4% dan memenuhi syarat mutu Stadar Nasional Indonesia (SNI) dodol. Rasio penambahan daging buah pala 45% dan tepung pisang mulu bebe 55% menghasilkan dodol pala yang disukai oleh konsumen.

Abstract

This study examines the cultural values that underlie social changes in the fishing community of Makassar City, with the Paotere Harbor Fish Auction Place as its economic locus. The type of research is library research. The data were collected using a sociological approach and using the theory of strategy and social change as the analytical framework. This study found three important things: first, the economy of the fishing community experienced a drastic change towards stagnation after the Covid-19 pandemic, second, the value system and cultural values of the local community were also affected, where the values of harmony ended in conflict, third, the government's strategy to facing social changes due to the non-integrative covid-19 pandemic, so that one community problem was able to be resolved and the negative impact of covid-19 was slightly eliminated, but on another issue, in the sector which still involves fishermen and marine livelihoods, fishing communities feel disadvantaged.

Abstract

The present study aims to assess the impact of the green campus score indicator on the development of sports infrastructure at Universitas Papua, Manokwari. The assessment method for implementing a green campus using UI GreenMetric as the criteria met the specified score standard. The analysis findings indicated that the implementation is adequate, following the green campus indicator analysis on the UNIPA Campus's sports center infrastructure. There are only a few indicators that need to be improved in constructing a sports center, such as managing and monitoring development implementation, the use of environmentally friendly tools, managing and monitoring the impacts caused by development activities, and the campus providing regular budgets. In addition, other indicators are thought to have been well field implemented. Based on these findings, a strategy for environmental structuring and green campus infrastructure is required for the UNIPA campus sports center infrastructure. The strategy emphasizes the importance of paying attention to potential threats that may arise as a result of construction, such as environmental damage, the emergence of new residential clusters that do not follow the UNIPA campus, and the emergence of new residential clusters that do not follow the UNIPA campus

Abstract

Penelitian ini bertujuan untuk menganalisa pengaruh suhu dan waktu pengeringan terhadap sifat kimia dan sifat organoleptik tepung sukun.Metode penelitian menggunakan rancangan acak lengkap (RAL) factorial yang terdiri dari 2 faktor dan 3 kali ulangan sehingga memperoleh 9 x 3 = 27 unit percobaan. Masing –masing perlakuan terdiri dari : waktu pengeringan 6 jam dengan suhu 350C (Tlt3), waktu pengeringan 8 jam dengan suhu  350 C  (Tlt2), waktu pengeringan 10 jam dengan suhu 35 0C (Tlt3), waktu pengeringan 6 jam dengan suhu 40 0 C (T2tl), waktu pengeringan 8 jam dengan suhu 400 C (T2t2), waktu pengeringan 6 jam dengan suhu 400C (T2t3), waktu pengeringan 6 jam dengan suhu 45 0C (T3t1), waktu pengeringan 8 jam dengan suhu 450C (T3t2) dan waktu pengeringan 10 jam dengan suhu 450C (T3t3). Parameter yang diamati meliputi sifat kimia (air, karbohidrat, serat, lemat, protein), dan sifat organoleptik (warna, tekstur dan aroma). Hasil penelitian memberikan bahwa sifat kimia dan sifat organoleptik yang terdiri dari kadar air, karbohidrat, serat, lemak, protein, warna dan aroma tepung sukun memberikan pengaruh yang berbeda nyata sedangkan tekstur tidak berbeda nyata. Perlakuan pengeringan selama 6 jam dengan suhu 400C merupakan perlakuan terbaik dari tepung sukun.

Abstract

Penelitian ini adalah mengetahui kualitas organoleptic bubuk kopi yang berbeda dengan penerapan good manufacturing process dan hazard analytical critical control point pada proses pembuatan bubuk kopi. Diharapkan dengan adanya penelitian ini dapat bermanfaat bagi para petani dan pengusaha kopi serta para pengguna kopi dan produk turunannya di Kota Ternate. Penelitian menggunakan rancangan acak lengkap (RAL) dengan satu faktor yaitu varietas buah kopi (P) dengan tiga perlakuan (P1=kopi robusta, P2=kopi arabika, P3=kopi lokal) dan lima ulangan sehingga unit percobaan berjumlah 15 unit. Berdasarkan hasil hasil penelitian menunjukkan bahwa: Daging buah kopi dapat dimanfaatkan dalam pembuatan bubuk, tingkat kesukaan konsumen terhadap bubuk buah kopi dengan perlakuan varietas yang berbeda menghasilkan nilai warna 3.45 – 3.81 (netral), aroma 3.44 – 3.72 (netral), tekstur 3.42 – 4.01 (netral – suka ) dan rasa 3.73 – 4.29 (netral – suka).Perlakuan bubuk buah kopi dengan perlakuan varietas yang berbeda berpengaruh nyata terhadap parameter tekstur dan rasa, namun tidak berpengaruh nyata parameter warna dan aroma. Perlakuan bubuk nbuah kopi Arabika (P2) memiliki ranking terkecil (skor 7) dengan menghasilkan nilai organoleptik warna 3.66, aroma 3.44, tekstur 4.01, dan rasa. Terdapat penerapan quality control dan food safety yang baik pada proses tersebut.

