Abstract

This study aims to describe the chemical characteristics of fermented hotong seeds. The research method used is descriptive exploratory, through testing samples of fermented hotong seeds using two different types of yeast, namely tempeh yeast and band yeast, then a proximate test is carried out. Results: The fermentation process using tape yeast produced a carbohydrate content of 60.8%, protein of 9.98%, fat of 1.47%, ash content of 2.68%, and moisture content of 5.05%. Meanwhile, hotong seed samples fermented with tempe yeast produced a carbohydrate content of 59.1%, protein of 9.91%, fat of 1.47%, ash content of 2.06%, and moisture content of 4.70%. These results illustrate that the fermentation process with tape yeast produces a higher proximate test value for carbohydrate, protein and ash content, on the other hand, fermented hotong beans with tape yeast are lower compared to fermented hotong beans tempeh. The results of this fermentation treatment have a higher proximate test value compared to unfermented control hotong beans. Conclusion: The best treatment from this study is hotong seeds with fermented yeast tape. Suggestion: It is suggested that for future research, it is necessary to design the treatment of fermentation and use a starter of bacteria (BAL) to be able to get different results and statistical tests can be carried out to be able to see meaningful differences between treatments.

Abstract

Processed food products like white bread are favored by various segments of Indonesian society. White bread is widely favored because of its delicious taste, affordable price, and convenience. However, the nutritional components of white bread products are generally dominated by carbohydrates with little protein and fiber. One way to enhance the nutritional components and create functional properties in white bread is by substituting wheat flour with duckweed flour. The potential of duckweed as a food ingredient is well-known due to its high protein and fiber content. Duckweed is also known to have the ability to act as a stabilizer, emulsifier, foaming agent, and thickener in added foods. This study aims to determine the optimal amount of duckweed flour substitution for the characteristics of white bread. The method used in this research is a Completely Randomized Design (CRD) consisting of 4 treatment levels (0%, 1%, 3%, and 5%) with 2 replications. This research has two main stages: the production of duckweed flour and the making of white bread. The testing parameters in this study include proximate analysis, crude fiber analysis, swelling power analysis, hardness analysis, slice appearance analysis, hedonic analysis, and Bayesian test. The substitution of 3% duckweed flour (F2) became the best treatment with proximate analysis showing moisture content of 3.47%, ash content of 4.67%, fat content of 2.61%, protein content of 14.09%, and carbohydrate content of 75.18%. Physical analysis showed a hardness of 1.905 N, a swelling power of 135.83%, and a good appearance of the slices.

Abstract

Waste management in large cities like Bekasi is a major challenge in achieving sustainable development. The implementation of the 3R concept (Reduce, Reuse, Recycle) through 3R-Based Waste Processing Sites (TPS3R) has become a key solution. This study analyzes five TPS3Rs in Bekasi City: Bina Lindung, Prima Harapan, Sakura Regency, Mustika Sari, and Ciketing Udik. The objective is to assess the amount of waste, observe the processing methods, and formulate waste management strategies using both quantitative and qualitative methods. Samples were collected from varying numbers of households. TPS3R Bina Lindung and Sakura Regency each sampled 80 households, including a mix of permanent, semi-permanent, and non-permanent homes. TPS3R Prima Harapan sampled 28 households, Mustika Sari 160 households, and Ciketing Udik 49 households. The results show varying levels of waste management effectiveness. Mustika Sari achieved the highest effectiveness at 97.58%, followed by Sakura Regency at 92.39%, Prima Harapan at 50%, Ciketing Udik at 5.71%, and Bina Lindung at 2.67%. SWOT analysis reveals that the success of waste management is highly influenced by the reuse of recyclable materials. However, weaknesses include a lack of public awareness and low community participation in environmental initiatives. There is significant potential in community support, particularly in reducing paper, plastic, and bottle waste. On the other hand, challenges include limited training for TPS3R operators and the infrequent processing of organic waste by residents.

Abstract

Wororez UMKM is one of the UMKM that produces Seluang Cripsy fish and Bilis Cripsy which are currently still very rarely produced around South Kalimantan. This UMKM is located in the Sukarelawan Asri complex, Block B Number 19, Sukarelawan Street, North Loktabat Village. The objectives of this study are: to determine the feasibility of the business from the profits of Wororez UMKM, to determine the R/C ratio of Wororez UMKM, to determine the BEP of each Wororez UMKM product. This study was conducted from February to April 2025. The data analysis methods used are cost analysis, revenue, profit, R/C ratio and Break Even Point. The results of this study indicate that the Seluang Cripsy fish and Bilis Cripsy fish business can provide great profits. The sale of Seluang Cripsy fish and Bilis Cripsy can provide promising business opportunities because the profits obtained per year reach Rp. 240,675,333.33. From the calculation of the feasibility of the business analysis, R/C = 2.26 is obtained. For BEP production and prices produced by UMKM Wororez, both Seluang Crispy fish 100 g and 50 g and Bilis Crispy fish 100 g and 50 g are all above the break-even point. Because R/C is greater than 1 and BEP production and prices for all the products above are above the break-even point, the crispy fish business is feasible to do.

Abstract

Estuaries are one of the habitats for gastropods that have not been widely explored in North Maluku. This study aims at assessing the ecological conditions of gastropods in the estuarine waters including their composition, distribution, density, and species diversity. The study was conducted in August 2024 in the estuarine waters of Kaiyasa Village (Station 1) and Oba Village (Station 2). Data collection was carried out using the Quadratic Linear Transect Method. The results of this study found six species of gastropods with the highest composition found at Station 1 as 6 species, namely Faunus ater, Telescopium telescopium, Terebralia palustris, Cerithium coralium, Nassarius olivaceus, and Chicoreus capucinus compared to Station 2 as two species namely F. ater and T. palustris. F. ater which dominated both research stations since they were found in large numbers, namely 342 individuals (93%) at Station 1 and 299 individuals (98%) at Station 2. F. ater also had the highest density values of all species of gastropods found, namely 19.00 ind/m2 (Station 1) and 16.61 ind/m2 (Station 2), while C. coralium and C. capucinus have the lowest density values of 0.11 ind/m2. In general, the ecological conditions of gastropods at both research stations indicate a relatively low level of species diversity (H’ = 0.1 – 0.34), with low species evenness (E = 0.14 – 0.19), and indicated the dominance of certain species (C = 0.87 – 0.96), namely F. ater. The quality of the estuary water environment at both stations was still suitable for supporting gastropod life.