Abstract

Jam is part of one of the food ingredients that tastes very sweet and can be made from various types of fruits, such as banana, pineapple, apple, strawberry, blueberry, apricot and grape jams. The sweet taste is due to the addition of white crystalline sugar in the product which shows its characteristic as jam. Various opinions of experts have stated that jam can be made from various kinds of fruit but no one has mentioned tubers or legumes or secondary crops. One of the most possible palawija plants is peanuts which have the potential to be used as ingredients for jam production. The purpose of this study was to determine the effect of variations in sugar concentration on the quality of peanut butter, especially on organoleptic parameters and is expected to provide new information about differences in sugar concentrations in peanut butter. This study used an experimental method, Completely Randomized Design (CRD) consisting of one factor with 5 (five) treatments and 3 (three) replications, so that there were 15 treatment units. Parameters observed include analysis of organoleptic properties of jam products such as color, taste, aroma and texture.

Abstract

Tilapia is one type of freshwater fish that is very popular with people North Maluku community, and has potential economic value to be developed in North Maluku.The production target for consumption needs is still very far from the target requirement. This research was conducted to evaluate the performance of the hormone ovaprim, fecundity, fertilization rate, hatching rate in tilapia.This study was designed using a completely randomized design (CRD). The results showed that the highest degree of healing was found in treatment C at a dose of 0.6 ml/gr bt (85.19%) then treatment B at a dose of 0.4 ml/gr bt (82.78%) A dose 0.2 ml/grm bt of (77%), and dose D (control) did not occur spawning.From the analysis of variance data showed that treatment C at a dose of 0.6 ml/grm bt gave a very significant effect on the percentage of fertilization of tilapia eggs on the value (F count = 117 > F table 0.01 = 7.59

Abstract

This study aims to determine the development potential in Central Halmahera Regency relative to North Maluku Province, to determine the components or elements of economic growth that have encouraged economic growth, and to determine the grouping of potential or superior economic activities. The analytical methods used are Location Quotient (LQ), Shift Share, Growth Ratio Model (GRM), Overlay analysis, and Klassen Typology.                   The results of the study show: 1) The main sectors and have the potential to be developed are the Manufacturing, Mining and Quarrying, Construction, Public Administration, and Defense; Compulsory Social Security sectors. 2) The Regional Share value reaches 52.74%, meaning that the economy of Central Halmahera Regency is quite dependent on the economic activities of North Maluku Province and the surrounding area. The regional superior economic potential according to the Proportional Shift component has a role of 6.73%. The contribution of Differential Shift is 40.53%, meaning that Central Halmahera Regency has special potential to drive regional economic growth. 3) The results of the GRM analysis show that the prominent sector growth in North Maluku and Central Halmahera Regency is the Electricity and Gas, Construction, Information and Communication, as well as Human Health and Social Work Activities. The results of the overlay analysis show that the sector is quite dominant so that it must get priority in development is the Construction Industry. The results of Klassen's Typology analysis show that the sector that is developing and growing rapidly is the Manufacturing and Construction Industry.

Abstract

Coastal fishing ground (coastal fishing ground) has abundant resources, this is due to the fertile waters environment where the coral reefs, seagrass and mangrove ecosystems are still quite good. The purpose of the study was to determine the frequency distribution of the size of the dominant trap net fishing gear caught in the coastal waters of Sigeri District, Pangkep Regency. The object of this research is fish caught by trap net. The data collected consists of primary and secondary data. The equipment used is a fish measuring ruler, digital scales, office stationery, global position system. data were analyzed descriptively qualitatively and quantitatively. The results of the study, the frequency distribution of the size of the dominant trap net fishing gear caught in the coastal waters of Sigeri District, Pangkep Regency, which consisted of lompa fish (Trissina baelama), mullet (Mugil Sp), kurau (Polydactylus octonemus), titang (Scatophagus sp), rejung (Sillago sihama), cotton (Geres punctatus), gulamah (Johnius trachycephalus), and white shrimp (Litopenaeus vannamei). Most of the fish caught are in the category of small fish and a small proportion are included in the size of adult fish, and all fish caught are economically important fish.
